Sugar-Free PB Cookies

Notes on a Sugar-Free Version:

If you’d like to keep this cookie sugar-free, you can omit the sweetener and add 1 to 1.5 packets nunaturals stevia in its place. Also add a scant 1 T nondairy milk.

The cookies will be a bit dry when made with the stevia. They won’t be the most delicious things you’ve ever eaten, but if you’re on a sugar-free diet and are craving a cookie, they’ll do the trick (unless you’re not a fan of stevia-sweetened baked goods). Another alternative is to use 1 T liquid sweetener and 1/2 packet stevia. Honestly, I haven’t really experimented much with it except to try the 100%-stevia-sweetened version written above. Feel free to try out different variations and report back! Smile
