Vegan Thursdays, Take One

Cheated a bit and had this week’s Vegan Thursday on Wednesday so I could blog about it on Thursday. But of course I’ll still be eating vegan today (the real Vegan Thursday), too.

Last night, I tried a new product and resurrected an old fave: Butternut fries!

A big bowl of whole-wheat angel-hair pasta (tossed with spices, a little vegan butter, and a lot of broccoli)

With a side of Butter(nut) Me Up Squash Fries. The fries were just as sweet-n-perfect as always. And I fell head-over-heels for the new product: Gia Russa angel hair pasta. If you’ve tried whole wheat pasta in the past and weren’t a fan of the nutty flavor, run out and buy this! It doesn’t taste like whole wheat pasta at all.

Even more exciting than my dinner was that my mom joined me for the meal. I made her the same dinner as me, and she polished it off.

Actually, I made a few changes because she doesn’t like squash fries.  Sacrilege, I know! (She also had a different bowl for her pasta, but I used mine for the photo shoot.

I’m not really a “pasta girl,” but if I had to choose it’d be shells (cuz they trap all the sauce 😉 )
Feels like 1 degree?!? Girl, that’d be a gym day in my book

  2. JCD says:

Mmmm…. pasta! And I need to try those fries – they look so good. Have you ever tried Tinkyada brown rice pasta? It’s really good too.

The weather here is gross today too, feels like -32C/-26F. It’s a self-declared ‘wear winter boots and fleece to work day’ today. :)

  3. I love butternut squash fries!

  4. I am definitely an angel hair girl too!

  5. Pam says:

Any gluten free pasta works for me!

    Stay Warm!

  6. That is A LOT of brocolli!

I am an Angel Hair girl too! Always loved it.

I just discovered an amazing whole wheat pasta as well: Full Circle organic whole wheat pasta. So good!

I also agree with JCD about the Tinkyada brown rice pasta, I am a fan of it too.

I want to jump on the vegan thursday bandwagon! I’m off to a good start (cereal with almond milk and bananas this morning)

  7. Cindy says:

ANY kind of Pasta is my favorite. Actually I have been trying to lighten the carb load and I have fallen in love with spaghetti squash. I SO LOVE that!

OH, It’s THRUSDAY…I guess I’ll make today a Vegan day! and LOW GI (glycemic index that I was already doing)

    should be fun!

I am doing a 5 day vegan challenge after my 5 days low gi.

    I’m a busy girl!

  8. Veggiesmack says:

I don’t eat tons of pasta, but when I do it’s usually brown rice rotini or penne.

I live in Fort Worth, and I am totally feeling the cold. Brrr. My car door was frozen shut this morning and the wind was terrible. When it’s this bad, I do my exercise indoors. :-)

  9. *hands up high* Pasta lover!!! All kinds!!! Never met a pasta I didn’t LOVE. Being Italian does that to ya!

Totally drooling over all your eats :)

  10. *Andrea* says:

mmm looks great! what spices do you use in your pasta?? i love whole wheat fettuccine… my dad’s favorite though is angel hair! squash fries are amazing too of course. greatmeal – if this doesn’t make more ppl try out veganism i dont know what will 😉 …. fudge babies for dessert perhaps!?

  11. psychoj1 says:

That pasta looks delicious! I am totally craving some broc+pasta!! Mmm! Yay for vegan Thursday!

    <3 jess

  12. Mama Pea says:

I just never have really been into pasta. It’s more about the sauce for me, you know?

    Yay for Vegan Thursdays!!!

  13. Kate says:

    Angel hair pasta at home.

Rotini or penne if I’m eating out.

  14. eaternotarunner says:

I love angel hair too! But I would say tagliatelle is my favorite :-)

  15. Jessica says:

I had butternut squash last night too! Yum :)

My favorite pasta is the corkscrew kind! I don’t mind whole wheat at all, though quinoa pasta is my lastest obsession.

  16. Yum, those butternut squash fries look awesome! I love all types of pasta, so I can’t even narrow it down if I tried. I guess it depends on what type of sauce I’m going to have. I like rotini when I make a sauce that’s full of veggies, and angel hair for alfredo type of sauces. Now I’m in the mood for pasta!

  17. Casey says:

    Mmm…your pasta looks delish!

  18. Good looking dinner.

I love angel hair pasta hand down :)

  19. Stef @ moretolifethanlettuce says:

oh shoot! i already forgot it was vegan thursday, i should have read blogs before eating breakfast!!! argh! that’s ok, next week i’ll try again :). i love angel hair too, but i think shells or rotini (those corkscrews) are my fave bc they hang on to sauce so well!

  20. Butternut squash fries! Yea!!! And I’m glad to know about that pasta. I’ve been lookin’ for a good whole wheat angel hair.

