White chocolate is not really chocolate.

  • Just like tomatoes aren’t really vegetables.
  • Lentils aren’t really beans.
  • Koalas aren’t really bears…

Life’s confusing, isn’t it?

How to make your own white chocolate.

Sometimes people are surprised to find not a single white chocolate recipe on this entire chocolate-covered blog. White chocolate has just never been my favorite thing… because I want it to taste like chocolate and am mad when it doesn’t!

Plus, most white chocolate chips aren’t vegan, and they are full of unhealthy trans fats (partially-hydrogenated oils) and artificial ingredients.

Many of you have asked if I could come up with recipes that include chocolate’s paler cousin. But to do that, I first had to figure out how to make my own healthy white chocolate.

Thankfully, it turned out to be really, really easy!

I read up about white chocolate on Wikipedia and checked out the candy bars at the grocery store. Research! (To make research fun, all you have to do is get out of the library and head to the chocolate aisle. Who knew?)

They all consist of the same basic ingredients: cacao butter, milk solids (dry milk), sugar, and salt… Pretty much, as long as you have the one magic ingredient, the white chocolate is so easy to make it can hardly even be called a recipe.

Easy way to make white chocolate and control what goes in it.

 

White Chocolate Chips

(can be sugar-free)

  • 2-inch cube cacao butter (30 grams, or 2 tbsp after melting)
  • scant 1/8 tsp pure vanilla extract
  • stevia or powdered sugar to taste (2 tbsp if powdered sugar)
  • 1 tbsp raw cashew or macadamia butter (can omit; it’ll just be less creamy) (15g)
  • very tiny pinch salt
  • optional: If you can find it, I highly recommend adding 1/2 tsp dry milk powder—such as soy or ricemilk powder—to the ingredients for optimum creamy texture, as this is one of the basic ingredients in every white chocolate bar I looked at during my aforementioned research. However, knowing that a lot of people would have trouble finding the powder, I also tried omitting it. And then I tried adding protein powder instead (increasing to 1 tsp). Omitting or adding the protein powder instead will yield a texture that’s a little different than store-bought white chocolate, but both ways still work! (Just please don’t add liquid milk. I tried that too, and it doesn’t work.)

Melt the cacao butter (either in the microwave or on the stove). Turn off heat, then stir in all other ingredients. Pour into candy molds or a plastic container, and freeze until it hardens. Healthier and vegan white chocolate chips. Yay!

      I’ve actually read that no white chocolate is considered chocolate because it lacks cocoa solids/ cocoa licqueur. I guess maybe it depends on the definition you’re using. Now I just googled “is white chocolate really chocolate” and it seems people are split.

          Katie is right. Cocoa solids are the low- fat reddish or brown solids that are taken from a cocoa bean during the separation of cocoa butter and cocoa solids. Cocoa butter, on the other hand, is the fat component that is extracted during this process. They are distinguishable by color, texture, chemical properties, and in the fact that cocoa solids contain caffeine, whereas cocoa butter, when separated correctly and completely, does not. Just because cocoa butter becomes solid at certain temperatures does not mean that it “IS a cocoa solid” as you have said, it simply means that it is a solid by physical property. I would suggest doing more research before coming so hard at Katie, who clearly knows what she is talking about! Thanks for an awesome recipe Katie and doing such great research!

            I agree. Attacking anyone who expresses a contrary opinion is not cool. Victoria was not hard. She just expressed an opinion. And I can see that she has a blog dedicated to chocolate too so she is not just saying things. My dad works in a chocolate factory and he considers white chocolate as “chocolate” too. There is really no right or wrong in this. Katie, I would also request you to please ask readers to stop fighting among themselves. You are a sweet person and your blog is a feel-good place.

