Coconut Cookie Dough Baked Oatmeal

(serves 1)

  • 1/2 cup rolled oats
  • 1/8 tsp salt
  • stevia or sugar of choice
  • 1/4 cup applesauce or banana
  • optional 4 drops coconut extract
  • 1/4 tsp pure vanilla extract
  • 1/4 cup milk of choice or canned coconut milk
  • 1-2 tbsp pre-melted coconut butter (Coconut-Free Version)
  • optional handful chocolate chips, plus extras for the top

Baked Cookie Dough Oatmeal: Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boatmeal cakes, two 1/2-cup ramekins). Cook for 20 minutes or more, until it’s firm. Finally, set your oven to “high broil” for 5 more minutes – or simply just bake longer, but broiling gives it a nice crust. Don’t forget to spray your ramekins first if you want your cakes to pop out.

    That looks delicious! Chocolate and coconut are a quintessential combination.I am always a bit sad when breakfast is over because I love all breakfast food! Today I had some organic cottage cheese, a banana with peanut butter, and a chocolate banana fudge vita top. And some coffee 🙂 I get so excited to have chocolate in the morning! Who wouldn’t?!

    Oooo, yummy…more oats! plus coconut butter, i just using that everywhere at the mo. I made a version of your pancakes for my breakfast this morning with bananas and PB topped with some soya yoghurt and a few blueberries. oh yeah it was good!

    Your comment about the Mounds bar made me think of something: what about subbing almond extract for the vanilla extract? Then it would be just like eating an Almond Joy, especially if you use almond milk as the liquid.

    This looks wonderful, maybe for breakfast tomorrow. I had zucchini oatmeal this morning. It has no sweetener except for raisins and is made with steel cut oats. Good Luck figuring out the drop down menu problem. I’m sure you will figure it out soon.

    I’m not much of a coconut person (the really sweet stuff in my early years kind of turned me off), but I’m slowly starting to obtain a liking for it again, thanks to your recipes. Oatmeal is a huge b-fast staple for me, and I love it after a hard morning bike ride or run. Yum…… gooey chocolate cookie dough! Sounds so good!
    For my pre-run breakfast I had a banana and a small glass of chocolate soymilk, and then after my run I had a mug of soy cocoa and a bowl of oatmeal flavored with ground cinnamon, pumpkin spicem and Trader Joes’ dried orange flavored cranberries. Do you have a Ttrader Joes around your area? If you do, don’t you love it???

    Omg a warm and gooey breakfast that tastes like a mounds bar??? You sold me!! That sounds amazing and I need to make it asap!! My breakfast was far less exciting- I had a piece of whole wheat toast with pb and reduced sugar jelly and will be having some greek yogurt soon– but now all I want is this!!

    Just to report back, Skipper – I nuked this today, and it was wonderful! I had pumpkin so I went with that – little more than 1/4 cup, pumpkin pie spice, and 1/4 cup almond milk [I’m not vegan, so I added egg white]. Tablespoon of sugar [I would add less next time, but I don’t have a sweet tooth like you]. Broke a quarter of a chocolate bar in it. Mixed it up and nuked for about 2 1/2 minutes – it took a little bit to set. Served with a plouf of whipped topping.

    I liked it a ton more than soft oatmeal – that’s always been a texture problem for me. LOVE. I’ve been eating pumpkin daily! I discovered that the organic pumpkin at whole foods is MUCH better, even if it’s more expensive. Sigh. Trying a vegan pumpkin pie with tofu this thanksgiving!!

    haha, I woke up, rolled over & checked my phone, seeing your new post in an email. Since I *finally* bought two new ramekins specifically for individual baking like this, I told my man I was all over breakfast 😉 I guess I made the cookie dough version though, because I have yet to bite the bullet and pay for a jar of coconut butter (still never tried it), so I left out everything coconut. I used 1/2 tsp stevia + 1 tsp brown sugar in each, pumpkin puree instead of applesauce, homemade almond mylk, and a small handful of chocolate chips. Boyfriend and I both LOVED IT!! The only thing stopping us from scarfing it down was our burning mouths 😛 Thank you, Katie!! Baked oatmeal is a new favourite breakfast in this house 😀

    I’ve been making the oatmeal recipes raw by soaking oat groats over night with the other ingredients. The anything with chocolate chips is the best, this sounds especially delicious!

