It’s pumpkin AND cookie dough.
So it’s pretty much guaranteed to be awesome.
Like getting to eat your pumpkin pie and your ice cream all in one little scoop. Or two big scoops.
One won’t be enough.
Pumpkin Cookie Dough Ice Cream
(gluten-free)
- 1/2 cup milk of choice, or coconut milk or nondairy creamer
- 1 1/2 cups full-fat coconut milk or non-dairy creamer (For a lower-calorie version, see nutrition link below.)
- 2/3 cup pumpkin or sweet potato puree (I used canned pumpkin) (160g)
- 1/2 tsp salt
- 1/4 tsp baking soda (omit if desired)
- 1/4 cup xylitol or brown sugar (or regular sugar) (50g)
- 2 nunaturals stevia packets, or omit and increase sugar to scant 1/2 cup
- 1/2 tsp cinnamon (and optional: a pinch pumpkin pie spice)
- 1 tsp pure vanilla extract
- 3 tbsp oat flour (or 1/4 cup rolled oats finely ground in a blender) (20g)
- optional: handful of chocolate chips
Combine all ingredients (minus optional chips), and whisk until smooth. See “nutrition info” link below if you don’t have an ice cream maker. Otherwise, pour into your ice cream maker and churn. (It took 15 minutes in my Cuisinart.) Add chips if desired, stir, then transfer to an airtight container. Chill in the freezer for an hour or so, until true ice-cream consistency is reached. Note: homemade ice cream has its best texture if eaten the same day it’s made. Also, if you’re using coconut milk, make sure it’s the full-fat kind that comes in a can.

This ice cream looks so good! I love cookie dough… and pumpkin. Is it pretty firm, or is it softer? In the close up picture of the scoop it looks really liquidy, but my eyes are probably deceiving me! 🙂

If you eat it straight from the ice cream maker, it’s softer. But let it firm up as the directions state and it’s thick and creamy.
That second photo… probably about 10 minutes after taking it out of the freezer, so it had started to melt. Photoshooting ice cream is definitely not my favorite thing to do ;).

It’s actually cookie-dough-flavored. As opposed to having cookie dough chunks, it’s like the entire thing is cookie dough (mostly thanks to the amounts/additions of the flour, vanilla, and baking soda).

The best thing I ate today was a molasses and mixed berry cake entirely sweetened with molasses. One of the tastiest things I have put in my mouth in a very long time. It’s moist and tart and sweet with the tiniest hint of bitterness. You may want to try veganizing it. Molasses is a great sweetener to play with since it has so many minerals in it.

Part of me says this sounds great, and part of me says “hmm..pumpkin and cookie dough together?!” I suppose the proof would be in the tasting, right? 🙂 ….I do need to thank you for posting ice cream recipes (dairy free!) that can be made without an ice cream maker, because THAT’S the best thing I’ve had so far today – vanilla ice milk for breakfast! I just can’t get it to turn out smooth enough. It always has little ice crystals that don’t blend out. Still tasty, but not exactly ice cream texture.
And I second Anonymous, even if I can ‘t get ice cream to work quite right all your other recipes are fantastic! 🙂

Not big on sweets just means I don’t like super-sweet desserts (or things like candy or sorbets). It definitely doesn’t mean I don’t love dessert; I’d just prefer my dessert to be rich and creamy… or chocolatey :).

Katie, I made this today and it was really yummy, except a slight bitter taste (not my stevia, I use nunaturals all the time and I’m used to that flavor)- I’m thinking it’s from the baking soda. Can you tell me what the baking soda does in the recipe? Does it make the icecream fluffier? I’m thinking I might leave it out next time if it is just for flavor…

Shouldn’t be the baking soda.
What sweetener did you use besides the stevia? (i.e. for where it calls for xylitol or brown sugar)

I used the brown sugar, and no changes. I am starting to wonder if my tongue was off for the day- I’ve been making your black bean brownies all week and they are awesome, but they tasted bitter yesterday too so that solved it for me. Weird tongue day. 🙂

The best thing I ate today was breakfast:Early Morning Peanut Butter and Banana Oatmeal (with caramelized bananas!) from Oh She Glows. SO good… I’ve been on an OSG kick and her recipes are my diet basically. They are THE BEST (and she’s all vegan too) and I’m picky with vegan things since I’m not one. Okay, I’ll stop 🙂

It’s creamy… you just need to be sure to not skip the second ingredient and sub with a lower-cal milk, or it’s more like ice milk.

I made your banana peanut butter today and that was pretty awesome. I’ve also been making some banana pancakes from pinterest lately. 1 mashed banana and 2 eggs. Mix together and cook like pancakes. They are SO good with some vanilla yogurt and frozen (thawed) blueberries on top!! Also they were awesome with banana peanut butter on top.

Hmm… The best thing I ate today were banana pancakes. Theyre to DIE for. Take 1 banana and mash it up until goopy (yea sounds kinda gross but just wait) add one egg, some vanilla, stevia if banana isn’t very ripe, a pinch of salt and 1 tablespoon of coconut flour. Whisk everything together and fry in some butter!! theyre DELICIOUS!!

I overfilled my mini ice cream maker, so unfortunately I had to stop a bit too soon – but even though the ice cream was extra soft serve, it was one of the tastiest ice cream flavors I’ve ever had. I used mostly canned coconut milk with just a bit of vanilla almond milk, and I added a bit of pumpkin spice to it. Thanks for another tasty recipe, Katie!

Just a question about the quantity of milk as you’ve put 1/2 a cup which is about 120g normally but then youve written 240g after it which is about a full cup so I was just wondering how much I should use ?
