After following the blog for a little while and experimenting with the recipes, I finally got my cookbook today. Being an avid weightlifter, HIIT worker, and Italian, you can see how hard it is to balance a healthy life style. I am so thankful for the quick, easy, sometimes vegan, sometimes GF recipes. For the cookie dough pancake recipe is it possible to substitute spelt flour for either buckwheat or oat flour? If possible what are the quantities for substitution?

Well Katy, you are a lucky young lady! You have your cake, and can eat it too! ( not that I quiet understand that phrase!) But you do look charmingly slim, and yet seem to eat what a lot of us struggle to keep away from, or feel guilty after eating! But, of course, you have dedicated your life to providing delicious healthily thoughtful recipes for us! So I guess that makes you a smart and reasonable woman as well! Again lucky you! Sigh!

So I’ve made a plan to make one a week! Just made the chocolate pixie cookies and they are AWESOME!!! I’m in love and will definitely make them again, either for some sort of gathering, or even a “just because we need a treat” in the future. They are dangerously easy to make!

I can’t wait to try the black bean brownies I can’t fine good recipe with no flour,sugar, I use stevia, almond or coconut flour,sea salt,olive or coconut oil if you have any good recipe I would love to try them thanks

Are the total fat calories in all UR recipes regular fat or Unsaturated fat❓ Do U list recipes with the unsaturated fat amount❓It’s important for me to know because of my cholesterol. Thank you.

Hi! Total fat is all fat together–saturated and unsaturated. The recipes in the book also only list total fat (my second book will list both!). If it helps, all of the recipes are cholesterol-free, though, as long as nondairy milks and yogurts are used for those recipes that call for milk of choice. 🙂

Hi sweetie! I would certainly buy your book if it was spiral bound. Using a hardcover book in the kitchen for me just doesn’t work and I forget about my kindle books too easily 🙁 I hope soon you’ll offer a spiral bound!

Dear Katie My Mother was a professional cook runing a european country club kitchen and I am a gourmet cook But I am learning things from you I wil healthil;y pass opn to my grandchildren. Thank you Katie from the bottom of my heart and the top of my health that I am concerned about as I am a retired nurse I now reduce ALL of my recipes sugar content by 30 to 40 %. Only after 1950 did sugar content start going up due to lobbying of the sugar industry . Thank you Katie, Carol Huggins
