Hi Katie! I re-pinned your recipe for homemade white chocolate chips-so genius! There is no substitute for white chocolate that is allergen-free, so I love that I can make them at home now! I have never tried NuNatruals Stevia, and cannot seem to find it locally. I have heard great things about this product and I think it is great you are having a giveaway to spread the word. Thank you!!

  29. Andrea says

Hi Katie…I’m not on Pinterest at the moment, but I do have a stevia-related question I’ve been wondering about for a while. You use packets of stevia all the time in your recipes, and I have a bottle of NuNaturals White Stevia Powder that I’ve had for awhile. So how much of this would I use to equal one packet? I would really like to use what I have.

On another note: I LOVE your site, love the new look of your site, and love the way your sweet personality comes through in your posts. I’m sure I’m not the only one who feels this way: I personally thought it was very kind, generous and thoughtful of you to want to give all the proceeds of this month to Sandy victims. It makes me sad that some people thought it was a self-serving act, because anyone who reads your blog knows that that would never be your intent. So will you please share with us how much you actually donate? I have loved having a good excuse to browse around your site more this month, knowing it’s not only fun for me, but will make money to go to a good cause. Keep up the good work: you are awesome!!!

    • Chocolate-Covered Katie says

      Hi Andrea,
It depends on whether or not you have pure uncut extract. If you have regular, it’s 1/2 tsp. Uncut is 1/64 tsp for a packet.
For the fundraiser, I updated my post with what happened. The fundraiser ended up having to be cancelled, unfortunately, and I made a private donation instead.

  30. Tina says

I am already a follower and re-pin about everything you post! I repinned your baked pumpkin french toast because it’s what’s for breakfast tomorrow!!

Hi Katie! Thanks for the giveaway, stevia is the only sugar-free sweetener I will use…I usually use ‘stevia in the raw’. I also have some dried stevia plant leaves my friend gave to me, but they taste kind of bitter in desserts! Taste pretty good in tea though. But I would love to finally try the liquid stevia!

My magic bullet has gotten quite the workout from this new-found obsession. Thanks a million!

    Hi Katie!
Just wanted to say that I love your blog! I’m 14 years old and the only vegan in my family, so I cook for myself a lot (probably a lot more than many 14 year olds), and your recipes are so easy and delicious! My mom hates spending tons of money on food for me, especially on the things she feels are unnecessary. (such as stevia) I’ve been following you on twitter and retweeted your post. Thanks again for all the amazing recipes!

I liked your facebook page, followed you, and repin-ed several pins long before this giveaway! 🙂 I have noticed that unpleasant aftertaste in the stevia that I have bought, so I’d be really excited to try this kind out! It would be a perfect excuse to bake some healthy holiday treats…not that I really need an excuse. 😀

Hi Katie! I know you’re going to get a ton of comments here, but if by some chance you do get a chance to read this, I just want you to know how much of an inspiration you have been to me. I lost about 20lbs over the past year and a half by running and eating healthier, but I realized a few months back that I was becoming way too obsessive about cutting things entirely out of my diet and viewing them as “bad” foods. Thanks to your blog, I am rediscovering the pleasures of eating dessert, and also learning how to to so in a healthy way.
It’s also great to see a successful, vegan runner. I think you are an inspiration to so many people, including myself, because you really make veganism very accessible. I am now an at-home vegan, thanks to you!
Thank you so much for all your hard work and I’m really look forward to seeing your cookbook on a shelf someday 🙂

I would also like to say that I have been trying to live a healthier lifestyle, and though your recipes are really sort of inspiring; it’s nice to know you really don’t have to sacrifice delicious food. In fact, since I’ve been eating healthier I’ve found that I would prefer good, healthy, hearty food, over processed or fried food any day!!!

  145. Katie says

Liked on Facebook! I’ve been looking for liquid stevia ever since I came back from Chile were it is on every table! Hope to have some here in the States too!

I Liked and Tweeted and Pinned (Love the Pumpkin Pie Oatmeal and Pumpkin Bread in a Bowl–breakfast scrumptiousness!) I stumbled onto your site a few days ago and loving everything I see. I’ve recently committed to going dairy- and gluten-free, so your blog is a godsend for someone looking for healthy alternatives in sweet–and chocolate infused–packages. (Also loving the Single Lady Cakes! Portion control wonderment!) Thanks, Katie!

