Weight Watchers’ followers, please note this disclaimer from the Weight Watchers’ website: Officially, the PointsPlus Weight-Loss System provides an allowance for “man-made” (non-veggie) zeros. The plan suggests that any member limit their servings of zeros to five a day. In the long run, your weight loss will be the guide. If weight loss is slow, you might want to pull back on the zeros. Remember all foods have calories. (CCK note: In other words, 1 tbsp of this cream will be zero points, but larger servings will have points.)
This recipe makes about 550g (around 37 tbsp). The whipped cream is 100% free of added sugar if you use stevia. And unlike Cool Whip, which lists “hydrogenated oil” as its second ingredient, this recipe has no trans fats nor high fructose corn syrup. (Side note: heavy whipping cream has 52 calories per tabelspoon.)
Coconut-Free Substitution:
If you can’t have (or dislike) coconut, you can use cashew cream instead. Simply soak 1 cup of raw cashews overnight, then drain. Puree the cashews into a cream, and use this cream in place of the coconut cream called for in the recipe.
