Coffee Cake In A Mug

This coffee mug cake comes complete with crumbly streusel topping in each little bite.

By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.

Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

Also try the popular chocolate version: Vegan Chocolate Mug Cake

As seen on Buzzfeed - single serving coffee cake in a mug, can be made in the microwave, and the entire recipe is less than 150 calories. Full recipe link: https://chocolatecoveredkatie.com/2012/05/14/1-minute-coffee-cake-in-a-mug/

How can they fit so much fat into a single mug?!

So I came up with a healthier version for her.

You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.

She’s made it four times already and says I’m her new favorite person in the world.

Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”

Not sure how I feel about this…

Above, watch the step-by-step coffee mug cake recipe video

To answer a question that a bunch of people have been asking:

Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”

If you want to add a sprinkle of instant coffee to this cake batter, feel free!

Or you can serve it the traditional way – with coffee, such as this Frappuccino Recipe or the youtube-favorite Whipped Coffee Recipe.

Ingredients

  • 3 tbsp spelt, white, oat, or almond flour
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • pinch uncut stevia OR 1 tbsp sugar
  • 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
  • 2 tsp oil or buttery spread – or applesauce
  • 1/4 tsp pure vanilla extract

For The Streusel

  • (If you like a lot of streusel feel free to double all ingredients below)
  • 1/8 tsp cinnamon
  • 1 1/4 tsp sucanat or brown sugar, or keto sweetener
  • 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
  • tiny pinch salt
  • 2 pecan or walnut halves

Instructions

  • I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. Microwave times will vary, depending on microwave wattage.

I’m going to have to try this ASAP. i used to make chocolaet ones in grad school all the time.

I know a lot of people that have put a lot of effort into their weddings already- and are probably still years away from it. I guess if it makes them happy, but I’m so low key I’m trying to figure out a way of getting married in flip flops.

  2. Anonymous says

I was just talking about the baked goods I missed since being vegan, wheat and refined sugar free. Coffee cake was one at the top of the list. Along with cinnamon buns and gingerbread (both the loaf and the men). Can’t wait to try this. YUM!

    • Jackie says

I just made this with Bobs Red Mill AP GF flour, coconut sugar, and earth balance – it was amazing!!! You won’t feel like you’re missing anything!

        • Caterina says

I LOVE THIS CAKE. It’s been my go to with all the diet restrictions I have right now. I make it GF, nut free, and refined sugar free. This works wonderfully with coconut sugar and Earth’s balance for the streusel, I use coconut oil for cake. I haven’t tried oat flour but found the results with Bob’s GF flour to be too spongy/rubbery, the best results I’ve gotten (GF) are with 2 tbsp brown rice flour and 2 1/2 tsp coconut flour (used less flour because coconut flour is a liquid hog!). This combination gave it a wonderful moist somewhat denser texture more like a pound cake. I also used carton coconut milk instead of water.

Oh man my roommate is definitely obsessed with wedding stuff on pintrest. She nuts! I’ve seen a few of those crazy bride stories too. One girl went tanning so much she basically cooked herself from the inside out and died at the altar. SCARY.

    • Marion says

I’m pretty sure that’s not a true story lol. I suppose it is possible that she tanned waaayyyyyy too much &also happened to die at the altar, but the events would almost positively be unrelated. A tanning bed is not a microwave,it would not “cook” someone from the inside out..precisely the opposite. It would be from the outside in,meaning that the external effects would manifest long before anything internal happened..&since we are talking about a tanning bed, something that physically changes the color of ones skin at an expidited rate, the symptoms would surely be noticeable. If someone tanned long enough for it to cause intetnal complications, they wouldve greatly surpassed that bronzy glow that any bride to be would be looking for, several times over. Assuming she did it in several sessions like normal, she wouldve had to have burned &blistered and still continue with her sessions at which point idk what word would properly describe the condition that poor girls skin would be in… But my bet is no one would intentionally turn themselves into a crispy burn victim, especially if they’re walking down the aisle. HOWEVER, there is the possibility that she tried to get all her color in one go,say, the day before the nuptials,& stayed in the bed for a very lengthy amount of time, where the effects wouldnt be felt immediately..but I know theres no salon in the world that would allow that and you’d think someone would have enough common sense to know that laying naked in a machine thats basically the sun on massive steroids &only inches away from you&your naughty bits probably wont yield any desirable results…..but honestly, these days,i almost wouldnt be surprised if this story was actually true &that is what happened.
Stupidity isnt grand,UNLESS were talking about these stupid easy &even more stupidly delicious mug cakes…especially this coffee cake one. Mm mm…just mmmmmmm. Simply delightful? Nope. Stupidly delightful 🙂

  4. Kat says

Yum, I love coffee cake. I will probably try something similar soon. I have trouble following recipes, instead I use them as a guideline. lol
I am in Wedding Mode right now because I am getting Married in September. I haven’t been planning all my life, In fact I didn’t seriously start planning until early this year… I am running out of time and doing my best to put together a fun wedding on a tight budget. I’m soooo glad I am not a bridezilla though. I watch that show ‘Bridezillas’ as a what NOT to do! lol, that and it’s also a guilty pleasure.

  5. Chrissy says

Ok Katie, if I make it and love it, you’ll be pinned to a “dream wedding” board on MY Pinterest, too! LOL! :0) I freakin’ LOVE coffee cake but won’t make it anymore because I know how much guilt and regret I’d feel after consuming a piece from a normal recipie. Can’t wait to try this! And it’s about a zillion times better that all ingredients are ones I’ve got on-hand! :0) THANK YOU!

  6. Samantha says

Wow. I think this just jumped in front of the banana-spilt pancakes. They keep getting jumped by one of your other recipes. 🙂 I may run downstairs…now…

I am finally old enough that the biggest marriage and baby blitz has passed. I would be lying if I didn’t say it was a bit hard because I wasn’t a part of the wave. However I have always known my wedding if I had one would be extremely easy and now, more and more I am thinking elope or justice of the peace.

THEN spend the money on a fun vacation experience!

(and yes, I have seen some crazy stipulations for the bridesmaids…kind of says a lot about the bride in my opinion).

  7. Sarah the official CCK drooler says

YUM!!! Could I have this for breakfast? I REALLY hate using the microwave just because it takes out the nutrition in anything and emits dangerous radiation. But I don’t wanna wait for the oven either 🙂
Anyone obsessed with weddings? Well, I was *sort of* obsessed with the Royal Wedding. I know what you’re thinking- such a loser. Well, my cousin was obsessed with the Kim Kardashian Wedding. now THAT’s a real loser :p
    And guess who’s still married?
If you said Kim you need therapy.
So many people were surprised that they broke up so quick. Was I the only one who was surprised that it lasted a WHOLE 72 days?

  8. Amanda M. says

This looks absolutely AMAZING! I will be making this yummy recipe this weekend! I think my very non-vegan husband might like this as well! Thanks for another fantastic recipe!

As for weddings- I agree. It should be special and perfect because of who you are marrying!! I married my husband in a courthouse in the presence of 8 people and a judge, in a 3-dollar thrift store dress. We had plans to have a “real” wedding, and even that one was very low-key. But in the end, we just didn’t feel like waiting that long just to make a spectacle of the whole thing. And I am definitely NOT saying that all weddings are just a big show- I love lovely weddings! Nothing wrong with that at all if you keep in mind the true reason for the whole thing! But for us- two young (I was 18, he was 22), spontaneous people, it just wasn’t for us 🙂 But here we are, nearly 8 years later with 2 kids!

  9. Anna @ The Guiltless Life says

People can DEFINITELY get too carried away with the wedding talk. I love to plan things, period, so I enjoy thinking about it but I haven’t yet created a Pinterest board. I will reserve that for when I actually AM planning a wedding lol.

Btw, what is that you’ve got on top of the cake? Is it just melted coconut oil or icing? Thanks!

    • Chocolate-Covered Katie says

You can make a really quick icing by just mixing powdered sugar or sugar-free powdered sugar with a few drops milk of choice. 🙂

(I think you could just use water for a thinner icing… I used almond milk for the one in the photos.)

  10. Chelsea says

this looks amazing! What do you have drizzled on the top of it?

As someone who just got married, it is hard not to get caught up in wedding madness! I’ve heard stories of brides making the bridesmaids dye their hair so that nobody has the same hair color as them! How crazy! Aren’t they in your wedding because you love them and want their support?

  11. Janice says

Have you ever cooked it in the microwave? Its how I make them, but when I open the door… it gets… a little flatter than it looks in the picture. I was wondering if the same happens to you.

  12. Hungry Heather says

I love what you’re saying about weddings – hasn’t it become the social norm to focus more on the wedding than the actual marriage? After three years of reading books like the Five Love Languages, Personality Plus and Building Your Mate’s Self Esteem; hanging out with couples who have been married for years and are actually happy, and learning as much as possible about building a solid foundation, my honey and I are finally at the planning stage. Honestly, this stage is getting less attention than other struggles in our life that we are going through together.

The divorce rate is over 50%, correct? There’s nothing wrong with wanting to plan out a beautiful wedding, but perhaps we all need to consider what’s going to happen several years down the road when the butterflies flutter away!

  13. Katie @ Peace Love & Oats says

Ahhh this looks so good! I love wedding shows and generally all things wedding, but I think being single with a wedding pinterest board is definitely crossing the line… although I’m also not one of those girls who dreams of her wedding and has everything picked out. I figure, how can I imagine my wedding if I don’t have the groom yet!?

  14. Char @ www.charskitchen.ca says

haha your friend sounds adorable! and I looove coffee cake, so I’ll have to give this a try.

can’t touch the wedding thing, haha. sure, I want to get married some day, but I’m more focused on building my relationship than thinking of the perfect “day.” Because it’s just one day out of your whole life with someone, and every day with them should be amazing.

