These bars have a little bit of everything.

Soft and gooey, delightfully chewy. And very chocolatey!

Filled with all sorts of delicious & wholesome ingredients, like oats and berries, and chocolate chips. These chocolate chip oatmeal bars are just the thing for people who don’t want to choose; for people who want to have it all.

Bean Blondies

Chocolate Chip Everything Bars

(makes 12-16)

Adapted from White Bean Blondies.

  • 1/4 cup rolled or quick oats (20g)
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup shredded coconut (regular or reduced-fat) (15g)
  • 1 (15-oz) can garbanzo beans or white beans, drained and rinsed (250g after draining)
  • 1/4 cup xylitol or sugar or evaporated cane juice (40g)
  • 2 NuNaturals stevia packets, or omit and increase sugar to 1/2 cup
  • 3 tbsp coconut or vegetable oil (30g) (I can’t vouch for the resulting taste if you omit this or sub something in its place.)
  • 2 tbsp applesauce (30g)
  • 2 tsp pure vanilla extract (8g)
  • 3-5 tbsp chocolate chips, plus more for the top
  • 1/4 cup chopped walnuts or pecans (30g)
  • 1/2 cup freeze-dried berries (28g)(or dry fruit such as raisins)

Preheat oven to 350 F and grease an 8×8 square pan. Combine the first 11 ingredients in a food processor (not a blender), and blend until completely smooth, scraping down the sides as necessary. Stir in the remaining three ingredients, transfer to the pan, and sprinkle some extra chocolate chips on top, very lightly pressing them down into the batter. Bake 30 minutes, then let cool completely before cutting into chocolate chip squares or chocolate chip bars.     Awesome! I actually made chocolate chip cookies the other day . . .
    I ended up adding cinnamon, orange extract, and about a million different kinds of dried fruit and nuts to them. They were like trail-mix cookies! 🙂

    All that to say, I don’t enjoy having to choose just one thing . . . unless there are only a couple choices. 🙂

    I agree I have the worst time making decisions when there are a lot of choices because I don’t like feeling like I missed out on something lol.
    I can’t wait to try these, I have some leftover chickpeas (I had a craving for some of your cookie dough dips lol) that are just screaming for me to make this recipe! 🙂

    I hate making decisions! I always ask my parents to make them for me. Even about stupid things like cookies or muffins for dessert 😉 Oh, and grocery stores! I could spend HOURS in one! There are so many choices; brands, ingredients, sizes, it takes me forever! I do love grocery stores, though 🙂 and it looks like I’m gonna get to go to one today so I can make these! Yay!

      I would think you’d need to add extra sweetener. Texture-wise, it shouldn’t be a problem.

          I guess I’m confused as to how it is supposed to look to be “correct.” (I’m very behind on the i technology and don’t actually own an iphone.) Unfortunately, my designer says she doesn’t know how to change the way it currently looks.
          But out of curiosity, do you have an example of a site (any site) that does look “correct” on an iphone? That way I can look at it and understand better what people mean when they say they want my site to look good on an iphone :).

    I like my choices…malls don’t faze me one bit, and I can’t think of a store that does. Except for IKEA. What a time sucker.
    BTW- I am so making these tomorrow. Umm (I hesitate to ask this), but are these fine without the chocolate chips? I don’t have any on hand, and I just polished off a bag of those Brookside chocolate covered acai things. man, those would have been awesome. And the weather is so gloomy I just can’t justify the 1.4 mile walk to Giant’s. Thanks!

    I’m absolutely horrible at making decisions. Especially in shoe stores. I pretty much hate shoe shopping. My mom “forced” me last year to pick out a few really nice pairs of shoes at a Bass Outlet and it took me forever. Try 1.5 hours. If I were the friend who came along with us I would hate me. 🙂

    I’ve wondered how you’ve adapted your bean blondies… And now I know! I always thought it would be so cool to make a cake, cupcake, muffins, bread, or something like that, out of chickpeas/black beans. Have you ever tried to adapt your blondies to other types of baked goods?

    I mus† admit the thought to adding beans to my baked goods slightly throws me off, I guess I’d have to try it before I make a decision though!
    I hate making decisions so much, I always ask my parents or friends to just make decisions for me…which includes what I study in school haha. Yah, it’s not so good, I just am such a worrier.

