Pecan pie cookies you can make in minutes.

Delicious and good for you at the same time. If you’ve ever had a pecan pie Larabar, that’s exactly what these pecan pie energy bites taste like.

(No bake) Pecan Pie Cookie Dough Balls you can make in minutes. https://chocolatecoveredkatie.com/2012/12/16/pecan-pie-cookie-dough-balls/

 

Pecan Pie Babies

(raw and gluten-free)

  • 1/2 cup raw pecans (For all substitutions on this recipe, see nutrition link below) (52g)
  • packed 1 cup pitted dates (I use Sunmaid, found in regular grocery stores near the raisins, as they are softer and stickier than the ones found in natural food stores.) (160g)
  • 1/8 tsp salt
  • 1/4 tsp pure vanilla extract
  • optional: chocolate chips (or mini chips, or a piece of your favorite chocolate bar)

Combine all ingredients in a food processor until it makes a crumbly dough. (You can add the optional chocolate chips either before or after blending.) Pour crumbles into a bag and smush into one big ball. Remove from bag and form little balls. Or you can make bars or cookie-cuttered shapes if you prefer. This can also be made in a Magic Bullet: halve the recipe for best blending in a bullet.

    If the recipe is what I think it is, ‘Cookies In A Jar’ sounds like a very good gift idea…which is always helpful with Christmas quickly approaching! I am picturing a healthy version of those cookie mixes in a jar, where the ingredients are pre-measured and layered with the instructions attached. Then all you have to do is mix with the liquid as directed and bake. It may not be what you were planning though, idk! And if not, it really won’t matter, because anything you post will be eagerly anticipated! (;

        Yes, flourless sugar cookie cut-outs please!!! My mom and I make these every year and they are sooo many calories due to the flour content. I also can’t have eggs so I have switched to using an egg replacer and that has made the dough a little tougher to work with due to the dryness of using the egg replacer powder.

    Please, please, please do flourless sugar cookies! You would be my favorite person ever if you did! (Not that you already aren’t 😉 ) The mint chocolate cookies sound delicious too. As do the pecan pie babies. Pecan pie is one of my favorite Larabar flavors! I need to get in my kitchen sometime soon to do some cookie baking. Hopefully I’ll be able to this week.

    Hey Katie these look delish….I just finished making a double batch of your hot fudge larabars into truffles rolled in cocoa powder, crushed pistachios, goji berries, and a version of ferrero rocher encasing a roasted hazelnut and rolled in crushed hazelnuts. They are all spectacular and will be giving them out as Christmas gifts along with your raw gingerbread men recipe but in truffle form. Im thinking now that some raw pecan cookies wouldn’t hurt either 🙂 the worst (or maybe the best) thing that could happen is that I would have to keep them all to myself. Im not complaining either way 😀

    I made these pecan pie balls – but added a 1/2 teaspoon of blackstrap molasses (because we put lots of molasses in our regular pecan pie). yep – they are amazing! thanks again for the marvelous recipes.

    I know it’s not on your list, but I could really use a recipe for cinnamon rolls. My family makes them every Christmas morning and the smell of cinnamon rolls baking just makes Christmas for me.       Yes! I want to make a black coffe flavored cookie so badly- I would use it as a base recipe for crazy coffe flavors, swirl it with cream and sugar flavored cookie dough, or just top it with a piece of dark chocolate- but all I can find on the Internet is chocolate cookies with coffe in them, as opposed to straight up coffe flavored cookies. *Steps off soapbox* sorry for the random tangent reply 🙂

    So cruel to make us choose- I cant decide between quinoa chocolate cookies and mint chocolate chip. My heart says mint chocolate chip all the way but my brain is saying quinoa chocolate is high protein- easier to justify as healthy for you and the kids.

    When I was rolling them my hands were covering in oil. Is that how it is supposed to be? Are dates really good for you if they have that much oil in them?

    I’m trying to pin this recipe – but it’s not working! I think something must have changed with the new design. Pinterest tries to load a page of different size images, but all are blank, with the various sizes being listed a “0 x 800” “0 x 1024” – they all have 0 as one of the dimensions, therefore nothing is showing. I hope this makes sense!

    You mention sun sweet dates (which are deglet noir dates). If you can get me shook dates, medjools are much more moist than deglet dates.
