My favorite chocolate chips, that I use almost exclusively in my own recipes, are Enjoy Life Mini Chocolate Chips.

If you’ve been reading my blog for a while, you’ve probably noticed I love to add mini chocolate chips to recipes, both for taste and presentation.

Just look at this gorgeous dark chocolate Brownie Baked Oatmeal!

It’s much easier to spread mini chips out evenly in baked goods so you get chocolate in every single bite, whereas with larger chocolate chips you might get one bite with chocolate and then another with no chocolate at all.

People often write in to ask me how I can eat chocolate chips as a vegan.

The Enjoy Life chips I recommended above actually are vegan, non-GMO, and free from 14 common allergens, including gluten, soy, eggs, dairy, and nuts. (They also come in Semi-Sweet Mega Chunks and Dark Chocolate Morsels.) You can find the brand in many regular grocery stores or online.

Breakfast on the go

Of the thousands of recipes I’ve posted here on the blog, my mom will tell you that these breakfast squares are her all-time favorite.

She calls them “boatmeal” (for baked oatmeal) and will often text me on the weekend that she’s made another batch to take into work every morning during the week.

Because leftovers freeze well, you can easily plan ahead and freeze whatever you aren’t going to eat within 4-5 days, to keep an instant healthy breakfast on hand for rushed mornings or any time you don’t feel like cooking.

Step One: Combine all ingredients in a large mixing bowl.

Step Two: Spread into a parchment-lined 9×13 pan.

Step Three: Bake at 350 F, then slice into bars or squares, and breakfast is ready for the whole week!

Chocolate Chip Breakfast Squares To-Go

These chocolate chip baked oatmeal breakfast squares are like a giant chocolate chip oatmeal cookie for breakfast!
Total Time 28 minutes

Ingredients

  • 4 cups rolled oats
  • 2 2/3 cup applesauce or mashed banana
  • 3/4 cup water
  • 1 tsp salt
  • 1/2 cup or more mini chocolate chips – I love Enjoy Life Mini Chips
  • 1/4 cup oil, nut butter, or additional water
  • pinch stevia or 1/2 cup pure maple syrup, honey, or agave
  • only if using stevia, 1/2 cup additional water
  • 2 tsp pure vanilla extract

Instructions

  • Preheat oven to 350 F. Line a 9×13 pan with parchment. In a large bowl, stir all ingredients until well-mixed. Smooth into the pan. Sprinkle additional chocolate chips on top if desired. Bake on the center rack 28 minutes, then do not open the oven door but turn off the heat and let sit in the closed oven an additional 20 minutes. Slice into bars or squares. Leftovers can be refrigerated 3-4 days, or freeze the bars to have on hand any time you need an instant healthy breakfast you can take on the go!

    I’d use ’em in everything! I bake with chocolate pretty frequently, and I also prefer mini chips when I can get my hands on them. I think it’d be fun to make bite-size versions of traditional cookies for the holidays (using the mini chips) so people can try more types of cookies before getting full.

    I would so totally use the chocolate chips in either cookies or brownies that I would bring to work! I work with a lot of vegans and health conscious individuals and we have work parties several times a year. For some reason, the vegans don’t bring anything, then are feeling left out of the dessert fun.     Mmmm I always eat them melted with nut butter and then use as a dip for bananas or apples. Also for all things chocolate. I’m allergic to dairy and I use them in everything!

    I work from home and will be making these today! As for the chocolate chips, they would go in all of my baked goods, but my favorite way to use them is to put some in a small bowl and then dip a spoonful of peanut butter into the bowl for what I guess is a deconstructed peanut butter cup.     I have been making your different boatmeal recipes for several years. I always add mini chocolate chips to recipes as I have found you can use less and yet get more chocolate in each bite. Since my son is allergic to dairy (protein, not just lactose intolerant) we were thrilled when we found Enjoy Life products. We started with the candy bars for Easter and Halloween, then our store started carrying the chocolate chips! We enjoy all the products we’ve tried. Cookies are our favorite since we have to be gluten and dairy free. Enjoy Life tastes great and yet doesn’t have the ingredients many people are allergic to.

