Frozen S’mores on a Stick

No, not really.

Really, I made these frozen s’mores pops for a friend’s Labor Day party, for all the kids in attendance. Someone else had brought a package of those red, white, and blue rocket pops (or bomb pops) often found on ice cream trucks. But guess which pops all the kids chose.

To be fair, one kid did choose a rocket pop over the s’mores. And one sneaky kid chose both! I wonder where his mother was… 😉

Inspired by Marshmallow Ice Cream recipe.

S’mores Popsicles

(gluten-free)

  • 1 cup milk of choice (such as almond milk)
  • 1/2 a container Ricemellow Crème (You could probably use 5 oz Smuckers marshmallow fluff, which—albeit high in artificial ingredients—is vegan.)
  • 1 tsp pure vanilla extract
  • tiny pinch salt
  • optional: melted chocolate or Hot Chocolate Butter
  • optional: crumbled graham crackers

Combine first four ingredients in a microwave-safe dish (or small saucepan if you prefer the stove), and microwave 1 minute. Stir so there are no lumps, then pour into paper cups or popsicle molds. If desired, dip in chocolate and sprinkle on graham cracker crumbs once pops are frozen. (If using the hot chocolate butter option, sprinkle the graham cracker crumbs quickly- the chocolate shell hardens fast!)

Did you ever buy anything from the ice cream truck?

When I was little, that annoying ice cream truck song was the best sound in the world! To my sister, it meant Good Humor strawberry shortcake popsicles. To my friends, it meant rocket pops, snow cones, and sherbet pops in the shape of Scooby Doo. To me, it meant one thing and one thing only: chocolate.

Be it a Chipwich, a chocolate éclair, or a neopolitan ice cream sandwich, you can be sure my order was always chocolate. In fact, I don’t think I’ve ever tried a rocket pop in my life!

    Oh yum. I love s’mores! Or maybe just toasted marshmallows. Or maybe just the melted chocolate. I don’t know. It all contributed to the melty, gooeyness.

    I loved strawberry shortcake popsicles or the drumsticks. My favorite part of a drumstick was the solid chocolate part at the bottom. 😉

      Fair warning, the ricemellow makes not good rice crispie treats. Too much liquid so they are more rice mushies than rice crispies!

      You’re much better off getting Dandies vegan marshmallows. Or Sweet and Sara… though her’s are so gourmet that I loathe using them. I prefer to eat them unadulterated or in s’more form. 😉 Whole Foods will have Dandies or S&S, too.

      Oh forgot to answer the question. I loved the chipwiches growing up. I don’t think I ever had one from the ice cream truck, but I’d always get them at baseball games!

    Love these, Katie. My kiddos like the bomb pops, and I do admit that sometimes we buy them as a special treat. They’re allowed to have a few special desserts per week that they choose, and my littlest one is looking over my shoulder right now and I asked if he wanted one and he said OH YES PLEASE! Love how he said please :).

    Do you ever eat just plain ol’ chocolate (as opposed to a chocolate dessert)? If so, do you have a particular [vegan] brand that you recommend??

      i don’t think so and if it is, so what?! the girl has earned the right to brag, she rocks. I know if i were doing all that Katie does i would brag all the time, shoot i do it now with the few dishes i make, there’s nothing wrong with being confident and celebrating your talents.

    Yum!
    But no store in my neighborhood sells that ricemallow stuff.
    That brings me to a question, alot if specialityhealthy ingredients that you useare out of my budget as well as too far away to shop for often. Could you recommend some staple inexpensive/ long lasting things I could stock up on so I can make some of your healthy treats as often as possible? I would really appreciate it, and I’m a big fan if yours!

    I don’t think you’re missing out too much on the bomb pop. I only ever ate them once, when I got my tonsils out as a little kid and was eating everything frozen. If I ever did get something from the ice cream truck, it was either a fudgesicle, or, one time I tried a spongebob shaped one that I really loved. Our parents didn’t often let us get anything though.

    Then we moved to our current place when I was about 7… NO ICE CREAM TRUCKS!! I really missed the noise of the truck coming and the mad dash around the house to find enough change for some ice cream. 🙂

    Anyways, this recipe looks fabulous, and I’m sure that if I were a kid and had a choice between this and a bomb pop, I would choose this in a heartbeat. 😀

    My mom would never let my sister and me buy anything from a ice cream truck. She was completely disgusted by the idea of a truck selling food. However, one night, a truck broke down in front of our driveway and she let each of us pick something to have (I think she felt bad for the man!)

    I had three favorites from the ice cream truck. One was a snoopy ice cream, one was a baseball mitt one with a bubble gum baseball, and the third was those rainbow cones that had a piece of gum at the bottom. I can’t remember what any of them were called. :/
    Also, I wanted to say thank you! Since finding your blog there are so many recipes I’ve wanted to try that I couldn’t find the ingredients for. I was finally able to track down a tiny vegan grocery store! It has essentially everything I would look for that I couldn’t find in regular grocery stores. Don’t think I would have found it if it weren’t for your yummy recipes encouraging me to look harder!

    Hey Katie! This question doesn’t apply to this recipe, but it’s just a general question I have about a lot of your recipes. I always thought the point of stevia was to be a calorie-free sweetener, but I know you’ve said often that you’re not necessarily concerned about calories. Does stevia have health benefits compared to sugar if one isn’t concerned about calories? I’m not really familiar with it. Thanks for all your great posts!

I assumed this might be because you suggest optional sources of sweetener that all have differing amounts of sugar, but I thought I’d still ask. Thanks!

    Hey, Katie! I actually had a question for you, do you normally count calories daily? Or what is your opinion on calorie counting? I’ve been calorie counting lately, trying to take in more calories, but it is just so stressful.

    My ice cream truck favorite was the banana fudge bomb pop, or occasionally those obnoxious neon cartoon character pops (such as tweety bird) with the gumball eyes.

    lol I love the rocket pops, in Ontario they are “Space Jets”. I also liked creamsicles, and the ghost pops (with the gumball nose, because all ghosts have noses)… My mom always got a Fudgsicle 🙂

    This sounds AMAZING. I must try it as soon as I find out if it’s possible to order the marshmallow cream online. (El Paso, TX isn’t super vegan friendly- no Whole Foods- but we get by.)

    Speaking of ice cream trucks- I’d love to see a vegan Choco Taco recipe! Those were always my favorite! 🙂
