The CC Diet

What will you find on this Blog?

Yummy ideas for omnivores and vegans, alike. If you want healthy recipes that taste sinful and fun, you’ve come to the right place.

What’s the Chocolate-Covered Diet?

The recipes on this “diet” (and on this blog) are three things: Simple, Nutritious, and Delicious. My aim is to show that good health and good taste can go hand-in-hand. You deserve to eat what your body really craves. For example, you can get your vegetable servings from:

Brownie Batter Pancakes

No need to down those wheatgrass shots. And pretty please, step away from the canned, mushy peas!

chocolate spread

Naughty-Girl Chocolate Butter

Naughty-Girl Butter is the new peanut butter. It gives you antioxidants and endorphins. But more importantly, it tastes outta-this-world amazing and takes just 5 minutes to make!

Chocolate Chip Cookie Dough Oatmeal

Why eat boring bran flakes when there’s just as much fiber in a big bowl of cookie dough? And speaking of cookie dough…

single serving cookie for one

Single-Lady Chocolate Chip Cookie

Solution to eating a whole batch of cookies in one sitting? Make a single-serving cookie! It is possible to maintain a healthy diet and still eat chocolate every single day. In fact, I strongly recommend it.

Adopt a Chocolate-Covered Diet:
Vow—from this day forward—to only eat foods worthy of your status as a chocolate-covered goddess. You deserve it. Put down that wheatgrass and nobody gets hurt! After all, life’s more fun when it’s chocolate covered.

You may be able to eat like that because of your body and fast metabolism but not everyone else can.

CCV: Actually, I think EVERYone deserves to eat what his/her body truly craves (if one really listens closely to his/her body, hunger cues, etc). If you click on the links to the actual recipes on this blog, they’re surprisingly very healthy and CAN be made diet-friendly.

May I also add that it’s ridiculously easy to get in your veggie servings with all of your delicious recipes for arame salad, magic mushrooms, fall’s favorite curry, etc, etc, etc!

Very true, CCV! I believe we should eat what we crave in a healthy and delicious way! That doesn’t mean go stuff some McDonalds French fries down your mouth, but to make your own satisfying version! I saw a study done once about this…..can’t remember what it was called, though.

Anyway, the other reason we should eat what we crave is because, hey, we only have one life, right? Why not enjoy life a little? 🙂

Absolutely! Life is too short to eat broing or uninteresting food. I back this blog 100%. Katie, you are incredible, as are your recipes.

    Hey Katie,

Just wanted to say that I really admire what you’re doing! About running, healthy eating, vegan eating … It’s all so conscious and aware, if that makes sense.

Keep on keeping on, love. You’re doing great. And I’m definitely checking back to your blog 🙂

Seriously?! I think I love you!!!!! I have recently lost a great deal of weight and still have a little left to go before I can call it “goal”, but I was getting really bored with some of my recipes and I have recently begun to eat a more vegetarian diet with the hopes of ending up vegan (we will see, lol) but I have had quite a bit of naysayers telling me I wouldn’t like it. The thing is I actually love eating vegetarian meals and raw foods:) and I just love people who are willing to share with others!!!!! Seriously, some of your recipes just might seal the deal on me becoming vegetarian or vegan for life. Keep it up girlie!

Hi Katie, Love your site!! and all your ideas for icecream!! i’m wondering if you ever tried frozen corn in your recipes and if so what results did you have?
    Thanks Lib

      • Libby says

No, i mean like how you make icecream with strawberries as a base, have you ever tried throwing frozen sweet corn in there? I was listening to someone’s podcast and they say corn is good for your hair, cause it has silica or something in it…. well i’m always trying to grow my hair out and i thought hmmm, maybe i could add corn into some of the yummier vitamix recipes and i wondered if you have ever given it a go and what the results may have been?

I actually really love crushing up 100% chocolate into pieces. But when I bake for others who don’t share my love of bitter chocolate, I use any number of brands, from Ghirardelli to Whole Foods brand, to whatever else they might happen to have at the store. 🙂

    Hi!
Im wondering if you use vegan proteinpowders? Which vitamins do you take every day?

Im a former vegan, but I really badly want to go vegan again, but im afraid to loose hair, anemia, losing energy etc. Which I did last time I went vegan 🙁 (was vegan for 2 years straight)

Im an athlete like you. Where did you get your research the first time you went healthy-vegan?

    I totally love your recipes!
    this is a great blog!

    • Chocolate-Covered Katie says

      Hi Hanne,
I don’t really use much protein powder, and for vitamins I only take a DHA omega 3 pill. But I’m not a nutritionist, so I’m worried about giving advice to someone about vitamins and all… if you can possibly get your hands on a book called “The Vegetarian Way” I would highly, highly recommend it. It’s a terrific resource, with chapters about all the vitamins/minerals and it has a special section for athletes. Definitely a worthy investment :). Good luck!
