How can we print a recipe without all the pictures and comments. I tried to print the Healthy Chocolate Fudge Zucchini Brownies and ended up with 8 pages of stuff that I didn’t need or want.

I’ve printed some of Katie’s recipes before. What I do is hi-light the recipe, then right-click and hit “save;” then I open a new Word document, right-click and hit “paste.” This saves the recipe (and any photos, etc., that I’ve hi-lighted) in a new document, that I then re-name and save in my “CCK Recipe” folder.

When you go to print instead of printing “all” click select page and type in the page number that holds the recipe.

        Hi Doris,
When you print, you have the option of choosing which pages. Try this:
Print>Page range>Pages [insert specific pages here, for instance, 1,2]>OK. Another option is to HIGHLIGHT the pages you want to: Highlight>Print>Selection>OK. Hope this helps.

        Hi Doris,
Do this: highlight recipe you want to copy (from any website). Bear in mind, sometimes when you highlight the recipe, it will include the picture and it cannot be helped. That’s ok. Include it, bear with me on this. Now, copy to Word document. Click on Paste Special. Then click on ‘Unformatted Text’. You will now have the recipe you wanted and the picture or photo will NOT be included. I do it this way all the time and once I’m in Word, I can format it the way I like.

        I just learned this….
        Highlight what you want…
        Click print…
In the print dialog, check Selection.
        Then ok.
        Yes it works well.

In most browsers (Firefox, Internet Explorer, Opera, and Safari or Windows – Google Chrome hold down the ‘Control’ key and quickly tap the “P” key) in the menu bar at the top left of the browser window you can click on “File” then “Print Preview”. This will show you the pages of the article in print form. Find the pages you want to print and note the page number(s). Then click the Print button in the upper left corner. The print window will open, go to the Print Range and in the put the number of the first page in the left box and the number or the end page in the right box (just one page – use the same number) and left-click the “OK” button.
No menu bar? – right-click on an open spot to the right of an open Tab. Then select “Menu Bar” from the window that opens up.

Hi 🙂 Doris, the info that Bruce shared is really very easy and the best way to go in my opinion. That is the way I’ve done it forever and it always works. Also, in some OS, they have an option on the “print window” that you can do away with images. Thanks Bruce and all for sharing.
Thank you Katie for such great recipes, a wonderful blog and for sharing your pic. You are indeed a very pretty lady but even better a very intelligent and creative woman. Happy weekend to all. 🙂 <3 <3
PS will certainly "like" on FB and post/follow on pin (as soon as I find my password LOL)!!! <3 <3

if you have WORD, highlight just the text you want to print>right click>select “copy”>open a WORD document >right click anywhere on the document >select “paste”.
repeat until all desired text/photos are pasted.
          edit as desired>print preview>print.
you can store all your recipes on a usb/flash drive and build your own customized cookbook. I always include a citation and date the website was accessed. ( I don’t like plagiarism). thanks to everyone for sharing! my hubby is in the hospital due to complications from chemo and I joined a conversation in front of the cafeteria when I overheard “black bean brownies”. Hubby is on a high protein diet for cellular recovery and he loves brownies!

If you’ve got a Mac, what I do is press command, shift, 4. That gives you a target shaped cursor. With that click and drag over exactly what you want to capture. This is a screen capture. Once it appears on desktop just open and print . Voila, easy.

I use “print preview” rather than “print”.//then you can see which pages that need to print, I.e. page 1of1. Or 2-3, etc… I use this for everything. .bank statements, etc bcos the screen shot is not always” what you see is what you get” …I hate wasting an extra page that only has a header or footer or non- important info

        Hi Linda,
To copy a receipe without all the other stuff you don’t want, just highlight the recipe and paste it to a word document. At this stage, you can delete all the stuff you don’t want and keep only the recipe. You can also save the word document to your desktop into a Foods folder. Hope this helps.

        Teresa

      • Jackie says

Highlight the entire recipe and paste it into WORD. Then go into WORD and delete/cut what you don’t want. Save it and then print. Almost every recipe fits on one page.

      • Vi says

Press shift+command+4 to take a screenshot of the recipe ( it will give you a cross-shaped cursor that you’ll box the recipe with and release to take the picture) The image will show up on your desktop where you can print it with command+p.

      • Chelsea B. says

Open a word doc and go to insert; add screenshot, and take a screen clipping of the recipe. This will eliminate all of the other stuff you don’t want.

    Hello Katie,

I found your Blog while looking for articles on whether to use Blogger or WP. Apparently you are using both at this time.

Which are you liking more and why?

giving WP a quick look over I see that I can either use it via their free online service or install it on my own server. Has that been a consideration for you and do you know of any discussion of this topic?

