The nutrition information does include all of the oil, and I highly recommend leaving it in (unless you really don’t mind fat-free baked goods!). You can leave the chocolate chips out if you prefer, but if you do add the chips: 150 calories, 8 grams fat, 17 grams carbs, 4.5 grams sugar, 3 grams protein, and 4 ww points per muffin.

    Dear Katie,
    First of all, I love your web page (it has been part of my daily routine for a few years). As a read today’s post and drank my morning coffee, I thought it would be amazing for you to figure out more coffee drinks and puddings. Coffee is a greAt excuse for chocolate and Silk’s unsweetened vanilla almond milk. Is it possible to make a pudding or mouse with agar agar without cornstarch? I love eating healthy and actually grew up eating healthy ( I love vegetables and fruits). My family never bought white flower or refined sugar. I used to resent it but now as a young adult I am very thankful. I’m so glad the food industry is finally catching on!

      You can actually use many substitutions instead of cornstarch: ground flax, chia, xantham gum, or guar gum. (Flax and chia you have to soak and it gives the product a gel-like feel.) I also sometimes use coconut flour since it is very fibrous and soaks up alot of moisture, although you have to let it sit for a while and the end product won’t be very smooth.

    Hi, Katie! These look wonderful, and I’ll be trying them this week. Have you tried making them with bananas as the sweetener? I am looking for recipes to make a friend who had gastric bypass surgery and therefore cannot have added sugar, etc. Thanks in advance! If you haven’t tried it…I might!

    I made these using carrot puree instead of applesauce (I’m allergic to apples) and they came out wonderful!

    Katie, is there a way to omit the 1/3 cup sugar? I tried without and FLOP! It never cooked no matter how long I left it in the oven for! 🙁

    Just made these a few days ago and made mini muffins and were great once cooled from the oven. The next day they were a tad floury. I used a little less sugar. Is that why?Any suggestions because I will make them again. Would an egg help? Thanks! Will try banana chocolate chip next! 🙂
