Vegan Thursdays, take One

by Chocolate-Covered Katie on January 7, 2010

Cheated a bit and had this week’s Vegan Thursday on Wednesday so I could blog about it on Thursday. But of course I’ll still be eating vegan today (the real Vegan Thursday), too.

.

Chocolate-Covered Meal of the Day

Last night, I tried a new product and resurrected an old fave: Butternut fries!

znyc 821

A big bowl of whole-wheat angel-hair pasta (tossed with spices, a little vegan butter, and a lot of broccoli)

With a side of Butter(nut) Me Up Squash Fries. The fries were just as sweet-n-perfect as always.

.

And I fell head-over-heels for the new product: Gia Russa whole-wheat angel hair pasta.  If you’ve tried whole wheat pasta in the past and weren’t a fan of the nutty flavor, run out and buy this!  It doesn’t taste like whole wheat pasta at all.

gi

Carb-Hugger alert!! Carb-Hugger? More like carb devourer-er ;)

.

Even more exciting than my dinner was who joined me for the vegan meal:

Lovely Lunching Lady!

I made her the same dinner as me, and she polished it off.

znyc 822

Actually, I made a *few* changes because she doesn’t like squash fries.  Sacrilege, I know! (She also had a different bowl for her pasta, but I used mine for the photo shoot.  Wanted to keep Miss Lunching Lady’s meal warm til the last possible moment, ya know.) Now she’s on board for Vegan Thursdays!

.

Not-so-fun News:

I think I might’ve jinxed it when I said that it rarely ever gets below 5 degrees around here.  The forecast for tomorrow morning says “feels like 1 degree, with 25mph winds”… definitely time to heed the sage advice of How to Run in Horrific Weather.

I’m not really a “pasta girl,” but if I had to choose it’d be shells (cuz they trap all the sauce ;) )
Feels like 1 degree?!? Girl, that’d be a gym day in my book

Mmmm…. pasta! And I need to try those fries – they look so good. Have you ever tried Tinkyada brown rice pasta? It’s really good too.

The weather here is gross today too, feels like -32C/-26F. It’s a self-declared ‘wear winter boots and fleece to work day’ today. :)

Stay Warm!

Enjoy!

That is A LOT of brocolli!

I am an Angel Hair girl too! Always loved it.

I just discovered an amazing whole wheat pasta as well: Full Circle organic whole wheat pasta. So good!

I also agree with JCD about the Tinkyada brown rice pasta, I am a fan of it too.

I want to jump on the vegan thursday bandwagon! I’m off to a good start (cereal with almond milk and bananas this morning)

ANY kind of Pasta is my favorite. Actually I have been trying to lighten the carb load and I have fallen in love with spaghetti squash. I SO LOVE that!

OH, It’s THRUSDAY…I guess I’ll make today a Vegan day! and LOW GI (glycemic index that I was already doing)

should be fun!

I am doing a 5 day vegan challenge after my 5 days low gi.

I’m a busy girl!

I don’t eat tons of pasta, but when I do it’s usually brown rice rotini or penne.

I live in Fort Worth, and I am totally feeling the cold. Brrr. My car door was frozen shut this morning and the wind was terrible. When it’s this bad, I do my exercise indoors. :-)

I just never have really been into pasta. It’s more about the sauce for me, you know?

Yay for Vegan Thursdays!!!

Angel hair pasta at home.

Rotini or penne if I’m eating out.

Reply

eaternotarunner January 7, 2010 at 4:50 pm

I love angel hair too! But I would say tagliatelle is my favorite :-)

Jessica January 7, 2010 at 4:54 pm

I had butternut squash last night too! Yum :)

My favorite pasta is the corkscrew kind! I don’t mind whole wheat at all, though quinoa pasta is my lastest obsession.

Reply

Jessie (Vegan-minded) January 7, 2010 at 4:55 pm

Yum, those butternut squash fries look awesome! I love all types of pasta, so I can’t even narrow it down if I tried. I guess it depends on what type of sauce I’m going to have. I like rotini when I make a sauce that’s full of veggies, and angel hair for alfredo type of sauces. Now I’m in the mood for pasta!

Butternut squash fries! Yea!!! And I’m glad to know about that pasta. I’ve been lookin’ for a good whole wheat angel hair.

I love pasta, especially whole wheat. I like the twirly kind; it holds sauce well and it’s fun to eat :)

Reply

erintakescontrol January 7, 2010 at 6:43 pm

That pasta doesn’t LOOK like whole wheat, either! Good 2 know there is a pasta brand that doesn’t go overboard with the WW flavor!

Reply

Yeaaahtoast January 7, 2010 at 6:46 pm

I’ve never been into semolina pastas, I grew up on the stringy wheat, buckwheat, and rice asian pastas like soba, somen, ramen, and saimin.

However, my boyfriend’s mother who has Celiac brought over some quinoa pasta the other night and I LOVED it. It didn’t make me feel bloated like regular semolina pasta, and it tasted great!

If I had to choose a shape though, it’d be orzo all the way! I love that it’s bite size and chewy.

Reply

Jess January 7, 2010 at 7:55 pm

Pasta! Bnut fries! I want your dinner!

Also, maybe it’s me, I adore the strong, nutty taste and chewy texture of ww products, even pasta. I love all pastas – traditional spags are a favorite, as well as spiral or shell for its pasta adherence.

I’m totally in for Vegan Thursdays, by the way. I eat vegan at home all the time, and I’m almost always home by myself all day on Thursdays, so it should be pretty easy. Today I had a slice of WW w/pb for breaky and I’m eating a broc slaw salad with onions, tomatos, and spinach all tossed in some Annie’s Goddess dressing. (my first time trying it!)

Dinner will be more leftover stir-fry, I think. :)

I love angel hair, thin and yummy! And that pasta looks awesome… I’m not a huge sweet potato fan myself (I know, sacrilege) but I would so mow down on your lovely pasta and broccoli.

I HAVE to run outside Saturday. I’m hoping it’s not too horrid. Friday here in ATX is supposed to be badbad but Saturday is 44 at least. Eeek!

Hooray carbs! I thought it would be a good idea to run in 8 degree weather the other day, and my hands were soooo cold. I don’t thin regular cotton gloves cut it. :-/ Needless to say, I ran inside today. :-)

Stay warm, Katie!

Wind + already cold weather = OI!!!

That angel hair pasta… I have to tell my mom about that brand. She can’t have regular pasta – it really makes her digestion funky :\ Poor mama. My favorite pasta may be fettuccine or penne.

We were all ice in Atlanta today. I just haven’t been able to bring myself to run outside yet. And it was 15 degrees when I woke up. I think I moved to Antarctica! This isn’t the GA I know :( I’m not a wuss or anything, I think I just make excuses to go to the gym ;)