  15. sally @ sallys baking addiction says

Katie! I’ve been brainstorming some new single serving recipes to bake up, so this post is PERFECT for me today. I think I’m going to try it with butte rinstead of oil or applesauce – and bake up in the oven. I’ll let you know when I make it and link up from my post. Thanks for another awesome single girl recipe CCK!

  16. Ashley Dodge says

Coffee cake is one thing I adore but hate to eat because of the calories! I can’t believe it either, but this recipe looks soo good. Perfect for a post-weekend breakfast!

  17. Emily @ Glitz Glam Granola says

Omg I love coffee cake and this looks delicious! The ingredients are so simple too and happen to be all things that I have on hand! LOVE that!! I can’t believe the recipe your friend found had so many calories- that’s horrifying! And I don’t have a wedding board on Pinterest but I do love all things wedding! I’m obsessed with the tv shows and get my fix from them!

  18. Sami B. says

    Yummmmm coffee cake.
I do have a wedding page on Pinterest, but its only for those pins that are so crazy cool I think “I want to do that IF I ever get hitched.” I feel weird planning a wedding without the groom….he’s kind of half the party, ya know? His opinions definitely count, so why plan the whole thing alone…when I’m still single?

  19. Sara Dane says

I wasn’t on Pinterist when I planned my wedding last year. It would have been SUPER USEFUL for keeping all my ideas and vendor websites in one place, but I would keep the board private so my guests would be still be SURPRISED at my fabulous wedding!

  20. Liz @ Tip Top Shape says

I’m gearing up for my first wedding where I’m not invited simply because I’m family. It’s one of my friends — which is making me freak out because that means that I am of a marrying age suddenly. Which is a very scary thought. lol

Love the mug cake. I’ve made the fattier versions before and love that there is now a better version out there!

  21. Juliana says

Oh my goodness! I can’t wait to try it!!! 😀

I think about my future wedding from time to time, but you’re right! It’s all about who’s standing across from you on the altar!

  22. Ann Claire says

This looks delicious! I assume the ones pictures you did in the oven, how is the texture when microwaved?
One of my sisters is getting married in August and the other is an event coordinator/wedding planner, so I hear lots of wedding talk. It’s always fun though. I’m definitely a few years away from that, I’m more concerned with finding the dream groom, the actual celebration not so much (at least not yet).

      • Kat Midón says

Old Married Lady here! Looking for recipes for one or two (hubby travels – he’s a musician)… So fun – must made it before my dinner for one – now I’m full… oh well – I liked this better than my main course! But I never microwave – was curious and used it – hence a spongey but tasty bit – forgot to use the nuts – this is definitely a great morning treat with coffee – my dog loves when I bring coffee and breakfast in bed – she thinks she’s getting something fabulous… Anyway, she won’t get this nor does she get the green smoothies we’ve been having! I’m going to make the chocolate cake in a cup next (tonight – hahah – I’m recipe testing!)… Thanks for doing this – it’s a great idea! AND I agree – ditch the wedding and take a nice vacation!

    • Samantha says

Good morning. I literally just did this one in the microwave.

Generally speaking, I find the microwaved versions slightly…spongy-er. That is the best way I know how to describe it. I still microwave more often than not because it is fast, easy, and no heating the oven.

I will say that having done some of these recipes both oil or applesauce versions that when I have done the oil it has been more of an oven consistency in the microwave…if that makes sense?

      • Chocolate-Covered Katie says

That’s because applesauce versions will also be gummier. So an applesauce version in the microwave = double gummy! Haha but some people like it that way! I know my friend uses the applesauce version of this recipe and loves it. I probably wouldn’t even like the applesauce version in the oven! Everyone’s tastes are different ;).

        • Samantha says

Yes…gummy is a good description. 🙂 Once I did applesauce + microwave + whole wheat flour. You can probably imagine. I was overtired that night. 🙂

The oil versions just have more of a rich baked goods taste to me.

      • Amy says

Hello! I LOVED this recipe…thanks so much Katie! But in fact I have to say that if you microwave it you CAN make it fluffy, light, and not gooey or dense at all! I also used whole wheat flour! The trick is NOT to overmix, as it will cause the cake to develop lots of gluten and become gummy. It is also very critical that you do not OVER-MICROWAVE it! (Try cooking 30 sec first, then stick a toothpick in to see if it comes out clean. If not, then cook it longer) So remember that less is more.

  23. Julia says

I spent half an hour last night looking for a mug cake recipe. I have one thing to say after reading this post: I love you.

    • Chocolate-Covered Katie says

  24. kaila says

I LOOOOVE baking with coffee! Adds such great flavor! I just made some coffee banana bars and they are delicious!

  25. Mallory @ Have Your Cake and Eat It says

I’m totally with you, Katie. I definitely don’t want a big expensive wedding; in fact, if the time’s right and the person’s right – why not elope?! It would save everyone stress, money, and time! All for what – one day? Plus, 50% end in divorce, so no matter how you look at it, there’s a chance it won’t last. I guess you could say I’m a little cynical when it comes to marriage 🙂

    • Chocolate-Covered Katie says

Exactly! Put the extra money in savings and you can use it for something that’ll last much longer than one day!

(Of course, I know some people disagree and say that you get memories from the day so really it lasts more than one day, and therefore the money isn’t gone within a few hours.)

  26. Erin says

    Oh, this looks so good!

I actually really love the deviation from chocolate recipes. When you have a craving for chocolate, you can just eat a piece of chocolate… but you have to get creative for non-chocolate things 🙂

  27. Shannon says

This is just what my Monday morning needed! I looove coffee cake, but even the vegan ones I’ve tried end up being a hazard to my health. I used oil and the microwave, and yes it came out “springy” but it was so delicious and quick, it didn’t matter. You’re a genius, Katie!

And on the topic of weddings – I’m getting married in a year and want to be at my top game health-wise, which is how I found your website! My sweet-tooth will never shut up, so healthy treats are my new jam.

  28. Kelsey says

I love your single-serving cake recipes! I make your chocolate microwave mug cake every day, and add a dollop of peanut butter to the middle of it before cooking. It’s heavenly! I’m super excited to try this recipe.

    • Samantha says

I did a version of this one with peanut butter as the oil and it was incredible. I like your idea of just straight peanut butter in the middle of the chocolate one though too.

  29. Sapphire says

Seeing as how I just celebrated my 3rd wedding anniversary, I can safely say that I don’t have a “dream wedding” to plan. Perhaps a “dream wedding vow renewal” to work towards! *lol* Actually…that’s not a bad thing to start saving for!

The coffee cake looks good. I’ll have to get a few things, but I’m eager to try it, perhaps later this week. I usually do the single lady cupcakes in my pretty coffee cup (it gives them a nice shape), and I’ve been slathering them with the Reese’s Frosting. Excellent stuff. 🙂

Speaking of…I have Zumba tonight…I can afford some yummy chocolate. Time for a snack 🙂

    • Ms. Chanandler Bong :) says

Congratulations on being married 3 years! That’s how long my sister and her husband have been married… Still seems like yesterday when we were standing on the beach, bawling our eyes out!

Haha, your Zumba comment made me laugh. That’s exactly the attitude I have! I mean, come on, we burn a LOT of calories, so why not have a little treat while sitting in front of the TV, watching Friends? 😉

        • Ms. Chanandler Bong :) says

Whoa, I just now saw your reply, 2 months later, haha. Anyway, I’m so happy since usually your blog posts are the highlight of my day!
I just saw the Slim Pickin’s Kitchen comment below and I instantly thought, “That’s so cheesy!” 😉
By the way, did you get to see the special preview for Matthew Perry’s new show last night? I can’t believe I forgot and chose yesterday to go to sleep early!

  30. Coach Kelly @ Get Fit with Kelly! says

I continue to be amazed…..I really thought the directions would include a microwave oven, and was pleasantly surprised that this can be made in the “regular” oven! Awesome! I really love your recipes, by the way. I keep forwarding links to my mom who is working on weight loss. And I’m *almost* convinced to be a vegan! LOL Just having a tough time giving up my cheese and eggs (we just got 9 hens for our backyard who should be laying by fall!)…..

    • Chocolate-Covered Katie says

Cheese was the hardest for me. I was obsessed. (Seriously, it was even part of my middle school screen name ;).) Oddly enough, now I don’t crave cheese at all.

And I actually like this recipe BETTER in the oven, so you’re in luck if you try it that way :).

  31. Cheri @ The Watering Mouth says

THREE of my friends ARE getting married this summer which is crazy because they’re all happening at once. One of them is happening Friday actually, it’s fun to think about it and anticipate!

Thanks for the healthier version of these muffins: they look AWESOME. Luckily, people on Pinterest rarely make what they pin; it’s more for the food porn I think than real things people will make. Haha.

  32. Kit-Kat says

    Katie,
You are such a genious to come up with delicious and healthy “bad for you” foods. THANK YOU SO MUCH!!!! And the pictures to the recipes are so awesome, too!!!!! I love you so much!
    PS: When I have a wedding, you’ll be my caterer…. you’re hired, lol! 😀

  33. Allison says

I love this! It’s genius! And I’d way rather be pinning stuff like this, than imaginary wedding plans.
I have some friends who seem to be obsessed with weddings, and sadly enough they are very single.
Fun story from my mom’s wedding though: her flower girl started having a nosebleed all over right before the ceremony… Talk about a change in dress plans!