    Carlos

P.S. I noticed that you have your e-mail address in both your information pages (Blogger and this one). Spam Robots pick up on them quickly and so that is one of the reasons why you are probably recieving tons of Spam in you Spam box or (worse yet) in your InBox.

    P.P.S. Your a real Cutie! (:>)

I would LOVE for you to cover those topics you listed! I have problems with all of them. My family was recently invited to dinner by another family and the main question was “what will Kelsey eat?” Not to mention, I go to camps and conferences all the time where food is provided, and here’s me, lugging in my cooler full of food. Any light you can shed on the matter would be wonderful. 🙂

Actually, yes it is. The definition of the word ‘diet’ is “the kinds of food that a person, animal, or community habitually eats.” So by eating vegan, that is your diet.

I LOVE your website, and I’m totally amazed by your great recipes. I make them for my kids without telling them anything about them. They never know the difference between vegan or mainstream, low-sugar or full strength, etc. They just like them and ask for me to make more! Thank you for the great website, and I liked your advice about running and knees, as I’m a relatively new runner (2 years). Your two dogs are cute, I have a Cairn Terrier and a White Highland Terrier — very fun! Thanks for brightening my day! 🙂

I love your style of eating/cooking. What are you most conscious about? how many calories something has? how much protein? how much fat? where the ingredients come from?

    • Chocolate-Covered Katie says

      Hi Nikki!
Hmmm… I actually don’t really pay attention to fat grams or calories or protein (except to be excited when I discover that something I like anyway happens to have a lot of protein).
I do try and eat organic for the “dirty dozen.” But if I happen to see a reeeaally beautiful peach or something that isn’t organic, I’ll still buy it. I’m pretty easygoing and just normally eat whatever my body’s telling me it wants :).

      Hi Jess,
It depends on a lot of things: the sweetener you use, the milk you use, the add-ins… But since it’s for one, you can easily just add up all the individual ingredients you use, and that’s your calorie count for it.

Happy New Year to you!! Just wanted to tell you how much it means that you encouraged your readers to contribute to the matching challenge, and to tell you that….WE MET THE MATCH!! That’s right!! Folks from all over the country, but mostly right here in the Hudson Valley, contributed. We’re thrilled and humbled, and look forward to a wonderful 2011 doing some long range planning to use these funds to deepen our work on behalf of voiceless animals.

Lots of love and thoughts of chocolate to you from all your friends at Catskill Animal Sanctuary, and thank you again for your kindness.

I think this is a really good about me section. It hits on the major points that make up this blog (your path to veganism, your philosophy about food and diet, and your personality comes through). If you think you want to go into more detail about certain aspects you’ve mentioned, perhaps you can consider doing a series of “About me” posts where you talk about your travels and other non-food related things, and just link the pages here as you finish writing them (like you did with the other links above). That way, you can keep things short and sweet, and people can read more about you in more detailed posts if they choose.

I’ve always had trouble writing about myself/my struggles as well, especially since my blog is mostly about…me. But it does help to know that someone out there read what you wrote and felt less alone because of it. That makes the self-consciousness of vanity all worth it. Sometimes, listening to someone talk about themselves is exactly what WE need to process our own lives.

The page looks great as is! I really don’t think an “about page” needs to have your whole life story on it. People don’t need to know everything, and they need to respect your privacy!

One thing I would love to know sometimes, though, is about your travels! You said you moved around a lot (all over the world!), and I would love to learn about other cultures through your eyes.

Oh, and I forgot to tell you, but you reminded me when you said “your try to gain weight time…” I gained 15 pounds last summer (because I was too skinny. Unhealthy for me.) If you ever need advice, email me!

I like the way that you’re divided this into sections and have provided links if people want to read more rather than potentially bombarding new readers with lots of information (personally, I love reading about you and how you got to be who you are now but I suppose it could discourage some). Looks brilliant so far, you coul also include a bit about your travel experiences if you wanted, as reading about overseas adventures seem to be universally enjoyed by all.

Hey Katie- just stumbled upon your blog today while I was looking for a vegan recipe for German Chocolate Cupcakes to make for my brother’s birthday (who is the ultimate meat-eater, but I like to prove to him and the rest of my family that they’re just as yummy as regular).
I LOVE YOUR STUFF! I too am a self-proclaimed “choco-holic”, but am finding that it’s taking a toll on me. I have a 17month old daughter, and when she was 3 months old, we found out that she had a dairy allergy. In order to continue nursing, I had to change my diet to both dairy and soy-free. I could have started her on some dairy at a year old, but after reading how actually NOT good it is for you, I have opted to keep her dairy free, as well as myself. Upon making this diet change, I in turn lost almost 50 lbs, (my baby weight+an extra 25 lbs) and felt so good! Now, after I have stopped nursing, I have started to notice that I have started to put weight back on, (only like 5 lbs, but still) and don’t feel as good as I used to. Is it possible that my body has gotten used to this diet, and now I’m putting the weight back on because I’ve hit, like, a plateau or something? I have 3 kids, so I don’t get to “exercise”, but I do run around with them, do housework, and go for walks, but do I need to do more in order to lose more weight? I’ve never done well with calorie counting, and I’ve tried cutting out sweets all together, (but found I am on crabby mommy if I do that) and I love baking way too much to not do that! Just wanted your input on it, since you seem like you know your way around the kitchen and exercise world. 🙂 Thanks Katie.