    Yum – definitely a recipe I’m going to try on the weekend when I’m not getting ready for school at 5:30! Generally on weekdays, I have oatmeal or eggs on an English muffin – which I tire of easily! So, on the weekends, I like to treat myself by whipping up one of your recipes – the Cake Batter Pancakes were amazing, by the way!

    Oh, and a quick question: I recently bought coconut oil, and do you think I could use that instead of coconut butter? If so, would it be any different from coconut butter, and would I have to melt it before using it?

      It’s definitely not the same as coconut butter, so the taste would be different… but I think it would still be just as yummy in its own right (as long as it’s unrefined coconut oil. The refined one doesn’t have that coconutty taste)! You wouldn’t have to melt it before using, but I would recommend that you do just so it more evenly distributes :).

    I am fairly new at being Gluten and Dairy free (almost 8 weeks!). I didn’t have any coconut butter (didn’t know it existed!) so I added coconut oil. This was awesome. I just finished it now.     I can not believe how amazingly good this is!! And soo filling! I love oatmeal and have tried other “mounds-like” recipes which was basically shredded coconut w/ some choco chips that were ok…but didn’t really have you running for seconds. If I didn’t feel so stuffed, I would def run for seconds of this!! Well done, Lady!

    This sounds like such a yummy recipe! I’ll def. have to try this one with my kiddos! As for the nut butters, my son likes to eat them right out of the pack, but I use them in smoothies or on vegan pumpkin or zucchini breads. So yummy! Cacao bliss is very much a favorite here. I use that one in raw chocolate. 🙂

    This is almost too simple to actually post, but hey, it’s how I will use the nut butters! I <3 Ezekiel sprouted grain cinnamon raisin bread, and one of my favorite things is that bread with nut butter. I'm busy, work a lot, and don't like to fuss with packing a lunch. It goes like this: make, pack, eat, get back to work. (The tahini would likely be put in a hummus, though).

    I honestly wouldn’t know WHAT to do with them.. I just started reading your blog and need to invest in Coconut Butter because, well duh, you use it a lot. I’m not a vegan, but I’m 100% loving your recipes for my low-cal diet because I can’t live without chocolate.

    I would use them to make coconut nut butter cups! Mix coconut butter with some cocoa and honey, drop some nut butter in the middle, refrigerate and try not to eat them all in one sitting!

    If I won, I’d use the nut butter packs as toast toppings or straight out of the packet for a small pick-me-up. Not the coconut oil, though – that goes straight into single serving cake.

    Subbing the coconut butter for another nut butter would be a way I would use artisan butters, Yum, pecan butter and adding pecan bits to the cookie dough! and a caramel drizzle for pecan parfait cookie dough!

    If I had the pleasure of winning the nut butters I would most definitely integrate them into a no bake cookie, or protein cookie post workout. I hate using peanut butter since it is so high in the “bad” fats, so utilizing these other nut butters would give “good” fat, as well as a new taste to my cookies… Healthy indulgence for sure! 🙂

    I would use it on pancakes, waffles, topped on top of cupcakes, or on toast….. maybe even french toast!
    Or I will use in place of PB for sandwhiches or wraps. My brother goes to swim lessons twice a week, and preparing healthy meals for grab-n-go is becoming hectic, and he’s getting tired of the same PB and J routine. A different flavor of nut butter a swim lesson might spike some interest and curiosity in him! Not only that, but I get a different flavor of knife to lick off when I’m done making his lunch!!! :~)

    I would actually love to try out ALL the recipes on your blog that include any kind of nut butter because since I live in Germany I never had the opportunity to do so. The only thing that we can buy here is peanut butter. So your nut butters would offer me a bunch of new baking possibilities 🙂

    I eat oatmeal almost every morning, and I use your melted banana trick with some type of nut butter mixed in! It’s always insanely delicious no matter what.     Well, I’d probably spend like an hour or two just staring dreamily at the packages, at first. (Finding nut butters other than peanut butter and very rarely – and expensively – almond butter, is basically impossible where I live!) After that, I’d probably allow myself a spoonful of each straight into my mouth… make that last for an hour or so too… and then I would just go through your list of recipes, open all the ones that use those nut butters, and figure out how I can make all of them using the 3 packages I have. 😀 (I know. I dream big.)

