Substitution notes: I have only tried these popsicles as written, so I can’t vouch for any substitutions or say if something will work. But here are some thoughts if you want to experiment. Perhaps you can omit the banana and add a little full-fat (canned) coconut milk and some sweetener. Or perhaps you can omit the banana and use Thai coconut meat in its place.
