Pancakes make the world go round

My friend, Ruby Red Vegan, has been tempting me for too many weeks now with mouth-watering pictures of vegan pancakes– blueberry pancakes, chocolate chip pancakes, banana pancakes, etc. etc. etc.

Every time I’d finally succeed in getting pancakes off my mind, there’d be Ruby Red with another enticing pancake post.

Finally, I decided that the only remedy would be to take part in the pancake-making, myself. So that’s exactly what I did!

I’m not going to post a recipe for these pancakes, as they are just your everyday-plain-old whole-wheat pancakes (although this doesn’t mean they weren’t wonderfully delicious). But what I will leave you with is my favorite pancake recipe of all-time! I haven’t made these in a while, but they’re always very well-received each time I do make them.

Katie’s Apple Raisin Pancakes

Makes eight pancakes

3/4 cup whole wheat flour
1/8 cup oats
2 tablespoons oat bran
1/2 teaspoon cinnamon
2 teaspoons baking powder
1/4 tespoon salt
1/4 cup raisins
1/2 cup apple, chopped
1 cup apple juice or water (I use water)

Combine the first six dry ingredients, then add the raisins and apple. Gently stir in the juice or water until the dry ingredients are completely moistened. Pour the batter by 1/4-cupfuls onto a nonstick skillet or griddle. Cook until the bottoms are brown and a spatula slips easily underneath. Turn and brown the other sides. Have a nice day :o ).

    Those were whole wheat? Wow! They looked so fluffy! How did you do that? Also, your apple pancake recipe looks awesome. I think I will be making these in the near future… Thanks for posting!

    With Ruby Red and now you teasing us all with yummy vegan pancakes, I think I have to break down and make some this weekend for bruch.

    I am thinking V-Con’s Blueberry Corn Pancakes and serving it with a homemade warm blueberry sauce. Though your are tempting too, as I love apples and raisins. Now I’m torn!!!!

    I love both pancakes and apples too so now I know what to look for at the market on Saturday. The Dutch cal them pannekoek.

    Your pancakes are gorgeous – and so is your griddle! Your recipe looks fabulous – since my guy and I fix pancakes (vegan whole wheat, of course – it’s the best way to have healthy pancakes!:-)e-v-e-r-y single sunday morning, I’m definitely trying your recipe this sunday! Yum! Thank you!

    I just made a post about the pancakes I had last night =D
    Yours look like the perfect fat American Pancake, I love it!!
    And I will definitely try your recipe. Without raisins though, somehow I never managed to get myself to like them.

    Ha ha, I laughed when I read your Coconut Cream Pie story. Awesome!! I love proving people wrong. At least if their rejection is unjustified. Like my boyfriend saying he won’t eat sth. if it contains soy milk. He has never had soy milk before, he doesn’t know whether it tastes like crap or not, so why not just try it and stop whining!? Undeniably some omnis enjoy vegan food. Oh well, one can’t please everybody.

    Aw, what? The 2nd one already? How unfair is that? Next time you’ll have to start a petition to keep them producing ;)
    I have relatives in Toronto, maybe I can ask them to send you a trainload of chocolate pudding, ha ha! No dealing for you with explaining the pudding stuffed trunk to the border-patrol guys =p

    I miss pancakes. My boyfriend is trying desperately to get all healthy and in shape. I am proud of him. But this means I must suffer on the weekends!

    Ah, well. I can live vicariously. =)

    Yum yum yum! Those look divine. Pancakes make me so giddy that I don’t think “love” is an accurate way to describe my feelings… Maybe “lurgle”? I lurgle pancakes!

    Teehee, I am so sorry that my pancakes took over your mind… Oh wait, no I’m not, because I got to EAT them! It’s wonderful to hear that you got to make some yourself… and plain whole-wheat is a great way to have them! Mmm. I’m glad you posted the recipe – that’s one I’ll have to be trying soon, as apples and raisins are one combo I haven’t tried yet.

    Hi,
    The other day I made the apple raisin pancakes and I liked the taste, but I didn’t use the whole cup of apple juice because the batter would be far too runny for a pancake batter. I think I used less then half a cup.
    The structure of the pancakes was good but they tasted a bit dry.
    Did I do something wrong?

    I feel awful that the pancakes didn’t turn out well for you! I don’t know what could’ve happened… I’ve actually never made mine with apple juice, just water, but I don’t know if that would make the difference. Sorry I don’t have any advice :o /

    oh. my. goodness. i am totally trying that pancake recipe you posted, because i LOVE apples and raisins together. i am just a beginner cook, but i cannot wait to try that recipe!!! thanks for posting it, i am saving it!

    so you’re 21 and brag about being skinny? eating treats like you’re going on about such as in this post the thinness won’t last for long.

    how is this recipe vegan?

    it’s got processed elements in it.

    Actually I’ve been eating like this for quite a while and have stayed skinny. I have a pretty darn healthy diet, thanks very much.

    And I don’t know what ingredient in the pancakes you think isn’t vegan; I can assure you that the pancake recipe is 100% vegan :o ).