Hey Katie, I am another now devoted follower of yours who just recently stumbled across your blog. I wish I had found it sooner but I’ve honestly been so addicted to reading your posts in the last week since I discovered you that I’m probably already caught up on all of your past ones too, haha. I love that your recipes are so simple, creative, & absolutely delicious. I’ve loved the few that I’ve already tried & have a growing list of ones I can’t wait to try. I tend to get stuck in the habit of eating the same things all the time, but now I feel like I can finally add some variety without straying from eating pure, natural foods. I also feel like I can completely relate to you in that I love to workout & struggle with keeping my calorie intake high enough to not lose weight so basically, I LOVE your blog!! Hi Lisa!
Thanks so much for the sweet comment… I’m trying, but I really need to get better at working my camera! I just recently stopped using the automatic mode. Anyways, I have a Nikon.
For photoshop… well the very first thing I do when I open a photo in photoshop is to crop it. After that, I go to image, then adjustments, then “selective color.” I love playing with the selective color because it only changes the color of one particular aspect of the photo (as opposed to “color balance”, which changes the whole photo). I always make the whites have less black. And usually I go to brightness/contrast and add brightness too!

After that, I often blur the background, using the blur tool.
      I kinda just play around.

This blog gave me the confidence to start my own! I had to work to keep a steady weight while making the transition to veganism. All of your recipes are so creative and energy-filled, where do you find inspiration?

    • Chocolate-Covered Katie says

      Awwww thank you!
And lol I get inspiration from the weirdest places… I’ve even gotten inspiration from Baskin Robbins before. Or magazines, grocery stores… I’ll look at candy flavors or ice cream flavors and say, “Hmmm, now what ELSE can I use that flavor for?” 😉

I love your website, I only discovered it yesterday but I have been reading through and drooling at all your recipes! You are so right about enjoying life and enjoying the things you love in a healthy way, that’s my philosophy too. I have one obstacle that stops me from making some of your recipes though, none of the supermarkets in my town sell coconut butter/oil (I live in Italy).:( I need to find a shop that’s NOT Italian produce-centric, that or wait til the summer when I can go home and buy what I need. I can’t wait to make that chocolate fudge cake, it looks amazing. Definitely an incentive to bake more.

Hi! I love your blog and have tried a lot of your recipes–you are truly a whiz in the kitchen! As far as your quest to gaining weight goes, have you considered lifting weights (heavy if possible) in order to put on some lean muscle mass? 🙂 Running is great, but definitely depletes your muscles.

    • Chocolate-Covered Katie says

      Hey Alexis!

I do lift weights… but I hate it :(. I wish I could be one of those people who loves weight-lifting! Basically, I force myself to do it 2-3 times a week (usually 2 because I am lazy!), and I focus especially on my arms. It’s helped a little! I use ten-pound dumbbells.

I do know that people reading my blog have all sorts of dietary preferences… I have to remember to tag my posts as gluten-free, soy-free, etc. Recipes are so easily adaptable to different diets, though. Especially low/high-calorie. Just by changing up the type of milk you use or the amount of fat added, you can make it as high or low-cal as you want! 🙂

      Hey O.c.
Your comment made me smile so much! I’m actually in the process of writing a post with blogging tips. But here are some quick tips off the top of my head: I think the BIGGEST thing you can do is comment, comment, comment on other blogs. Don’t just comment once on a particular blog; keep on commenting. It might take a while, but soon the blogger (and other commenters) will keep seeing your name pop up and start to remember you.
I commented a lot on other blogs when I first started out. If you’re just starting out, that’s a good way to get your name out there. Otherwise, no one will know your blog exists.

