Cake Batter Bars: Nutrition Facts

Per Energy Bar:

  • Calories: 140
  • Fat: 4.5 grams
  • Carbohydrates: 27.5 grams
  • Protein: 3 grams
  • Fiber: 2 grams
  • ww points (new system): 4

Substitution Notes:

For the cashew butter: You can use another nut butter—peanut butter, almond butter, Sunbutter, etc. Obviously the taste will be different; I think the cashew butter is what really gives these bars their surprising “cake batter” flavor. Sorry, I have no idea about subbing PB2 or Better ‘n PB in this recipe.

For the sweetener: I haven’t tried these bars with maple syrup or brown rice syrup, so I can’t vouch for the taste/texture. Feel free to experiment, but be prepared if the bars crumble from a lack of stickiness if you use maple syrup. I also have not tried the bars with stevia, and I think you’d have to up the cashew butter amount by a lot if you want to take away the sticky sweetener (which acts like a binder) and replace it with stevia.