I make a different recipe (MANY from your blog) that is Tasty, healthy, and sometimes vegan (though always dairy free!).     I have never tried coconut butter, because its too expensive. I stick to good old peanut butter! I would die to try making coconut cream pie larabars out of the coconut butter and walnut butter would taste fantastic over an oatmeal parfait or on top of baked boatmeal. It would also add some great creaminess to a smoothie. How about coconut ice cream? Make some vanilla milk and add some coconut butter to it? How about making a fudge baby with a center of (choice) butter? or your pumpkin cookies filled with (choice) butter? The possibilities are endless! I promise you katie these would not go to waste if I won!

    I’d like to win the nut butter so that I can make yummy and more importantly, nutritious, oatmeal for my beautiful momma. Without getting into the terrible details, we almost lost her a few moths ago. Miraculously, she survived (despite what the doctors told us) but has a very long recovery ahead of her. She is currently in a nursing home and unsurprisingly, their food is poor quality and meat-centered. I completely believe that a healthy diet helps healing and try hard to sneak lots of nutritious snacks for her every day. The nut butters would be perfect for giving her the clean amino acids that she needs! Winning would be great because they’re a little too pricey for me at the moment (I’m 22 and now am taking care of my younger brother and sister as well). Thank you!

    I most certainly would make this recipe immediately! I haven’t tried it yet because I only have coconut oil, not coconut butter. I would also make your single lady chocolate cake (currently my favorite of your recipes right now) and put a nice big spoonfull of pretty much any nut butter flavor right on top. Yum!

    I would definitely try your boatmeal recipe! And I would try as much possible ways to combine it. Starting with a new idea: Chocolatchip-‘boterkoek’ (Translated: buttercookie, but it’s more like a pie, with a dense substance.), It’s normally very rich. I’d like to try and ‘tweak’ it to make it a little more healthier without lossing the flavour (and maybe even take the flavour up a level!).
    Maybe the butters will also go fine on a simple sandwich (toast it in the grill, with some fruit maybe). I don’t know, I’ve never tasted them before.

    I made my own coconut butter as you suggested and it turned out pretty good, but would love to try that brand to compare. I would use them as an ingredient to make “icing” for any of your wonderful muffins or donuts. Plus, I’d just eat it straight out of the container.

    Very interesting your giveaway. I also really like these Artisan products, but in my area they are not all available. Actually, I have to drive at least 4hrs to find a store that sell them.     I’d use this to make food for myself. I was recently diagnosed with Grave’s Disease, an infection of Candida Albicans, and Leaky Gut Syndrome. At the present moment, I am only permitted to eat rice, various vegetables, some fish, white meat, and wild game.     My sons love peanut butter and they are really picky eaters. I want to expand their tastes, and these various nut butters would be a great start! I LOVE Artisana’s Coconut Butter. I make single serving Maple Melties all the time because I love maple syrup (the real deal, not the fakey crap that abounds).

    I would give the coconut oil to my sister, because her son is allergic to many things, but fortunately, coconut oil is NOT one of them. Funny enough, he’s allergic to coconut…and all tree nuts. So he couldn’t have the other stuff, but he can have the coconut oil, which I would gladly give to him.

