Peppermint Chocolate Coconut Cookies

Ingredients

  • 1 tbsp flour of choice
  • 1 tbsp cocoa powder
  • 1 cup unsweetened shredded coconut, full-fat
  • 1/2 cup plus 2 tbsp milk of choice or canned coconut milk
  • 3 tbsp agave or pure maple syrup
  • pinch stevia OR 1 additional tbsp maple syrup and cut milk back by 1 tbsp
  • 1/4 tsp pure peppermint extract
  • just over 1/16 tsp salt
  • melted chocolate chips or healthy chocolate sauce, for dipping

Instructions

Combine all ingredients except chips in a tall dish or pyrex. If using a microwave, heat two minutes. Stir, then microwave one more minute OR longer, until firm enough to scoop out into ball shapes. (Alternatively, you can cook on the stovetop until it’s firm enough to scoop out into balls.) Scoop balls onto a greased cookie tray: I used a mini cookie scoop /melon baller, but a spoon or ice-cream scoop also work. Bake at 360 F for 14-16 minutes. So they do not fall apart, be sure to let the cookies cool at least 10 minutes before removing from tray. Line a plate with wax paper and dip each cooled cookie in melted chocolate. Place the cookies on the wax paper, and refrigerate or freeze to set the chocolate. Makes 12-22 cookies, depending on the size cookie scoop used.

      They will be fine sitting out as long as you don’t use the healthy chocolate sauce for the coating. If you use chocolate chips melted for the coating they will be fine to sit out.

    I love your blog but recently I’ve noticed that when you include the nutrition information you don’t give how many servings it was calculated for and you give a range of servings (in this case 12 to 22 cookies).

    I always have said that if I had one wish and could change anything about myself, I would wish to be an amazing singer. But ever since becoming plant-based, I’ve changed that wish so that it would be for me to actually like coconut! I guess it’s a GOOD thing that I don’t like it, since I can’t digest it with my extremely bad gallbladder and gastroparesis. Loving something and not getting to eat it is the WORST feeling ever, so I guess I should be thankful!

    But I’m secretly still a tad jealous.

    I made these yesterday and wow, amazing! I doubled the cocoa after I tasted the batter and thought it needed to be chocolatey-er. I also only microwaved the batter about 90 seconds. The cookies seemed a little fragile for dipping after they baked, so I drizzled the melted chocolate instead. Maybe if I’d let them cool down all the way, dipping would have worked, but I wanted mah cookies now! Topped with crushed candy canes, they are perfect for Christmas!

    I made these yesterday with hopes to take them to a cookie exchange. I quadrupled the recipe as I needed 6 dozen cookies, however, as it often goes, they didn’t turn out quite like they should have. The dough seemed excessively wet and I had to add a bit more coconut flour and dried unsweetened coconut to soak up some of the liquid. They baked ok but were so very delicate that they couldn’t be handled so I gently put them in my dehydrator and after about an hour or so, they crisped up enough to be able to dip in chocolate. Next go round, I will stick with the single batch recipe and see if they turn out a bit more sturdy. As for the taste, they were quite yummy despite all the technical difficulty I had! 🙂

    These are a winner! Just made them and ate three (straight out of the freezer (oops). I adore the chocolate/peppermint/coconut combo, and I even dipped them in your chocolate chip recipe (the one with maple syrup). I used coconut milk which thickened the batter, and I was able to roll them into balls after scooping them out. They held up beautifully after baking and cooling. These are going into the permanent holiday rotation. High calorie, but no white sugar, so as a once in a while treat — yay!

    Quick Yellow cake.2 1/4 cups all- purpose flour like 225+225+25 grams. 1 1/3 cups sugar like 190 +33 grams.baking soda,orange juice,salt, 1/2 cup shortening/8 tablespoons/.2 eggs and milk to mix . Chocolate frosting /butter , syrup,powder sugar,cacao,and milk.

    I just made and ate my first peppermint chocolate coconut cookie and it was soooo delicious! I am on my guard that I don’t eat them all at once. So good! Very easy and quick to prepare. Didn’t have agave so used honey. Had some leftover sauce I’m letting set into chocolate bars. Thanks, Katie! You made my day!

    Hey Katie! I just tried making these mint chocolate coconut cookies today and I’m wondering if something isn’t off in the measurements in the recipe? The mixture was soup even after microwave it the recommended amount of time. In order to get it to a consistency I could scoop I had to add about a cup more flour.

    LOVED THESE! I used plain yogurt instead of milk and loved the results. I also sprinkled the still-soft chocolate with coarse salt after coating. These really hit the spot when I was craving peppermint.

    Would you recommend subbing oats for the coconut for someone who cannot eat coconut? I realize this makes it a totally different cookie, more like a no-bake…but curious if the texture would hold.
