You should add your breakfast pizzert to this list. It is my family’s FAVORITE! We make them almost every weekend now thanks to you!

What is coconut butter? I live out in the middle of podunk nowhere, but even in my “city” days never saw such a thing.

do you have a plain for one pancake recipe?

Reply

Chocolate-Covered Katie July 27, 2011 at 10:31 am

I don’t. I think the closest thing I have to “plain” would be the oatmeal-cookie pancakes. But you could probably just leave the blueberries and cinnamon out of the blueberry-pie pancakes and have a plain, basic pancake.

I was watching the Travel channel today and saw a place in Nashville, TN that serves sweet potato pancakes. I thought SWEET POTATOES! That would be PERFECT! Of course their non-vegan recipe is a closely guarded secret.

Mmmm that does sound good! With maple syrup!!

I was thinking that since it is fall, maybe you should make pumpkin pancakes/oatmeal! That would be super tasty!! Oh and I had your banana pancakes- best pancakes EVER!!!!

Hey I can’t find the carrot-cake pancakes (for one?) recipe you mentioned, and would LOVE to try it!

At the moment, this is the only post I have for them: http://chocolatecoveredkatie.com/2010/01/27/pancakes-for-one/
Sorry in advance; it is very confusing, and I NEED to update the page to have a more reader-friendly recipe. It’s on my to-do list to write a new post for them!

Katie, since it’s the fall season, you should try making an “apple pie” pancake recipe. :) That would be delicious!

LOL! Oh my word, this is creepy-ironic! Did you see my tweet about ten minutes ago? I *just* wrote about the apple pie pancakes I made! Recipe coming soon!! :)

Hi Katie,

I recently discovered your blog and absolutely love your unique recipe ideas! I thought your white bean recipes are so creative and was wondering if you’d ever tried making white bean pancakes?

Reply

Chocolate-Covered Katie October 15, 2011 at 2:56 pm

I haven’t… that sounds like a really fun experiment!!

I’d love to know what your take on the bean pancakes would be – I tried my own and had a hard time keeping them from falling apart :/

I took your blueberry pie pancake recipe and morphed it into “cranberry pumpkin pie” pancakes. I throw oats into all of my pancake recipes because they don’t add gluten but do add lots of fiber, and raw oats cook in so that they’re undetectable.

Thanks for that tip about melting bananas, and they really are sweet and yummy!

I may be giving up your wesite for Lent. Your cookie pie and cookie dough dip are too yummy. We will be making your apple pie pancakes tonight and then I think I may have to lay off your recipes until Easter. :)

Hey Katie, I don’t know if you counted them as gluten free recipes or not, but I have tried every single pancake recipe on your site using gluten-free all purpose flour and they all turned out fabulous! (and delicious, might I add!) They didn’t even need xanthan gum to stay together!

Wow, thanks for letting me know! I’m really glad you took the time to tell me… because now I can tell other people when they ask. I need practice when it comes to gf baking, but I’m really trying to learn because I know it’s important to a lot of people to avoid gluten!

Hi Katie!

I’ve been a silent reader for a while now, but I just wanted to say that your pancakes are amazing!! I love the red velvet and apple pie pancakes, and just made the chocolate brownie ones this morning, which were great too. I also put links to these on my blog :) Hope you’re having a good weekend!
