R Rated Ice Cream

(gluten-free!)

One of my Special Diet Recipes.

  • 1 3/4 cups milk of choice, or nondairy creamer (see note below)
  • 1/4 cup hazelnut liqueur (Frangelico)
  • 2 packets stevia (or 2 tablespoons sugar)
  • 1/8 tsp salt
  • optional: chocolate chips, toasted coconut, etc.

Mix all ingredients together in a dish (except optional ingredients, if they are chunky). Then, if you have an ice-cream maker, simply transfer to your ice cream maker and watch the magic! (I have a Cuisinart, and it took 15 minutes to turn the liquid into ice cream. Warning: Make sure your ice cream maker’s base is completely frozen before use, or it will NOT work!!) If you don’t have an ice-cream maker, but you have a Vita-Mix, you can freeze and then thaw a little and blend.

A word about the milk: If you only use milk (such as almond milk or soymilk), it will still taste delicious… But the texture is more foam-y (in a good way, if that makes sense!) than creamy. If you use only creamer or full-fat canned coconut milk, the texture is more like ice cream. (Brand ideas include: Silk creamer, So Delicious creamer, or Good Karma.) If not serving right away, be sure to thaw a little if your freezer is super-cold.

Do you remember your first R-rated movie?

Mine was a few days after my 17th birthday, and I thought it was so exciting. (*Rolls eyes, looking back now*) I went to see The Last Samurai with a friend who’d also just turned 17. We felt so grown-up, showing our IDs to the ticket clerk (who was probably thinking, “Oh boy, more young kids who think they’re so super cool…”) The movie, itself, was just ok.

Side note:

After yesterday’s post, a few people asked me if I, personally, was successfully able to gain weight when I switched from my junk-food diet to a healthier one. Actually, yes I was! It might seem contradictory, but after I gave up the junk, I was able to add—and maintain—about ten pounds to my frame (seen here before I switched to a healthier diet, and above is now). Could I have added more? Probably, if I wanted to work harder at it, forcing myself to eat beyond fullness and counting calories, always planning the next meal. But a couple more pounds for vanity’s sake are just not worth that extra effort to me. I’ll welcome them when they come along, and I’ll continue with my effort to eat a high-energy diet (and try and motivate myself to lift weights. Ugh.), but as long as I’m healthy, I’d rather spend the time thinking of other things at the moment. Strange as it sounds, since I run a food blog, I don’t like thinking about food 24/7!

Now, can we please stop with all the weight talk and put the focus of this blog back where it belongs—on the desserts? Winking smile

    Oh yum! I wish I could have a bowl of that! Mmmmmm! ….I have no idea what the first rated R movie I saw was– I’m such a fan of kiddish movies that those others just don’t stick out in my mind. Ask me what the last good G movie I saw was and I’ll be able to tell you 100! 🙂

    Ah, my first rated R movie. I am embarrassed to say it was before I was allowed to be in one. My friends and I all thought it’d be great to sneak in. Unfortunately, that made it much less special when I was actually allowed to see one for real!

    I don’t remember my first Rated R movie. I do remember as a kid having to cover my eyes during parts of movies. I also remember when my older brother went and saw the first Jurassic Park and came home telling mom it was WAY too scary for any of the rest of us to see. How times change. 🙂

    This reminds me of Humphrey Slocombe’s ice cream flavor “secret breakfast” in San Francisco, they come up with the most interesting ice cream flavors. I can’t say it’s vegan, but it is so delicious! You could check out their website to get some crazy flavor ideas, I know I’ve tried to make my own vegan spin-off of their flavors (I’m lactose intolerant, but I suffer the consequences every time I visit San Francisco it’s that good!). Anyways, Secret Breakfast is sort of like a vanilla with bourbon and cornflakes.

    I’ve added Bailey’s to your vanilla 4 ingredient ice cream and it is delicious! I’ve actually been wondering – do you have any ideas of add-ins for your ice cream??? So far I’ve tried the basics – chocolate chips and cocoa powder, bailey’s, instant coffee, sprinkles, mint extract and chocolate chips, berries. But I need some new ideas!! I’m sure you (or some of the other readers of this blog) will have some good ones!

    You look much healthier now- but I’m sure it’s annoying for you that people assume that you have an eating disorder just because you are skinny. (I’m sure it’s just as annoying/unfair/hurtful when people assume a heavier person is unhealthy just because they are heavy!)

