Drink it, eat it, bathe in it… okay, maybe not the last one. Then again, perhaps a Nutella bath could be fun. I wonder if they sell such a thing as Nutella bubble bath. They should. I’d buy it.

Chocolate Nutella Milk

A Special Diet Recipe

  • 1/2 cup roasted or raw hazelnuts (Other nuts will work too.)
  • 2 tsp cocoa or cacao powder
  • 1/16 tsp salt
  • 1/4 plus 1/8 tsp pure vanilla extract
  • 1 cup water or milk of choice, or more if a thinner drink is desired. This also gets much thicker as it sits in the fridge
  • sweetener–such as stevia, sugar, maple syrup, or even a banana–to taste

Optional: roast hazelnuts 6-8 minutes at 400F. In a bowl, soak the nuts in water for at least 8 hours (or overnight), then drain. I didn’t bother to skin, but you can if desired. Combine all ingredients in a high-powered blender (like a Vita-Mix), and blend thoroughly until super-smooth. If you have cheesecloth, I highly recommend pouring the milk through a sieve lined with cheesecloth. But if you don’t mind a gritty-textured drink, you can skip this step. Before serving, it’s best to fridge until chilled, as it will be hot from blending. This will keep, covered in the fridge, for up to 4 days.

    I love your lower-calorie recipes for me, because I’m tryin to lose that baby weight ;).

    But my older boy is like a human walking stick, and he doesn’t seem to put on weight and it’s a struggle to get him to take in enough calories in a healthy way. Somehow, I think Nutella in a glass won’t be too hard to convince him to drink! I really appreciate how you mix it up with your recipes, offering something for everyone. Everyone in my household, anyway!

    I LOVE hazelnut milk. I prefer it to almond milk because it’s creamier and naturally a little sweeter. It would be great for this recipe! I have only found hazelnut milk at my farmers market, but I can’t say I’ve looked in health food stores.

    I love Blue Diamond unsweetened almond coconut milk. Or the vanilla almond coconut milk. I like it better than Silk. Just preference I guess. I made the almond joy biscuits yesterday…yummy yummy.

      I do that too! the first almond milk I tried was the chocolate one because I thought I would get used to it easier, but I found the dark chocolate overwhelming. I got the plain and watered it down with that to make the perfect chocolate milk 😀 Its like drinking chocolate covered almonds. I

    Katie, you are so lucky! I used to live in the US, and it is amazing how many kinds of milk there are! Now I do live in Germany… and, well… A few years ago, soy milk was the only thing you could get.
    It’s getting better, we do have oat and rice milk now. Even though soy is still the only one you can get at a regular grocery store.
    And the Almond Milk (a brand actually just introduced almond here) is so expensive in comparison to yours! Also, Silk just tastes better 😉

      I live in Germany too! Where do you go for grocery shopping? I find that plant based milk besides soy milk is horrendously high priced at “Bio supermarkets” (whole food stores would be the equivalent, I assume) that’s why I don’t get the special kinds there. Do you have the opportunity to visit “Real”? With about around 1,90€ for hazelnut, almond (both Alpro Soya) and oat milk (Smelk) I think it’s quite affordable. Compared to about 3,50€(!!!) at the Bio supermaket.

    Ooh sounds amazing! Liquid nutella is like liquid GOLD to my ears…

    I prefer soy milk in taste, to be honest, so I tend to use that when having hot chocolate or over cereal etc, where you can taste the milk (I also like how protein-rich it is). I love the stats of almond milk though so use that in baking/smoothies etc where you can’t taste the milk. This just helps prevent me having too much soy, which I am slightly wary of.

    Almond Breeze vanilla almond milk! I’m vegan and soy-intolerant, so that narrows it down some for me. I love the flavor and creaminess of almond milk (especially in coffee), I just wish it had more protein!