    We LOVE Enjoy Life Chocolate! We sprinkle the mini chips on top of my sons hot oatmeal in the AM as well as use them for all kinds of granola bars, baked oatmeal cups and, of course, COOKIES! We like to eat the larger chunks directly from the bag in place of other chocolate treats that my son can’t have. I buy the snack packs for my son’s teacher to keep on hand so he can have a treat when he can’t have the party or bday treat brought in (95% he can’t have). So appreciate having a great allergy friendly AND vegan brand to rely on that tastes awesome!

      They are soft but firm. The closest thing I can think of at the moment is french toast texture. Something between that and oatmeal, but definitely not hard like a cookie.

    Enjoy life chocolate is awesome! As a teenager with a limited baking budget, they (sadly) don’t make it into my family’s pantry often. I would use tuck them in raspberries and dates, use them in cookie dough balls, dot peanut butter pies with them, add then to ice cream (especially cookie dough ice cream), use then to decorate gingerbread people, and make the best vegan double chocolate milkshakes.     I had no idea Enjoy Life had the “dark” morsels! These are my favorite brand vegan chocolate chips because I think they taste like M&M’s for some weird reason. I’d use them to make sea salt chocolate chip cookies, which I make way too often! Mostly I’d eat them straight out of the bag though because that’s what I usually do when I’m craving chocolate or something sweet and I don’t want the heaviness of a full dessert.     I’d go crazy and use the chocolate chips in everything! My morning oatmeal (and my afternoon oatmeal… and my post dinner snack oatmeal… I’m obsessed), cookies, banana bread, melting them down and using them to coat bliss balls, on top of cakes before I bake them, with a spoonful of peanut butter, with mashed banana… and that’s all I can name off the top of my head. Oh, and obviously straight out of the bag!

    Where I live there never seems to be any vegan brands of chocolate chips (even the dark ones have milk in them!!!) so whenever I bake I have to use shards of normal chocolate, which is sad because I want to eat the normal chocolate plain too! I mean I also want to eat chocolate chips plain too, but they are purpose built for baking so I don’t feel as sad using those when I bake compared to when I use an ENTIRE LINDT BLOCK in my chocolate chip cookies…. ?? (the cookies still tasted amazing but it just feels so wrong)

    Yum, I make baked oatmeal with loads of brown sugar, I’ll have to try yours as I’d like to cut back on sugar! See if it flies with the family. Might have to call it boatmeal as you mentioned so they don’t think they’re getting something else. Although I can’t help but picture ‘boatmeal’ as made in those corn shaped tins with little sails on them.
    One of my favorite ways to use choc chips is as an easy, allergy friendly, not to mention delicious, frosting to brownies. Just sprinkle them on top when the brownie is still warm and spread when melted.

    Love these chocolate chips! I have so many ideas… I would make some peppermint patties, melting the chocolate chips for the coating. I would make chocolate mousse with aquafaba, sugar, and melted chocolate chips. I would make some fudge – I have a few different fudge recipes I want to try – I just made fudge last week with vegan condensed milk and Enjoy Life chocolate chips. I would make a big batch of meringues (from aquafaba and sugar) and then dip them in melted chocolate chips and add some sprinkles on top. The other day I dipped some frozen banana pieces in melted chocolate (with a little bit of coconut oil) and then covered with shredded coconut – it was so good. I would make some vegan truffles – like Oreo Truffles or strawberry creme filled truffles. Obv I’d make the chocolate chip breakfast squares on this page. I’d make a black and white vegan cheese ball (which essentially is cashew and coconut oil based, then half dipped in melted chocolate). And the list goes on…. I mean, what can’t you dip in chocolate?!

    All you do is melt chocolate chips, stir in a mashed avocado and a pinch of sea salt. Then roll into balls and roll in some cacao powder. Stick in the fridge for about an hour then enjoy!!
    Or I would eat them straight out of the bag,
    but I bet I could come up with a gazillion different ways to use these if I won!