    Hey! I found your blog recently, and since them I’m a bit obsessed 😀
    I have a question though, where is the difference between a blender and a food processor? And where does a handheld blender fit in? And which ones can you recommend? Do I need both (I already have a handheld one)? Which brands are good? Thanks for your help!

      Hi Tascha! Lots of questions here, but I’m guessing by handheld blender you mean either an immersion blender or a hand mixer (like for cake batter)? In either case those definitely wouldn’t work for this. Regular blenders are normally taller and best suited to making drinks like milkshakes and smoothies, and have a smaller set of blades at the base. Food processors come in different sizes but are usually cylindrical in shape with a wide and sharp S-blade. That’s what you want for something with beans to get a smooth texture.

    Freeze dried berries are such a wonderful addition to the standard chocolate chip bar/cookie. What a great idea! I’m a fan of recipes that use “everything” you can round up from the pantry.

    Where do you get your freeze dried berries from? I have trouble finding them in stores. These look super yummy. I know what you mean about having too many choices. As much as I love restaurants with big menus, I always have to read the menu ahead of time because it takes me forever to decide!

      I have actually found freeze dried fruit at my local Wal Mart. It’s in two different spots; with the dried fruit and on the top shelf in the cereal aisle above the natural/organic cereals. Hope this helps!

    Cant wait to try these! I made your bean blondies and loved them. I NEVER would’ve considered using beans in baked goods but it works!

    I hate making choices. Too many options just overwhelm me. When I go into a clothing store I usually do a quick runthrough to know what I’m dealing with then go back and browse more closely. I never understood why I do this until I read about HSP’s – Highly Sensitive Person. Being an animal lover too, it all made sense. 🙂

    When you have instructions like “combine the first 11 ingredients” it would be really helpful if those ingredients had a space or something between them and the next set of ingredients. Three is easy to count the bullet points, 11 gets a bit cumbersome.

    Oh my goodness, these look delicious! I’m terrible when it comes to making decisions. Usually everything just looks so good when I go out to eat that I never know what to get, and then someone else gets something and I end up wishing I got what they did. I love going out to eat with people who don’t mind sharing, because then we can all get different dishes and try a little bit of everything.

    I like some choices, like big, wonderful food menus, but when it comes to too many cookie choices or a “you decide, Hannah. I don’t care” choice, then I can’t stand them! I just end up stressing out, or making lots of different cookies!

    These look delicious and surreptitiously not horribly unhealthy — cheers! As for choices: I’m with you on Forever 21, H&M, long restaurant menus, etc. … definitely overwhelming. I think studies show that most of us are happier with our decisions and less frustrated by the process when you have a limited number of choices (picking from among 3 chocolates rather than among 21).

    I love Forever 21, when I have the patience! Sometimes I love to shop around and sometimes it would be nice if the store wasn’t so big and loaded with 1,000 different racks lol. …..Lately I have been in a lunch rut and was just saying I wish I didn’t have much to choose from therefore I wouldn’t need to make a decision on what to eat. Lunch is my least favorite meal and I can never decide what I feel like eating.

    I have made your cookie dough dip with beans however have yet to add it to baked goods. If I hadn’t tried the dip I would think this was crazy but since the dip is really good im sure these are too! From the recipe it kind of reminds me of the brownies made with black beans, which are surprisingly pretty tasty 🙂

    These look delicious and I plan to make them today! But a question- I don’t have applesauce so what could I sub for that? I hate to run out and buy it just for two Tbsps of applesauce.

    Would ground flax work? If so how much?

      I bought the little snack-sized applesauces that come in a 6-pack. With one of the applesauce snack containers, I made two batches, with a little applesauce left over, and I’ve got 5 containers waiting in my pantry for when I need them.

    I’m the most indecisive person on the planet! I have to read over restaurant menus online before actually going out to eat because it takes me at least 30 minutes to decide what I want. And in the grocery store, when I’m supposed to choose between multiple brands of dark chocolate, I fail every time — I buy them all! Your Everything Bars would be perfect for me, although I might skip on the nuts and use extra berries or shredded coconut instead. Yum!

