Chocolate-Spinach Pancakes

I really like brownie batter.

I even once posted a recipe for Brownie Batter Oatmeal.

And now I’m at it again—in pancake form! Normally, I shy away from powdered supplements because I have no problem getting more than enough servings of fruits, veggies, and leafy greens into my daily diet.  However, when the Amazing Grass Company offered to send me a care package (more on that later)… well, I’m definitely not one to turn down free stuff!  Right away, I wanted to experiment with the Chocolate Super Food packets.  The resulting experiment speaks for itself.

 

Chocolate-Spinach Pancakes
(serves 2)

(According to the Amazing Grass Company, each pancake serving contains about 3 servings of fruits and veggies!)

  • 60 grams buckwheat flour (I used Hodgson Mill buckwheat pancake mix)
  • 3 packages (the 8-gram packets) Amazing Grass Chocolate Green SuperFood (If you don’t like Amazing Grass, try subbing chocolate protein powder. Or perhaps sub cocoa powder for the AG?)
  • 35 grams unsweetened applesauce, which is about 2T (you can sub mashed banana for the applesauce)
  • 1/2 tsp Ener-G egg replacer (or baking powder)
  • 1/8 tsp salt
  • 1/3 cup water or non-dairy milk (use less for thicker pancakes)
  • Chocolate chips (I threw in a few Whole Foods Brand extra-dark chocolate mini chunks) (For an even richer batter, you can melt the chips before adding them to the mix.)
  • Sweetener of choice

Mix the dry ingredients (flour, powder, sweetener, egg replacer, salt, and chips), then turn on the heat on your pancake pan. Now add the milk/water and applesauce/banana (and extract, if using). Mix.

Options:

  • Drizzle with, or dunk into, a tall glass of non-dairy milk—it’s like eating warm, gooey brownies for breakfast!
  • Top with hot maple syrup, dust with powdered sugar, or spread on some coconut butter for Mounds Bar Brownie Pancakes.
  • Add vanilla, almond, or even mint extract.
  • Throw some cocoa powder into the mix, to make them extra chocolate-y!

Or, for chocolate-cheesecake pancakes, top with Cheesecake Sauce.

LOL I like flat pancakes! They remind me of crepes, which I’ve always liked better than doughy pancakes. But I guess you could use some baking soda… and, as I said in the recipe, use less liquid for a thicker pancake. Hope that helps!! :)

OMG I calculated it out and you are right.

I DON’T BELIEVE IT!

I came up with about 200 calories for half the recipe even calculating in a lot of chocolate chips!

Did I do it right? And is your plate only one serving, or is the plate what the entire recipe makes?

WHAAAAAAAT I am totally going to make these because I have all the ingredients, believe it or not! I have been mixing a scoop of the choc. superfood into almond milk each morning for a lil pick me up and I always marvel at the nice chocolate flavor it has, considering it’s a veggie powder. Therefore, these pancakes must happen! Thanks, lady. :)

OMG I just found this thread…heaven on a plate. Thank you! I am also a gluten, soy, dairy, & egg avoiding person so these are right up my alley. Most pancakes contain tons of wheat flour and for the record, buckwheat has nothing to do with wheat and actually is GF, you probably knew that but just posting it for someone who sees this and wants to know :)

I have tried and like both the chocolate green superfood and the chocolate amazing meal – both have such impressive stats!! I tried them ‘straight up’ but would definitely like to get more to try in smoothies – and of course, to give these pancakes a try too! :-)

I’ve tried the brownie batter pancakes (so freaking good! especially if you add chocolate chips… I recommend either minis or chop up bigger ones; that way you get ooey gooey chocolately goodness in every bite!) and also I’ve made mini muffins based on the brownie batter recipe… also very yummy! I’m sure you could also do cookies this way. The muffins are particularly tasty if you put a dab of almond butter in the center prior to baking… it’s almost like a reese’s cup, but way better!

i dont have a blog so i am posting my comment about amazing grass here! i started using the product about a month and a half ago, and it has changed me i am a totally different person. I was tired everyday, my body ached and i was dealing with a sort of depression, i found angela from Oh She Glows and started making green monsters with the amazing grass. Now i am full of energy, my skin glows, i feel that i am feeding my body the nutrients it needs with each sip! I have used the Green Superfood Powder, the Berry Green Superfood and the Chocolate for special smoothies! I cannot say enough about how great these products are.

I’ve tried the amazing meal original, chocolate and mango infusion and my favorite is definitely the mango. I’ve also had the green superfood energy bars (very good too!) However, because I live in Vancouver Canada, I rarely get to try them. My boyfriend went to Seattle twice this year and bought them for me! Even those new Larabar flavours :) It would be great to try more of their products!

I just made these tonight for my breakfast AND lunch tomorrow! They are delishhhhh. Weird thing, though, is that I doubled the recipe and it only made 6 pancakes! They were the size of my palm, and really dense… That must have been the deal. I did use a different kind of flour than you (it was Hodgson Mill Insta-Pancake mix). Oh well, I’m perfectly happy with them!

Ok, I made these even more healthy, chocolatey and amazing!!! Allergy free!

1/4 cup buckwheat flour
1 scoop vega smoothie poweder (more protien, more veggies)
chocolate amazing grass powder (of course!!)
1/2 tsp maca powder
1/2 tbsp coco powder
some stevia (or sweetener of choice)
1/4 tsp salt or less
1 tbsp ground flax seed
1/2 tsp baking powder (I do not measure)
Chocolate of your choice (sprinkled throughout pancakes, I use DARK Theo chocolate, or even Mint chocoalte, which is amazing)

Cook like normal, mix all together, let set for just a moment, and cook up. They are so very chocolately, have veggies, fruit and about 18 grams of protien! They are amazing! enjoy with milk. THANKS katie, I LOVE your recipes, and ideas!!!!

I just made these to take as a snack to work! I tasted the batter and… yummmmm :) I didn’t have chocolate chips so I used blueberry craisins. I also added cinnamon and vanilla. I guess they will be berry brownie batter pancakes!

Made these pancakes today too! No buckwheat flour so used coconut flour. No magic Amazing grass green stuff, so subbed 1/2 scoop chocolate protien powder and 1 TBSP cocoa. Once again, yum! I may just work my way through all your recipes. Thanks for all the great ideas!
