Banana Split Pancakes for One

In elementary school, my sister and I looked forward to every “report card” day when our mom treated us to ice cream sundaes at Friendly’s (not for getting a specific letter grade, but just for working hard in general).

Sometimes I’d order the Monster sundae: mint-chocolate-chip ice cream with a cone head and M&M eyes. Sometimes I’d get two scoops of black raspberry ice cream with gummy worms. And sometimes I’d get… the most gargantuan sundae on the menu: the banana split.

Stuffed with juicy strawberries, caramelized banana, and sweet chocolate chips, the following recipe is like the breakfast version of a banana-split sundae. All that’s missing is the ice cream!

Banana Split Pancakes

Inspired by Strawberry Shortcake Pancakes and Single Serving Banana Pancakes.

  • 1/3 cup flour (spelt, white, or Arrowhead Mills gf mix all work)
  • 3/4 tsp baking powder
  • 1/8 plus 1/16 tsp salt
  • 1 packet stevia or 1 tbsp sugar (you can omit if you’re planning to top with syrup and don’t want the actual pancakes to taste sweet.)
  • handful chocolate chips
  • 4 cherries or strawberries, chopped
  • 1/2 a medium banana
  • 1/2 tsp pure vanilla extract
  • 1/4 cup milk of choice
  • 1 tbsp coconut or veg oil, or 1 more tbsp milk of choice (Personally, I use oil because I don’t like the texture of fat-free pancakes. But I know a lot of you don’t mind, so feel free to use the second option if you’d prefer!)

In a bowl, mash the banana and combine it with wet ingredients (including berries). In a separate bowl, combine all dry ingredients and stir very well. Preheat a greased or oiled pan to medium, then pour wet ingredients into dry and stir to combine. Drop 5-6 dollops onto pan once it’s hot (I did it in two batches), and cook on medium-low. Flip once per pancake.

What do you think about the idea of rewarding kids for getting all As?

I think it’s important to acknowledge kids’ hard work, as opposed to rewarding all As. A struggled-for C should be applauded, not condemned, as it’s more meaningful than an A in a blow-off class. Then again, I can’t say I never wished to be like some of my friends who got $5 for every A they earned!

    Oh mymymy! It just so happens my favorite pancake toppings are bananas and strawberries <3 a bit of chocolate surely wouldn't hurt <3
    I agree with you – reward your kid if it's apparent they tried hard!

    I agree about awarding for hard work! My mom used to let me buy any candy I wanted at the end of the school year, and I almost always bought the big roll of gum, that costs *gasp* a $2 for one big roll. I thought that was so special! And for me, the thing about A’s, is that I already would beat myself up enough if I got a bad (like a C :D) grade, so I’d rather my parents not rub that in too! Keeping school and family separate is a good thing- school= good grades, family= morales and not-earned love. 🙂

      I was actually very much like this.

      Nothing anyone would say was going to be worse than what I said to myself for a bad grade. In retrospect I wish I hadn’t been so uptight about it. As an adult you start to realize there are many other measures of success and learning than an A.

        Really good insights! I’ll keep this in mind as I finish my studies! You’re right- an A is definitely not everything, but there sure is the pressure to think it is when there aren’t many other reward systems!

    I have no problem with a reward system for kids (like you I wished I got paid for my grades when I was younger too – never happened. LOL)

    What is important is figuring out what is success for each kid for each situation. I was a tutor for many years and working with kids that truly struggled in school taught me a lot.

    These look great!! Definitely on my breakfast platter tomorrow morning.
    I don’t think I’ve ever had a banana-split… You can’t really get those on every streetcorner here…
    And to answer your question: I agree with you that ‘hard work’ should be rewarded. Even if they try the best they can’t but still don’t manage to get A’s.. I don’t think it’s fair not to applaud their achievements.

    Aw, I used to love going to Friendly’s! I went there with my grandparents when I was younger, and then in high school my friends and I went there a lot. The Monster sundae was my favorite when I was little, and then I usually ordered the Reese’s sundae when I got older. Yum. These pancakes sound amazing – bookmarked!

