My Favorite Summer Treats

Side note:

Feel free to still answer yesterday’s question.

The responses are some of the funniest comments ever!

.

One hundred and thirteen.

That was the high temperature here in Dallas last week. We’re experiencing the second-hottest summer on record, with 40 days in a row over 100 degrees. Therefore, everyone has been searching desperately for ways to cool off. Here are some of my favorite summer treats:

Healthy Starbucks Frappuccinos

Every time I’ve passed by a Starbucks this summer, there’s been a line out the door. Five bucks says no one’s ordering hot passion tea. Just a guess…

rawcoconutcreampie1

Chocolate-Grasshopper Pie

I haven’t made this pie in a long time. Need to remedy that! Chocolate-mint is one of my favorite combinations. That and chocolate-raspberry. And chocolate-coconut. And chocolate peanut butter. And… oh heck, I just like chocolate anything.

cdough

Healthy Milkshakes

Thick, creamy milkshakes that taste delicious and yet are sugar-free and healthy!

serendipity-hot-chocolate

Frozen Hot Chocolate

Frozen hot chocolate > hot hot chocolate. And frozen hot chocolate covered in vegan whipped cream and cacao nibs > everything.

fudgecake

Raw Chocolate-Fudge Cake

One of my favorite desserts of all time.

cake-ice-cream1

Voluminous Ice Cream

In flavors such as vanilla, mint chocolate chip, and cake batter (pictured above).

healthy-fudge-pops2

Chocolate Fudge Pops

I’m still waiting for someone to try the almond milk version of these fudge pops and tell me how it tastes!

Upcoming Posts:

  • Thick Strawberry Milkshakes

Question of the Day:

Is it hot where you are?

I know it’s not just Texas. One day this summer, when I was in New York, it reached 106… hotter than it was in Dallas that day!

The weather is crazy! Thankfully where I live it is raining right now so we get a little bit of relief from the hot, hot, sun. Stay cool, Katie! I cannot wait for the frozen Bon Bon recipe! 😀

  2. Jenny says

    It’s COLD where I am!

Actually, that’s a semi-lie… It’s been kind of on and off in Vancouver. Our mornings are seemingly always colder (colder than they normally are in the summer, seriously) and the afternoons warm up a bit. I don’t think the temperature here has pushed past 25 degrees Celsius all summer… or even 24… Very saddening to someone like me, who grew up in SE Asia, in countries that sat on or were almost sitting on the equator. 🙁

How about an exchange?! Send some of your hot weather up north!

  3. Tara says

Oooh I can’t wait for the strawberry milkshake or the peanut butter ice cream!! I might combine the two for a peanut butter and jelly flavored treat.
It’s hot here in Philly (actually I just went out to Bryn Mawr the first time and thought of you!! It was beautiful!) but not nearly as hot as it is in Dallas. We’re looking at a much needed week of lots of rain now!

  4. Cathy says

I live in Yuma, AZ – which is many times the hot spot in the nation, so it’s been really awful here for the last couple of months. (It’s been hotter, but the hottest I can remember here was 123 degres. But – only 6 weeks to go and we’ll have some of the best weather in the nation all the way though the middle of March. So, I think it’s worth it – at least we don’t have as much humidity as you do. I’m heading to Austin today and dreading the weather – even though it might not be as hot as here, it feels hotter.

  5. Jennifer says

NY can’t seem to decide whether it wants to be an incredibly hot summer or a gloriously comfortable one. We’ve had our share of awful days, but quite a few nicer ones–or at least more bearable. Today, though, the monsoon has moved in!

  6. Jennyb says

Only 18 C (64 F) just north on London. We don’t seem to have had many very hot days at all this year in England. It did feel a bit muggy earlier, i’m not going to complain though as i certainly couldn’t deal with the temperatures you’ve got! I experienced it when there was a heatwave in Canada while we were there in 2005, 40 C is far to warm for me. I’m a bit like a frozen treat myself – i just melt in the heat. The turned the air con off in the gym studio this morning for Body Balance, and i instantly started sweating, thankfully it was quickly put back on when the mirrors started steaming up!

Anyway, a frozen treat in the evening after dinner is normally quickly remedied with a hot chocolate in my world! Any excuse for another hot chocolate! I love the sounds of the Bon Bons & i’m becoming braver with peanut butter. I like a good twist too!

  7. Allyson says

It is so hot here in Maryland! I think its averaging anywhere from 95 to 105 everyday! And not only is it hot, but it is extremely humid and unbearable! And I agree with you-all I have been wanting to eat is cold things-I think about 6 Popsicles a day so far haha.