    I don’t drink cow’s milk just cuz i don’t like the taste. I’m not vegan or anything close but I LOVE Almond Breeze vanilla almond milk. So Delicious is alright too. On the whole, i prefer their ice cream 🙂 Worst milk EVER? Totally hemp or rice milk…” eww and double eww” ( bonus points for figuring out which kid’s show thats from).
    I used to drink chocolate Silk soymilk after school. Memories.

    I never drink milk straight …even before being Vegan never did…use it in recipes but that’s it.

    I actually drink homemade nut milk. I LOVE almond milk. I can’t believe that you figured out how to drink nuttela. This is great.. I will try it out soon (I have got to buy some hazelnuts). Love your recipes. 🙂

    I wouldn’t bathe in nuttela only because if I see something large (like a bath tube) filled with nuttela I would eat/drink it before I even think about bathing in it. xo

    have you ever heard of a “nut milk bag”? They are made for straining out nut based milks, like almond (or hazelnut in this case). I plan on getting one soon, and I know that my husband would LOVE this recipe. He adores Nutella, and has been after me to make our own some time soon.

    I drink Almond milk if I just want milk (I like the unsweetened one normally but have the dark chocolate one for refueling after the gym) but I put plain soy milk in tea.
    I’m british! Milk in tea is perfectly normal 🙂

    I used to get chocolate hazelnut milk from Whole Foods when I lived near one, and I put it in your smoothies! I dislike the taste of coconut milk, but I found that if I used one part coconut cream (from the top of the can) and three parts chocolate hazelnut milk I got the creaminess without the taste.

    I love that this recipe has none of the preservatives or emulsifiers of the store bought one, and I really love that I can lessen or omit out the sweetener. Thank you!

    i love Silk Almond milk!!! and i was wondering, do you have any tips for cracking the shelled hazelnuts? i only have shelled ones and it takes me like 5 minutes just to crack one!

    I love Silk Pure Almond Unsweetened – I use it in EVERYTHING: baking, cereal, agar pudding, etc. etc. etc. 😀 I’ve NEVER liked cow’s milk (my mom brought me up on soymilk and almond milk – and a couple other nut/grain milks) – it tastes terrible! I remember going over a friend’s house when I was little, and she offered me milk with our chocolate chip cookies. I took a sip, expecting it to taste like my familiar soymilk . . . I only took one sip. 😉

    from one chocoholic Katie to another chocoholic Katie – I read your blog regularly and appreciate the concept. But I do have a genuine question, meant to satisfy my curiosity and nothing else: it really does seem like ALL of your recipes are exactly the same ingredients. Over and over again. And again. Just in slightly different quantities and put together in slightly different ways. I’m starting to feel like I don’t need to read the blog because I’ve seen it all. I am wondering what your cookbook will bring to the table that is different and unique?

      This comment is ridiculous and untrue, and it obviously is coming from someone who’s jealous of your success and popularity. If you didn’t have creativity, and kept posting the same recipes over and over, you certainly wouldn’t have the amount of fans you have. After all, there are thousands of blogs out there and people would just read them instead. But there’s just one CCK ;).

      I wouldn’t pay this commenter any mind, and I think you should just delete her comment. It’s offensive and delusional, and I’d say that if she really thought your blog was boring, she wouldn’t be reading it regularly, as she says she does.

      Your comment makes no sense to me. I just re-checked her last five posts, and none of the ingredients are the same for ANY of them (vanilla cupcakes, oreos, brownie frozen yogurt, frosting shots, and this recipe). I think maybe you’re confused and have the wrong blog?

        Also why would anyone want every recipe to have different ingredients? Then you’d have to buy new ingredients for each recipe, and how would the ingredients ever get used up? 😕

      I agree with the other comments. Each of CCK’s recipes is certainly unique, and even the one’s that are “similar in ingredients” turn out completely different. Perhaps I do understand where you are coming from, though. Many of her recipes use baking powder, flour, etc., but then again don’t many recipes call for these ingredients anyway?

