- 2 tbsp protein powder (16g)
- 2 tbsp cocoa powder (10g)
- 1 1/2 tbsp sweetener of choice (18g)
- 1/16 tsp salt
- 1/16 tsp baking soda
- 2 tbsp peanut butter or allergy friendly alternative (30g)
- 1 1/2 tbsp water or egg whites (22g)
- 1 handful chocolate chips (optional)
1. If you are baking the chocolate protein cookie, begin by preheating an oven or toaster oven to 325° Fahrenheit or 162° Celsius.
2. Gently warm up your nut butter if it's not already easy to stir.
3. Combine the cocoa powder, protein powder, sweetener (if using dry sweetener), salt, baking soda, and chocolate chips in a cereal sized bowl.
4. Stir in the softened nut butter, water, and liquid sweetener (if using) to form a chocolate cookie dough. You may need to add an extra tablespoon of water, depending on the dryness of your protein powder and what type of sweetener you choose.
3. Use your hands to press the dough into a large cookie shape.
4. Enjoy the no bake chocolate cookie as-is. Or bake 7 minutes on the center rack of the oven or toaster oven.
5. Let cool before handling, because the cookie firms up as it cools.
