Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.

And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.

How could you possibly top that?!

Blueberry Pie Pancakes

Blueberry Pie Pancakes


  • 1/2 cup blueberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or 1 packet stevia
  • 1/3 cup milk of choice
  • Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.


Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

    I love blueberries! They are great in veggie or fruit salads! And in smoothies and oats and cakes and yoghurt bowls…yeah, they are perfect everywhere 🙂 But they are so freaky expensive in my country, really much more expensive than any of the tropical fruits and blueberries actually grow here (whilst pineapples and mangoes don´t) so I don´t get it:(

    I dig the blueberry to flour ratio. That’s how all pancakes SHOULD be.
    I love blueberry everything! Especially blueberry lemon desserts like cupcakes and muffins. My college also serves blueberry coffee. OMG.

      Thank you so much, Emily! It’s one of my favorite photos too… but that’s not a testament to my skills. It’s just that blueberries are SO photogenic! (Much more so than dark, shadowy brownies. Ugh those are hard to photograph! :-?)

    I love blueberries so much. They were buy 1 get 1 at the store last week so I’ve been working through those quickly. I mostly use them with yogurt and cereal, and I love them frozen also..

    How much batter do you pour onto the skillet at a time? And how do you manage to keep your pancakes so round and even? Mine always become lopsided and irregular, and they often break apart when I try to flip them, sometimes even becoming what I like to call “scrambled pancakes.” Any tips would be fabulous! Thanks!

      I keep them smaller… it’s SO much easier to flip smaller pancakes without them falling apart! Also, my pancakes are sometimes irregular-shaped too. I just make sure to put the roundest one on top for the photos! 🙂

    Who doesn’t love blueberries? If they weren’t so expensive, I’d probably put them in my yogurt messes all the time. Unfortunately, they aren’t. But I buy blueberry jam quite often 🙂 .

    I like blueberries, I love raspberries more though!
    actually yesterday I found a can of blueberries in the cupboard so inspired by CCK, I put some blueberries in a container with a frozen banana, some walnuts and some oats and blended it until I had some healthy breakfast ice cream! I was meaning to put yogurt in but forgot and it tasted good without it anyway. I am down to my last two frozen bananas though – in australia bananas are REALLY expensive at the moment because most of the banana crops were wiped out during the Queensland floods & cyclone earlier this year. as soon as I heard that I put two bunches of bananas in my freezer and I’ve been rationing them out!

    I ADORE blueberries too! I eat frozen berries quite often, but I did buy some fresh ones this week. Today, I ate them in my oats for breakfast, in my cottage cheese for lunch, and in my salad as part of my dinner!!
