    I am so excited to try your recipes! But I was wondering if you could repost you mint ice cream? For some reason it’s not showing up. Thnx!

      Hi Jennifer,

      This is so weird… you are the second person to tell me you can’t see the post in the past two days. But when I click on it, it works fine! And the other girl clicked at a later time and it suddenly worked for her too :(. I have absolutely no clue what’s going on, and I’m going to contact my host provider today, because I don’t understand computers and am really frustrated with this.

      Meanwhile, maybe you’ll have better luck clicking at a different time like the other commenter did? I really hope so! Here’s the link. It SHOULD work: https://chocolatecoveredkatie.com/2011/07/06/mint-chocolate-chip-ice-cream/

    I love soy ice cream. Now that it’s so expensive in stores, I can’t buy it very often, so its good to have your recipes on hand (which are better)!

    Hello! I was looking over your recipes, and I love them! I especially want to try your cookie dough dip. I am guilty of buying a tube of cookie dough, just to eat. ;]

    I was wondering if you’ve ever heard of non-dairy banana ice cream! It is so easy to make, and you can make a single serving or a huge serving. Since your recipes are so healthy, I thought you would be interested.

    All you have to do is get some bananas, slice them and freeze them solid. Then, you throw the frozen bananas in a blender and blend. The consistency is just like soft serve ice cream, and you don’t have to add anything to it. I like to use over ripe bananas because they have a sweeter flavor.

    And if you’re not fond of the slight banana taste, a splash of vanilla extract will make it taste just like vanilla soft serve! To make it even more delcious, I add a scoop of chunky peanut butter or a little honey and agave. Or even some dark chocolate chips.

    Try it! You’ll love it. :]

    Hi Katie! I just bought a Vitamix and stumbled onto your blog while looking for ice cream recipes. Although I did just see your guest post on Gina’s blog, Skinnytaste! Vegan Chocolate pancakes? Yes, I think I will try those thank you very much!! Anyway, I am SERIOUSLY trying to make pistachio ice cream in the Vitamix. Any ideas or suggestions? Thanks so much and happy New Year!

      Mmm that sounds really, really good! I hated pistachios when I was little, so I never tried pistachio ice cream. (Why on earth I hated such a delicious nut, I’ll never know!)

      I wonder if you could take a recipe for a cashew-based ice cream and use pistachios instead… I might have to try it!

    Just my humble opinion – you should play around with green tea ice cream/cookies. I fell in love with green tea desserts while living in China and it’s difficult (for me) to recreate. Have fun playing around with it (and I hope you do!!).

    Any chance yould be interested in giving us a healthier or a home made version of that?

    I just LOVE your recipes! Someone on my blog messaged me and asked if I had ever read your blog, and I can’t believe I had missed it! (I definitely won’t be now.) Since I have health conditions and am also watching calories, I can’t tell you how excited I was to see you “ice cream” post. I drink unsweetened vanilla almond milk like it’s going out of style anyways – too fun! I’m so glad you thought of it!

    Do you use an ice cream maker when using non dairy milk? If so, when you store it in the freezer will it be like the store bought non dairy ice cream? Does it hold it’s consistency? Or does it just freeze to a solid?

    I just made your recipe with 1 c full fat coconut milk/ 1 c soy creamer and with maple syrup for my sweetener… Wow! Other than Purely Decadent I don’t really care for vegan ice cream, which is sad but for the best since I used to eat ice cream almost every day as a vegetarian. Your recipe is the best non-dairy ice cream I have ever had! I also added a melted Endangered Species chocolate bar with espresso beans and a handful of walnuts, but it was amazing even without the additions.

      Thank you so much for trying it! I agree with you about the vegan ice cream… I’ve been disappointed with almost all of them as well. Wholesoy used to make a really great Creme Caramel, but they discontinued it for some reason. Currently the only ones I like are either homemade or Lula’s in NYC (best ice cream ever).

    How about an apple pie ice cream? Have you tried that? I’m going to try to cook down some apples add some sugar, cinnamon and nutmeg and see how it turns out!