    I’m a fan of any food with booze it in. This sounds amazing! And you look great! I just looked back at that old pic (and I’ve been coming to your blog since 07 for sure!), and I can definitely tell you’ve put on a few pounds (which to say to most people would be inappropriate because they don’t want to hear that … but in your case, it’s a good thing!).

    My first R-rated movie was Blues Brothers when I was about 7. My parents let us watch it at home since we’d pretty much already heard all the profanity they say.

    I have an itty-bitty ice cream maker that makes about one serving. I’ll have to break that guy out soon and try this!

    You look fabulous, so whatever you did/are doing is working for you! Congrats on being on the AOL homepage – and this ice cream looks yummy. Back home we have popular drinks called mudslides, which, if they’re made properly, are basically ice cream pureed with Kahlua and Baileys and other goodness. So basically an alcoholic ice cream sundae. This looks like it would satisfy that need if it ever arose!

    I just clicked over to your picture and saw it was published in 2007! I had no idea that you’ve been blogging that long! And this recipe sounds amazing! I’ve never had Frangelico but think it’s about time!! My first R-rated movie was Texas Chainsaw Massacre- I went with my then bf on Halloween… except I was 16 and wasn’t supposed to see R-rated movies yet. We ended up hiding it from my mom and of course she found out and I was in big trouble! The worst part was- I hated the movie, it was so gory and scary!

    I am ashamed to say my first R movie was “Basketball Diaries”. It showed me a whole new world. Now that I have kids though, I really enjoy PG and G movies. Even when the kids aren’t around I will choose a PG, lol.

    Yum! Can’t wait to try this. One of my favourite winter tipples is 300ml almond/hazelnut or soya milk blended with 50ml kahlua, 50ml DiSaronno and 50ml Frangelico. Shake well, place in jug in fridge, try not to drink all at once. Deeeelicous.

    The ice cream looks super good, but I’m 18 and I don’t drink anyway. I’m making a list of all the recipes I want to try, but it’s so hard to choose what to make next! I made the deep dish cookie pie yesterday, and my family loved it! I really want to try the better than Nutella recipe, but I also want to try the cookie dough dip,or maybe the vanilla ice cream?!!!!! I need to got to the store A.S.A.P!!!!!!!!

    I can’t remember the first R-rated movie I saw because I’ve seen quite a few over the years. My family and I’ve been watching action movies since I could remember, but my parents would fast foward or tell my brother and I to close our eyes during any adult situations when we were younger. Now I love watching butt-kicking action movies, but I dislike horror movies. I didn’t/don’t get any nightmares, but I don’t like getting the you-know-what scared out of me!

      I always find it odd when people say that they’re 18 but still underage!

      Here in Ireland you can buy and drink alcohol from 18 years, as you are an adult then.

      I think it’s funny that in the US that even though you’re an adult at 18, you still can’t have alcohol!

    Looks amazing! I bought a single serving ice-cream maker the other day and it sucks so I will just buy a real machine for the summer and start making some treats. Right now in my home town of Ontario, Canada it feels like -17 degrees celcius (real temp is -15 celcius) so no ice-cream for me. 🙂 However, spring is just around the corner.
    You look really healthy and seem to eat healthfully and that is all that matters. Self-care which is obviously important to you.
    My first r rated movie was the shining when I was like 10. I snuck in the corner watching a bit of it it (until I was caught) while my parents viewed it and didn’t know. HUGE mistake as I didn’t sleep for like a month after that.

    Hey Katie! This ice cream looks delicious. I made granola the other day, and I realized that you don’t have any granola recipes on your blog! (At least, none that I’ve seen…) I must have eaten 3 cups of granola yesterday without ever feeling overly stuffed (which is like 1800 calories or so!) which made me think–have you ever tried making/eating granola as a high-energy snack? The oil and nuts are healthy fats, it’s all unrefined sugars from honey, maple syrup, and dried fruit, AND it’s vegan and can be gluten-free, so I figured it’s right up your alley! Just a thought that it might be a fun, easy, healthy high-calorie snack for you and your readers!

    I am ashamed to admit that my first R rated movie was when I was only like 14 (if that). I bought tickets with a friend (who was 2 years younger than me – sheesh talk about a bad influence on kids…) to go see Madeline, but we snuck into Something About Mary. We felt cool for a moment, and then we thought the movie was stupid because we didn’t get ANY of the humor! Ha. Serves us right. We both felt so guilty that we told our parents the next day.