  34. Emily says

this looks amazing! but it doesn’t have any coffee in it! i’m confused aha! love your recipes though, your single serving cakes have made my life! 🙂

  35. Sandy says

hmmmm just wondering about the pure stevia substitute – Just wanted to check if its 1/3 or 1/2 – maybe a little typo there!
Looks tasty as – I love coffee so can’t wait to try this 🙂
thanks for all your awesome recipes

      • Sandy says

        Wow – ok thanks! 🙂
I had never heard of the uncut stuff 🙂

I just made this for my morning tea break here in Sydney and I’m totally in LOVE with it!
        Thanks

      • Sabrina says

Katie, is the pure uncut stuff 100% stevia extract? I’ve got a bottle (it is a powder) from Trader Joe’s with the label “100% stevia extract” that I have never used and I always wonder if that is what you are referring to when you mention “uncut” stevia in your recipes? If not, then what is it and where can I find it?

P.S. I wanted to tell you that you look absolutely gorgeous in your mother’s day photo with your mom! 🙂

  36. Leanna C says

Have I tooold you latelyyy that I love you? 🙂

Thank you! I loooove coffee cake and can’t wait to try this at home!

  37. Mary says

Wow! You came up with a perfect recipe that I’ve been looking for before I even knew I was looking for it! This looks amazing & I’ll be making it ASAP.

  38. Ness says

I just made this in the microwave and it was INCREDIBLE! I love microwave mug cakes, and this is by far the best one I’ve ever tried- and it’s so easy. Thank you so much!

  39. Anonymous says

You just made my day. I have been wanting coffee cake but not a whole cake…tonight my craving shall be cured. 🙂

  40. Katie @ Nutrition in a Peanut Shell says

Oh my goodness. I’ve always wanted to try a mug cake but ~400 calories for a little cake that comes out spongey? No thank you!

    Definitely trying this, thanks Katie!

  41. Carley says

    Devine!! I’m making this ASAP!

Being a bridezilla is the recipe for a crummy wedding!! I got married recently and had the best time of my life because I cared about one thing, marrying my husband!!

  42. BroccoliHut says

I really do love weddings, and I always have. I think it’s probably the result of watching Father of the Bride over and over again as a child 🙂 I just went to a wedding over the weekend and loved every second of it!

  43. NessyS says

Hey Sweetie – this coffee cake looks tasty, tasty, tasty!!! I can’t say how much I appreciate the WW points in the nutritional info! No need to worry about conversions from cals to kilojoules!! So easy and great because most of the WW snack bars/etc we have here are full of wheat and other stuff and I really need to lose some kilos (or pounds!) but you need something right? You betcha! 3 points for a snack is really good!

I can’t say I’ve ever endured a bridezilla but I have endured a mother-of-the-bridezilla once when I was a bridesmaid! Your Mum’s maid sounds like a real trouper though! What a good friend!

  44. Melissa (Better Fit) says

That looks amazing! I’m maid of honour for my friend’s wedding this summer. We’re having the stagette next weekend!

  45. Bjorg @asolosingerinamerica says

Just made it and it is awesome!
I made it with oil ad it was moist and delicious 🙂

I wonder how yiu get yours with white topping? Is it the margine?

Also, the directiona are a little confusing, do I put dry and then wet together and thw mix the stroussel, and pt the strussel on the bottom of the cup? 🙂

    Thanks Katie

    • Chocolate-Covered Katie says

Mix all dry for muffin (not streusel). In a separate bowl, mix all muffin wet. Combine.

Then in another separate bowl mix ALL streusel. Put 1/2 the streusel in the middle of the muffin and the other half on top. 🙂

Everyone in our families is pushing the BF and me to finally get married. “You have been together for how long, five years?” To which I say, so what? All our siblings are married by now, so I guess the others think it’s their last chance at a great party. Yeah, get some kids and anniversaries first. We’re fine, thanks.

  47. Lady Jennie says

I was just craving a healthy dessert and thought to myself, why not check out CCK’s website. Maybe there is a 1 minute cake recipe I can make. Ahem. 🙂

My wedding was perfect, perfect, perfect, and I had bridesmaids of all shapes and sizes. And singers. And dancers. And an entrance set to Braveheart. And a dreamy husband. 🙂

Throw out the contracts! They are not necessary.

  48. Lady Jennie says

    Mmm! Yum!

I felt like I was making something for the Holly Hobby Bake Oven (they probably no longer had this when you were a kid), but it saved me from some unnecessary chocolate eating.

  49. Stella says

Thank you so much for all the “single-serving recipes”! I love baking muffins but I can’t hold myself back and basically eat a whole batch in one sitting!! I just tried this coffee cake and because I don’t use spelt or white flour – and love to experiment – I made it with 1 Tbsp. Brownrice flour and 2 Tbsp. almond meal (and butter instead of oil) – yummy!!

  50. Sophie says

Happy National Chocolate Chip (cookie) day!!! (May 15th)

I hope you have a great new recipe for us today!! 😀

  51. Fiona says

Just want to say that I appreciate that you include microwave directions. It seems like many vegans these days are under the impression that a microwave isn’t healthy when nothing could be further than the truth! Decades of research have proved their safety, and it’s the best method of cooking for preserving the most phytonutrients, macronutrients, and micronutrients. More than steaming! Sorry for my tirade. 🙂

    • Anonymous says

Microwaves actually change the structure of food by the friction caused by heating, rendering it unrecognizable by the body. The body then treats it like a toxin, not food. Food cooked in a microwave causes an immune response (a flood of white blood cells) to deal with the altered food which also causes hemoglobin deficits. (anemia can also be a result because of this).

Any food heated higher than roughly 114 degrees causes nutrient, enzyme and vitamin loss, regardless of how it’s heated. If your food comes out steaming hot, it will have gone through some degree of nutrient loss.

  52. Andrea M says

I just tried to make this delicious-looking treat. I followed the directions perfectly, but I just ended up with a pile of mushy dough-ishness. What could I have done wrong? :-/

    • anon says

you obviously couldn’t have followed the directions perfectly if it came out like that! maybe you mis-measured something? that happens to me all the time! but i just made this one this morning, so i know its a good recipe :). ooh i know! what flour did you use?

      • Chocolate-Covered Katie says

Andrea, can you please tell me more about the specific ingredients you used? It’s almost impossible to know what your mistake could’ve been unless you give more specifics, since I wasn’t there to see. Hopefully we can figure it out!

        • Tunia says

Andrea, I also had some trouble with this. I had to bake it (in the oven) 6 minutes more than called for to get it to set. I used whole wheat flour, and melted butter as my “oil.” Everything else I used as called for. The picture makes it look nice and fluffy, like a cupcake. Mine was nice and dense, like the sour cream coffee cake my mom used to make, but it would have been gooey if I’d taken it out of the oven at the specified time. As it was, it fell. But that’s a problem I always have with baking powder goods. I must overbeat it or something.

          • Gracie says

I realize this comment is like 8 months old now but I think I may have just made the same mistake. I used 2 tbsp of oil instead of tsp… they took longer to bake and were dense. Hope this helps future bakers 🙂

  53. Ashley Paterson says

Ok….so don’t joke around about about being “pinned to her “Dream Wedding” Pinterest board” Every night I get on Pinterest and I always end up back here at your website. ;D My husband jokes around and says why don’t you marry this girl already. lol

I have made your One minute chocolate cake a few times now. It goes down a treat!! Made it for Mother’s day. Used separate bowls for mixing the ingredients for each person. Made a huge mess, but they turn out great each and ever time. I have used the apple sauce variation and used just straight sugar instead of the stevia. But will give that a go, one of these days. Does that make it less calories?

I am so gonna have to try this coffee cake now!!!!

  54. Sarah says

O-M-G! I can’t wait to make this one!!! I am seriously addicted to your recipes, Katie! I baked mini carrot cakes and a pizza cake for my friend’s birthday. Amaze-balls!

  55. Leah says

Ah. I know of the evil – but so good – recipe that this is inspired by. I made it once. And while it was delicious… I’ve never been able to convince myself to make it again. I did however just make your recipe and Katie dear, you’re a food genius! I’ve not had a chance to try many of your recipes yet but I have made several of them and I’ve loved them all, but this is by far my favorite! I love cinnamon anything. (=

I have a dream wedding board on Pinterest… but it has to be said, my dream wedding is small and simple. I don’t need a fancy dress or ridiculously decorated cake. I don’t want my wedding to be all about me. I want it to be about both my groom and I together as a couple and surrounded by our closest loved ones. So, my wedding board is rather small and consists of sweet, simple ideas of things that we could do to give our wedding that cozy, intimate feeling. And there are of course some dresses and veils included. I’ve known a couple Bridezillas in my time and I just don’t understand why they have to be so dramatic and make what should be a happy event stressful for all involved. I’d rather my wedding and all the days leading up to it be filled only with happy tears – not bickering, anger and tears of frustration!

  56. Rachel Miller says

I wonder how almond flour would do. I think I will have to try! Thanks so much for putting recipes out there for people who loves sweets but aren’t eating sugar! I have got to lose the baby weight from having my daughter (8m ago) doctor’s orders but I just have a huge sweet tooth! I was so excited to find your sight!

  57. RP says

Definitely want to make this this afternoon as my snack with coffee! How do you make the single ones in the oven? Are you using a special mug or just using one of the tins in a muffin tin?

  58. AJ says

Hi CCK. I was wondering why you always use spelt flour? Is it nutritionally superior to all purpose or whole wheat? What’s the difference between spelt and all purpose? Thankssss

    • Anonymous says

Hey, I don’t want to speak for Katie, but I can answer some of your questions. Spelt flour is MUCH more nutritionally dense than any form of wheat flour and fairly high protein to boot, not to mention a higher fiber content too. It also contains much less gluten so it’s quite a bit easier to digest. Healthier all round really. 🙂 Hope that helps a bit.

