Weight Watchers Points Plus: 3 points

The original cupcake recipe can easily be made with homemade cashew mayo if you wish to not use a jarred spread for whatever reason, but I’m also offering a quick second version that does not call for a mayo spread at all:

Bacon Cupcakes Version 2

  • 1/4 cup cocoa powder (20g)
  • 1 cup spelt or all-purpose flour (135g)
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup xylitol or sugar of choice (145g)
  • 1 1/2 tsp pure vanilla extract
  • 1 tsp liquid smoke
  • 1/2 cup plain or vanilla yogurt (such as SoDelicious or Wholesoy) (120g)
  • 1/4 cup applesauce (60g)
  • 3 tbsp vegetable or coconut oil (32g)
  • 1/2 cup milk of choice (120g)

20 minutes at a preheated 350 F. Makes 11-12 cupcakes.