            I think the everyone needs to calm down a touch here. It’s a great recipe! I personally love white chocolate, but can rarely find a vegan version! This will make it so much easier!
            Also, Surely you’re all here to read Katies lovely recipes and posts? If the readers comments are “making the blog hard to read”, I think you’re spending too much time reading the wrong part..
            Focus on the positive posts =] not the petty comments! Katie really shouldn’t have to ask her readers to play nice! We’re all grown-ups here! We’re fully capable of being nice all on our own =]

            You are absolutely right of course, and if people were as mature as this, then there would be no problems. And yes, I agree that we need to focus on the positives. The thing is, often a lot of reader queries get answered in the comments section, and I like to read through the comments to see if a particular query of mine has already been answered before asking it (and more often than not, i find the answer I am looking for). So its not really a good choice to stop reading comments. And when people start attacking anyone who expresses a contradictory opinion, it makes it difficult for the rest of us not to get irritated. For instance, in this particular case, I would have been really interested to know if white chocolate is indeed chocolate or not. My dad works in a chocolate factory and he says it is, but I have heard many saying its not. I would have been interested to hear from Victoria and Katie as they both are experts on chocolate in their own way. But some over-zealous readers just jumped in and started saying things like Victoria was coming down “too hard” on Katie, which was ridiculous according to me. I agree that it’s not Katie’s job to tell readers to play nice, but if she does, the blog will be much more pleasant and informative. And who else can do it better than her? I agree it’s not her job, but it doesn’t mean she shouldn’t interfere at all. It’s not like just because you are on Katie’s blog, you have to agree with her no matter what she says, right? As long as the commenter is being respectful, I don’t see why anyone else should rush to Katie’s defense. What could have been an interesting discussion on chocolate turned out to be a slinging match here and that could have been avoided.       According to the FDA, “chocolate” must contain 10% cocoa mass (including cocoa nibs which is absent from white chocolate or cocoa butter). So, technically speaking you are technically wrong. No nibs, no chocolate. It’s like saying that water is tea, you need water to make tea but water without the tea leave extracts is definitely not tea. Just saying…..

    Don’t ever, ever, EVER, stay home on election day! It doesn’t matter who someone else voting for! If you don’t vote you are giving up one of your most powerful rights! Why would anyone give up the chance to affect their own future? Think about all the people in the world who wish they had the opportunity we have!

      BUT, the good thing is that you can determine how much sugar – if you use sugar at all! – is in your white chocolate. 🙂 I like the idea of stevia-sweetened chocolate.

    I literally almost started jumping up & down when I saw this recipe. All the possibilities! Personally, I’m not a fan of white chocolate by itself, but when it’s combined with regular chocolate, pretzels, M&Ms, etc. it’s amazing.

    I don’t vote, because I’m only 13 and, honestly, it saddens me how both canidates say stupid things & twist the truth to benefit only themselves. 🙁 Obviously, I will never go into politics.

        It’s a civic responsibility. I understand now it was a joke but it was not initially read as such. Katie speaks to a large audience. The theme of the blog isn’t political but one certainly has responsibilities when reaching out to groups of people. In any case, I wasn’t bashing anyone.

          actually. we’re given the freedom to choose to vote. people shouldn’t feel the pressure to vote if they don’t want to…I easily read it as a joke, so I’m not sure how it was irresponsible, if someone is seriously gonna take a comment so far out of context like that, and choose not to vote, it obviously wasn’t very important to them in the first place. Yes, we’re lucky we get to vote, but we’re also lucky we have the option not to vote, it’s all about the freedom of choice.

            I took Katie’s comment about not voting as a “joke” as well (I, myself, have “joked” with a couple friends who’s vote opposed mine, saying that I HAD to vote whether I wanted to or not – just so I could cancel out THEIR vote, lol. But that’s all it was – a joke… 😉 … However, I will say that Aubrey and Mandy are correct, in my opinion. Voting IS a right.           Not to fuel this ridiculous debate much more, but I should point out that – whether intentional or not – Katie votes every time she visits the market or posts a delicious recipe. There is so much more to civic responsibility than showing up at the polls every four years and voting for a president. A few major food producers have an obscene impact on the entire political realm, and neither candidate had clean hands on that front. The issue of food production is clearly important to Katie and she is doing a very good job leading by example with that issue. I find it pretty difficult to take offense to a (pretty blatant) joke from someone with nothing but good intentions, who is (again, whether knowingly or not) very actively representing her standpoint on an issue that affects everyone.