  59. casey says

This looks good! Bet it doesn’t even need frosting/glaze. I just made your 1 min chocolate cake yesterday for my friend’s birthday. Perfect 1 person serving! Put a candle in it and everything. 🙂 made 1 for myself to sample ahead of time to make sure it was good (it was!!) I chose to use 1TB coconut sugar in place of your 2 tsp sugar. It was delicious and moist! I used coconut oil (not applesauce or alternative.) Made it in a 1 cup round glass pyrex dish in microwave for 1 min. Had little trouble getting it out of dish. I greased with coconut oil. Should I have used something else? I tried once taking it out when hot and once when completely cooled, both times stuck. Advice?

Also, I made your peanut butter chocolate banana frosting. Yum!

    • Jenny$1983 says

I was just about to comment on that myself! Pretty sure there should be coffee in there somewhere… 😀

        • Jenny$1983 says

Ah, I’m sorry! I’ve only ever seen a coffee cake given that name with coffee flavouring, usually with walnuts involved somewhere too. My mistake 🙂

          • Jenny$1983 says

By the way, I’ve just made it and took my first bite (using spelt flour, 7 drops vanilla stevia, and coconut oil in the batter and streusel), and it is heavenly … I think this is definitely my new favourite Single Lady muffin, oh my word… 😀 Thank you Katie, as always!

  60. Anonymous says

Would love to see a non-wheat non-sugar version using almond flour and or coconut flour! Sounds delicious.

  61. Katie says

Looks Fantastic! I have several friends who have gone vegan recently, so I can’t wait to make these treats for them!

In other news, has anyone ever told you that you look strikingly like Anna Kendrick?

  62. Alanna says

This looks amazing! I’m hoping to make this tonight when I get home. I feel silly asking, but are you supposed to chop the pecans/walnuts for the streusel? It looks crumbly in the picture but I think all it says in the instructions is to combine the ingredients. Chopped or no, it sounds / looks delicious!

I must be odd as far as weddings go… maybe years back I would gotten caught up in the fun of it, but right now when I try to picture it I just get stressed thinking about what a logistical nightmare it will be to try and find a venue that is a least slightly convenient for some of the guests (both my boyfriend and I have friends and family all over the place), plus there’s the potentially awkward meeting and mixing of family that don’t all get along… ugh. I really think eloping or going to the JP and then having a casual party somewhere is the way to go (for me).

      • Alanna says

Lol no worries… I’m guessing most people will figure that part out. I’m just really literal when reading recipes (told you I’m just good at following instructions, hehe). 😉 I just made this, and not surprisingly it’s awesome. I love the streusel and the contrast in texture to the cake!

      • bob says

I had the same question about chopping the streusel too! Consider this a friendly reminder to edit that part of the recipe, Chocolate-Covered Katie = )

I’m morbidly curious- what were the ingredients in the 720 calorie cake? That is talent, putting so much in one cup.

    Two things:
    1. I love, love, love your recipes and I can’t wait to try the coffee cake!
    2. Destination wedding. Best decision I ever made. It’s about you, your sweetie, and your very closest friends and everyone gets a great vacation! The ladies at the salon said I was the calmest bride they had ever seen and it was the best day ever. I had no one to impress, and nothing to think about but spending the rest of my life with my favorite person ever : ).

I will say I was a great bride. I let my bridemaids choose the dress and colour and let them do their hair and makeup however they liked. And one of my bridesmaids was 6 months pregnant on the day. She practically rolled down the isle. It was great because we were all relaxed and had a fun time.

If I could offer one bit of advice for those planning a wedding….wear comfortable shoes!!! I had a traditional long wedding gown but opted for ballerina type white satin slippers. You’re going to be walking around, talking/chatting, posing for pics, and dancing your day & night away. So be comfy!!! No one even noticed my shoes until I pointed them out! A friend of mine wore the same kind of shoe/slippers at her wedding & said she was so thankful that she did! 🙂

    Hey Katie,

I have a question regarding the VitaMix giveaway entries… since I’m in medical school and studying for my boards, I disconnected myself from Facebook until I’m done with my Step 1 in June, so I was wondering if I could just share at least 3 recipes on Pinterest (which I’m inclined to do anyway, hehe)? No worries if not, but I just reeeeaaaally want a vitamix 😛

I know you spend a lot of time on your recipes and this site already, Katie, but I’m going to request additional information. I often want to make your single serving recipes, but I am NOT a single lady and if I’m making muffins, I need a dozen or two at a time. I have in the past just gone through and multiplied all the ingredients by 12, but it does get tedious and I need to find somewhere to save this information, etc. etc. I was hoping that instead of hundreds/thousands of us readers each doing all this math individually in our kitchens each time, perhaps you could post a link on recipes for a ‘panful’. I know I’d try more of the single serving recipes that way.
    Thanks for considering my suggestion!

    • cck says

I actually don’t have recipes for bigger servings of things like the single-lady cupcakes, so there’s no recipe I can link to. But I AM working on some larger-serving muffin recipes :).

      • Melanie says

Noooo, but you could do the math and post it in a link. Or, *I* could do the math and send it to you. Or I could do the math and post it in a comment.

        • Chocolate-Covered Katie says

Oddly enough, it’s not always as easy as just increasing that much. For example, if you try to do that to my single-lady cookies you end up with a goopy mess! Things don’t always scale properly, for some strange reason.

          • Melanie says

Hmmm I haven’t tried that one, but I’ve made a few successfully, most recently the single lady cupcakes/muffins. I did make the coffee cake last night and it was great, but I couldn’t believe how long it took to make one cupcake….coulda made a whole batch in that time! Good thing the rest of the family was asleep 😉

If I can find my notes from my 12-at-a-time SL cupcakes, I’ll post it in a comment.

  75. Heather B says

made this yesterday amazing….just curious how you come up with the calorie info, do you use a website or just read the labels? secondly: on the vitamix giveaway if I already follow on facebook and recieve email can I still use that option to enter the giveaway? You have no idea how much I would appreciate the vitamix !!!!!

    • cck says

Now that people want full info (as opposed to just calories), I usually use spark recipe calculator, which is free.

And yes of course you always can!!

      • Heather B says

I must apoligize because I kinda went crazy the last couple days…and have lost all ability to follow directions so I am so sorry for my screw ups with the vitamix entries…

Also, there were a couple recipes that I went on sparkrecipe and re-entered and got different results…I’m assuming it probably has something to do with my ingredients as opposed to yours (such as strawberries vs cherries, or medium banana vs grams, etc) thanks for always responding with such speed.

  76. De-Lila Gonzales says

I just made this but paleo’fied it. By using 1/2T coconut flour, 2T almond meal. And more fiber stevia. It was so so sooooo good! I actually made a second one too and added ground ginger, nutmeg and some shredded zucchini. Mmmm. It’s more of a mix between a blonde brownie and baked oatmeal. But amazing non the less. Thanks for the guidelines and all your other paleo approved recipes.

  77. Marla says

I was at the market yesterday so I bought spelt flour JUST for this. I forgot to also get the nuts, but I think it’s fine without them, and I made it in the oven. I’m eating it now – soooo good! (But next time I’m adding walnuts or pecans for sure!)

  78. MJ See says

This looks great. I am always looking for a fast breakfast and I’m glad I know not to be disappointed if it comes out flat.

I can’t believe people ask someone not to break a bone. How can you prevent that? We called my wedding “The Handicapped Parade” because my sister (maid of honor) was on crutches because of ankle surgery. She asked me before she had the surgery and I told her that her being pain-free was more important to me than having crutches in pictures. Our best man had a cane because his MS had gotten so bad he was not able to walk outside unassisted and another bridesmaid was on crutches because she was hit by a car while crossing the street 2 weeks before the wedding. We were just happy to have them all there.

  79. Becky Leppard says

I love you one serving recipes!! It is so nice not to have a whole coffee cake staring at me begging to be eaten!!

Okay, I just squealed a little… Okay A LOT. Because this is so easy and I have all of the ingredients in my kitchen! That doesn’t often happen with your recipes because we don’t commonly have coconut oil or butter, beans, or bananas. (Sad, I know.) But this I can make straightaway!

  81. Chris says

Who said healthy food doesn’t taste good? I am thrilled to see healthier versions of yummy desserts. It doesn’t have to be all “sticks and twigs”.

I have a quick and really weird question. I have a one cup glass pyrex round dish and was wondering if that would work for this? I want to bake it in the oven, hence the pyrex dish, I’m just not sure if the size is ok for a one muffin sized cake. I’m sure you probably have no idea, hahaha. Just thought I’d ask. (I don’t have a muffin…..I NEVER make muffins…Until now)

      • Rachele says

I made two coffe cakes, for my daughter and myself, using two 6 oz Pyrex dishes. After baking at 330 for 15 min, it looked like it needed another minute, but had already cooled. So I put it in the microwave for about 30 seconds (1200 watt microwave). It was delicious and had a nice crown.

  83. Albizia says

I am not obsessed with weddings but I am definitely mad about desserts. Yum! 😀 Quite a few of my friends already got married and I don’t remember any of them getting obsessed with the preparation. It is crazy enough without obessing so why make it even more difficult?

  84. LJ Briar says

I actually love weddings (and am planning my own at the moment) because I love to see how different couples express themselves through their wedding. And sometimes I just have a morbid fascination with how far someone will push the ostentation of their “big day”. That said, I certainly don’t condone Bridezilla behaviour and I really, REALLY hope I won’t turn into one as my “big day” approaches!

  85. kat says

I made this with rice flour (I’m celiac) and it was really REALLY good – perfect texture! i did it in the micro for 1 minute!