        The only way I could understand this comment is if she’s meaning that, for example, all the milkshake recipes are basically all the same, or all the oatmeal recipes are very similar. I think that’s true of most blogs in a way, they use similar ingredients but there’s always something in the recipe that makes it different and worth reading. I like that they don’t use random ingredients because I always have the ones used already so i don’t have to run to the store or try to remember to grab something when i go shopping. Even if there was actually a recipe that literally had all the same ingredients, but they where put together differently to make something new, why wouldn’t you want to read it? It’s still something new and different that you probably wouldn’t have thought to do on your own. Kinda like how the oreo cookie is similar to the lara bar recipe…i wouldn’t have thought to make oreos out of them so I’m glad I saw that post.

      So “Pumpkin Bread in a Bowl” has the exact same ingredients as the “Deep Dish Cookie Pie” which has the exact same ingredients as the “Frozen Hot Chocolate” which has the exact same ingredients as the “Secret Peanut Butter Cookies”?

      Sorry, I don’t follow your logic (or lack thereof).

        I think its more Deep Dish Cookie Pie has the same ingredients as the Blondies and the milkshakes are all relatively the same but with a slight variation, all the cookies are basically the same recipe etc. I agree that there are lots of different recipes but I also see the repetition in many as well. Not that its necessarily a bad thing -some flavour combos I might not of thought of. But I do like the different recipes that aren’t inspired by a formerly posted recipe. I’m guessing its difficult to maintain both original recipes for a blog and work on a cookbook at the same time.

          Not to be nit picky, but the ddcp and the blondies actually don’t have the same ingredients. If you look at both recipes, just because they’re both made with beans, they’re actually not the same recipe just cooked two different ways ;). As I said, I’m not trying to be nit picky or drag out this silly arguement that someone started, but I wanted people to know that in case they went to make the blondies and didn’t read the ingredients before going to the store.

    I love homemade almond milk! Lately though, since I figured out how to make it, I’ve been all about sunflower seed milk. Sunflower seeds are a lot cheaper than almonds!

    i don’t actually drink milk, i just use it for recipes, smoothies and occasionally to eat with a bowl of cereal. but mostly i get silk or almond breeze almond or coconut milk, and i really like the middle ground – almond breeze’s half almond/half coconut milk! i do notice my smoothies seem sweeter when i use coconut milk.

      Also, isn’t the point of the vitamix to mix the shake/milk enough to where you don’t need the cheesecloth? Or are nuts indestructible? 😉

        Hey Laura, I use my vitamix all the time time to make nut milks. No matter what you use, you will ALWAYS be left with the ‘fiber’ part of the nut, so straining it is something you’ll want to do if you don’t like gritty milk :). What I do prefer to use over cheese cloth for straining though is a mesh bag. DON’T waste your money on the ‘nut milk’ bags. Go to a place that either supplies wine making materials or does U-brew wine and buy the mesh bags they carry for wine making purposes. They’re closer to $2 than the $10-$20 they want for “nut milk” bags.

          The only time I ever strain my Vitamix-made nut milks is if I’m planning on putting the milk in tea, and that’s rare. Although the unstrained finished product may have fiber, to me it just seems thicker, not gritty at all–unless it’s not blended thoroughly enough, in which case I just dump it back in the Vitamix for another few seconds.

          Though if you do strain, I second getting straining bags from a place that sells homebrew equipment; it’s shameful that companies charge so much for “nut milk bags.”

    Sounds fantastic … I don’t use nutella because it’s all sugar but this version is totally do-able. In answer to your question, I prefer unsweetened organic soy milk in my smoothies and cooking but use 1% regular organic milk when I get the hankering for some milk to drink.

    Trader Joe’s Unsweetened Vanilla Almond Milk is my absolute favorite ever! It’s the one in the blue carton, I don’t know what the red one tastes like. I initially bought it because it had the lowest amount of calories but the first time I put it in my cereal and tasted it, I actually smiled. That had never happened to me before! It’s that good!