Also, twitter! I dragged my feet and didn’t get a twitter account until about 3 months ago, but it helped me find a LOT more friends!
      Good luck!! 🙂

    Hey!
I just wanted to let you know that I LOVE your website. I also want you to know that it has helped me tremendously. I am not a vegan by any means, but I have an incredible sweet tooth. This sweet tooth has led to periods of binge eating (and sadly, purging as well) and feelings of guilt, lack of control, and basically misery. I know that probably sounds overly dramatic, but to one with a food addiction, it is a vicious cycle that is difficult to break free of. Anyway, since finding your blog, I have found ways to satisfy these cravings in a more healthy way, which does not lead to guilt or remorse. I just had a post workout bowl of peanut butter chocolate oatmeal 🙂 and no crazy feelings of wanting to binge. I feel more connected to the food, since I am preparing and therefore I guess maybe I appreciate it and can really enjoy it. Plus, it’s more filling and filled with awesome ingredients, so I respect the food more (I know that probably sounds so silly, but it totally makes sense to me ;). And by the way, my almost 2 year old, who is probably THE pickiest eater in my house loves your snicker doodle blondies. I can’t wait to try more of your recipes!
    Thanks for being awesome!

Firstly, I am sorry people have left you rude/ mean comments, because you seem like a wonderful person who has a healthy outlook on life & eating. It is so refreshing to read about your love for food, when these days so many women are overly obsessed with calorie counting. There is no doubt in my mind that women are jealous that you do not have to work that hard to maintain a thin physique.

I can’t wait to try some of these delicious sounding recipes! Keep it up home girl, I am definitely a fan 🙂

Hi Katie, As I’m sure you can tell by all of my recent posts on your blog that I LOVE all of your delicious recipes. I think you are super cute and beautiful! It saddens me to read some of the negative and accusatory comments some readers post on your blog 🙁 You deal with them graciously and seem to take it all in stride. Please don’t let the negative comments bother you as I get the feeling others are jealous that you are naturally healthy and thin. Some think you are too thin but you are clearly at a healthy weight for your body, even your doctor agrees 🙂 I think it’s great that you strive to eat healthy foods and exercise because you love it. I also think it’s great that even though you are naturally thin you don’t use that as an excuse to eat junk food and processed crap all the time just because you can. I find your blog very uplifting and it motivates me to continue living as healthy a lifestyle as I can. PS I love all of you healthified desserts!!! Keep the great recipes coming! ~Leslie

Katie, thanks to YOU, I spoke to my parents tonight and told them I’ve decided to become vegetarian and eventually am intending on introducing the vegan lifestyle!
Additionally, I am becoming a scientist in the kitchen! I made your fudge tonight (and am currently eating it!) and made little alterations to fit my cravings (hello peanut butter, frozen berries and vanilla!).
To top it all off, I went to the grocery store today and purchased wholefood products!
I’m so excited to start on this journey!!!!

Wow, I don’t even know what to say! Your comment just made me smile so so much… and I’m excited for your journey too! I think you definitely have the right idea to go vegetarian first. That’s how I did it too, and I only moved to veganism after getting comfortable with the vegetarian lifestyle for a year first. It’s a HUGE change! You’re awesome :)!

Any tips on telling people you’re vegetarian? I’m not sure how my friends will take it!

I guess it depends on your friends… I don’t know them, so I can’t tell you how to tell them! But if you want them to see that your not going to be deprived in your new lifestyle, come equipped with AMAZING treats to share that you can eat too :). That way, they’ll think, “Maybe her new diet isn’t so strange after all!”

    Thankyou for your inspiration!!!!

I’ve made “inspired-by” versions of your recipes for a while, but I am going to be leaning on you quite a bit in the future: I’m working out a diet for newly-diagnosed GI issues, and one near-future restriction I’m sure of it a very low-fat diet! So…thank you for all of the low-fat and fat-free versions of tasty, delicious things! Now, I just need to get off this elimination diet to enjoy some deliciousness! 🙂

    Thank you!!

Dessert sure has changed at our household since I found your blog. My fruit and veggie hating toddler is currently eating some peanut butter “fudge” and yesterday he was eating some “fudge babies.” I am so happy to find new ways to sneak in some healthy foods for him. Not to mention that this is going to help my waistline…

    Very nice blog, Katie!

I hope you keep up the good work – seems a lot of people are like me, and generally fancy a place that collects useful information (irregardless of subject). The post from the “veggie-hating-toddler-mom” above is indeed a sentiment towards the quality of what you are doing!

I might drop you an e-mail. Or simply subscribe here. Either how, you seem interesting.

I really like your blog and recipes and I’ve added it to my Google reader.

I can’t be silent about one thing, though: you look ill. I used to have anorexia nervosa and have met other people with anorexia and with orthorexia nervosa, and I can tell when people are underweight. Your hands and head size paint a stark contrast to your painfully thin arms and torso.

Maybe you have a problem, maybe you don’t. I don’t know you and have never seen you in real life. But I beg you to get checked by a doctor and/or psychiatrist.