    We absolutely LOVE Enjoy Life mini chips and have been using them for years!!! My favorite way to use them is is vegan chocolate chip oatmeal and nut cookies. https://www.allrecipes.com/recipe/240591/vegan-chocolate-chip-oatmeal-and-nut-cookies/ However, we love to use them over homemade vegan ice cream, non-vegan ice cream, muesli, strait out of the bag, or in any recipe calling for chocolate chips. I let my 3 year-old, over-the-top-extremely-picky-eater granddaughter, try Enjoy Life mini chips one day, and now I have to hide them in the freezer because she asks for them all the time, and we would never be able to afford to keep up with her affinity for them!!!
    I made these chocolate chip breakfast bars and they have a good flavor, but the texture is not as pleasing as some bars I’ve had. This is probably because of the lack of leavening in them. Probably anything with Enjoy Life chocolate chips is going to be good, but this recipe is not one of my favorites on this web site. I give it 3 1/2 stars.

    I have used these for several years and love them. I put them in everything! I never buy regular chips anymore because my family loves these so much. They are wonderful in all my baked goods and I love them in oatmeal with some peanut butter.You can make a hard shell if you heat them and poor over some ice cream! But eating them right out of the bag works great too.

    These look delicious. Before I make them, can you explain the purpose of leaving them in the oven after you’ve switched it off? My oven is really well insulated and cools down extremely slowly so I’m worried that they’ll overcook or dry out. Suggestions welcome!

      It just helps them to bake longer without you having to reduce the temperature. You can always take them out a little early!

    Kirkland brand chocolate chips at Costco are dairy free, so I’ve been able to use those as well. They are a bit cheaper overall and I like having a bigger bag.

    Hey Katie! So I tried this recipe this morning and doubled it. It came out great, but the middle is still a bit mushy. So I wanted to know if when they’re refrigerated would they firm up and taste even better? Please note that I’m not a vegan or vegetarian but I’m trying to eat healthier, but your recipes are making it hard lol. Awaiting your response.

      Hi! Sometimes doubling recipes doesn’t work, or at least often they’ll need more baking time. So that sounds like what might be the case here. Can you bake them longer? If not, refrigerating overnight will definitely firm them up – be sure to report back tomorrow if you remember, as I’m curious to see if that works!

    First, I will admit I didn’t read through all the comments since most were about chocolate chips. So I apologize if the answer is in the comments. I’ve made this recipe a few times trying different techniques (with different oats, baking for longer). The bars always come out under baked in the middle. Is that what the texture is supposed to be like or am I doing something wrong? They’re tasty, but dense; which I find a little heavy in my belly for the work I do (I walk A LOT for work).

      Hi yes they are supposed to be soft! Maybe try doing half a recipe but still in the 9×13, and they will be thinner and thus less soft?

    I made the Chocolate Chip Breakfast Squares To-Go. They are delicious but the texture of mine , although they do hold together, is squishy and soft. Is that how they are supposed to be or did I do something wrong?

    What can’t you make with chocolate!! I’d use them for the usual stuff like brownies, cookies, cakes, breads like banana or zucchini (got to get some veggies in there), frostings, ganache, making my own chocolate-almond candy, I’d use it for meals like overnight oats, porridge, chocolate hummus, and mole (normally a sauce for chicken but I’d use it for beans). I’d probably use it regularly for hot chocolate, sweet potato brownies, chocolate nice cream, and eating it straight out of the bag. What can I say–it makes me happy. Even if this contest is over, I’m glad to express my feeling about wonderful chocolate that’s vegan friendly!

    Hi – I was so excited to try these but they came out with a really gummy texture. I used mostly applesauce and about 1/2 cup of banana (based on what I had). Everything else was the same. Is this how they were supposed to turn out? I expected either cake like or chewy (like a soft granola bar). Would love your thoughts on how to fix! I really want to like these as a healthy go-to breakfast for the family.

    I made the Chocolate Chip Breakfast Squares To-Go and they were very sweet, especially for breakfast. They also were spongy. Your look like more like cake, I followed your recipe to a T. I used all organic food. Did I do something wrong or is that how they are supposed to be, spongy and not cake-ish?