    Wow omigosh you are so beautiful! I don’t really know what to believe any more to tell you the truth. Some blogs encourage weight loss and constantly offer tips to kill cravings and lose pounds. I read woman’s health sometimes (the magazine) and man does it make me feel like crap even though I already workout everyday for 1-2 hours and eat less than 2000 calories! And then there’s blogs like yours who encourage weight gain and all those fun things. But then I try it and I gain a little weight and all I want to do is cry. But good golly you look so pretty and if its healthy then why not? Right?

    One of Katie’s “Special Diet Recipes” uh huh… Shes soo healthy?! Dont be fooled by this “i have a hard time gaining weight” She is so thin because she eats concoctions of food-ish substances.

    This is her recipe: With calories.

    1 3/4 cups milk of choice… Im betting she uses unsweeted Almond or coconut milk (40-50 calories per cup)
    1/4 cup hazelnut liqueur (60 calories per oz)
    2 packets stevia (0 calories)
    1/8 tsp salt (0 calories)
    optional: chocolate chips, toasted coconut, etc. (30-50 calories, I see 3 measly chips)

    For a WHOPPING total of 240 Calories.

    If you’re not too great at math (like Katie – she cant add to 2500), let me break it down for you:
    (45*1.75) + (60*2) + (0) + (0) +(40) = 238.75

    This is not dessert.

      There are pretty clearly five chips on there. Definitely can’t trust your math if you can’t count to five. Anyway, find someone else to pick on. Katie has written about her size before and it’s not because she has an eating disorder. Flip through some of her pages.

      Side note: 240 calories is definitely a dessert.

      First of all, your tone here is rude. I’m going to redo your calorie count, because you’re off on the milk. Since the number of chocolate chips is controversial, I’m leaving it off.

      1 3/4 cups milk of choice (unsweetened almond milk is 35 calories per serving)
      1/4 cup hazelnut liqueur (60 calories per oz)
      2 packets stevia (0 calories)
      1/8 tsp salt (0 calories)
      optional: chocolate chips, toasted coconut, etc.

      (35*1.75) + (60*2) = around 180 calories… but it makes 425 grams, Katie says, and based on an 85-gram ice cream serving size, it makes 5 servings. 180/5 = 36.

      So using ALL the lower-cal ingredients, one serving is 36 calories…. But guess what? That’s not news to anyone! Because that’s exactly what Katie already told you in the nutrition facts!

      Looking at the ice cream in the picture, it’s definitely not frothy at all, so I’d say she used full-fat coconut milk. I’m not going to figure out the nutrition facts for using coconut milk, because I trust Katie’s math (as we discovered above.) Katie’s calculations say that with coconut milk or creamer, it’s 100 calories per serving or 500 for the whole batch.

      She added a couple teaspoons of chocolate chips (maybe 40 calories), so her serving might be 140-ish calories.

      In conclusion:
      1) 240 calories is totally fine for a dessert. Might even be a little much, if you eat desserts a couple times a day.
      2) 35 calories is way low for a dessert IMO, but to each his own. Sometimes I have a similarly-caloric small piece of chocolate for dessert… and sometimes I have 10! But whether it’s 35 calories of chocolate or 350, it was my treat to myself, so it was my dessert. It’s all semantics, so your argument is very ineffective.
      3) Who the hell only eats one serving of ice cream anyway? I’d rather eat a pint of low-cal ice cream than a few bites of the highest-cal ice cream, but that’s my prerogative! Just remember, to each his own!
      4) Being rude really never helped anyone to get a message across. People will listen and respond better if you are respectful.

        News flash. Nobody is on here to debate the calorie count with you. We like these recipes and they are a “healthier” alternative to the mainstream goodies we all tend to enjoy (but our waistline doesn’t!). If we cared that much about the precise calorie count, we’d be on a Weight Watchers blog. Let us eat in peace, please 🙂

        On a happier note, hooray for ice cream! And the warmer weather that makes it that much better!

    I’m pretty sure that was the first R movie I saw in the theaters, but I wasn’t 17 and I was with my dad, and it has been one of my favorite movies ever since.