I haven’t commented in quite some time, but I wanted to say how impressed I am with the amount of followers that you get! Since I have started following your blog (last January) I have watched the number of followers/likes on fb grow and grow! I really want to start my own blog soon, I just don’t have the time right now–but when I do I will definitely take pointers from your blog-I love it 🙂

  8. Anne says

There are not enough hours in the day to make all of your yummy-looking treats, but I’m going to try! 😉 I live in the Valley of the Sun, so it is indeed hot, but we don’t get many opportunities to get cold in the winter. I’ll take the heat over the cold any day.

  9. Amber K says

Actually no. In Oregon we’ve had record lows. In fact, we haven’t had to buy a new air conditioner yet. We live in a top floor apartment and while it’s gotta a bit hot, it hasn’t been unbearable. The hottest temp. we’ve had so far is 84. I certainly don’t envy anywhere else right now!

  10. VegAlexandra says

Florida is almost as terrible! We typically stay below one hundred (thanks, Atlantic & Gulf of Mexico!), but the “feels like” temperature is almost always above one hundred, thanks to the crazy amounts of humidity.
I get cold easily, though, so I guess I don’t mind the heat so much. : )

  11. Lyza says

While you were in NY, it was pretty hot here in MI as well (got up to 112 heat index)! Thank GOD it’s been cooling down. Today has actually been a nice breezy cool 69 degrees. It’s been a GODSEND. But the weather here is not exactly known for it’s consistency. We’ll probably have another heat wave in a few days, if not tomorrow. Oy!!! So I have got to clean my room upstairs fast, because I have no air conditioning up here, and it will be like working in the Sahara if another heat wave comes in while I’m trying to clean it!

I’m excited for the thick strawberry milkshakes!! That sounds divine 🙂

  12. Katie @ Nutrition in a peanut shell says

No…it’s cold here in PA! It’s been raining and icky out. All I want to do is eat soup and curl up in bed!
Okay, maybe not that cold. But still, it’s so ugly out! 🙁
Please tomorrow be Bon Bons! I have a leftover banana waiting to be used….and those would be perfect!

  13. Lauren @ What Lauren Likes says

Its gotten pretta hot here, but right now theres a cold streak for some reason! Love these desserts anytime though…hot or cold weather 🙂

  14. Emma (Sweet Tooth Runner) says

I am MOVING to be with you in Texas!! It is just blah here in London!! Came back from HOT Hawaii to cold England, and I miss it!! I don’t care though if it means I get to enjoy your fudge pops! I am making them regardless and I can’t WAIT! 😀

  15. LizAshlee says

It’s not too bad! In the 90s here in Northern Colorado! Luv your yummy refreshing recipes…and excited to see ice cream sandwiches on the list…your creativity is amazing! 🙂

  16. A Tablespoon of Liz says

These all look so amazing I want them all! I’m in North Carolina, and last week it was soooo hot, but for the past couple of days it’s been rainy and kind of cool here. It’s supposed to get hot again soon though. : /

  17. Aine @ Something to Chew Over says

Nope it’s not hot in Ireland! Not hot at all – not even warm 🙁

Luckily I can enjoy frozen treats no matter what the weather 🙂

  18. Balancing Sylvia says

It’s just humid over here in Korea. It rains everyday and it’s sticking in the mid 80s. You should prob just stay inside and enjoy some chocolate fudge cake washed down with a cakebatter milkshake 🙂

  19. Eleanor@eatinglikeahorse says

Noooooo, it’s cold here, wish we could have some of your heat! To be fair, it was sunny and warm today but we’ve had such a horrible strong wind since Easter, so even when it should be hot, it isn’t 🙁
I’ll eat ice cream anyway though; it’d be rude not to 🙂

  20. April says

    Hi Katie!
I’ve been reading your blog for quite some time and I have a question that hopefully you’ll be able to answer. Do you know of any vegan substitutes for heavy cream? I’ve found several recipes which require the use of heavy cream, but I want to make the recipes vegan.

    • Chocolate-Covered Katie says

Oh my gosh, it is SO funny that you’d ask this today because I have a post all set for Tuesday about a coconut milk recipe that is the exact texture of heavy cream and I am betting it could be subbed for heavy cream.
Also, there’s a brand called MimicCreme that sells a heavy cream substitute you can whip up just like heavy cream.
For some recipes (such as chocolate mousse), you can also get great results subbing soft tofu!

  21. Alex@Spoonful of Sugar Free says

It’s been hot since march down here! Always high 90’s with 100% humidity….I’m wishing for fall to arrive now!

  22. Anna Crouch says

I made these and tried it with almond milk because I didn’t have to coconut milk. They were GREAT! I added the tablespoon of peanut butter to add creaminess…..They’re not quite as milky-creamy as a regular store bought fudgesicle–however they were remarkably similar in texture and even more awesome in flavor!!

  23. Averie @ Love Veggies and Yoga says

No, it’s not hot here! I just posted the other day (36 hrs ago…we are always on the same wavelength, I swear!) but it’s not hot here, that it’s 72F and sunny, but crisp and fall is in the air.