    I homeschool my 4 kids. We don’t have report cards, but they are graded on their work. I know that I was rewarded for letter grades and so was my husband. It did help me push to get a better grade if I found one slipping, but it did nothing for my husband. I think the biggest mistake parents make is that they try to put their kids into the same box. My oldest would work for a treat my second one would run the other direction just to say that she did it her way. It is different for each child, but if there was evidence of lack of caring/effort, there would be lack of special treats (food or otherwise).

    As for the question — when I was growing up, I was expected to get all A’s and B’s. If I did not get all A’s and B’s, then I was grounded for the entire next quarter… (harsh, I know). If I DID get all A’s an B’s, then I got to eat on the “Special Plate,” which was a bright red plate that said “You Are Special Today” around the side. I got to pick my favorite dinner, and when we sat down to eat, we had to go around the table and everyone had to say 1 positive thing about the person eating on the special plate.

    I do not particularly agree with grounding for a whole quarter when a child gets a C so long as the child tried his/her best. However, I absolutely LOVE how my parents rewarded all A’s and B’s! I think that the red plate, chosen dinner, and everyone saying something positive about me were FAR more memorable than money 🙂

      I am sorry, but what a terrible plate. “You are special TODAY”? And you only get to eat off that plate if you got A’s and B’s? Wow, thank goodness you didn’t have a learning disability otherwise you might never be considered “special”. I do like the idea of everyone saying something positive but I try to make my children feel special to me everyday.

    Oh my gosh, these sound awesome… I’m totally bookmarking for the weekend. 🙂 I know it sounds weird, but I was never big into banana splits… I think it’s because I always preferred ice cream flavors with chocolate and caramel, and the splits were always heavy on fruit flavors and vanilla! I did love making them, though (I used to work at a small ice cream place in high school). I agree about rewarding hard work and not just grades… I was always a “A” student and my brother tended to be more of a B/C student, but he tried, too — he was just more talented at the arts than the typical history / math / science classes. We used to go to an arcade in the mall that gave you game tokens in a certain amount for each letter grade, which I thought was pretty awesome. 🙂

    Another way to make them is to substitute vanilla brown rice protein powder for the flour and even baking powder. I learned to start making my pancakes with protein powder and flax and Love them!

    I can’t even remember the last time I had a banana split! That is obviously unacceptable, so I guess I will HAVE to make these pancakes after work this morning. After all, it is my half birthday! (And yes, I still celebrate half birthdays!)

    My parents used to have sort of reward system but it faltered as I grew. Now my grandma sill gives me 100$ if my report card is good. (Highschool, but I go to an intensive honors boarding school.)

    My parents gave us 5 dollars a gpa point BUT only if it was a C or better. This way, an A in a “regular class”=C in an AP class. It actually worked out fairly well.

    I definitely think parents should focus on rewarding their children for doing their best! Although personally, I was the straight A child and my little brother was struggling to pass, and he got all the praise! I guess they figured I didn’t need it!

    My dad used to take my brother and I to Friendly’s ALL the time when we were little. For awhile I always got the Monster Mash sundae, which was mint-chocolate chip ice cream with two Reese’s cups to ears and M&M eyes. It sounds a lot like the one you used to order, except without the cone head. Then they got the “Create Your Own Sundae” option, and that became my new favorite. These pancakes look delicious! Your bottom picture almost looks like a stack of chocolate chip cookies. I love pancakes because of all the different varieties you can make (your ice cream sandwich pancakes look heavenly). I love shaping them too; my mom used to always make snowman pancakes with chocolate chip eyes, a nose, smile, buttons, and whatever other accessories we decided to add!

      Oh I’m probably getting them mixed up! Now that you mention it, I think I got the same sundae you did. It was just so long ago… we moved to Texas when I was in 4th grade, and they don’t have Friendly’s, so the tradition ended :(.

    Hi Katie! I’m going camping next week and my family usually makes “foil dinners” packed with tons of meat. My cousin and I don’t eat meat very often (we’re ok with dairy though), do you have any vegan/vegetarian camping recipes? Possibly even one we could wrap in foil and heat up? Thanks!