  86. Tiffany says

    Hey Katie,

In a post last month you mentioned that you had news to share…just wondering when you’d share? I’m excited because i think its book deal! 🙂

I also want to make your candied brussels sprouts. Do you dry roast them and do they burn without any oil in the over. (I want to add coconut oil after roasting but I don’t want them to burn in the oven).

    Thank you!!

  87. Raia Torn says

Hi. Weird question, but where to do you get your nutritional information for your recipes? Someone asked for that info on one of mine and I have no clue how to correctly asses that. :p Help!

  88. Rachele says

This is absolutely delicious!! Thank you for sharing another healthy and fun breakfast treat using spelt flour.

  89. cynthia says

I made these yesterday and made enough so that my kids could have them this morning for breakfast. These were ummmm um good! Next I am going to try the mocha cake

  90. cynthia says

Quick question how did you get the white sauce on it? I don’t want to miss out on any of the sweetness lol

    • Chocolate-Covered Katie says

You can make a really quick icing by just mixing powdered sugar or sugar-free powdered sugar with a few drops milk of choice. (I think you could just use water for a thinner icing… I used almond milk for the one in the photos.) .

  91. Jody Courtney says

Katie, this looks wonderful! Speaking of weddings, or rather anniversaries, we will be celebrating our 25th this Autumn and I have already been collecting coffee mugs to give as favors along with a Single Serving of Mug Cake. HOWEVER, I think the plan has now changed! This will be way more meaningful! We get up every morning and enjoy a good cup of coffee and some together time before our days get crazy! We pray together and always, always talk! This recipe will lead right into sharing one of our tips for a lasting, loving marriage! Thank you!

We started with a very simple wedding, (the florist didn’t even arrive until after the ceremony, LOL) and a reception that was thrown together, by today’s standards, but we have been so happy together, (even during the very difficult times)! Your spirit is so refreshing and you will reap such wonderful joy if you continue to look at your wedding day with that view! Here’s what I’ve always told my, (now grown) daughters, “A wedding is a DAY, a marriage is a LIFETIME, keep your perspective grounded.”

    Thanks for the post!

  92. ruby costa says

i just made this as a super quick snack and it has been the only microwaved treat that has not disappointed me! i sub’d almond milk for some of the water and swirled the topping throughout the batter [whilst still saving some for the very top] and it was heavenly. thanks so much katie!

  93. Shannon says

Wow this is tasty! I added a little coconut extract to the batter and for the topping I mixed Sucanat with some Olivio Coconut Spread (a.k.a coconut butter). I was going to top this cake with your cheesecake sauce but it’s perfect as is.

  94. Kristy says

Yum! I just made a quadruple batch of these and ate two before I could stop myself! I used 1/3 whole wheat and 2/3 white cake flour, half and half coconut oil and apple sauce, and half Stevia half sugar in the cake part. I used xylitol in the streusel, and confess to doubling the streusel recipe ( it’s my favourite part of coffee cake!) I baked them in the oven and they rose beautifully, and were nice and light. Thanks soooo much for this delicious recipe!

  95. Cat W. says

Yeah, I tried that nasty Pinterest one, and it was the consistency of rubber. Tasted like rubber, too. Never trust a mug cake with a whole egg in it, people!! I will be making this one tomorrow night. You haven’t let me down yet–you’re chocolate mug cake is a constant in this house.

As for your question, my friends have all moved on from wedding talk to BABIES. I have one of those, so I guess I’m in the club.

    • Chocolate-Covered Katie says

lol wedding talk is scary enough for me right now!
Although… I kinda like the fact that some of my friends are having babies now. It means I get to buy cute clothes for them and play with them and hold them… and then give them back! 😉

  96. Tamara says

Just made this with applesauce, whole wheat flour, and used the microwave. With the combination of those, I didn’t expect much. But I took a bite, and just stared at it for a couple seconds trying to comprehend how it was so tasty! For the streusel, I made more of a syrup-y consistency, so the cake came out like a moist cinnamon roll. Delicious! Thanks for the recipe, I’m sure I’ll be making plenty more of these bad boys!

  97. Jen says

I made this for breakfast this morning (with whole wheat flour, in the oven) and it was DELICIOUS!! I’ve made SO many of your recipes, and this is one of my favorites!! You are a GENIUS, Katie!! I can’t wait for your cookbook!!

I also have a question about this recipe. Could I mix it up the night before, refrigerate it, and pop it in the microwave or oven the next morning??

  98. Amanda says

I have finally tried this recipe and have to say they are the best mini-coffee cakes ever! You are truly amazing, Katie. I’ll be making more this weekend.

  103. Ella says

I made this. It came out hard as a rock and I only put it in for 60 seconds ):
I used all the ingredients you said. :c

  104. Claire says

I made this for my family last week and already they’re having me make it again because we all loved it so much! I used white flour, oven, and applesauce, and none of my family noticed any gumminess. They were probably too distracted with the delicious doubled streusel. 🙂 Thank you, and can’t wait to buy your cookbook!

  105. Melanie says

I made this last night for my parents. My mom said that it was the best thing she had tasted all day and my dad said that it tasted just like a cinnamon roll. They were both impressed! I made the chocolate mocha cake for myself. See comment under that one. Thanks Katie!

  106. Rena says

I just made this and loved it! I used whole wheat flour, a bit more baking powder. I also used coconut oil and only truvia. eating it now- yum!!!! thanks!

  107. Susan says

Sorry, I hit something & it sent the unfinished email! Not very technical here! As I was saying, in this 1 minute coffee cake in a mug recipe, you use spelt, but you mention you can use a rice flour/almond flour mixture. Can you use just rice flour or just almond flour when baking? This sounds so delicious. I can’t wait to make it. Thank you for all of these wonderful decadent yummy recipes.

  108. Rosa says

I just made this! I over cooked it in the microwave 😛 but it turned out still tasting delicious! Thanks Katie! <3

Everytime I make something from your blog I think it may be my favorite one. Just made this for breakfast and I seriously think it’s my favorite. It was so easy to make and tasted like an ooey gooey cinnamon bun. I used mashed banana because I didn’t have apple sauce and it worked well. Going to be making this a lot. Thank you Katie! 🙂

I just read the nutrition info. How is it 2 grams of fat per serving if it has 2 tsp of oil? I used coconut oil in the recipe (it was already melted…yay August! *ugh*) and 2 tsp is 10 grams of fat. That adds 70 more calories too, unless I missed something?

  115. Heather says

I was so excited when I learned you could make cakes in the microwave!!! I had never thought about that before. So I made this for breakfast today, but I made a few changes. Okay, I sort of turned it into a different recipe. 1) I used whole wheat flour, 2) I used canned pumpkin instead of applesauce, 3) I left out the streusel and threw in some raisins and pumpkin pie spices. It was amazing! It didn’t rise as much as I expected, but it was still delicious, especially with some cashew butter on top!

  116. Allie says

I saw this recipe this morning, and I promptly made it for breakfast. It was delicious! Since I am a celiac, I made it with a tablespoon of GF oat flour, a tablespoon of sorghum flour and a tablespoon of brown rice flour (really random-I know, but it worked!). I know this is something I will make again :).

  117. Jessica says

Oh my goodness! I thought your 1 minute chocolate cake was genius, this goes onto another level of deliciousness Katie! Thank you for sharing.

  118. Mary says

Tried this recipe and it was amazing and super easy. I added a little extra cinnamon to the dry components. I love cinnamon and adding a little extra to your daily intake is is good for stabilizing blood sugar and lowering bad cholesterol.

  119. Tina says

Just made the coffee cake in a mug for my kids! They adore it!! I substituted cinnamon applesauce for the sour cream/ yogurt.mainly cause thats all I had.this is great for very small get togethers 😉

  120. Rachel says

Yum! This was perfect–exactly what I needed tonight! And filling, actually. I don’t think I expected that. I have never “baked” anything in the microwave–loved it!

  121. Nick says

I wanted something sweet so I started surfing the web and found this. It only took me a half hour to decide that I wanted something sweet, find a recipe, make it, eat it and clean up. And it turned out great. I loved it, I doubled the streusel and mixed half in with the batter. Definitely a win!!!

  122. Kim says

I don’t know if this is a good thing or a bad thing I found this. It is absolutely delicious and super easy to make. I predict I will make this often! 🙂

  123. Jess says

I just made this and it was SO good. I made the mistake of putting it in too big of a mug and ended up needing to make more batter. I also doubled the streusel before I knew I was going to have to make more batter. I’m pretty sure there was more streusel than cake…and I had to cook it a bit longer but it was still really good. I’ll make it again in a smaller mug and maybe even have the patience for the oven. I honestly didn’t think the texture was too spongy in the microwave but I did use oil.

  124. Steph says

I made this for breakfast for a friend and I…it is soo yummy! And mine actually looked exactly like the picture! Haha..thanks for the great recipe!!

  125. JC says

So good this morning at 4AM, as we were up from jet lag and hungry prior to breakfast- that will be cherry bomb oats! And thank you.

  126. Christine says

I had to search Pinterest for this recipe, I knew I had seen it before! I’m craving cake right now so will have to try it, but I’m going to use agave syrup….
    thank you Katie!

  127. Kay says

I use a metric system but I didn’t convert it to ml and all – I just literally used the tablespoon that I use at the dining table, mixed everything together and baked it in a muffin cup. It turned out a little like a cookie, albeit a soft cookie. And I noticed that when I mixed the batter, it wasn’t runny – it was literally like cookie dough. That’s not supposed to be the correct way, right? :/

  128. Jan says

This looks yummy! Would Spenda work? And how about coconut oil? I’m trying to avoid vegetable oils, sugar and margarine. I tried Stevia (I think it was) in Sprouts and didn’t are for it. It was bitter… Or something.