I realise that being in Australia means that I’m not eligible, which is probably a good thing because I didn’t even know you could get a variety of butters like that and I have only recently discovered your fabulous site so would have all sorts of dilemmas of what to use them in.     Oh how I love nut butters! I have never tried all the different ones you pictured like pecan and walnut, those sound yum! My favorite way to eat a nut butter though must be mixing it with Hershey’s Special Dark cocoa powder and an overly ripe mashed banana. Devine combo! You need to try it asap!

    I love oats in things, but I’m not a huge fan of oatmeal itself – can’t get past the texture. I’ve liked a few baked-oatmeal-type recipes in the past, so when I saw this one I knew I had to try it for me and the kiddos. It was DE-LISH!

    I multiplied the recipe times three and soaked the oats overnight so they would be softer in the morning (it also cuts down on cooking time). I omitted the salt, used coconut palm sugar, and combined different kinds of milk (buttermilk & almond). Next time I’d like to try it with the coconut milk and extract to make it really coconut-y! I did, however, add 2T unsweetened shredded coconut along with a handful of dark chocolate chips. I baked it in my toaster convection oven in a small pan for about 10-15 minutes, topped it with some almond milk to cool it off for the kiddos, and it was a huge hit.

    This one’s a keeper!

      I have actually never tried overnight oatmeal! Well, not the type that everyone else seems to call overnight oatmeal, where you don’t cook the oats. I should get around to trying it someday! Sorry I can’t be of more help!

      Nichole, I put all the ingredients in the food processor and took a bite before I put it in the micro and I almost didn’t cook it because it was so good uncooked. Will definitely work for muesli/overnight oats, just add a quarter cup more liquid.

Clearly whats pictured here and labeled as Coconut Cookie Dough Oatmeal has been cooked stovetop or microwaved. Could we please have the correct recipe? It looks very yummy!

    Just made this for breakfast. Thank God I found this blog. It was amazing!! Used a frozen banana, plenty of coconut extract, almond milk, and a tbsp of Greek yogurt in place of the butter. Put it all in the food processor. In the micro it went, out came heaven! Thank you Katie!…Really, thank you!

    One more thing, since I didn’t bake it like Katie did, it didn’t get the little toasted spots on the top like the one in her pic, if you want the baked texture and slightly toasted oats on the top like hers, just bake it.

    May I make a suggestion? I have been searching your site for this recipe (I knew I had seen it here before) but had the darndest time getting to it! Can you please list it under Breakfasts? Actually, for that matter it wasn’t initially clear to me that Breakfast would be under “Snackity-Snacks” either. 🙂 Even typing “coconut oatmeal” in your search feature did not return it.

    wow! I was skeptical that baked oatmeal could be good and boy was I wrong, even with the series of mishaps when I made this, it came out fabulous. I am making again as soon as possible. I put the dry ingredients together and realized I was out of coconut oil subbed butter (sorry katie I’m not a vegan) and almond butter and almond extract (again thought i had coconut but didn’t) I added a handful of shredded coconut to make up for all the missing coconut and I tripled the recipe. It was moist on the inside a little crunchy on the outside and had just a hint of sweetness (reminded me of coffee cake). After my 4 year old ate his he said “mom can I have some more dessert?”

Except I didn’t have coconut butter and thought peanut butter might be a good substitute, especially if I used banana. So I ended up with peanut butter banana chocolate chip boatmeal! YUMMY!     Quick question, would quinoa work as a substitute for oatmeal? I love hot cereals, but am highly allergic to oats. (I can eat any other grain, just not oats) I don’t think that wheat farina would work well, it may be too runny

    Do you think using a toaster oven the time would change? I’ve tried almost all of your baked oatmeal and in 15 mins they become very crispy. I wonder if maybe being smaller it changes the cooking or something. Thank you!

    I have this recipe bookmarked because it’s my favorite on your site. But in my bookmarks it only shows up as ‘coconut cookie doug… ‘. My husband read it out loud and said “coconut cookie Doug?     I wanted to use your recipe – but make it healthy (er). I substituted half the oats with sprouted buckwheat, skipped the sugar and added blueberries instead of chocolate (sacrilegious. i know). It was super moist, surprisingly sweet and deliciously yummy.

