"Chocolate Butter"

CCV’s Chocolate Butter

(Only three ingredients :))

  • 60 g (4T) coconut oil
  • 52g (1/2 cup plus 1T) cocoa powder (plain Hershey’s works well) Use less if you aren’t a fan of extra-dark chocolate (I like 88% or higher, so I use the full amount listed)
  • scant 1/4 cup agave (or more) OR vanilla drops plus 46 grams water (3T) (I use 10 vanilla drops, but if you don’t like super-bitter chocolate, double or triple that amount)

Step #1: Melt your coconut oil (unless it’s Texas-summer hot; then there’s no need!).

You can either use the microwave (about 10 seconds) or the Melt-without-a-Microwave Trick

Step #2: Add the vanilla drops (or agave) and stir

Step #3: Add the cocoa, then add the water if you used vanilla drops.

Stir some more:

Keep stirring!

Finito!

Try not to eat the whole bowl at once. Oh heck, eat as much as you want!

    Looks great! What kind of coconut oil would you suggest? My brother bought a pretty cheap kind a while back, so it seems pretty processed…as in, there is no coconut scent or anything. :/ I somehow think that particular kind wouldn’t work well in this recipe.

    Oh yum! I do the same thing with almond butter! It tastes like a healthy nutella! can’t wait to try it with coconut oil! I just ran out of coconut oil YEASTERDAY, though! I am off to the store, pronto!

    Only problem is, it goes everywhere and you just have to lick it off your fingers *sigh* (but restrain yourself from licking it off the floor…!)
    Is this the place to enter the Artisana giveaway and if so, I’m in England…?!
    And as for question of the day, the less said about my first attempt at gluten-free pitta breads, the better.
    I managed to forget to add xanthan gum… which resulted in beautifully pitta-shaped but rock-solid crackers!
    Hee hee, love the fudge babies by the way.

    LOL I’m lazy! I didn’t want to write the whole recipe again. But yeah, I’ve written before about how I have issues with getting too attached to my old posts. I’m sure you feel the same way: you work so hard on a post that you don’t want to think that no one will ever see it again the day after it publishes! 🙂

    Okay, so I put it in the fridge hoping it would get the Bliss-like consistency, but it just got hard like a chocolate bar. I’m not complaning, cause it tasted amazing, but I wonder how to get it like yours in the picture? Yours looks spoon-able and spread-able, whereas mine was more like a chocolate sauce. Iiiiinteresting. 😛

      I haven’t made the chocolate butter in a while… could be due to the heat. My Artisana coconut butter doesn’t have that smooth texture anymore either. It’s either liquid or solid (if I put it in the fridge).
      Any time! It probably won’t go up til after September, so no hurry!

    This recipe is pretty much the same as something called Coconut Bark. Pour it in an 8×8 dish lined with parchment paper and pop it in the freezer for an hour. Break it apart into pieces and you have the bark.