  129. Lucy San says

    Delicious!
I planned my wedding in three weeks. To me, all that was important was that I was marrying the man of my dreams and that all the people I loved was present. I don’t get these people who go to a different country to get married. What’s up with that? It means a lot of people can’t afford to be there on your big day.

  130. Kelsey Ensz says

1 minute coffe mug cake. Made almost as stated. Used 2 T. Spelt and 1 T. Tapioca flours. Xylitol for the cake and honey for the streusel. So good! Topping ended up like caramel. Thanks for another hit!

  131. Elaine says

Just found out that Hubbie is wheat sensitive. So instead of using the dry ingredients listed, I substituted it with gluten free pancake mix (only thing I had). Turns out just as yummy as coffee cake with 1 pleased Hubbie! Thank you.

Hi Katie. I love your blog and have been trying and playing with your recipes. I have a blog too and was wondering if I could post the recipes themselves (ingred. instruc. etc.) how I make them and always link back to your blog (either acknowledging inspiration or your exact recipe)?

I don’t want to post instructions and etc. until I get your thumbs up.
    Thank you. 🙂

I researched healthy muffins because I have been dying for one, and I came upon this. I made it and I have to say that it tasted absolutely no different than the huge caloric ones you buy at the store. It was amazing. I still can’t believe it. I’ll be using your recipes from now on!

  135. Trista says

This looks so yummy! I’m gluten intolerant, though and I’m having trouble getting this turn out right. I used gluten free all purpose flour and tried making it in a mug and it turned out totally weird. I tried again another day thinking maybe I had measured something wrong. And I baked it in the oven. It was better than the microwave one, but still a little gummy. Not sure what I’m doing wrong or if maybe I need to try another flour.

  136. Lauren says

Where does the coffee flavour come from? Should I add dry coffee granules to the mix or some liquid coffee? I really want to make this but I am not a natural baker so have no idea about wet/dry ratios. Please help!

I had to laugh when I read about the contracts that they have their bridesmaid’s sign. In my opinion they should want the bridesmaids all to have broken bones, bad hairstyles and teeth knocked out….it makes the bride look even more gorgeous in comparison! 😉 Why do you think most brides give the bridesmaids the most god awful dresses?

Hi there, I’m really trying hard to find the coffee in this cake, but can’t. Is it a trick? Love your website by the way.

  140. Nicole says

Loved this! I multiplied everything by 12 and it worked out perfect! I also used almond flour, yuca flour, and rice flour. So delicious!

  141. Taina says

i made the chocolate cake in a mug recipe and it tasted great! i made three and made a 3 tier cake and frosted it with your reeses frosting it was amazing! I will try this recipe when i get the chance and i hope it is as good as the chocolate cake! 🙂

  142. Jordan says

Absolutely delicious recipe. I am gluten intolerant and lactose intolerant so I used Earth Balance “butter” and Buckwheat flower which is naturally gluten free. This turned out the same as the more heavily caloried coffee cup cakes. The only thing that I noticed was that it didnt rice as nicely as the other coffee cup cakes, but this might be from the flour. Due to the fact I tried the others with regular flour (before I was gluten intolerant). Overall absolutely delicous and the perfect size for a sweet morning breakfast.

  143. Danielle says

Isn’t the flour alone about 180 calories (over your total of 130) …please tell me I’m wrong because this looks delish!

  144. Sarah says

I have had this recipe saved in Evernote for months. I finally tried it today. The first attempt was not appetising at all, I tried it in the microwave and overcooked it. I had put it in a much larger mug, and it wasn’t a good idea to do that.

However, the second time, I mixed it up and then put it into a single silicon muffin tray, and watched the microwave carefully to try to gauge the right time to stop. In the end, what came out was pretty good.

I used half and half olive oil and coconut oil. I also used crushed up almonds instead of walnuts as that’s what I had. But it was good. Nutritionally, mine worked out to around 230 calories, but I’m happy with that. Unfortunately though, there’s no fibre in it.

    I like the idea.

Hey Katie! I am in love with your blog! I have tried a bunch of your recipes and have had so much fun experimenting with them. I know it’s been awhile since you posted this, but I just wanted to tell you I tried it, and it was amazing! I think it’s my favorite recipe from your blog so far! I also wanted to ask you how did you get the streusel to look so amazing? Mine tasted good, but it didn’t look pretty at all 🙂
Thanks so much for the recipe, and for this whole blog!
P.S Oh, and by the way you are absolutely gorgeous! Like drop-dead gorgeous! Like I just want to hate you cause your so gorgeous! LOL, but it’s hard to hate someone who seems so sweet, and posts so many amazing recipes 😉
But seriously you are like breath-takingly gorgeous!

  146. Arianna says

I just tried this recipe and it was fantastic! I used ww flour and added some cinnamon to the batter, and accidentally splashed in some extra water, so it was a little flat but it was light and fluffy and really good :).

  147. Hilary says

So my current tale of woe is I cannot have any sweeteners except Stevia and Xylitol. That works fine for the coffee cake part (I’m hoping–haven’t tried it yet, but excited!). But for the streusel, what would you suggest if I cannot use brown sugar or sucanat? Or am I out of luck on streusel? 🙂

  148. jenlp says

this is very tasty and very easy. I topped with your coconut whipped cream and a drizzle of coconut caramel sauce.

  149. Amanda says

I just made this and it was delicious! I used 1 1/2 T oat flour with 1 1/2 T WW flour and organic brown coconut sugar. It took exactly 1 minute in the microwave it doesn’t look as pretty as yours but I don’t even care. Now I want like 6 more 😉 I might have to make up several of them at a time to keep in the freezer for quick easy treats a couple times a week. THANKS!!

When i first tried this i got a wonderful result…just like your photo. It was a “did i bake that??” moment. But now i just cant replicate it. They are not rising in the oven like before and the inside is very dense and gummy and doughy. I used spectrum shortening every time and using the oven. Im an old guy so not a natural baker or cook. What is happening when something like this does not rise? I use spelt flour and swerve sweetener every time. Many thanks for any help…im not certain if i used an electric mixer the first time. i hand mixed with a spoon with all the failures. Could that be it?

  152. Kelly Heck says

Instead of 2 tablespoons of margerine, olive oil, or applesauce, I used half coconut oil and half applesauce. It was SO good. I made one on the microwave and one in the oven to compare and the oven was a bit better. I will definitely be making it again. I also used coconut oil in the streusel instead of margerine. Thank you for sharing your recipe. 🙂

  153. Lily says

sooo yummy! had it for breakfast with a chai latte and banana……coconut sugar is good in it and whole wheat flower, I did half applesauce half butter and added cinnamon to the actual cake also, the streusel I did the same except loaded on the pecans. delicious!!!!!!!

I’d like to ash which temperature / mode you’d recommend using the microwave?
I just stumbled over your recipe; it sounds delicious. And I’m thinking, I’d like to make one as a surprise for my Mister 😉

I love baking but I usually spend hours in the kitchen – but today is such a nice, hot, sunny day here and I’d rather spend the day outside so I’d like to test the fast microwave version. I just tend to ruin things in the microwave. I’m not sure how to set t up so the batter doesn’t either remain fluid or explode inside the mug.
    Man, do I prefer ovens!
Tips for me? Maybe even in degrees (Celsius, I’m in Germany)?

    Thanks so much for sharing!

Oven texture will be much better. But if you have a microwave, maybe a minute will do it, depending on your wattage.

  156. Hannah says

Hi! I LOVE this recipe- so simple and delicious! I used 1/4 tsp chia seeds gelled with 1 tsp water instead of oil or applesauce. I also topped it with a spoonful of peanut butter instead of frosting. What a great late night snack! Thanks!

  157. Rosina says

It’s half 12 at night, and I just found this online – I had never heard of cooking cake in the microwave before, and the combination of that and the idea of making only a single small cake rather than a batch made me so excited that I had to run downstairs and make one.
I’ve just finished it, and it was delicious! I will be visiting your blog frequently from now on, Katie! Thank you! xx

  158. rk says

Made this first with the oil…never seemed to bake through, even after 17 min. But the flavor was good so tried again. This time I tripled the recipe, used margarine and it was a success!!!! Very tasty, thanks!!!!!!!

  159. Vicky says

In the past, the “mug” recipes have always been a letdown. They’re usually rubber when they come out of the microwave, regardless of how carefully you watch them. This recipe, however, is absolutely perfect!! I was leery of all spelt flour, but OMG…… it’s the perfect texture for this!

I would love a “full-size” recipe for this to serve as either dessert or as a light breakfast along with fruit.

Thank you for another amazing recipe Katie!!

  160. kelsi says

I love love love this recipe!! I saw this recipe yesterday, and woke up at 5:00 so I could give my hubby some, and he loved it!!! I think this is my new all time favorite recipe!!! 🙂 🙂 no joke!!! I make it for all the parties I go to, and on special occasions. I add about 1/2 teaspoon coffee powder to the recipe for my friends birthday, and it was fabulous!! 🙂 thanx so much Katie for yet another amazing recipe!! 🙂

THIS IS HANDS FOWN THE MOST AMAZING COFFEE CAKE I HAVE EVER HAD!!!!!!!!!!!!
Katie, I am not a vegan but this is the best coffee cake ever healthy or not! Thank you sooo much for the recipe! I can’t wait to make it again!

  163. Tim says

This was so good, love your recipes! I made this for the second time, today, and replaced apple sauce for mashed banana. Might not be to everybodies taste but I thought it was delicious!

  164. Roxanne says

Yummy! Tgere were so good, I made them twice today! To make them gluten free, I used 1 Tbsp millet flour, 1 Tbsp brown rice flour and 1 Tbsp arrowroot starch.