    Hi Katie! I thought it was worth mentioning that this will not taste like the white chocolate confection most people consider to be white chocolate. Cocoa butter has a very strong chocolate flavor…of which there is none in the yucky stuff you buy in the store. Did you notice that? I made several versions awhile ago and realized I wasn’t going to get that white chocolate I remember from my youth with cocoa butter. What did you think? Cocoa butter DOES make some very luscious homemade chocolate though!

      I’m hoping that it’s not too late to ask this since the last post was in 2012, but…
      I’m on the specific carbohydrate diet (SCD) and really have missed regular chocolate chips in cookies because coconut oil based chocolate melts too quickly to hold together in baking and just drips out of the cookie. Does Cocoa butter really hold up in baking like regular chocolate does? I was thinking I could try mixing cocoa powder and honey into it to make chocolate chips! For someone who hasn’t had a chocolate chip cookie in 9 months, this would be AMAZING!

    I already voted this morning. I know that I have friends who have cancelled my vote, but I like to think that I cancelled their vote. 🙂 The thing that makes me sad is that it is all determined by the electoral college, so our voice isn’t really being heard as clearly as it should be. I don’t like white chocolate either, so the mention of voting was the best part. 🙂

      Yes, that upsets me as well! I feel like it gives some people (living in swing states, for example) a bigger say in the outcome; their votes mean more. And there are other systems/ideas (not just going by the popular vote, which has its own drawbacks) I feel would work better. Then again, it’s easy for me to sit back and criticize when I’m not the one actually writing the laws. I try to remember that… no system is going to be perfect. But I share your frustration with our current system.

        I totally understand what you mean. I have lived all of my life in Washington and never felt my vote for the president mattered. The presidents were already giving their victory speeches before the votes in Washington were even tallied. I didn’t realize the difference of empowerment until I moved to Florida three years ago. This is my first presidential election cycle in Florida and I am only now realizing the power of my vote, because I am in such an important swing state. Strange, this whole system. But, I agree, Katie, it is easy for me to criticize here at home. We do what we can though. Aaaaand, thank you for the recipe! The store bought vegan white chips are pretty gross.     You can get the powdered milk solids at shelfreliance.com–at least I think that is what you are referring to and mountainroseherbs.com has cocoa butter at $4.75 for 4 oz. or $13.75 per lb. Hope this helps!

    Yay!!! I love white chocolate!! And my husband and I are trying to go “as vegan as possible” so this will be super helpful… Provided I can find cacao butter. :-). I’ve actually always preferred white chocolate.
    I already voted by absentee ballot. I vote in a swing state, so I triple-checked to make sure my ballot got there and will be counted today. 🙂 I think it would have been hilarious for you and your roommate to put opposing signs on your lawn. Hooray for democracy!

    Excellent! I’ve always wondered how to go about this, but I’m not a fan of experimenting with candy. Too messy.

    As for voting, I absolutely did. I voted absentee with my mom and turned the ballots in to our polling place this morning. Considering what people went through to make sure I could vote, I’d be insulting their sacrifice by staying home. People died for this right, and in other countries, they’re still dying. If that isn’t serious, then what is?

    Poor Katie. Too much grief for a post about white chocolate!!! But you did an excellent job of editing on the fly, because your current post is fabulous. And I am way more of a bitter, dark chocolate fan, but am thrilled to have some decent white chocolate to throw into an oatmeal, cranberry cookie! Woo-hoo! If you want to get started on that recipe for me, that’d be great. Feel free to bake them, leave them as dough, turn it into breakfast oatmeal, add macadamia nuts. I’m just thinking that would be a great combo for the holidays…hint, hint. 😉

    Love your site. You continue to completely fulfill my cravings for sweets, while still maintaining my wish to offer nutritious foods to my family. I just love being able to dump a cup of chocolate chips into something and still tell myself it’s health food. Yay!

        If for any reason you’re unable to eat sugar you can make toffee with xylitol. It reacts exactly the same way as sugar when heated (i.e. turns into caramel). Tastes the same too. And while I’ve never tried it myself you could probably add soy, almond, coconut or oat cream substitutes instead of normal cream if you are vegan or intolerant/allergic to dairy products (coconut cream is probably the best option for making toffee as cream substitutes like soy tend to be quite low in fat, whereas coconut cream has a fat content similar to normal dairy cream).

