- 6 cups cherries (pitted fresh or frozen)
- 1/2 cup water
- 2 tbsp lemon juice
- 3 1/2 tbsp cornstarch
- 2/3 cup sweetener of choice
- optional 1 tsp pure vanilla extract or 1/4 tsp almond extract
- optional pinch salt
Stir all ingredients except the vanilla in a saucepan. Bring to a boil over medium heat. Once boiling, turn to low and stir frequently until cherries are super soft and sauce is thick (about 10-15 minutes). Turn off the heat, and stir in the vanilla extract.