  165. Christi says

I just made this and it came out so good! I used xylitol instead of sugar and grass-fed butter instead of oil/margarine..I also added a couple of chopped pili nuts instead of pecans. Yummmm!! 🙂

  166. Alyssa B. says

This was delicious! I’d never made a mug cake before; usually I only use my microwave for re-heating leftovers. I used whole-wheat flour rather than spelt and cut the sugar down to one teaspoon. It cooked beautifully in one minute (to my surprise), and popped right out of my mug–no greasing required! It was tasty. It’s definitely on my “cook again” list.

  167. Jenny says

WOW, I made this today and it’s so yummy! I think this one is worth doubling then using a regular sized mug because lets face it… one is not enough! After doubling the recipe, I put it in for 1min 30 sec and it came out perfect. The second time and I swapped the vanilla extract with almond. I was missing brown sugar so I just used regular sugar and added in a drizzle of molasses to make up for it. I have to confess that I also added more sugar. I do not have nuts so I’m wondering if I could try raisins next time. I think this one will be one I’m going to enjoy and play around with! What a quick an easy way to enjoy a muffin. Thank you for this! And I’m also excited that I can make it vegan and no one knows.

I made this tonight with suggested substitutes and it didn’t look remotely like this. Taste was ok but that was about it.

  169. Maarja @ cakeforone says

I tried something inspired by yours, with 2 tbsp rice and 1 tbsp coconut flour and switched water for full fat youghurt and it came out yummy. Only thing was that it didn’t have a cute high dome like yours? Is the one in the pictures baked in the oven or microwave? 🙂

Gooood Morning, Miss CCK. I just happened upon your site, -whilst searching for something else- lol so I must say I am pleased that it took place. I adore chocolate..my grandmother stated that ” I had been eating Hersheys as soon as I could chew’..lol.
Of course, our chocolate tastes and favorites evolve over time ( seeing as I am 59 years young at this point.* smiles* ) but the fact remains that I consider chocolate a food group. yes indeed. SO I thank you …and wish you many blessings and continued success. ~ Shelby

Surprised my sister on her birthday with this cake, it was a hit! I of course needed to test the recipe out before I gave it to her ;D I made mine with spelt flour in the microwave, it turned out a bit crumbly but perfectly tasty. For sis I used regular white flour in the oven and it turned out perfectly! a little soft, and very sugary (I had to triple the streusel for her sweet-tooth, haha). Just wanted to say I absolutely love you’re blog, it always has something yummy for me to make, without the extra calories and fats!

  172. Andrea says

I used xylitol instead of sugar and coconut oil. I also used white whole wheat flour. It came out a little dense but very tasty.

  173. Michelle says

HOLY COW! I just made this and am in the process of making another one! DeLISH! I have followed your blog for a while, but never posted. I just HAD to say something today! You have outdone yourself with this one!! 🙂

As a newbie question — I see you use “spelt” flour a lot, what is the different between this and regular white flour??

Love your blog, love your recipes, LOVE your pics!!

  174. Michelle says

Any way you would have the conversion for a full batch of these instead of just one??!! I want to make them for my family Sunday morning! 🙂

  175. Grace says

Can I just take a second to say THANK YOU for this awesome recipe? It is perfect for a lazy Saturday morning when I don’t feel like baking an entire cake, especially considering my better half doesn’t eat breakfast half of the time – and as a bonus, I don’t have to feel the crushing guilt of an entire day’s bad decisions first thing in the morning. This might be the best thing to ever happen to my weekends. I’m telling everyone!

  176. Marie says

Hi, so I saw this recipe and was like “Ok, I’m so going to try this today.” (It looks soooo delicious!) But because I’ve had it before with one or two of your recipes, that my cake had a lot more calories than in the nutriton fact, I calculated the calories of this recipe. And now I’m confused, because just the flour already has 159 calories. Is the flour I use weird or am I wrong that 3 tbsp are 45g?

  177. nuts4knits says

Just made this one (the white AP flour/oil/oven baked version). A definite winner! I followed recipe exactly, except I topped the tiny baked cake with a tsp of powdered sugar mixed a tsp of cream for an icing drizzle. Satisfied my sweet tooth without derailing my plan to cut down on the sugar and processed sweets. Need to see if it comes out as well in the microwave. Thanks!

  178. Aimee says

This.is.awesome! I used coconut sugar in the streusel and coconut oil all the way around. It is by far the best “clean eating” dessert I’ve made so far. Now if I could only figure out how to alter the recipe to make a bunch at a time!

  179. Jenny says

I have made this recipe more times than I can count now. It is a big hit with so many in my family including my kids. Some variations I’ve made…many times depending on what was left in the kitchen ha, ha! 1) I’ve done gluten free flour (works great too, all of the topping sinks to the bottom but that’s okay, still yummy) 2) I’ve done half white flour/ half whole wheat flour (it works very well) 3) I’ve replaced the vanilla with almond extract (yum!) 4) I’ve added food coloring for holidays 5) I didn’t have brown sugar so I used molasses and sugar separate (gave it a nice flavor to use actual molasses). Thank you for this awesome recipe!! 🙂

  180. Denise says

Just made this recipe, substituting bananas for oil and used oat flour. So delicious! Thank you for these tasty recipes, Katie!

Katie I just made this and had to make a second
    One it was so good!!
I used your friends suggestion of 2 tbs of Almond flour
And 1 tbs of oat flour.( didn’t have spelt or rice).
Also I substituted xylitol for sugar in streusel topping.
Yummy!! Made it candida friendly too.

I found your site just the other day, and I am really happy that I did. I tried this recipe out today, with 1 tbsp coconut flour and two tbsp potato flour. It did make the consistency perhaps a little chewier (a.k.a more difficult to cut up) but it tasted delicious! I’m so happy to have such an easy and quick recipe for a low-cal dessert when I feel like eating something sweet. 🙂

  186. Andrea says

I just made this for breakfast! A total win! A slight disappointment because I just moved in and had no brown sugar for the streusel, but will definitely make it again with it! Thanks!

Will you marry me?!?! 😉

  188. Candice says

I made this tonight it was super easy and delicious. It seriously hit the spot. I tripled the streusel and I added a little cinnamon to the actual cake part and it was moist and delicious and ready in under 10 minutes. Next time I would like to also whip up a tiny bit of cream cheese icing for this.

  201. Emily says

I just made this & it was absolutely delicious! To try to make it as sugar free as possible I subbed in date paste (just blended dates and water) for the sugar in the “cake” and left out the water: it was so so so good! I didn’t even feel guilty after eating it! Thank you for a great, easy recipe!

  202. Olivia says

Wow, just made this for breakfast and I have to admit, I was skeptical. I used the microwave method and it was delicious- and so quick and easy! So much so, that I MAY have made a second, which totally negates the whole single serving point of it all, but I just couldn’t help myself. Thanks for this!!

Katie a lot of your recipes say uncut stevia. I use the liquid stevia and have a tough time converting. Do you know how many drops would work when you say a pinch of uncut?

    This looks amazing!
And I’d rather look at pictures of cake than weddings. 🙂
    If course, I’m already married…

  209. Alyssa says

First of all, when i tried this i didn’t look anywhere as pretty as the photos but it was still delicious and perfectly fluffy. When i made this my second time i doubled the whole recipe because it made a very small portion. I also added instant coffee granules which gave it a nice coffee taste.

I love these mug cakes. I make this one in the morning and it is so delicious. Thank you so much for coming up with a healthy version.

I had never successfully microwaved cake before, but this was delicious. It seemed a little wet when I took it out, but they get awful when overcooked, so I pulled it anyway. The texture is really nice with no egg. It’s kinda flat, but my mug is super wide. I might throw one together tonight to have in the morning.

I’ve made this a bunch of times now and it is my absolute favorite treat to have. I sub Aldi’s gluten free flour and use stevia. It comes out perfect every time

I absolutely loved this recipe! Thank you!! Just wondering what you think of adding a little bit of canned apple pie (or diced Apple bits) prior to the streusel for a fruitier version? Btw, you are absolutely stunning and your blog has been exactly what I have been looking for. Whilst I indulge, I actually prefer cleaner food lower in fat. Thanks 🙂

I really liked it! It tasted very good but there wasn’t much of a coffee taste to it… would adding instant coffee make it have more of a coffee flavor? But they were delicious!

I am so thankful I found this site. I have twin girls, one was diagnosed with celiacs 4 years ago and the other has 24 foods she is allergic to. Mug cake is perfect for the one with food allergies. Breakfast is one of the hardest for her since she is allergic to eggs, bananas and potatoes. She has options now other than oatmeal and bacon!

I love, i mean LOVE coffee cake and this its the spot.
Thanks! I appreciate that you created a recipe that is so delicious and healthy, well, at least healthier than most desserts. Thanks again!!

The taste was great, but it came out a little gummy when I made the fat-free version. I was out of cinnamon, so I used some instant coffee granules (it IS a coffee cake, after all) and I feel like this improved the taste.

I am eating this as I type. Oh. My. GOSH!!!! Why have I lived 20 years on this earth without this! Most and light. Fluffly and glorious. I used half oil half apple sauce in the batter and oil in the topping. The only change I made was adding 1 tbs oat to the topping mix. Yum!

  222. Aqdas says

I just made this, it’s delicious! It’s almost like a cinnamon roll 🙂 Thanks for the great and simple recipe Katie! Now I plan on making it for my mum, who can’t eat eggs.

  223. Sherry says

I was hungry and wanted a small snack the other night, but didn’t want to make a giant recipe involving the oven. I decided to try this on a whim, and now I can’t stop making it! (LOL.) It is SOOOOO yummy. Thanks for the recipe, Katie!

