Healthy Breakfast Pizza!

Above, with Healthy “Cream Cheese” Frosting.

Breakfast Pizza
Serves 1-2

  • 1/2 cup whole-wheat pastry flour (or click for a Gluten-Free Version.) (70g)
  • 1 tsp baking powder
  • 2 stevia packets (1/16 tsp uncut) or 2 tablespoons sugar (Can easily be omitted if you’re planning to frost the pizza with something very sweet.)
  • very scant 1/2 cup (100 g) water, juice, or milk of choice
  • 2 tbsp (35g) applesauce or coconut oil (or pumpkin, veg oil, mashed banana, or even baby food!)
  • 1/8 tsp salt
  • spices or extracts if you wish (I like adding a little cinnamon)
  • A few handfuls ______ Fill in the blank! Raspberries? Chocolate chips? Chopped apples, walnuts, and raisins?  Anything goes!!  It’s your pizzert!

Mix everything together and pour into a greased pan. (I spray mine with coconut oil spray, then I wipe it around to make sure it’s evenly coated. Make sure to grease enough, or it’ll stick to the pan!) Cook in an UNpreheated oven at 420 degrees F for 10 minutes, or until a toothpick comes out clean. Then you get to play with toppings!!

    i made a pan fried version of this yesterday. ok, so it was pancakes… but it was the same exact basic recipe. I added to the spelt flour, cocoa powder, vanilla stevia, vanilla extract, cinnamon, nutmeg, coconut extract and used coconut milk beverage as the liquid. then i made a sauce with melted dark chocolate, coconut oil and coconut butter. um, heaven.

    You definitely don’t have to use ww pastry flour! 🙂
    I’m sure regular white flour would work fine. The only flour I’d caution against using is regular whole wheat flour, because it might yield a gummy texture. (But if you like “gummy” textures, you can still use it.)

    Katie, do you bake these in a standard 8 or 9 inch cake pan? And if you do, do you think it would work just as well in a square 8×8 inch glass baking dish?

      Yup, a standard-sized pan… but actually I’ve been loving the option I wrote about in this post: to put it on a baking sheet. It’s much easier to take out that way! Oh, but to answer our question, I think it would work your way too :).

      (I don’t think you’d need yeast. But honestly, I have never made anything with yeast… I need to get over my fear of using it. I’m sure it can’t be as complicated as I’ve built it up to be in my head lol!)

It was thin enough that I felt silly cutting it with a fork (thought about ripping off pieces by hand, like you do with flatbread), so after topping with Reeses Pieces Fudge Frosting, I rolled it into a burrito shape and ate it that way! (Note to self: do NOT try to eat a frosting-covered pizzert as a single serving. Sorry, tummy!)

      I used the uber-healthy version (water, 1 T sugar, 2 T applesauce), and even though the whole thing held together easily, the inside stayed kind of a fun spongy texture (slightly underdone).     I just made a chocolate chip one for my 13 year old son and 10 year old daughter. My daughter wanted me to suggest to you her recipe. Melted sugar free chocolate chips swirled on top so every bite will have chocolate. 😉 Sounds good to me!

    I just made this for breakfast and it was delicious! I left the batter plain since I couldn’t decide what I wanted to put in it. I ended up topping it with melted banana, 1 T tofutti, 1 T of almond butter mixed in the food processor and then drizzled 1 t of maple syrup over the whole thing. When I eat the other half I will definitely add some berries on top 🙂 It was creamy deliciousness, thank you! Oh and I spread it on a silicon mat on a baking sheet and it turned out great. ~Leslie

    So far, the few times that I’ve used stevia, it doesn’t seem to be sweetening anything at all 🙁

    But anyways, I had one question: to melt the coconut oil, should I scoop it out of the jar and microwave it separately or can I just microwave the whole jar?

I can’t anticipate it turning out bad 😛 Even if it is a hot gooey mess, what’s better than eating a hot gooey mess for breakfast? haha

      Update: Not only did it work, but it’s probably my favorite breakfast to date! I even used whole wheat flour and (although I enjoy dense bread) it was not too “gummy” at all 🙂 I’m so happy I may just have this for dessert tonight- ha breakfast and dessert the same?

Oh, did I mention I also made voluminous oatmeal to make snicker doodle oatmeal and peppermint bark? They are going to wake up in the morning and think I’ve gone mad!

      I bought mine at Whole Foods, I would think that most “health food” stores would carry it. Or online, but I didn’t want to pay shipping! It is a semi-solid white oil that looks kind of like Crisco. Hope this helps!