    Made these over the weekend when I happily found a can of Northern beans hiding in the back of my cupboard, and they’re so fun! Love all the different flavors going on in every bite. I used dried cherries and sliced almonds as my fruit and nuts (love the cherry-almond-chocolate combo), which worked really well. My bars are kind of thin but they’re filling even cut into 12 pieces. 🙂

    I made these for a BBQ yesterday…only told a few people what was in it. I put the pan on the table at dessert time and in 10 minutes the whole pan was gone!! I gone got a little bite!!! Everyone loved them and couldn’t beleive what the ingredients were when I told them!

    Hi Katie – wow! What an awesome site this is. Just stumbled on it and just love it and the contents. I adore my puds but as I am on a weight loss plan (34lbs lost so far….bit more to go!) I don’t get to have many. There are a number of really good, nutritional, low fat, no sugar recipes that I will be using when I am cooking for guests – guess that means I can have some too!!

    I am with you on the decision making! When I’m shopping, I like to have a lot of options, though. I’m picky about clothing, mostly because I’m big busted and don’t have a specific style, so the store needs to have a good selection. However, restaurants that have menus that are like 10 pages long is just too much for me. Really, even 5 pages can be too much!!!

    These are wonderful – my favorite CCK recipe so far! They are so easy to make, and I like everything about them except the fact that I can’t seem to stop eating them. (at least they are healthy, right? 🙂 I made them with extra-dark chocolate chips, (extra) unsweetened coconut, a mix of walnuts/pecans, and a mix of dried cranberries/cherries. Be careful not to over bake them as they will get a bit dry quickly.

    These bars are my new favorite thing to eat! I made one batch yesterday and got so into them I made another. Once you have all the ingredients assembled, they are super easy to throw together. And I love that they seem basically very healthy when they taste so rich. I used freeze-dried raspberries, and the chocolate-raspberry thing worked great (altho the raspberries were expensive). For the sugar I used Lakanto. I bought some crystallized ginger and crystallized pineapple from the bulk bins at Whole Foods, so might try those. (Actually bought them to put in your chocolate mousse, which used to be my favorite thing. (I’ve made it 7 times since I discovered the recipe 3 weeks ago.)

      I’ve saved many of Katie’s recipes and printed them. You can hi-light the recipe, then right-click and hit “save;” then open a new Word document, right-click and hit “paste.” You can then save that doc with the recipe name and put it in a CCK folder, and print it when needed!

    Dear CC KT,

    It’s a rainy last day of school here in sunny Central Florida. I made these DELICIOUS bars for a “hip hip hooray, school’s out for summer” treat for my teen daughters. They agreed “yummy”. I used dried cherries, honey for the sweetener, and had no applesauce on hand so I used more coconut oil.

    I’ve made black bean brownies before, but I’m more of a blondie fan and love this version. Keep sending us recipes!

    I don’t have freeze-dried berries and don’t really like the texture of dried fruit in baked goods. Has anyone tried these with fresh or frozen berries?

      Made these today and they are delicious! Can’t taste the beans at all! 🙂 I’ll definitely be making these again!

      I used frozen raspberries in place of freeze-dried and stirred in another couple tablespoons of oats at the end. I do think they needed to bake a little bit longer, but other than that, fantastic.

    My roommate and I love all of your recipes, especially the peanut butter and banana pie and the fake cookie dough. Idk if you often get recipes FROM commenters but I recently made some magic cookie bars and did a little variation on it, they came out DELICIOUS and based on all the recipes I’ve tried of yours I think you would really love it. Armed with fresh pecans from my back yard I set out to make this recipe http://www.myrecipes.com/recipe/magic-cookie-bars, only to realize I didn’t have butterscotch chips or sweetened condensed milk. I replaced the butterscotch chips with chopped up dates and the milk with canned coconut milk, cooked for about 5 min extra and let set in the fridge and OMGOSH so good

    Another great recipe! I didn’t have apple sauce, so I subbed equal amount of whole berry cranberry sauce, which worked just as well. I also used coconut sugar instead of cane sugar (added a really nice caramel flavor) and Pure Monk monkfruit instead of stevia, and it came out great! I’m not food stylist, but here are the pics. Thanks!