    Katie OR Katie Commenters– can anyone tell me if cooconut oil tastes strongly of coconut? Because I’d love to use it, and I love coconut, I just don’t want to be reminded of the flavor all of the time. And y’all know which milk works best with vegan pancake recipes? I’m allergic to tree nuts so no almond and coconut milk usually gives all my pancakes a coconut flavor, which is sometimes welcomed but not when I want a regular ‘ole pancake, Thanks for your help guys!

      Hey, the best coconut oil (ie. virgin unrefined coconut oil) does smell like coconut but you cannot taste it in the food itself (in my experience). I use it for frying and baking and you couldn’t tell if you didn’t know, esp. if you use other strong flavoured ingredients like for example banana in these pancakes etc.
      I read somewhere the refined coconut oil doesn’t even smell like coconut anymore, however it’s also not as healthy.
      Give it a try, coconut oil is really good!

      Oh and I sometimes use rice milk for baking, it works. Also oat milk or soy milk do the trick I guess. But if the recipe specifically calls for coconut milk it could be difficult to substitute: coconut milk is really creamy and rice milk is really thin so you’d have to play around a bit to get the consistency right.

    Katie, have you ever tried any of your pancake recipes with almond flour? I’d be curious to know the outcome of a lower carb version!! These look amazing.

      Sorry, I haven’t.
      I need to experiment more with almond flour… I’ve never tried it! (Unless you count grinding up almonds… so I guess I have tried it. I’ve just never bought it.)

      I have actually tried them with almond flour! They are just as delicious, but don’t hold together as well… (they kind of fell apart in the pan, soI called them scrambled pancEggs!)
      But if you use one egg’s worth of egg replacer (such as ener-g) and a little less milk, that works just fine! =)

    I made them! I omitted the chocolate (What!! No chocolate in the house?) and used strawberries and they turned out pink!!! I used the 1 pack of stevia in the batter and then ate them just plain (although with chocolate chips would have been even better!) The strawberries made them perfectly sweet enough! Thanks for the recipes!!

      Mine were a little pink, too. Or maybe more purple, because I used cherries. It’s hard to tell from the photos, probably because I have the white balance set a few steps to the blue side on my camera, to compensate for the yellow walls in my house! 😉

    I used to get rewarded for report cards, but it was based on my effort more than the letter grades. Most of the time I got straight A’s, and that’s always what I strove for. But the lower grades I received I still worked really hard for, and my parents tried to recognize that. So….I think it’s good to reward hard work, and it’s good to reward accomplishments.

    And for my efforts in being productive today, I will make these for myself when I complete my to-do list 🙂

    Tasted just like a banana split but without all the calories! I did have trouble flipping them but I think that was because I was using a terrible spatula and a small pan.

    I never got any money for As. With my level of nerdiness my parents would be broke in no time. But I had something else – the right to decide when I really don’t want to go to school and get a parent note for absence due to family reasons without any questions from the “authorities” 🙂 . And how many parents have you heard say “Stop studying!” to their children? Priceless! But I’d be happy to be rewarded with these pancakes too.     Well…I think rewarding kids for making As is a good thing. I’m not a parent, but I think encouraging competition in academics at an early age is a great idea. My parents praised me, but I wasn’t showered with gifts. When I made honor roll, which was almost always, my parents made a point to celebrate it. That was rewarding for me. I knew making high grades would make my mom proud, so I worked hard to do so. She didn’t have to bribe me, it was my mission. She never said, “If you get all As, I’ll buy you a new…whatever…” But as a proud mother, she would take me shopping or give me a little surprise as a reward if I did something academically exceptional like winning a science fair or art show. Incentives and rewards are great. I think a lot of kids wouldn’t be motivated without a golden ring to reach for. On another note…those pancakes look delicious. And it’s dinner time, so I’m off to eat! Great post, girl. I made my own version of your Reece’s Pieces Fudge Frosting (but I used peanut flour instead of PB, 2 TBSP of sugar free maple syrup, 1 TBSP of dark cocoa powder, and water instead of almond milk). I’m addicted. I think the syrup gives it that frosting texture that’s hard to achieve. You rock, keep it up! =)

    And I think that a kid should be praised and maybe rewarded with an ice cream or something special at the end of the semester but like my mom always said to me “You should always be tying to get A’s, not just for a reward”. (one time i asked if I could get a puppy if I got all A’s….didnt happen lol)

    You wanna know the best part of living in Australia?
    Your post comes up at about 11pm where I am, which means I check it as soon as I open my eyes in the morning, and sometimes if I’m lucky you give me a delicious recipe to try for breakfast!
    Dessert Pancakes for breakfast. DELICIOUS!