    Hi! I LOVE your blog and have loved every recipe we’ve tried so far! I was wondering, though…is there any chance you might at some point post recipes like this (specifically the baked oatmeal) with the measurements for more servings than one? We are a family of six and I would love to make a big batch of baked oatmeal “muffins” for all of us. I have tried to quadruple recipes before and I think I got mixed up somewhere because it didn’t come out tasting the same. =P That must be the unseasoned baker in me. 😉

    We tried this the other day. I didn’t have coconut butter, so we just used the oil. It was so amazingly delicious, and we loved it. I can’t do regular oatmeal because of texture issues, but this has just enough crunch around the edges to make it perfect. So yum! I’m so glad a friend on FB posted this link.

    oh dear i need help. the 4 drops confuses me, approximately how much of a teaspoon would that be? i know it’s optional but i love coconut extract but it seems like i use way too much because it gets overpowering and makes my end result pretty bland

    I have a question, why isn’t there a print feature on your recipes? I spend so much time trying to print the recipe so I can take it to my kitchen, I could have already made one by now. I keep seeing this problem over and over on blogs and it’s really annoying me. What is everyone’s problem with allowing a print button!? Isn’t that why you share recipes? So people can make them and take them to their kitchens!? UGH

      Although there’s no print button, it’s still relatively easy to save and then print Katie’s recipes. Highlight just the recipe itself and right-click “Copy.” Then open a new Word document and right-click “Paste.” You can name this file with the recipe name, and print it easily from that point. You can save it in a CCK Recipe folder, too.

    Just finished scarfing this down for breakfast 😀 This was the 4th time I’ve made it. The first time I used applesauce and thought it was just ok. The second time I opted for mashed banana and it was ahh-mazing! The third time I accidentally used sour coconut milk and had to throw the whole thing out… ugh! This time I used coconut milk, banana, added some shredded coconut, and Earth Balance coconut oil peanut butter, and it was even better than the second time I made it. The peanut butter wasn’t strong at all, it was masked by all the coconutty goodness. It’s very filling and I can go to work on a full belly this morning 🙂 This is for sure in my top 3 oatmeal recipes!

    I am stopping by to let you know how this recipe turned out for me. It. Is. awesome. Seriously, I have never thought of baking oatmeal before! I stumbled upon your blog last week and I have been finding fun things to try. I also made my own coconut butter in my vitamin, which I now use in recipes! This oatmeal was great, too with the homage to chocolate chip cookies. I used super dark chocolate chips, applesauce (an apple and a couple TBSP of water in my vitamix), unsweetened almond milk, and I left out a sweetener altogether. And I don’t think it needed a sweetener. The chocolate chips and applesauce bring enough sweetness to it!

    So if I wanted to make this and freeze it, do I just mix the stuff up a put it in the freezer or would I have to cook it before freezing? Was hoping I could mix it, freeze it, and the just cook it in the microwave when I wanted it… I just microwave it for two minutes now when I mix it up in the morning…tastes great and is quick.

    I made this and it was delicious! I didn’t actually bake it, but I cooked it in a bowl with 1 cup unsweetened soy milk for extra protein and loved it. I used 2 Tbsp coconut butter (would use just 1 next time, it was SO filling and I would prefer the texture with 1), and didn’t add sugar or stevia because the applecause made it sweet enough for my tastes. I also didn’t add salt or either of the extracts because I didn’t have them. I sprinkled on chocolate chips too. So this was a very satisfying bedtime snack that fully satisfied my craving for an oatmeal cookie. Thank you, Katie!

    Yumee! I quadrupled recipe (applesauce version) and baked in a pan. Only had coconut oil, so added 2 T total of that. Added raspberries, and 2 T flaked coconut. The small handful of Ghirardelli dark chocolate chips I added were WOW! Amazing!

    This looks so yummy. I live baked oatmeal. Are we really supposed to bake it at 380 degrees?! That seems kinda random. And could I just substitute coconut oil for coconut butter? I’m not familiar with coconut butter. Thanks!