    How much does this recipe yield? I have a no-bake cookie recipe that is made with white chocolate, and am thinking of using this version instead of the store bought!

      It really depends on how big your candy molds are, or if you make bars. I didn’t actually count the amount I got… but if you make small chips you can get a lot out of it. I will have to go back and measure a cup amount soon!

    Love these! I feel like a whole new world has opened up–white chocolate has always felt mysterious.
    And not to be a plant nerd, but tomatoes are a vegetable. Vegetable is a culinary term, so any part of an edible plant can be a vegetable (roots, leaves, fruits, buds, tubers, etc). Botanically, tomatoes are a fruit, as are cucumbers, zucchini, pumpkins etc, as in they are formed from a developed flower. Wow, I am a nerd! 🙂

    In Asian groceries you can find coconut milk powder. I’ve never seen powdered soy or rice milk but powdered coconut milk is really easy to find

    Ok first the MOST important reason to happily visit this blog as much as possible (GOOD DESSERTS)! I’m actually quite excited about an awesome version of white chocolate chips to try.

    Next I’m sorry so many people get upset over this voting thing. I think this year seems a bit more nerve racking than most years (at least that I’ve personally noticed in my years of voting which has only been about 12). None the less I’m used to people telling me my VOTE doesn’t even count b/c I vote 3rd party, but you know what – It counts for me.

    I have been looking for a vegan white chocolate chip for a recipe for a while now!! So far the best one I’ve found that isn’t crazy with it’s ingredients says that it tastes a little grainy (I haven’t actually tried it yet). Hopefully yours isn’t. I mostly just want it for Raspberry White Chocolate Chip (and sometimes Macadamia nut) cookies 🙂 So thanks for coming up with this!!

        I don’t get why you always say this. I asked you awhile back too and lots of people found the idea helpful. Actually, I can’t even recall people voting this idea down (minus probably 1,2 Debbie Downers). I mean it’s okay if you can’t/don’t want to do it because of your dark kitchen (which you’ve mentioned before) but don’t say the readers dismissed the idea because that’s just not true. Lots of blogs have step-by-step photos which are in general really helpful.

            I don’t even know why I’m arguing here right now, but: I’ve read the comments, the first bunch was all YES DO IT, then there were people saying your easier recipes don’t need these instruction because duh, they’re easy! Then, at the end, there were people saying they hate longass step-by-steps. But they were in no way the majority, sorry. However, you’ll never please everyone. I for one would find it very useful to see the texture of the dough in many of your recipes because I’ve had some failures which I can’t explain to myself (other than vegan baking IS different than regular baking). But of course no one needs photos of you pouring the dough in muffin tins or whatever or whisking the ingredients together.

    At first I was all excited as usual reading about how to make white chocolate chips and then I started reading some of the responses about the voting comment and now I feel like exploding in anger! I am so sick of people always making something out of NOTHING! I read idiot comments on Facebook and now I have to be subjected to them on your superb blog! OH, but WAIT!! Maybe people will be smart enough to say ‘Well, you don’t have to read the comments.’ Hey, guess what!? That’s MY POINT!!! Let Katie write what she wants and how she wants and click off the page rather than junking up her comments page with your stupid criticisms.
    And by the way, I did not vote today. Being from Texas, it would be a complete and utter waste of time to go and vote for Obama. It. will. not. matter.
    In the 2 years I’ve been following CCK, this is the first day I’ve been incredibly pissed off to read yet more ignorant comments about politics……on a chocolate blog for crying out loud.

      Thanks, Cindy! I’m in TX too… I think it is ridiculous that people in certain parts of this country have more say in the election than people in others. Aren’t we all supposed to be equal? The electoral college is antiquated, and I’d love to see it replaced. But since it doesn’t look like that’ll happen any time soon, I might just have to move to Florida ;).

