Nutrition information will vary depending on what veggies you use. The info above is based on 4 servings, with the veggies I listed in the recipe, and it also includes 1 tbsp olive oil. As stated in the post, you can probably omit the oil; but—as is the case with all roast vegetable recipes—the flavor will be better if you do not.
