Single Serving Chocolate Protein Cookie

Ingredients

  • 2 tbsp protein powder (16g)
  • 2 tbsp cocoa powder (10g)
  • 1 1/2 tbsp sweetener of choice (18g)
  • 1/16 tsp salt
  • 1/16 tsp baking soda
  • 2 tbsp peanut butter or allergy friendly alternative (30g)
  • 1 1/2 tbsp water or egg whites (22g)
  • 1 handful chocolate chips (optional)

Instructions

  • 1. If you are baking the chocolate protein cookie, begin by preheating an oven or toaster oven to 325° Fahrenheit or 162° Celsius.
  • 2. Gently warm up your nut butter if it's not already easy to stir.
  • 3. Combine the cocoa powder, protein powder, sweetener (if using dry sweetener), salt, baking soda, and chocolate chips in a cereal sized bowl.
  • 4. Stir in the softened nut butter, water, and liquid sweetener (if using) to form a chocolate cookie dough. You may need to add an extra tablespoon of water, depending on the dryness of your protein powder and what type of sweetener you choose.
  • 3. Use your hands to press the dough into a large cookie shape.
  • 4. Enjoy the no bake chocolate cookie as-is. Or bake 7 minutes on the center rack of the oven or toaster oven.
  • 5. Let cool before handling, because the cookie firms up as it cools.