    The only strawberries I had were frozen, so I swirled in some Strawberry Jam!
    Chocolate shavings, Banana slices and Vanilla Coconut Icecream on top… Oh my gosh. There are no words, except… Soft, pillowy, melty chocolate. Mmmm…

    I LOVE banana splits. Although I didn’t save them for special occasions as a child– I made one every day after sports practice. 🙂 These pancakes sound like a great compromise, yum!

    Have you ever thought about putting a “print recipe” option in these posts? Printing them as is is a hassle, and I have to print them because I don’t have a computer in my kitchen and couldn’t read the instructions if copied by hand (my hand-writing sucks!).

      You can always copy/paste just the actual recipe into a word document.

      I can’t add the “print it” plugin at the moment because I have a glitch with my Thesis theme and adding new plugins will corrupt it. I tried a few weeks ago and the whole site went down. I’m not the most technologically-savvy person in the world, so I’m struggling to try and fix it, and until I do I can’t add any new plugins. 🙁

    YUM!!! I can’t wait to try these!!! My mum said your apple pancakes are the best things I’ve ever made so hands down that’s what I’ll be making for mother’s day tomorrow!!

    I had a friend who would get clothes and things whenever she got a good grade and I’d be so jealous! My parents never pushed me academically, but I pushed myself and I’d come home with full marks and they’d say ‘congrats’ and that was it. It doesn’t matter though because I always like competing against myself, whether they push me or not!!!!

    Also, I have a question Katie…when you go for a run, how do you save yourself from boredom? I have to really push myself to finish 45 minutes these days. I used to look forward to running and I just can’t make myself want to leave the house anymore!!!

    Had these this morning, and yummy!! The taste was awesome. I have a question, though… mine never seemed to cook all the way through in the middle, even though they were pretty thin and the outside got dark. I’ve never made vegan pancakes before, so I’m not sure if this is typical, or maybe it’s all the fruit in these, or maybe I just needed to do lower heat for more time? (I did use medium heat, but everyone’s stove/oven is a bit different.) Anyhow I loved them even if they were kind of gooey. 🙂 Has anyone (CCK or others) tried the pancake recipes in a waffle maker? I’m thinking these would make one amazing waffle ice cream sundae! 😀

      How small did you make them? I’ve found that making smaller pancakes helps them cook more evenly.

      I keep meaning to try pancakes in a waffle maker! I’d like to do the strawberry shortcake ones first. If you try any before me, let me know how it goes!!

        The first two were a bit bigger than the others, but I still ended up with five or six (I couldn’t resist eating them as they came out of the pan so I’m not exactly sure, lol). Even the smallest ones were a bit undercooked in the middle. I usually look for popped bubbles that stay open (little craters that don’t fill back in) as a sign of when to flip the pancakes the first time, and when I did the pancake was still really soft and floppy but the outside was definitely done because it was starting to get pretty dark. I’m thinking maybe my stove’s idea of medium heat is too high and I should have just done lower heat for a lot longer time.

        Mmmm, now I’m thinking of all your pancake recipes in waffle sundae form… hot apple pie sundae?! Oh my, yes please! hehe

    I made the banana split pancakes this morning (doubled for husband & me) and they were incredible! I used no sugar, half white, half whole wheat flour, and the coconut oil. Gah! SO amazing and delicious. A few extra strawberries and agave on top. Mmmmm! Thanks for the keeper recipe! I just love this site!

    Hi Katie! I’m really really excited to share this recipe with you. I love love love pancakes, but due to certain circumstances I’ve been trying to avoid gluten and starches. Every pancake recipe I’ve come across either uses wheat or a significant amount of starch. So I decided to try my own, and I think I’ve finally got it! I don’t have time to start a food blog (I hope I can in the future-your blog is inspiring!) But I really want to share this recipe with people out there who might run into the same problem as I did. I’d really appreciate it if you could try this and share it if you like it! Thanks!