    My favorites rice milk (not Horchata!) and flax milk, which I got for the first time last weekend. I had to hunt it down at my not so local Sprouts. I used the flax milk in my banana bread the other day, everyone raved about the bread! I usually use rice milk in all my recipes and they always work out.

    I like unsweetened almond milk but i only use it in recipes and smoothie, but i discover that natura make it too and it taste realy better than blue diamond, like very much, i can drink a glass of it i love it!! sometimes i buy soy milk and oat milk for making hot chocolate because its more creamier like milk.

    My favorite is hemp milk, but due to the price, I usually go for almond. Hazelnut milk is also great (its sold in stores near me.)

    A couple of weeks ago, I noticed a shop selling sunflower milk.

    We usually buy unsweetened organic rice milk in bulk at costco cuz it’s cheaper but I can’t drink it straight. Usually just use it in cereal and cooking. My fav to drink straight is almond milk for sure! Tastes just like skim cows milk!

    I’m a long time reader but I rarely comment (too shy) but wanted to share another chocolate bath recommendation with you.

    Not everything at Lush is Vegan (it is all vegetarian and none of their products or ingredients are tested on animals) but most things are; anything with a little V is vegan. They look a bit pricey but the bubble bar I have linked to you would only need to use half of it for a full bath.

    I love all your recipes. Over here in the UK we are stuck with Alpro Soy milk, unless we want to pay £5 for a carton of nut milks. I’m hoping they become more popular and the prices come down a bit. Even though I’m not vegan anymore I still don’t like to use dairy.

    A few clarifying questions on the directions here. I’m a bit lost on technicalities of cooking so…

    Your ingredients list “1 cup water or milk of choice (or more if a thinner drink is desired. This also gets much thicker as it sits in the fridge.)” Is this the water/milk you use to soak the hazelnuts?

    After you soak the hazelnuts, you say to drain them. What do you do with the drained liquid? Does it go into the blender with the remaining ingredients?

    Do the soaked hazelnuts get thrown in to the blender too?

    Thanks so much for all the recipes you share. You’ve really brought alot of flavor and inspiration to my life & meals. Love the gluten free, sugar free (Stevia fan here). I drool over 99.9% of your recipes they sound soooo yummy! Now to find the time to test drive them lol….I’m taking baby steps.

    Made your “Peppermint Bark” (coconut oil & peppermint) just today. I’ve been making my own coconut oil “nibblers” out of coconut oil, cocoa powder, Stevia. Sometimes I add shredded coconut, sometimes chopped nuts. LOVE coconut oil. I played with the recipe a bit too. Discovered “Almond Nibblers”: coconut oil, almond extract (Frontier’s brand), sliced almonds and Stevia. OMG they are amazing! I use an ice tray to freeze them too! Perfect size.

    Please keep the great recipes coming. Totally in love with your blog….only one I read on a regular basis.

    My second of your recipes I try. I made the Nutella and then blended it with ice and a mix of coconut and soy milk. It is heaven! I did not add any sweeteners to the milkshake because I wanted something more refreshing. My son loved the nutella so now I am happy to give it to him, I am never happy giving him the commercial one, so full of hydrogenated stuff. Thanks so much for your recipes!!!

    I just made this and am drinking a glass of it now and I am here to report that it really does taste like nuttella!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Also, I was to impatient to wait 8 hours for the nuts to soak so I just let them soak for about an hour and a half and it worked fine. Also, I wanted a relatively thin chocolate milk and I wanted it to make a lot so I used about 3 cups of liquid- 2 cups of water and about a cup of soy milk, also I increased the cocoa powder to about 3 tablespoons and sweetened with 2 rounded spoonfuls (or maybe 3, I don’t remember) of sugar and a squirt of agave. Otherwise I followed the recipe exactly, and in case I didn’t already make it clear, it is DELICIOUS! and it tastes exaclty like nuttella and even though my version made 3 cups, I will have trouble not drinking the whole thing over the course of this afternoon!