I just had to say how much I love your blog and recipes! I stumbled upon your blog while searching out diy recipes for Larabars and lo and behold your fudge babies! Totally in love by far my favorite is the Girl Scout cookie version of the caramel delight sooooooo freaking yummy! I so far have made quite a few of your recipes, the chocolate chip cookie oatmeal cake = AWESOMENESS!! I love how I can make naughty treats and still be healthy. The blondies are also super awesomeness, I can’t wait for the post on the peanut butter and jelly one’s. No one knows they are made with beans and I don’t plan on telling. Sneaking in healthy treats with my family is always a plus, especially when they are none the wiser!! Keep the yummy recipes coming!!! 🙂

    Hey Katie-girl!

I am enjoying your recipes and the way you think about food.

A request? I’d love to see the fiber content included in the nutritional information going forward. I always note my fiber intake, and since you do the other recipe math, I thought maybe you could toss this number in for us too?

Glad to hear you are planning to keep up your blog. As a new reader, I would be disappointed to see it end.

    Hope

      Hi Hope!

All of my recipes are going to be higher in fiber than traditional recipes due to the fact that I ONLY use 100% whole grains. I really don’t like posting numbers (because I believe food is so much more than a number), so even providing the basic nutritional info for some of my recipes is more than I’d really like to be doing. I do it because I know the numbers are important to others. But I just list the basics… I promise to try and remember to include fiber in the future if a recipe is especially high in fiber :).

      Hey Erin!
I am working on one, but it sadly isn’t finished yet. I try to use very basic ingredients (i.e. not so many hard-to-find flours or obscure ingredients) because I hate starting a recipe and finding out you don’t have all the ingredients! For baking, some of the things I have on hand:
      1. baking soda
      2. baking powder
      3. salt
      4. nondairy milk (I like Silk unsweetened)
      5. cocoa powder (I use Hershey’s or Dagoba)
      6. oats (I like Quaker or Old Wessex Irish)
And a lot (but not all) of my recipes also call for: ww pastry flour or spelt flour, bananas, nut butter, unrefined coconut oil (I’ll use any brand that’s cheapest), Artisana coconut butter, and the fudge babies call for dates. For the dates, I use SunMaid, and my favorite pb is WholeFoods 365.
      🙂

Your blog freaked me out! haha Actually after reading it I love it, but when I googled “Chocolate Covered” and “Chocolate Covered Katie” popped up…. I was reluctant to click on it. I had to think back if there was ever a time that I might have been covered in chocolate. I’m glad I clicked. Your blog is very enjoyable and I will spread the word.

I was googling Chocolate Covered Bacon and this is the order of suggested searches after typing only “Chocolate Covered”:

    Chocolate Covered Strawberries
    Chocolate Covered Katie
    Chocolate Covered Bacon

I’m not sure where to ask this, but… do you have any recipes like clif bars? The list of ingredients on the label was so long… and it’s pretty sugar-y. But clif bars provide a good amount of energy from protein and healthy carbs and are a perfect on the go snack. I’d love a recipe recommendation!

I posted a post the other day but I cant find it 🙁 But anyway… I really love your blogs and I cant help but wonder how do you keep your hair so shiny!!! Whats your secret besides healthy eating? Hehe… anyway. I notice that you have all these amazing recipe ideas which I will DEF be using one day and I noticed that you dont have a pie recipe! Also, I want to know if you have any idea in which I can make a n oatmeal crust? :S But anyway.. I love your blog and I know you heard this many times but you are a great inspiration to me. I used to freak out about what I eat sometimes and many times my mother would tell me that life is too short and I should just enjoy it while I can ( the healthy way of course) and I saw that you said the exact same thing. Of course I rarely have any cravings as I dont have much of a sweet tooth but when I did.. I always ignored it :/ But this weekend im going to try one of your cookies recipe -if im in the cookie mood- as they are my favorites! Anyway… I hope I made sense… I tend to talk in circles lol. Thanks a lot! Wait… you said you have a pre-run snack… Do you eat right BEFORE you run. I tried eating a small snack before but it makes me feel like throwing up while I’m running >.<

LOL I actually don’t like pie crust, which is why I don’t have a crust recipe. Maybe someday I will have to create one, though! I eat a piece of fruit (a favorite is a 1/2 grapefruit, but it changes) and a handful of nuts about 10-15 minutes pre-run. But that’s just what works for me. I know a lot of other people like the pb-banana thing… you just have to experiment :).

      Hi Candy!

I’ll buy whatever vegan brand is cheapest, usually. Many brands of chocolate chips are vegan, including: Ghirardelli Semi-Sweet (the ones in the gold package), Enjoy Life, Whole Foods brand, Sunspire, some generic brands, Divvies, etc. Or, I sometimes even use Ghirardelli 100% baking discs or broken up chocolate bars (in different flavors), just for fun.