  21. I love pasta, especially whole wheat. I like the twirly kind; it holds sauce well and it’s fun to eat :)

  22. erintakescontrol says:

That pasta doesn’t LOOK like whole wheat, either! Good 2 know there is a pasta brand that doesn’t go overboard with the WW flavor!

  23. Yeaaahtoast says:

I’ve never been into semolina pastas, I grew up on the stringy wheat, buckwheat, and rice asian pastas like soba, somen, ramen, and saimin.

However, my boyfriend’s mother who has Celiac brought over some quinoa pasta the other night and I LOVED it. It didn’t make me feel bloated like regular semolina pasta, and it tasted great!

If I had to choose a shape though, it’d be orzo all the way! I love that it’s bite size and chewy.

  24. Jess says:

Pasta! Bnut fries! I want your dinner!

Also, maybe it’s me, I adore the strong, nutty taste and chewy texture of ww products, even pasta. I love all pastas – traditional spags are a favorite, as well as spiral or shell for its pasta adherence.

I’m totally in for Vegan Thursdays, by the way. I eat vegan at home all the time, and I’m almost always home by myself all day on Thursdays, so it should be pretty easy. Today I had a slice of WW w/pb for breaky and I’m eating a broc slaw salad with onions, tomatos, and spinach all tossed in some Annie’s Goddess dressing. (my first time trying it!)

Dinner will be more leftover stir-fry, I think. :)

  25. Jess says:

Oh – I meant to tell you – I got my first kabocha at the store this week, there was one left and it was 99c a pound!!

  26. Yessenia says:

I’m joining in on the Vegan Thursday boat!!

I can eat noodles all day, 365 days a year!

  27. Lexi says:

    Yea vegan thursday!

    I love linguini!

  28. Jenny says:

bah! totally forgot about vegan thursdays. I don’t suppose the vanilla oikos I’m currently chowing down on qualifies :( meh, next week.. I gotta make a note to myself!

  29. Quix says:

I love angel hair, thin and yummy! And that pasta looks awesome… I’m not a huge sweet potato fan myself (I know, sacrilege) but I would so mow down on your lovely pasta and broccoli.

I HAVE to run outside Saturday. I’m hoping it’s not too horrid. Friday here in ATX is supposed to be badbad but Saturday is 44 at least. Eeek!

  30. Kelly says:

    Whole wheat rotini 4 lyfe!

And now I’m craving butternut squash fries. Mmm.

  31. Melinda says:

I love whole wheat pasta. the other night we had multi color bow ties. Even more impressive (check out my blog) we made tortellini from scratch the other night…too much super mario bros playing! I love the brocolli overload on your pasta, the more the better.

  32. Hooray for Vegan Thursday #1!!!!!!!!!!!

  33. …I just realized that I inadvertently participated in Vegan Thursdays. (humph… interesting realization…)

  34. Emily says:

Hooray carbs! I thought it would be a good idea to run in 8 degree weather the other day, and my hands were soooo cold. I don’t thin regular cotton gloves cut it. :-/ Needless to say, I ran inside today. :-)

    Stay warm, Katie!

  35. Katie says:

I’m not much for pasta, but I did have some spiralized zucchini noodles for dinner on vegan Thursday!

  36. Amy says:

love any kind of pasta–I was going to say cappellini is my favorite, but I think that’s actually the same as angel hair.

I had a great Vegan Thursday today! Thanks for the idea :)

  37. amyjogo says:

I had my first ever Vegan meal today! And it was delish :)

  38. YUM! All those veggies – and those fries! – look delish!

I know! Can you believe this weather?! It’s craziness. I have snow, getting more snow, and it’s cold! Ready for Mr. Sunshine to grace me with his presence and warmth! Well, maybe I should say “a new season!” LOL

Hope your holidays were fantabulous, Katie – just like you!

  39. lora says:

  40. BroccoliHut says:

I kicked off Vegan Thursdays today, and I am feelin’ pretty fab. I celebrated in true carb queen style too, with plenty of oat bran and bread:)

  41. I read on HEABS blog that you are making cards? I would love to see them!

  42. looks SO GOOD!!

    xoxox love to you girl!!

  43. Katharina says:

Wind + already cold weather = OI!!!

That angel hair pasta… I have to tell my mom about that brand. She can’t have regular pasta – it really makes her digestion funky :\ Poor mama. My favorite pasta may be fettuccine or penne.

  44. We were all ice in Atlanta today. I just haven’t been able to bring myself to run outside yet. And it was 15 degrees when I woke up. I think I moved to Antarctica! This isn’t the GA I know :( I’m not a wuss or anything, I think I just make excuses to go to the gym 😉

  45. Ophelia says:

Do you add any fats to your pasta?

  46. Ophelia,
In my post, I wrote what I put on my pasta.

  47. Serena says:

Because of you, I now eat almost *every* meal with chopsticks. It is SO fun!