    As for the dessert, I’m glad you like it! I don’t drink at all (for my 21st birthday, which was last year actually, I spent the whole day just hanging out with my dad who came to visit me at school, no alcohol, because he doesn’t drink either), so if I made it I would leave out the liquer and probably just use the hazelnut flavored stevia drops 🙂

I love ice cream and I do have a ice cream maker like yours (won it as 1st prize in an ice cream contest!) but I’ll have to wait till the weekend to try it; can’t drink during the work week. I’m not a vegan at all but I do so enjoy your blog. It’s obvious that you enjoy coming up with new recipes and you love sharing them with other people. BTW, love, love, love the cashew cookie bar! Do you think your ice cream recipes made with almond milk would work in an ice cream maker, as opposed to freezing and blending?     I remember when Dirty Dancing came out and it was the most scandelous thing. I was very young and me and a few friends watched it on cable and my mom lost it when she found out. Watching it today makes me laugh because it is so clean compared with what’s out there.

    I’ve been making ice cream a lot the last couple weeks. I favor blending a base of firm tofu or soy milk, and coconut milk 🙂

    I wanted to ask you, Katie, about your weight lifting. I’ve started doing it again myself after reading about it here reminded me. How much do you tend to do in a week? I remember you talking about rest days way back when, and was wondering if you lift on those rest days from running, or combine the days. Just curious (^-^)

    As for an r-rated movie, I honestly don’t remember! But I have a very poor memory for these things, lulz.

      Usually just like 2-3 times a week, often on rest days in the mornings while I’m answering blog comments. I don’t even know if you could call it a routine, and it’s just free weights. Maybe a total of 20 minutes? I really get bored, and I have to force myself to do even that!

    Thanks for sharing the recipe! Did you know that the recipes on your blog is the reason I finally bought a food processor? I had been wanting one for YEARS (yes, years) but I was like “when will I ever use it?” and then more and more recipes kept popping up (on your blog and various other places) DELECTABLE-looking recipes I might add, and it banished my hesitations. Best. Purchase. Ever. Aside from running shoes (you should see my closet). So thanks for sharing!

    Also, I would love it if these weight comments could be put to rest. It must be hurtful to be the constant target of such nonsense. I feel a little sorry for the individuals who feel they need to dissect the physical attributes of a complete stranger. It reflects their own insecurities. Let’s just keep it to the tabloids, people! I’m just here for the food!

    Your weight isn’t anyone’s concern. If you were heavy there would be several people telling you not to have a dessert blog. This blog has nothing to do with your weight and it should not be focused on. As long as you feel good about yourself and are getting a lot of nutrients 🙂 which you are!

    Ice Cream!

    There’s a soda shoppe near me that sells creamy cocktails (basically ice cream with alcohol in it — a little bit more viscous than your recipe though — because they put it in the blender, so it has time to thaw out a bit)

    First R rated movie? Despite my mother and father not wanting me to see Runaway Bride when that came out… years prior I saw Pretty Woman… I also saw Pulp Fiction at a younger age…

    Hehe. (c; This sounds so yummy that I sent my brother the link to the ice cream maker you recommended and asked him to buy it for my birthday. Granted, my b-day isn’t until June, but the fact that he’s going to go ahead and buy it now (and ship it to me rather than hold onto it – hooray for Amazon Prime!) tells you what an amazing brother I have. I suggested he try some of your recipes since he’s lactose intolerant and already uses almond, soy, and rice milk. Can’t wait to test this and the mint chip recipe (my favorite flavor of all time) for myself! 😀

      I agree 100%.
      There are people who are naturally skinny and very active, such as Katie (and myself), and it’s just unfair to accuse them of anything just because they like to eat healthy! I tried the junk-food weight gain/less active way of gaining weight, too, and in the end it contributed to my depression (I’m serious).
      So, to all of those who feel the need to troll Katie, stop it. You can’t change her (phew!), and it won’t make you feel better about yourself.
      And congrats on the 10 pounds, Katie :). They suit you well.

    Katie where have you been all my life. I just came across your blog and have already tried several recipes. I just did a spin of some of your ice creams with 1/2 a frozen banana 1 cup of frozen almond milk vanilla salt and cocoa powder. I cannot believe how amazing this is. Now I can eat chocolate everyday. I am going to try the samoa pie this weekend. You are a genius thank you so so much!

    The first r rated movie I saw was “it’s complicated” I saw it when I was ten me and my friend begged her older sister to get on her computer and down load it for us off of iTunes and she did after we payed her ten bucks, we felt so guilty we told our parents the next morning!

    At age 10 my mom me go see The King’s Speech with her since she thought it was educational…I was mortified since I didn’t see anyone else under the age of 40. Pretty sure it’s R…
    And yes, that movie only came out 4 1/2 years ago. Should’ve waited a few years to post this I guess…don’t worry, I have no immediate plans to try making this ice cream. I love your recipes though!
