Texas Caviar and Watermelon Salsa

Amidst the mounds of brisket, ribs, pork-laden beans, and other offending foods you’ll find at the typical Texas barbecue, there’s one dish that is actually vegan. Here’s my family’s recipe for the dish known as Texas Caviar:

Texas Caviar

INGREDIENTS:
1-1/2 cups chopped, seeded tomato
1/3 cup thinly sliced green onions
1 Tablespoon canned, chopped green chiles
2 Tablespoons white wine vinegar or white vinegar
1 Tablespoon minced, seeded jalapeno or serrano chile pepper
1 Tablespoon chopped, fresh cilantro
1 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
2 garlic cloves, minced
1 can corn
1 can black beans, drained (or black-eyed peas for New Year’s good luck!)
Fresh cilantro for garnish

PREPARATION:

In a large bowl, combine the tomatoes, green onions, green chiles, vinegar, jalapeno or serrano chile pepper, chopped cilantro, olive oil, salt, cumin, cayenne pepper, garlic, and black beans. Top with cilantro. Along with pita chips, this makes a great appetizer to bring to parties. It also might taste great in a burrito with some mashed avocado.

Another summer-y family recipe:

Watermelon Salsa!

INGREDIENTS

3 cups seedless watermelon, diced

¼ cup lime juice

¼ cup red onion, minced

Salt to taste

Optional: 1 or 2 jalapeno peppers

PREPARATION:

Stir all the ingredients together and chill.   It’s simple, but oh-so-good!

I never thought I’d hear the words “Texas” and “caviar” together – nor did I ever expect to find out that “Texas Caviar” is vegan!! Sounds like a great recipe – nice and spicy, and quite colorful! :0)

I’m with veggiegirl…”Texas Caviar” threw me for a loop…but it looks great. I love spicey recipes like this.