  147. Madison says

    Katie,

I love your blog; I have been stalking it for quite some time. I have tried lots of recipes and my favorite ones are the pumpkin recipes. I once went so crazy on pumpkin things that the palms of my hands started to turn an orange-ish color. So now I am all about the secret ingredient peanut butter cookies. I make them all the time. I just repinned them onto my food board on Pinterest. Keep doing what you’re doing so well 🙂

  148. Madison says

    Katie,

I love your entire blog. I spent a couple of days going thorugh your posts once I made the life-changing discovery. You seem like a very sweet girl (no pun intended). I appreciate the GF options you provide because most GF desserts are extremely poor nutritionally. Just I have Celiac does not mean I want to fill my body with icky store-bought GF baked goods. Thank you for bringing the joy of baking back into my life. I like your Facebook page so my friends can all see what the amazing work you do.

    Happy Holidays!

  149. Madison says

    Hey Katie!

Repinned your “under 200” calories pancakes. My kids love pancakes every Sunday morning, but I’ve stopped joining in because of the calorie factor. I can start joining in again! : )

  179. Trisha says

I love nu naturals stevia! I carry the vanilla in my purse ( which I’m conveniently almost out of…) ;-). I sure would love to try the chocolate too!

  180. Honeybird says

So great!!! My sister’s new boyfriend is allergic to sugar and dairy, so I have to make up new recipes using sweetener and non-dairy products.
But I had a sweetener-powder, and it tastes horrible! So dry in your mouth, bad after-taste and it makes my baking -or whatever I use it in- grainy…
Maybe liquid sweeteners give better results. I can’t use honey or date-syrup in everything.. 😉

  181. Hannah Jones says

I pinned the single-serving microwave German chocolate cake! :). I’ve yet to try it but its on my list! Thanks for the giveaway opportunity, I use Stevia all the time. Tough I’ve never heard of NuNaturals Dtevia before, it sounds great!

  185. Dave says

I’ve been trolling your site for a while now but really hadn’t been doing much with Pinterest…. I suppose I’ve been hoarding the deliciousness that exists on your blog :). My sister (Alanna) turned me on to your recipes because I LOVE to cook and dairy and me don’t see eye to eye. Avid CCK fan and now you’ve convinced me to share with the world :-D.

Pinned a ton of my favorites of your recipes today – was seriously difficult to choose them as I kept wanting to run to the kitchen and throw them together!!

    Thanks, Katie! Best. Blog. Ever!

  186. Mrs. VK says

I am a follower of you already but have re-pinned {2 actually} recipes this morning… I really like a healthy twist to your recipes. Growing up in a home with allergies we learned to substitute lots of things but it sure it fun to find recipes that you don’t have to do a lot of substituting for! 🙂 Thanks for the good work!

  187. Jocelyn says

My kids love your orange chicken recipe. The sauce goes great on veggie chicken nuggets. I get your posts by email.

  188. Andrea Gellen says

I repinned your crockpot oatmeal, which I’m going to try this week! I brought your PB sandwich bread to work and everyone asked for the link, it was such a hit! 🙂

  189. Dave says

Oh and I have to add (sorry for the repeat posting) – I have been a stevia user for years… I swear by it. However, I haven’t been able to convert as many people as I would like specifically because of the aftertaste. I haven’t tried this brand yet – looking on Amazon now! At any rate, I think it is seriously cool of you to promote this MUCH healthier sweetener alternative. Just a few drops makes an insane impact – I used to be a coffee drinker that used copious amounts of sugar – now I use just a drop or 2 (depending on how dark the roast) and that’s all I need. I live by this stuff!

  190. Alison Bloom says

Hi Katie! What an AWESOME give away, I would love these. It is tough being in college and wanting things that… well that cost money!!
I just repinned your healthy hostess treat on pintrest–though I’m sure I’ve repinned plenty of your recipes before.

I repinned your healthy oreo recipe, liked you on Facebook and I’m an e-mail subscriber!!! I never have commented and told you how much I loooooove your blog but I figured now was a good chance!! I have a sensitivity to sugar and gluten (and I’m also going to culinary school for baking and pastry) and your blog is a lifesaver, I’ve made tons of your recipes, and a few different variations as well. I’ve always used the powdered stevia, so I’m curious about using liquid.

I commented on FB, following you on twitter, and re-pinned your chocolate brownie recipe, and on your german chocolate cake for one. They are all great. Hard to choose. They are all that great.

  309. Taija says

    G’day from down under Australia!
I’ve been following your blog for a couple of months now and it’s still my go-to place when I’m craving something sweet but I’m trying so hard to eat better and not feel guilty having sweets! I was already a follower on fb, and pinned your chocolate cake for one (that, was amazing when I made it the other week) and so I just added you to my twitter account!
I’ve not seen NuNaturals in any of the healthfood shops near me – but we are sadly still a bit behind in the sugar alternatives down here, it’s only just coming into fashion now. I use xylitol for most substitutes mainly because it doesn’t have that aftertaste that stevia has.