    Helllo.
    My daughter and I just made these, and I’m curious about what the texture is supposed to be like? I think something went wrong, we followed the directions but the bars have the texture of congealed porridge…??? They don’t look like the ones in your photos! We used applesauce and coconut oil. Baked for the 28 minutes with oven on and then 20 with it off. I’ve thrown them back in to see if they will dry out.
    Any suggestions as to what we might have done wrong?

      Hi! Their texture is something between a chewy granola bar and a muffin, so it sounds like maybe you made them correctly? Or, what was the texture you were going for/hoping for?

    Hello, we just made these on the weekend – they were fabulous! You gave so many options for these (honey,no honey, etc) I’d like to try another batch that are less sweet. I noticed in the video you seemingly added only apple sauce. Can you please let us know exactly what your preference is? Fyi, we added about half and half of apple sauce and very ripe banana’s, as well as honey. Next time I want to try all apple sauce and no honey.

    I like to melt chocolate chips on parchment and spread really thin and freeze to make chocolate crackle. I put it in banana ice cream or cover it in nuts and make chocolate bark. I also love chocolate peanut butter cups! Hope I win!

    These bars will be perfect vehicle for my son’s maintenance nuts. He’s required to eat a specific amount of nuts as part of his food allergy treatment program and he doesn’t like them, so chocolate chips are essential to mask the nutty flavor. Can’t wait to make them!

    While straight out of the bag is my favorite way to have the Enjoy Life mini chocolate chips, I also love cutting dates in half lengthwise, spreading on a little peanut butter, and then dipping that face down into the chocolate chips. I make a bunch and freeze them, eating them right out of the freezer. They taste like a frozen Snickers bar!

    I won’t lie, I’ve made bar similar to these before so I went into this having little faith my kids would like them considering they’ve snubbed plenty of others. Am I glad I made these! The kids love them and they are allergen free for my youngest. We use Enjoy Life chocolate chips for that reason and we go through tons of them.

    Greetings! I made your Chocolate Chip Breakfast Squares To Go tonight and OH MY GOSH they were fantastic! I took your suggestion and swapped out the applesauce for pumpkin puree and used my homemade nut butter in place of the oil. I also added a couple drops of both peppermint and clove essential oils. My husband and I could have eaten the whole pan in one sitting, but we saved some for later…!! 🙂

    As far as how I’d use mini chocolate chips, my favorite way is in oatmeal!! (with cashews, blueberries, flaxseed meal, chia seeds, cinnamon, and clove essential oil!) 😉

    I made these for my lunchbox and split it into sprinkles, choc chip and marshamellows and used the leftovers in cupcake tins!! Super easy and quick for lunchboxes and good for storage highly recommend

    Enjoy Life chips are a staple in my home with all our food allergies. I was over the moon when I first found these several years ago, and I always have a few bags in the pantry. My favorite quick chocolate fix when I don’t feel like baking…mix ‘em into nut-butter and eat it with a spoon 🙂

    Right out of the bags is the best. I love them in a mix with rasins, peanuts , and chocolate chips. And chocolate chip cookies Right out of the oven when the chocolate chips are still soft and gooey .

If I had a years supply of chocolate I would be making double chocolate chip cookies for breakfast lunch and dinner!!!     This was the first recipe I’ve made off your blog. I have recently started having problems with severe acid reflux, and a very wide range of foods can trigger it. I wanted a “safe” (low fat, low acid, otherwise trigger-free) substantial snack/meal substitute I can easily carry around with me. Made these bars and they are perfect! I did make a couple adjustments to the recipe: I used dates instead of chocolate chips (sadly, chocolate is a trigger food for me), and I used ¾ cup mashed banana and made up the rest of the volume of banana + oil with plain 2% yoghurt, simply because I needed to use it up… Added cinnamon, ginger, and pumpkin pie spice. The bars came out soft yet holding their shape, sweet but not cloyingly so (I used maple syrup as the sweetener), and satisfying. I love how well they held together; most of the “healthy” oat bar recipes I’ve tried over the years have come out a lot more crumbly. I made a half batch in an 8×8 pan, following the baking instructions as written. I plan to keep a container of the bars individually wrapped in my freezer so I can throw one or two in my bag when I head out for the day. I think I’ll be making a lot more of your recipes!