I brought your chocolate chip cookie dough dip to an employee potluck at the Terror Tram, an attraction in Universal Studios Halloween Horror Nights. It was the most popular dish in the whole potluck. Everyone was talking about it. Nobody would ever have guessed they were eating hummus… basically. I served it with apple slices and graham crackers, for people to pile it on. One man who did learn that it was “healthy” wants the recipe for his son, who has multiple food allergies. Another woman whose daughter has an autoimmune disease was thrilled to find a dessert her daughter could actually eat without triggering a flare of her illness. And my daughters and I loved it because we are vegan health nuts, and after my cancer and my daughter’s Lupus and Crohn’s Disease diagnoses, we are being extremely careful to avoid toxic foods. I can’t wait to try some of the other recipes here. Thanks so much for sharing them. Wonderful!! You are making many lives better … and perhaps longer.

Yes, it’s great that people love hearing that it’s vegan and healthy. I forgot to mention that my daughter Lisa Molenda actually made the cookie dough while I got ready for work. She makes up delicious vegan desserts and meals, too, but she is in awe of yours. Her vegetarian/anti-dairy sisters and I love your website, too. Hi Katie, I started looking at your blog earlier this year as I started to move my diet towards a more ‘paleo/caveman’ diet and someone (who also sticks to paleo diet) recommended to me the fudge babies. I first tried the diet to see if it made me feel better and it does (re energy, mood etc) so I decided to stick to it as a lifestyle choice (not just a fad). The fudge babies are absolutely AMAZING and I also tried the cookie dough ones which are awesome. I can actually just keep a stock of the fudge babies on hand for my chocy cravings and don’t get sick of them! and even people not doing paleo love them. I love the recipes of yours that I’ve tried and excited to keep trying more! Some of the recipes I tailor slightly to make them more paleo – essentially just subbing any grain flours for almond or coconut flour. Usually i don’t have to change much though as they pretty much are paleo anyway. Having your recipes to refer to so easily from the blog makes a big difference for me as I find the diet isn’t challenging and I can have fun with it as I do have a massive sweet tooth for desserts (not necessarily sugar but something a little desserty after dinner). I really like showing the recipes off to people who think they can’t eat ‘healthy’ and have desserts 🙂

    Hi!
I am new on this blog, and I love you already!
I am a vegan (due to allergies, family health history, and love of animals), a total health nut, exercise fan, and horse/dog crazy person! I feel your pain when it comes to thinness; I was an anorexic, so during my recovery stage, people would be critisizing how thin I was (THAT did not help me AT ALL…..I am much better, but still health-concious).
Your recipes look really fab! I have yet to try one. Question: how many calories are in a tablespoon of coconut oil? And when you say T, is that a tablespoon or a teaspoon?

    Love love LOVE YOU!!!!

Hi Katie!!! So nice to hear from another Katie/Kate 🙂 :). Yes, a T is my lazy way of saying “tablespoon.” For teaspoon, I’ll say “tsp.” And there are around 100-120 calories in a tablespoon of oil. I think that’s the same for any oil. (I could be wrong, though.)

Katie!! I am in love with your blog!! I came across it just the other day and have been sharing it with anybody I can. I’ve looked at everything on the site and I’ve come to the conclusion that you and I are a lot alike. Besides the fact that we have the same name, lol, but that I too am a chocoholic. I mean, i LOVE almost anything sweet, especially if it’s chocolate. I was excited to find your blog because I’ve been trying my darndest to not listen to my sweet tooth very much considering I’m not the thinnest person ever and I am having a little trouble weight wise but your blog got me thinking that maybe I can have my dessert and eat it too! Thank you thank you thank you Miss Katie!! Since I can’t give you an actual hug, I’ll give you a virtual one **hugs**

I tried the sugar free version of your cookie dough dip yesterday. I have to say that I am so impressed with it! It really does taste GOOD! I had gastric bypass a year and a half ago and I can’t have very much sugar. This is a terrible thing for someone with a huge sweet tooth. The high protein and low sugar versions of your recipes are perfect for someone that has had weight loss surgery. Thank you! I am going to try some other ones this week!

Hi Katie — Not sure how I found you but I’ve really loved reading about you and your delicious recipes. I even posted one on my own blog and everyone seems to love it (I did give you credit so hopefully you’ll get some new followers out of it!). This blog thing still confounds me at times and I’m so impressed with what you’ve achieved.
Keep up the great cooking! My niece would not eat a veggie if it literally jumped into her mouth but yet, she scarfs down your “cookie dough” dip. My sister was so excited and eager to make the recipe that she’s debating putting it in a sandwich and sending it with her to school!
    Delish!