I’ve been a vegan for only about a year (I’m 15) and my family all eats meat, so usually I’m on my own for cooking, and it would be really helpful to know the easiest ways to freeze meals to eat later! So you really just have to try it to know how much you prefer. I’d recommend using just a little to begin with, as you can add more easily than you can take away.

    Fun Fact: for something to be legally labeled as “white chocolate” for sale in the US it has to be made with cocoa butter. I always hated “white chocolate” because I associated it with the icky fake stuff (see: Nestle’s “White Morsels.” So clever! It never occurred to me that they weren’t chocolate!). Now that I eat the real deal, I love it! Thanks so much for reminding me that I wanted to make it, and where to find cocoa butter!

    Hi Katie…for some reason I really REALLY thought that you were American/Canadian! Sorry about that! ;). I have been reading your blog for ages now and kept thinking that you were American! I used to get soy milk powder in sachets in woolies. You may still be able to get it on the mainland but not here in Tasmania…but you can’t get spring roll wrappers here in Tasmania either (sigh…) Again, sorry about the idea that you were American ;). Have you tried coconut cream/milk powder in your chocolate? Maggi makes one that I think they still sell in Woolies. If you head off to an Asian food shop you should be able to find heaps of varieties of soymilk “drink” they call it but its just sweetened soymilk powder. Where are you in Aus? I come from W.A. but live in Tassie now 🙂

    Instead of milk powder I found that you could use Coconut Milk Powder instead. But then it is a good idea to add some lecithin, so the mixture doesn’t separate.
    I got the idea some month ago, but I have also used your coconut butter “chocolate” recipe sometimes. (the one with the candy in it – yum)

I guess if we’re going to be in a public forum we have to grow thicker skin and/or feathers like a duck to let things roll off of our backs like water.

    The first time I ever tasted white chocolate was one Easter when my mother put a white lamb in my basket. At first I thought it was heresy!! But she just said to taste it. While I’m sure the white chocolate in a cheapy little Easter lamb wasn’t high quality or anything, it didn’t matter. I fell in love with it! I’ve missed it very much. I will have to try making some of this if I can find cocoa butter locally. I’m hoping like crazy that it tastes like I remember!

    Do you know where to find cacoa butter? Is it something you can buy at any old supermarket, or do you need to go to Whole Foods or another health store to get it?

    I was so excited to make this, but it just wasn’t that good. I’m bummed. I found some cocoa butter at my health food store and followed your recipe…but I was unsure how much sugar to add. The cocoa butter was very strong tasting- I felt a bit like I was eating sweetened lotion. Should I try this again with the brand you recommend, or is the flavor of this recipe different from traditional white chocolate? I am wondering if I should add a bit more powdered milk next time. Did you experiment with doing that?
    PS- Thanks for this great blog! I love cooking healthier versions of all these sweets!

      Uh oh. Since you mentioned it tasted like lotion, it sounds like you accidentally bought the kind of cacao butter you’re supposed to use on your skin, not the food grade one. Don’t look in the vitamin section, look in the raw food section. That could make a difference!

    I made a batch to go in my favorite oatmeal raisin cookie recipe. I replaced the raisins with 1/2 cranberries and 1/2 of these white chocolate chips, and OMG! It worked!!! You have made this vegan very very happy!!! 🙂 🙂 🙂

      I had the same trouble…. it seems like the vanilla extract didnt want to bind. I melted the cacoa butter, added the stevia (which seemed to go in just fine), then the extract, then the salt, then the powdered milk. some of it formed small (very small) clumps that sank to the bottom and never dissolved or intergrated into the cacoa butter. Its in the freezer chilling now… and we will see what it taste like.

    Hi Katie, I am excited to try this recipe. Do you know if I make this in bulk, let the candy harden and re-melt, will the chocolate hold up? If so, how should I store it? The plan is to make a big batch and have it handy anytime I want to make chocolate “dipped” things, instead of making each time.. Like a bag of white chocolate chips.

    So is it calcium in milk powder that helps keep the consistency like traditional whitte chocolate? I don’t currently have rice or soy milk powder, but was curious about alternatives (I saw coconut milk powder commented, but didn’t want to be missing an important compositional element..). In the past I made pudding with pre-packaged mix, almond milk and simply crushed calcium to help bond the pudding together. Not sure if this is at all the same thing, but love the idea of this recipe.