    “Sunshine Breakfast Pie”! It would make my morning “sunny” no matter what the weather! 😉 And yes, I would HAVE to add chocolate too…mini choc chips would be just right!

    PS. I’m taking “Chocolate-Raspberry Fudge Cakes” put into mini-muffin liners to our Youth Group Dessert Auction tonight! Our youth leader is vegetarian & she LOVED the Reece’s Eggs so I decided to spring something different on them! ( they were approved by my 14 yr old son who has no clue what is in them!) I am also patting myself on the back for actually making Coconut Butter in my 20 year old Kenmore Blender! I was dubious, but it worked. Thanks for shaking up my ideas of dessert & helping me to eat my favorite food group – Chocolate!

        I will email you a pic of my finished plate, all decorated up with choc shavings & fresh raspberries! The plate of 20 “mini-cakes” sold at auction for $35 and were a HUGE hit! Many requests for the recipe which means they will get your blog!!! 😉 Thanks again for such easy & delicious recipes!

    It looks like a Yummy Fruit Tart that would be delicious for breakfast, lunch, dinner, snack or dessert! Your pictures look yummy, will have to try this soon. Some chocolate drizzled over the top would be delicious and pretty.

    so you put it in a cold oven with the temp set to go to 420? Does the timing start once it goes IN or when it hits 420? I have never cooked anything in an UNpreheated oven! Thanks for clarification!

    Just made one w/ peaches and a few pineapple pieces and topped w/ unflavored yogurt ( I’m not vegan but your recipes are terrific for anyone!) Used Pineapple juice for the liquid. Delish! How do you come up with this stuff??

    hi katie- i read your blogs religiously! i tried this for dinner and for once, i did something that turned out delicious! i modified it- so in case anyone wants to try it:
    1/3 cup all purpose (10g)
    1/4 cup wheat bran (15g)
    1 scoop of vegan protein (chia/hemp/pea mix, but i”m sure any protein powder will work)
    tons of cinnamon
    1/4 tsp of baking soda and powder (each)
    3 spoons of splenda
    1 spoon pumpkin (17g)
    1 spoon applesauce (20g)
    and sf cinnamon dulce syrup (i buy this from starbucks because you get a huge bottle for much cheaper than the torani)

    –obviously, i played around with what i had;I need to increase my protein, and this gives a nice amount of fiber too.
    i topped it with your better than pillsbury frosting and added fresh strawberries on it- omg- it was awesome…kind of want to make another one for dessert.

We have two wonderful and rambunctious boys with food allergies (cow’s milk, nuts, beef) who ask for the mint-chocolate-chip shake at least twice a week now.     I added bananas, chocolate chips, and cinnamon to mine, and actually just mixed the dough in the pan… it turned out great. So much food, too – low cal, high nutrition, and delish!

    This is THE most awesome breakfast idea since overnight oats…and I have a teeny tiny obsession with said breakfast. I may have found a new addiction lol. And I can pack in in kiddies lunch, I love giving them treats that are still yum but healthy too!. I’m gonna whip up a batch with some mango and guava topping I found whilst shopping this week and some plums..drooling already!! Why is it soo long till brekkie??

    I tried this with WW flour, blue berries and pinch of salt. Skipped Stevia and spread pizzert on a cookie sheet. It tasted like a yummy blue berry waffle. I could not wait until I apply any topping. It disappeared within 2 minutes.
    Will surely make this again.

    Thanks again for yet another healthy and tasty recipe. Wondering if we can use the same for pancakes?

    Just made this for my mom and me for breakfast, and it was so nice and light! We both just wanted to eat a ton of the amazing fruit we picked up at the Farmer’s Market this week so we wanted something that would complement and not overpower the fruit…this was perfect. I used regular wheat flour (I don’t think it was gummy), coconut sugar as the sweetener, and the water/applesauce version, no extra spices (wanted to try it as simple as possible for the first time and next time will start experimenting). Only needed to be baked for 8 minutes in my oven. Topped it with strawberries and blackberries and am one happy camper for breakfast 🙂 Thanks for another great recipe!

    no shame here, I HAVE eaten this every morning for over week (just finished a pumpkin apple flavored one 😉 ) I add just about anything/everything (blueberries, apples, peaches, pumpkin, raspberries… endless decisions, hence the NUMEROUS times I’ve eaten them…) I also eat the whole thing, as I wouldn’t want to have to share this with ANYONE. I usually top it with some sort of protein glaze or frosting (protein powder mixed with sugar free maple syrup or almond milk). it’s always good. (I also always add cinnamon <3. and vanilla extract)

    When you made the pizza did you make it with water or milk, because I want it to be as close to 100 calories as possible! I’m clearly a calorie counter haha