And that all summer, I have used my A/C *once* for an hour. It doesn’t get that hot in San Diego even though people always think SoCal is so hot. It can be inland, but where I am at on the coast, it doesn’t get very hot and this summer, hasn’t gotten hot at all! I use my seat heaters in my car in the evenings…50F’s. I’d rather be toasty than chilly 🙂

  24. lucy says

Funny to read this. I live in Wellington New Zealand. Right now it’s snowing for the first time in 40 years! Pretty exciting for us 🙂

  25. Maria @ runningcupcake says

I am in Florida right now and it is baking, but still not 100+, we are getting to the mid 90s and that is bad enough- so sticky. I could not imagine that heat for so long- we saw on the news that it was 40 days of over 100 and I have no idea how people live and work in that heat Stay cool!

    • Chocolate-Covered Katie says

I think we survive because it’s not humid… it’s probably worse in Florida. Humidity makes it seem even hotter! But yeah lol we were trying to break the 42-day record and fell a tiny bit short. Everyone was sad!

  26. kaila @ healthyhelper says

113!??!??! THATS NUTTZO!!! Wow! The only time I’ve ever been in heat like that was in AZ or when I’m in hot yoga LOL!. That grasshopper pie looks delish! I love pretty colored food!

  27. Tina says

Oh my goodness katie. Today i was a whole foods, and i saw these vegan desserts. they were called “healthy junk food” and they were just like your fudge babies! Just thought i’d let you know. 😀 Also, does the agar base keep? can i use half and put the other half in the fridge for the next day?

  28. Kaitlyn says

Those treats look wonderful! I’l love to try out the cookie dough milkshake!
It was actually only around 70 degrees here today. It rained pretty hard, from last night through the afternoon! Me and my boyfriend walked around in blankets haha.

  29. Kaitlyn@TheTieDyeFIles says

So pumped for your upcoming posts!!! I thought it was hot here at 90 degrees, but today was a hot tea day. 70 and rainy!

  30. Lorin says

Hmmm..I think I’m going to try and make your pb and j blondies into a pb and j pie. We’ll see how it works 🙂

  31. Namaste Gurl says

Can I have something of everything (no really)? You are such a creative and amazing cook, girl! Can’t wait to try out your grasshopper pie 🙂

  32. Albizia says

It is hot as hell! Maybe not as hot in Texas (about 95-97 during the day) but the famous Kyoto humidity is killing me. And what I hate the most is that it doesn’t get cooler even at night. The average low temperature for the last week is 86 degrees. I think only the mosquitoes like it and they bite like there is no tomorrow. Blah…

I’ve been eating lot of frozen food too due to the heat. Ice cream, smoothies and huge amounts of almost unfrozen kabocha (just enough to be able to chew it) with vanilla yogurt.

    • Chocolate-Covered Katie says

So funny… when I went to Kyoto it was freezing! Oh no wait, that was Sapporo. Kyoto was lovely, with the sakura trees! Wish I could go back… but maybe in the spring :). I didn’t realize you were in Japan!

      • Albizia says

I’ve been here for a few months already and I still find the fact that I am here a little weird so… 😀
And April is definitely the best time to visit Kyoto.

  33. A. Cook says

Boston had a few high 90’s-low 100’s days in July (complete with full-on disgusting humidity!) but it has not been hot here at all recently. I wore a sweatshirt yesterday to my fiance’s softball game for cryin’ out loud! And as I’m typing this it is 68 degrees, gray, pouring rain, and windy. So basically it’s like a gross fall day here rather than summer. Wish I could send a little heat relief your way! Although it looks like you’ve got it covered with frozen hot chocolate and chocolate fudge pops–yum!

  34. EmilyK says

I’m living in Seattle and it has been FREEZING all summer. I HATE IT!!! I’m not from here (I’m from Minneapolis where we have REAL summers and REAL seasons for that matter). I struggle every single day with these awful summers in Seattle. 65 and clouds everyday. yuk

  35. Marianne says

Gonna be honest, I have no concept of how hot that actually is. Me and Fahrenheit don’t mesh. I can tell you it’s been in the low to mid 20’s (Celsius) here. Nothing crazy hot, that’s for sure, although I did manage one killer sunburn this weekend. Oops!

    • Chocolate-Covered Katie says

I think 20 is somewhere in the very-high 70s. I used to keep my room at around 18C in China, and my family made fun of me for it being so hot. But I really should learn C better. The metric system makes so much more sense!

  36. Sophie says

Nope, no hot weather here! It hasn’t been hot in about a month!
Seriously though Katie, why would you do a post like that, now I want to eat all of those things 😛
The frozen hot chocolate looks amazing, my mouth’s practically watering at the sight of it!