    Is there any replacement for cocoa butter? I have seen someone mentioned coconut milk as a replacement for cocoa butter.

      No. The cocoa butter is what makes it chocolate. You could get white baking chips without cocoa butter but then they would have all of the hydrogenated oils and additives that that we are trying to avoid by making our own. The coconut milk powder is a replacement for powdered milk. I have seen some recipes for a bark made with coconut oil in some paleo cookbooks. It looks white but I have never tasted it, it also has to be kept in the freezer I think since coconut oil has such a low melting point. Good luck!

    And if I can just go straight from the mixing stage of this recipe, into the melted mixing stage of preparing moulding chocolate?
    Or do I need to set this recipe first & then start the moulding chocolate from scratch….

However I am unsure after reading several of your posts whether you attempted to “mold” this chocolate.     Hi Katie,

    Thanks for giving me the ideas for ingredients I needed to make my own white chocolate spread. I dissolve whey isolate in water, then stir it into some (salt and sugar) free peanut butter. This means the protein powder can be dissolved, thus avoiding the grainy feel of powder in end product, and the peanut butter acts as the emulsifier for the water based protein solution and the coconut oil I use instead of cocoa butter. I then add honey, stevia and natural caramel essence for flavour, and liquid coconut oil to make it more solid. I store it in the fridge of course, which preserves it and gives it the right consistency.

    Dark chocolate sometimes contains mycotoxins and aflatoxins (which can be carcinogenic, depending on dose), whereas white chocolate doesn’t. While cocoa butter doesn’t have nearly as many health benefits as dark chocolate, it’s been shown to benefit platelet function and potentially atherogenesis more than dark chocolate (in men, but not in women…why must you be so confusing science?).

    I love your site. I know that this comment section became VERY contriversial. But could you please edit the comments to food related? I just spent about 10 minutes going through the comments to find out why my chocolate was separating. I didn’t use the nut butter, just cacao butter,powdered sugar, powdered milk, and vanilla. My son is allergic to soy so we cannot use commercial white chocolate. I am thinking that the nut butter works as an emulsifier like the soy lecithin. I know that they make lecithin from sunflower since it is in my protien powder so it may be in other nut butters too. I know that sunflower is not a nut but they may have similar properties. Heck, I add dijon mustard to my balsalmic vinegrette as an emulsifier. Just wouldn’t taste good in white chocolate :-). I’m going to rewarm my chocolate and add in a bit of cashew butter. (It’s what I have in the fridge) Thanks for the recipe and all of the other great ones that you share.

    Well I tried your recipe and after a long time of gathering the ingredients and waiting for that special moment, I finally made them. I was very pleased. The taste was fabulous. I would probably use this recipe for no-bakes rather than say, cookies, as the cacao butter melted into my cookies and made them extra ‘buttery’ rather than keeping that solid chip effect I was after. Maybe those big conglomerate chocolate chip cookie companies know a thing or two about having your chip and eating it in a cookie too!

    Here’s some magic why adding liquids to cocoa butter will never work – butter (even cocoa) is hydrophobic which ultimately means you won’t be able to get the chocolaty texture 🙂 Where can I get vegan milk powder? I’ve been looking all over the internet and no success 🙁

    do you think coconut milk powder would work? I’m hoping it would be the same principal as replacing the milk powder with rice milk powder or soy milk powder. Plus, coconut milk is pretty creamy normally.

    Been looking for a white chocolate recipe for ever! I just tried it. Used protein powder, and sunflower butter. But after mixing, it was really dry. Could it be the powdered sugar?     This is the first time I’ve been to your site, but I really appreciate this recipe. I’m Type 1 diabetic, and I was diagnosed at 37. I miss my white chocolate mochas and was looking for a way to make a sugar free version of my own coffee syrups at home. Many of the other flavors are easy to make, but white chocolate is more of pain because of the ingredients. I cannot wait to try this out and incorporate the chips into a white chocolate syrup recipe. If I remember to, I’ll let you know how it turns out. I’m not making any promises though, lol.