    I have a few quick changes to make to the recipe. It should be 2 eggs, 1/2 tsp of baking powder and 3/4 teaspoon of baking soda. I tried it again this morning and found that too much of the bp and bs made a slightly bitter taste. The recipe yields 8 servings. I hope you like it if you have time to try it! 🙂

But–like you– since I usually got straight A’s, I felt jipped when some of my friends got paid for every A they got!! Looking back, I should have just been happy they rewarded us at all!

    I just made these this morning for Isaac! I used gluten free flour and buckwheat flour, added 1 T of egg whites and included chocolate chips instead of strawberries or cherries -otherwise the recipe was the same. He LOVED them. 🙂

    I like the questions of the day, but I really wish you would make the comments for that separate from the comments about the recipe. Sometimes you just want to read about what people thought of the recipe who made it, and not have to sift through people talking about an unrelated subject. Just a suggestion. Anyone else agree?

      But here’s a trick: scroll to the BOTTOM of the comments. Usually the people who say how pretty the recipe is are close to the first comments. Then the lower comments (or on more popular recipes, on the second and third pages of comments) are of reviews.

    First of all: I’ve made these several times already, and they’ve turned out sooo good. Love it. (Though my latest experience, partly using rye flour – I’ve been on a rye flour kick lately and have been trying to use it way more than I should – wasn’t quite as good. Heh. But that’s definitely not because of the recipe :-))

    Anyhow, an unrelated question – I’ve noticed that in most of the recipes where you suggest using stevia, you suggest powder, not liquid, and in much fewer recipes do you recommend using liquid. I was wondering – is there a problem using liquid stevia instead of powder? Because I’m planning on having a relative bring me 2 bottles of liquid stevia from the US (over here it’s expensive and there’s barely any variety), and I wanted to make sure I’d be able to use it in all of these recipes… thanks! 🙂

    Hey Katie! I have some chocolate covered questions for you.. (see what I did there?) 😉
    1. When purchasing a chocolate bar, what percent cacao is your favorite? I have to say 85% is my favorite but most of my friends don’t like it that dark.
    2. Have you ever eaten and actually liked 100% plain cocoa?
    3. Where do you buy cocoa the cheapest?? I get mine at Albertsons but I use it so much it’s actually kind of expensive!

      I really love the Endangered Species 88% bars :). But Sweet Riot 85% is good, too.

      Haha I actually love 100% cocoa! Dagoba makes these really amazing bars, and I splurge every now and then.

      I’m using up my stores of Hersheys at the moment, and I’ll probably only buy Dagoba in the future. I’m learning more and more about slave-labor cocoa, and it’s heartbreaking. The fair-trade stuff is more expensive, but that’s probably because they actually have to PAY their laborers :-?.

    These are, hands-down, my favorite breakfast recipe. Who needs eggs when the banana makes the pancakes so fluffy and caramelized? And there’s definitely no need for syrup with both the chocolate chips and strawberries!

    My dad (willing-fully!) makes them at least 3 times a week for me! 🙂 Keep up the good work!

    I made these pancakes with whole wheat flower, almond milk, apple sauce in place of the oil, and even added some chopped walnuts and they turned out amazing! It’s crazy that a healthy pancake can be so delicious, but this blows all other, fattening alternatives out of the water! Thank you, Katie! Keep up the amazing work 🙂

    Katie, what do you use to fry? For veg I’d normally use a drop of rapeseed/canola and then keep replenishing with water but I don’t know about pancakes. I used coconut oil this morning but I’m worried about calorie content. Ideas?

    This is one of our favorite pancakes! We make it with spelt and almond milk. We also use a mixed berry blend instead of just strawberries or cherries.