  224. Sherry says

    Hi, Sherry –

It’s not called coffee cake because there’s coffee in the cake (though I suppose if you made it with different flavors, you could add coffee to it). Traditionally it’s known as a coffee cake because it’s cake that is intended to be eaten with coffee or tea, as a brunch item or a snack when you have company.I think the “way back when” origins of it involved a sponge cake made with coffee as one of its flavorings or as part of the icing on top, but different cultures use different types of flavors, such as nuts and cinnamon and streusel topping, which is the tradition I’m used to.

That’s the “history of coffee cake” as I know it, anyway! 😀 More knowledgeable people, feel free to chime in with data.

  225. Karen says

Not sure what went wrong but this caught fire in my microwave after 6 minutes. I have a smoke damaged kitchen…be careful when making this!

  226. Annie says

I just made this and wow… other microwave cakes are so spongy and tasteless. This one was warm, fluffy, and provided the wonderful cinnamon flavor I was craving. Thanks!

  227. Anne England says

Yummy! Super easy – of course as there are 3 of us, I have to triple the recipe. Maybe this could be added to single serving recipes. It’s really good! 🙂

  228. Sofia says

I tried it this morning and it is absolutely divine! It’s really tasty, I made it in the microwave and just ate it straight from the mug. I used sugar instead of stevia, and white flour. According to my calculations it should have about 15 grams of sugar not using stevia, but regular white sugar. It really does taste like a coffee cake and I think I will be making these into little mixes by mixing together all the dry ingredients, and then in the morning you can just mix in the wet ingredients, pop in the microwave and your good to go!

  229. Angela says

I woke up this morning with a wicked craving for something sweet, which is normally a sure sign that I’ll wreck my calorie deficit for the day. This recipe saved me! It’s so satisfying and delicious. Thank you so much for sharing!

I’m not a vegan, and the move to become one is difficult (I most likely will never make it, I love steak too much). But your recipes are amazing, and the reason I bought a food processor. I’ve tried quite a few things on here, and my kids love it (even hubby liked a couple recipes). I’m glad I found this place, it lets me be able to have myself and my family eat a little bit healthier (and has saved me some money with using leftovers for lunch, breakfast, ect.) Please keep up the great work. I did however, have one question. My mother in law can’t have chocolate (it gives her migraines), is there anything I can use to trick her taste buds into believe she’s eating chocolate without actually giving her chocolate?

  232. Katherine Wulf says

I really wanted to like this recipe. It was super easy to make dairy free for my daughter and I. I followed the instructions of the recipe exactly and only made one tiny substitution Using 2 tbsp of oil in the muffin mix and dairy free earth balanc butter for the crumb topping (I use this as a butter sub all the time.) I tried making this twice and it flopped both times. The muffins didn’t really cook and were a crumbly mess. Thinking it was the vegan butter I made one with regular butter for my husband who doesn’t have dairy allergies and it did the same thing. Not sure how I got such different results then everyone else.

  233. Jacky Surber says

I made it and It’s so good! But the nutrition facts listed don’t add up, not if you’re using 2 1/2 tsps of oil, which I about 12 grams of fat.

  234. Alex says

This is so delicious I love it! I use whole wheat pastry flour, coconut oil, and coconut sugar. Comes out perfectly! Do you have this recipe to make as a whole cake that serves more than one? Of course that would have to go in the oven…Fantastic! Thank you!!

  235. Alex says

So surprised by how amazing this turned out! I made it in a toaster oven in a small pyrex, following the oven directions, and I used the oil. Great texture and flavor! I will definitely be making this again. I also used pecans instead of walnuts.

  236. Angelina says

Thank you so much for this recipe! I just made it (using applesauce instead of any butter or oil) in the microwave and it was fantastic 🙂

  237. Heather says

I actually exclaimed, “Wow!”outoud in an empty kitchen after my first bite. This is a definite winner. It’s the perfect size and preparation time when a sweet craving hits. I cannot wait to make this again. Thank you.

Hi, this post is genuinely fastidious and I have learned to make coffee cake in the mug. I am truly pleased to read this content which carries lots of helpful data, thanks for providing these kinds of statistics.

  239. Emily says

I made this with banana flour….didn’t like it! 😀 I knew it was a risk because I’m not crazy about banana flour anyway. I’m needing to use it up tho! 😉 I will try this soon with another flour so that I can enjoy it!

  240. Christine says

    Hi Katie,

It is ironic that that you have worked so hard to make a healthy recipe and then ruin it by nuking it.
Swiss food scientist Dr. Hans Hertel demonstrated the destructive effects of microwave cooking in a study mentioned in this article: http://microwavedangers.blogspot.com/2012/12/the-swiss-clinical-study.html
The purpose of eating is to add energy and nutrients to the body to sustain life and effect repairs.
Microwave cooking defeats that purpose. Please rethink your support of this dangerous practice.
    Thank you,
    Christine

  241. Marion says

Where do the pecan/walnut halves come into play? I see them listed on the ingredients but never specify what to do with them… Do they go into the cake itself or added to streussel(kinda like you would for a “crisp” or “crumble” topping)? Or garnished on top? It can go any way so I’m really not sure lol. Im planning to make them now, like very literally right now, so hopefully youll be able to respond soon! If you arent able to answer me before I make them,I’ll just guess&let you know how it turned out! Lol thanks for an incredible recipe! New to your blog but will def be sticking around. I’m loving what I’m seeing!

  242. Jen says

I tried this, doubled the recipe to make one for my husband as well, used almond flour and coconut oil, followed everything to the t, and it didn’t turn out at all. Tried one in the microwave and it was A liquify mess. Put it in for longer and there was still a thick layer of bubbling oil on the top and the bottom was burned. Tried the other one in the oven and I still can’t get it to thicken and turn into a cake. Should I add more flour??

    • Jason Sanford says

Hi! Unfortunately a lot of recipes don’t work to just double them exactly. If you do want to double it though and find it is too liquidy, maybe try adding a little coconut flour if you have it? That soaks up liquid like a sponge!
      Jason

  243. Heather Clegg says

This was so good, and so tiny and cute! I used molasses as my sweet and it was perfect! I’m going to make it again and bake it (I microwaved it) because that will make it even better, which would be crazy! I need to double it and eat way too much!

  244. Briana Betke says

I made this in the air fryer. It came out amazing! The topping is nice and crisp. Washed it down with my favorite coffee. Great start for a Friday!

  245. Brooke says

I made the almond flour version and found it to be very eggy. However, you could reuse this recipe as French toast in a mug. Thank you for all of your recipes. I’ve made several and really appreciate you!

  246. Katie says

Did you use a coffee mug from a dollhouse set for the photo? I followed the recipe using spelt flour and coconut oil, and it was less than an inch at the bottom of a regular sized mug. I would need to multiple the recipe times 5, at least, to get a mug cake.

    • Jason Sanford says

Hi! Her mug is shown in the video she has in the post and it looks to be normal size, but most likely just smaller than the one you used. Hope the visual helps!

  247. Calley Marshall says

I have made this more than I wanna admit, probably upwards of 20 times! I always use either banana, applesauce, or Greek yogurt instead of oil (bananas my fave) and double the streusel. I also add oats instead of nuts to mine and it’s so unbelievably good!

  248. Bri says

Love this! Have made it the keto friendly way multiple times. I would love if you had a larger batch recipe for this. I’m gonna just have to do the math to increase the batter by 12 lol

  249. jen says

I used the Oat flour/ stevia/egg/applesauce for muffin base and applesauce/sugar option for streusel. the streusel topping could not be “sprinkled on”. I kept adding some oat flour and hemp seeds to try to make it a crumbly texture but no luck. Too wet. Tasted like an egg spongy something. So weird.

    • CCK Media Team says

Hi, if using oat flour you don’t need the egg version – that’s just for the almond flour version to bind it 🙂

  250. Elaine says

Love your recipes, can you tell me the wattage of your microwave oven in which you made this. That way we can figure out how to adjust our times. Thanks.

  251. Susan Celotto says

In the nutrition information, you say that this is 25 grams of carbs! Is that a mistake (maybe 2.5 grams of carbs)? 25 grams of carbs for 1 small mug cake is not low carb or keto at all.

  252. Hannah says

What would you suggest for making it as muffins, like a batch of 12? Usually you do not do 12 eggs in a batch of muffins, so I would not want to just multiple the recipe by 12. I have a very restrictive diet and this recipe works for my diet and is possibly the closest I have gotten to a “normal” tasting coffee cake/muffin. Thank you!

  253. Marie says

I made this with coconut sugar and topped it with some maple syrup and it was to DIE for!! Definitely going to make this again!

  254. Lydia Huerta says

We love making these for breakfast! So yummy and quick. If we wanted to increase the recipe to make more at a time using oat flour and the microwave do we just multiply the recipe by that number or do you have a recipe for a larger amount of mug cakes? My kids always want at least 2 each and making each one individually is so tedious! Just hoping to find a shortcut! Thank you!

We are down the mug cake rabbit hole. We’ve tried a different one everyday. We doubled the streusel and layered it with the cake batter. A bit more work but worked nicely! Added a touch of almond extract, and a touch of flour in the streusel to keep it together. Used nondairy components for allergy purposes. Worked great! Son said, “This is convincing!” High praise from a picky eater! The drizzle on top is a must IMO.

This was really good. I like that it has less butter or oil than a typical mug cake. Some recipes have 2 – 3 Tablespoons of fat. I thought it was the perfect size, smaller but just enough. I used butter and omitted the nuts from the streusel. Next time I will make a powdered sugar glaze but it was good without it. Thank you for posting!

This is by far the best mug coffee cake I’ve been made. The texture was perfect and the balance of flavors spot on. 💝