    Hi Katie,

Just found your site. I am cooking treats for someone with pancreatitis who CANNOT eat fat and you have great recipes. I’ve tried the banana bread (in the oven as we speak). Smells GREAT. I added extra cinnamon and used the pure banana version, with dried apricots and golden raisins for “chew”. Can’t wait to share a slice of her gift loaf (I’ll stay for tea.)
    Thanks for doing this. Lisa

Why not create a page of all of your favorite ingredients – with brands? I know you have suggestions within some recipes, but why not a list on a single page? So when you say “1 TBSP of Nut Butter” we can go to your ingredients page and see which brands/kinds you suggest?

I’m a HUGE supporter. Thank you for your everything you are doing. I’m VERY excited!!!

    Katie,
My fitness class I belong to challenged us to do a “No Sweets November” meaning pastries, cake, cookies, donuts, etc. I have known about your site for awhile so I knew I would be fine because I can have my cake (or fudge babies…my favorite!) and eat them too. So when some of the other ladies were stressed about giving up the good stuff in life I introduced them to your site. I know that not all your recipes are sugar free, but lots are, so now we are happy and satisfied, but still accomplishing our challenge! My question is about agave, I know that it is a sugar substitute and totally natural, which I love, but when it processes in the body how does it compare with sugars? And would I technically be “cheating” if I was eating “sweets” containing it?
Thanks for making this month manageable!

Thank you SO much for telling people about my site; it means the WORLD to me!

As for the agave question, I’m sorry to say I don’t really know… I do know that some people like it because it’s lower on the glycemic index than regular sugar so it doesn’t cause blood sugar spikes as much… but lol really I do not know ANYthing about the glycemix index or how it works! (Maybe google search “agave and glycemix index” to get more accurate info?) I do know that maple syrup and blackstrap molasses are also good alternatives to sugar because both have nutrients (vitamins, iron). And I try to list stevia as an option whenever possible in the recipes. (I like NuNaturals stevia packets or vanilla alcohol-free drops.)

Hey, Katie. I’ve been following your blog for a couple weeks and so far I haven’t found a recipe I haven’t liked. Your Pumpkin bread in a bowl is awesome! I have used several different cereals and all work. I also made the Snickerdoodle Oatmeal (yummy!) but changed it with some egg free “egg nog”. Holiday in a bowl! Have you thought about writing a cookbook with all these recipes? Bet it would be a hit!

I have a friend who struggles to keep her weight above 100 pounds and she’s not anorexic or anything. She has a heart condition and has had a pacemaker since she was 18 years old, she’s now in her 50’s. I’m going to be copying your recipes for her (she doesn’t have internet, stupid husband issue!) so she can have quick healthy snacks anytime of the day. Beats the high fat/sugar stuff her doctor wants her to eat! Thanks for such a great blog!!!

I wish Christmas weren’t coming so soon… there are so many posts I’m not going to have time to publish :-?.

I was wondering if you could post ideas for gift giving. like some type of bread/muffin/cookie/cake mix in a jar, so the person could easily make it!
I love your blog, and chocolate!!

i have spent much of my sunday scouring your website and getting overwhelmed (in the best way!) with all of the recipes that i plan to make! i am 8 months pregnant and will be starting an early maternity leave in 2 weeks…i am SO excited that i’ll be able to make delicious desserts in that time that won’t make me completely blow up into a waddling blimp! ;o) i always try and make “healthier” versions of my desserts at home but this website takes it to a whole new level – yay!

woo! I had to comment, and as a perpetual stalker this is big. I’m a mom of three and an insomniac and found your site quite accidentally! after reading so many yummy recipes and really great comments and stories about you I had to jump in. I had a rollercoaster of college and drug addiction before I found my way to solid ground. even though I get slammed whenever I reveal that I’m stuck on methadone after a serious car accident left me nearly paralyzed, all people hear is the methadone and my reasons don’t always matter. in becoming aware of my problems I did alot of studying and found that my brains serotonin levels may never be the same and alot of opiate dependent people substitute chocolate for the opiate because it give us the same effect on our serotonin levels. add the chocolate to the fact that this medicine gives you a sloth like metabolism, and you see my problem. anyways, I am so excited to start trying these recipes and I plan to start implementing dairy free and organic foods into my family’s menu. with three kids I need more energy, and they need to be healthier, I can’t wait to see what happens! thank you so much for all the hard work you put into this!

