Mousse on the Loose!

On Valentine’s Day, you don’t have to choose: you can be kind to your sweet tooth and to your heart! You can have your chocolate (mousse) and eat it too. And the best part is that you can whip up this sumptuous chocolate dessert in about five minutes flat! (Teddy bear sold separately.)

My chocolate mousse recipe came about one day when I had extra time on my hands (always a dangerous thing) and extra tofu in my refrigerator. In an attempt to rescue the tofu from going bad, I threw it into the Magic Bullet, added a few other key ingredients, and voila: healthy, five-minute mousse for one!

Chocolate Mousse for One
  • 110 grams silken-firm tofu (such as Mori-Nu; about 1/3 of the package)
  • 1/8 tsp vanilla extract
  • 1 tablespoon dark cocoa powder (dutch-processed cocoa or Hershey’s special dark)
  • tiny dash salt
  • up to 2 tsp liquid (such as water or non-dairy milk)
  • sweetener, to taste (sugar, stevia, agave, etc)
  • optional: almond or mint extract, instant coffee or espresso, peanut butter, flakes of coconut, or another fun flavoring– be creative!
Blend in the Magic Bullet or food processor. Then eat like there’s no tomorrow!  Or make it into a pie!

I love that new banner!!! And it’s funny how the teddy bear’s shirt is kinda covered up so it says “I Love Ugs”, which made me laugh because I thought about how funny it would be if his shirt said, “I Love Drugs.”

My husband and I are actually celebrating Valentine’s Day on Friday instead of Saturday at one of our favorite little restaurants. We waited too long to make our reservations, and they were all booked for V-day. Oops. Oh well, I’ll still enjoy it just as much. We’ll celebrate Friday the 13th instead. :)

Mmmm, mousse. Love that it's so easy to make, and so versatile. I think coconut extract & coconut on top would be excellent, maybe with a few berries as well. Must acquire some silken tofu stat!

Holy chocolate fabuloso. I’ve never really bought the Mori Nu tofu much because I had no good ideas for it but you alone have just given me a whole new outlook! Onto the grocery list it goes!

I saw the post yesterday…wiered. BTW…I use that hershey’s special dark on everything too and it is my fav! Now I’ll have to give this a go….but of course with a bit of PB in it…can’t do without that!

Hello lovely Kate!
I’ve just made this with a teaspoon or two of xylitol, half a ripe banana, and almond milk. Blimey it’s insanely gorgeous!!! I want mooooore!!! And I can have it too! Ha!

I’ve also made several batches of blondies this week and my friends cannot get enough of them. They’re all perusing your website as I type
