Mousse on the Loose!

On Valentine’s Day, you don’t have to choose: you can be kind to your sweet tooth and to your heart! You can have your chocolate (mousse) and eat it too. And the best part is that you can whip up this sumptuous chocolate dessert in about five minutes flat!

My chocolate mousse recipe came about one day when I had extra time on my hands (always a dangerous thing) and extra tofu in my refrigerator. In an attempt to rescue the tofu from going bad, I threw it into the Magic Bullet, added a few other key ingredients, and voila: healthy, five-minute mousse for one!

Five-Minute Chocolate Mousse
(serves one)
Ingredients:
  • 110 grams silken firm tofu (such as Mori-Nu; about 1/3 of the package)
  • 1/8 tsp vanilla extract
  • 1 tablespoon dark cocoa powder (I’m sure regular cocoa powder would be fine.  See suggestions below for a richer, more chocolatey mousse)
  • tiny dash salt
  • up to 2 tsp liquid (such as water or non-dairy milk)
  • sweetener, to taste (sugar, stevia, agave, etc)
  • optional: almond or mint extract, instant coffee or espresso, peanut butter, flakes of coconut, or another fun flavoring– be creative!
Procedure:
  • Blend in the Magic Bullet or food processor. Then eat like there’s no tomorrow!

Optional tips for making the mousse even more decadent and delicious:

1.Use coconut milk or Silk creamer as the liquid

2. Omit the cocoa powder, and instead melt some chocolate chips or pieces of a dark chocolate bar, then add this to the blender with the other ingredients. (I can’t take credit for this version of the recipe; if you google “chocolate mousse tofu” you’ll find over 100,000 results!)

3. Squirt a liberal amount of Soyatoo on top (or mix it in like this)

4. Add berries, peanut butter, or coconut to the mix for a delicious variation. (See “ingredients” for more flavor ideas.)

5. Make a double batch and serve the chocolate mousse to a certain special someone.
6. Make it into chocolate mousse pie!

When I make the mousse for me, I use the quicker cocoa-powder version, but for Valentine’s Day, I’m planning to make the more luxurious version for my lucky guy.

    I love that new banner!!! And it’s funny how the teddy bear’s shirt is kinda covered up so it says “I Love Ugs”, which made me laugh because I thought about how funny it would be if his shirt said, “I Love Drugs.”

    My husband and I are actually celebrating Valentine’s Day on Friday instead of Saturday at one of our favorite little restaurants. We waited too long to make our reservations, and they were all booked for V-day. Oops. Oh well, I’ll still enjoy it just as much. We’ll celebrate Friday the 13th instead. :)

    i don’t really have any plans for valentine’s day, how sad is that? i have plans for friday though, im running my ass off and then we’ll bring heart-shaped lollypops to homeless kids :) i’ll spread the love anyway haha xD!

    Mmmm, mousse. Love that it's so easy to make, and so versatile. I think coconut extract & coconut on top would be excellent, maybe with a few berries as well. Must acquire some silken tofu stat!

    Yummy now this sounds a way to really enjoy chocolate mousse and know it’s actually a healthy meal in disguise LOL.

    Glad you have great weather, although I don’t think I could bare tornado warnings. Our floods and fires here have made it a very wacky summer.

    LOVE I’m so sorry I have been so far behind on all of your amazing posts. And AMAZING they have been. You have me completely dying right now just wanting to eat all of your yummy foods. That mousse? Holy chocolate fabuloso. I’ve never really bought the Mori Nu tofu much because I had no good ideas for it but you alone have just given me a whole new outlook! Onto the grocery list it goes!

    I saw the post yesterday…wiered. BTW…I use that hershey’s special dark on everything too and it is my fav! Now I’ll have to give this a go….but of course with a bit of PB in it…can’t do without that!