    This truly tastes like dessert but it feels good too because it’s loaded with great ingredients! We even make our own chocolate syrup to drizzle…

    I just made these this morning and my gosh they are delicious! Literally just like shaker pancakes in sweetness and texture- and I was surprised at how many this recipe made! (I have a big appetite and I’m certainly full now!) I added blueberries and a bit more stevia for added sweetness 🙂

    I just made these, and it was delicious! I tried to cook in a pan, but it ended up sticking. So, I just popped the rest of the batter in the microwave for 30-45 seconds. Turned out great! I did have some variations. I mixed half oat flour with half WW pastry flour. I only used a teaspoon of extra sugar, but next time I’ll probably leave it out (just my preference). I also used carob chips….yummmmmm! Thank you for another delicious recipe!

    I just made a triple recipe of these pancakes for my parents and I and they were the best pancakes I have ever eaten! I am not vegan and had never made vegan pancakes before so I was not sure how they would turn out, but they were AMAZING! Crispy on the outside and full of gooey banana, cherry, and chocolate on the inside, they did not even need any toppings!

    I love your records but I am confused by your nutritional info. It says this recipe as well as another pancake recipe only has 1.5 grams of fat for the entire recipe but they both include a tablespoon of oil.

    These are the BEST pancakes ever!!! So amazing, fluffy, moist and not that bad for you at all! I love using oat flour for them and it works beautifully!!! So amazing! Thanks Katie!

    P.S.: you should try these greek yoghurt pancakes! 6 oz. greek yoghurt, 1 TBSP honey, 1 egg, 1 tsp baking soda, 1/2 cup flour! They are amazing!

    These are way too delicious. The only problem is that they cook ridiculously fast after you flip them. Luckily, even the slightly burnt ones tasted fine! 🙂

    Hello I have tried your pancakes three times, the brownie batter ones twice and the banana split ones once, every time they do not cook properly. They won’t flip and end up burnt on outside and raw on the inside am I doing something. Wrong. Please help they look delicious. Thanks

    How is it that these are *under 200 calories* ? One tablespoon of coconut oil is 130 and half a banana is 55 plus the flour would be at least another 130! They look like divine pancakes but I’d like to understand the method for counting the calories! No disrespect intended! <3

      You’re including the optional ingredients, which is never done when nutrition is calculated in a recipe or cookbook.

    I really love this recipe because it reminds me of my childhood. When I was little and it was Wednesday my mom always baked pancakes for me and my friends because in the afternoon there were always friends who came with me to play. Now I’m older and I can make my own pancakes because my mom taught me how to make them. This recipe was written very well, so I understood everything I had to do really quick. I also eat a lot of fruit, particularly bananas, but I never tried bananas on a pancake. My friend told me I had to try it because she knows how much I love fruit. I was really surprised because I didn’t know that it was so tasty. In this recipe they also put chocolate sauce on the pancake, so I also tried that and I have to say normally I don’t like chocolate sauce but it was a great finishing touch. I think I will make these pancakes a lot because they were delicious!

    LOVE these pancakes! I used raspberries in place of strawberries/cherries and chocolate syrup on top in place of chocolate chips. The pancakes soak it right up giving it more chocolately flavor for fewer calories! They were amaaaaazing thank you so much!

    I’ve just made them and they are delicious! I was worried they wouldn’t rise because since I am not vegan I am used to making them with eggs. However they turned out to be very fluffy and soft. I didn’t put berries in the batter but instead topped them with strawberries and added chia seeds. Thank you for the recipe!

    I find it extremely helpful when you include the nutritional breakdown but one request…please include the sugar content. A lot of us, including myself, are watching our sugar intake and I track all of my food so the sugar content would be extra helpful. Thank you 🙂

    Hi Katie!
    So these have been my go-to for a WHILE now — I recently had some of what was suppose to be Philly’s “best pancakes” – and it doesn’t even come close to being as good as these! The first thing I eat when I wake up is chocolate-and this totally justifies that.
    QUICK QUESTION though – I usually make them for myself, and they end up being super filling. Recently I doubled up on the recipe to make it for a friend and I, but it seemed like there was still the same amount of batter, and I didn’t get twice as many pancakes out of it as I thought I would. I am going to my friend’s bridal shower that requested everyone bring a recipe they love, and I want to bring this, but want to make sure it’s enough for her and her new hubby! Do I triple the recipe? I am afraid it might change the outcome and don’t have the time to experiment! ah!