Anyway, your creativity amazes me and thanks for all the hard work you do to bring us some genuine sweetness into our days!

  310. Julee Sanchez says

I would love to win this! I’ve already done all that’s required, except follow you on twitter~ I don’t have a cell phone. 🙂

(This prob doesn’t count for the give-away, but i just thought it might help for you to know that i did that…hehe)

  314. Kristine says

Pinned your pumpkin brownies because they are the best brownies I’ve ever eaten (and brownies are probably the best dessert under the sun, so I’ve had a lot). I love them because they are not cakey but delicious and fudgey. Thanks for the recipe 🙂

Anyways, I’m pretty sure half of my repins on pinterest are from your blog! (I just re-pinned your raw chocolate macaroons right now.) I make your mug cakes in my dorm room all the time…my roommates always walk in and say,”I love that you eat so much cake, it makes our room smell so goooood!” Hahah.

  349. Allison F. says

I have sworn off of social media for the time being, but I’d still love to enter this contest! I love NuNaturals’ products. As a graduate student nearing the end of the semester, my time AND money are low, so I haven’t been able to replenish my stevia stock in quite a while.

  350. Ashley says

I ABSOLUTELY ADORE these NuNaturals products! When I found them wayyy up high on the top shelf at Whole Foods I had to beg a kind passerby to get multiple bottles down for me (I’m short what can I say!). I do, however, feel quite guilty purchasing these products as they are WAY out of my budget. But they do wonders for my homemade frosting, oatmeal, smoothie, and cookie recipes…so every now and then I’ll make the splurge 🙂

Second, I am a college student therefore your recipe is a whole lot more affordable than regular trips to starbucks. I was thinking about coffee because its exam week! Thank you for your recipes & contest

  372. Sarah says

  374. Becky Young says

Following you on Twitter. Thanks for the chance to win…have been thinking of ordering this brand of Stevia to try it. The brand I currently use does leave an aftertaste. Thanks for the work that you do…I started eating a vegan diet about 3 years ago and have experienced great health benefits but was having a hard time satisfying my sweet tooth (I also cut way back on sugar at that point). It’s hard to find vegan desserts that are not loaded with butter, sugar and flour….so glad I found you!!

  375. Veganessa says

    Dear Katie!
I’m a girl from Germany and I really love reading your blog! All your recipes are great and taste delicious. My favorite is the voluminous oatmeal because I eat oatmeal every single day. For breakfast and at school 🙂 Here in Germany stevia was forbitten for a long time, but now we can get it in some organic food stores. Unfortunately I have never seen stevia with vanilla or chocolate and it sounds good 🙂
I like your page on facebook and subscribe you by email. Can’t wait to read your cookie posts!

  438. Amy says

  439. LantauMama says

I followed you on Twitter and did an RT of the contest.
BTW, I use your peanut butter pie recipe, but replace the peanut butter with pumpkin puree and add pumpkin spice for a raw sugar free pumpkin pie with your 5 minute chocolate/cashew/coconut/date crust – it is a huge hit with everyone whom has tried it – both for dessert and breakfast!!
I only use dates, bananas, fruit to sweeten when I bake, I’ve stayed away from stevia and slightly experimented with coconut sugar… but reading your posts make me think I should try the vanilla stevia, hope I get the chance to do so through this contest 🙂

  440. Amy says

Okay, and one more… The healthy chocolate cake. Because I CANNOT resist any recipe with both “healthy” and “chocolate” in the title!

I tried making “popcorn nachos”. It needs some tweaking but this is what I did. Note that I am not vegan and I used cheese from cow milk. I am sure you could substitute it for vegan cheese but I don’t have any at my house. Also I didn’t measure anything. Also those cream cheese cookies look absolutely amazing!!!!!

      Ingredients:
      Unpopped popcorn
      cheese
      vegetable oil
      Tabasco sauce
      brown paper lunch bag

      1. Put the unpopped popcorn in a bag and coat with a small amount of oil
      2. Put oily popcorn in brown bag and microwave for about 1 and a half minutes depending on the strength of your microwave you may have to change cooking time.
      3. Place popcorn into a microwave safe container and cover with grated cheese. Add a lot more than you think you need
      4. Microwave for about 30 seconds
      5. Dump (I mean it) with Tabasco. And eat it

I hope you try it 🙂