      Pumpkin Cream Cheese Bars

      (These can be gluten-free!)
■1/2 cup spelt flour (or white flour, oat flour, etc.)
      ■1 tsp cinnamon
      ■1/4 tsp pumpkin pie spice
      ■1/2 tsp baking powder
      ■1/4 tsp baking soda
      ■1/4 tsp salt
■1 egg of choice (flax, chia, I used 1 tsp energ. If necessary, you can omit completely.)
■3 T brown sugar (or agave)
■2 packets NuNaturals stevia (or 2 more T sugar)
■1/2 cup canned pumpkin (or cooked, pureed pumpkin)
      ■2 T nondairy milk
■2 T oil (coconut oil is really good, but veg oil is fine)
      ■1/2 tsp pure vanilla extract

Preheat oven to 350 F. Combine dry ingredients, then add in wet. Spread into an oiled 8×8 pan and cook for 20 minutes. Note: You can sub agave for the sugar; they’ll just be fluffier/cake-ier.

Let the pan cool for at least ten minutes before cutting or frosting the squares. Also, the flavors seem to intensify and these taste even sweeter the next day.

Thank you Katie for making these recipes and posting them! I have a 1 yr old who is allergic to milk, eggs, and peanuts. It has been hard to find foods that he will eat. I am finding more sites like yours but I just wanted to thank you! I can’t wait to try some of these desserts, especially the milkshake! An idea for the week of Valentines Day…desserts for one or two!
I have made your single serve muffin…oh 5 times in 2 weeks? Just wish you can an icing for the single lady cupcake that didn’t need a food processor until i find one to buy that is small and has good reviews. A muffin shouldn’t have icing but a cupcake? Well it DEMANDS icing. (Umm these are obviously only my rules!)
Thanks Katie for your gorgeous recipes 😀

If you’re looking for a good mini food processor, I have the kitchen aid chef’s chopper! It’s super small, so sometimes i have to split things into 2 batches, but that’s pretty rare, and it’s only $40! It’s super portable, I share it with my friends all the time, and it’s pretty light. It’s strong enough that’s I’ve even been able to make crushed ice with it. (Plus- it’s really cute, mine’s bright red!!) The one really annoying feature is that you have to hold down the button when it’s going, you can’t just turn it on and walk away (like you would with a blender) and that drives me crazy sometimes! Sorry Katie– I hope you don’t mind me posting a response to her comment!! 🙂

      • Pat says

It’s addictive!! I really appreciate all these healthy options for desserts and non desserts that are low calorie but still freakin delicious!
Ive already made cookie dough dip, healthy chocolate chip cookies, deep dish cookie pie, brownie batter dip, and the brownie batter pancakes, which for some reason didnt turn out but was still tasty haha. Today I plan on making the fudge daddies if I have time 🙂
Dont stop doing what you do!!

Also, I know it might be a hassle, but I do appreciate the nutritional information, especially when I’m cooking for other people who have important nutritional guidelines, so if you could try to keep doing that I would love it 🙂

keeping adding the desserts, but I also love the non dessert recipes!!

I can’t wait to try some of your recipes as well. I read a few of comments that people left and was shocked that anyone could or would leave a message like that! Katie, just try to ignore them and pray for them. They evidently have a problem and that makes them feel better, by saying hurtful things about others. I saw you on TV (your WHOLE body) and you looked really cute and I’d love to have your shape! I just had to speak up and say something (positive). Keep up your good work and thanks for all you do!!

I am very excited that i have found your website…. a friend had a link to one of your recipes posted on her facebook page. I have a 5 month old that is allergic to milk and eggs, and as long as i want to continue to breastfeed i need to cut those foods out of my diet. This was a huge challege to me, for i lived on cheese and milk. I have to say, not only have i lost weight by eliminating these foods from my diet, but i feel better. I am enjoying your recipes, for i was truly getting tired of eating potatoes, rice and chicken all the time. I am not sure what inspired you to share all of your recipes and ideas, but you have made me excited about food again. I absolutly love the single serving too!!!! Keep up the great work and some of these recipes will be making it into my husband diet too! 🙂

ps.. you have inspired me to start baking again. My current quest is to find a cake recipe so i can make my little guy a birthday cake for his first birthday! 🙂

Oh, I’m so excited about finding this site! Thank you so much for putting together this! I am lactose intolerant and a lot of your desserts… I CAN EAT! :o) Sometimes I give up being “lactose-free” and majorly regret it later w/ a stomach ache. BUUUUT, now I have a newborn that we’ve figured out is lactose-intolerant, also, and he screams if I eat anything w/ lactose in it… so I haven’t had milk product in 5 months. You know how hard that is? Lol! But this blog I can have sweets… YUMMY SWEETS… without hurting either him or me!! Thank you, thank you, thank you!! :o) I think you’ve just brought me back from the brink of insanity! Bahaha!! (I’m a chocoholic) Lol! 😉 Thank you!!

This blog is amazing! I can’t wait to try the cookie dough dip! My boyfriend recently developed lactose intolerance, and I became a vegetarian again, so I’ve been cooking lots of vegan food. I will be visiting your blog a lot in the future! You are so rad!
