I’m really excited to share this chocolate chip raspberry quick bread recipe with you today!

Unfortunately, I feel compelled to first address something completely unrelated, and I had hoped—perhaps naively—that publishing the Chocolate Covered Katie Anorexic post would’ve put the subject of my weight to rest for good. A quick glance at the comment section of Monday’s post, however, suggests otherwise. I’m choosing to respond today not because the trolls deserve a response but because I take my responsibility as a public figure seriously. I don’t want to hurt any impressionable young readers who might’ve felt similarly to the trolls. In answer to the question: NO, I have not lost any weight nor am I unhealthily thin. Perhaps my tall shoes made my legs look longer, or perhaps it was the angle of the camera… In any case, please remember it’s impossible to judge a person’s health based on one photo from the internet.

And to those who think it is vanity that has me post photos of myself, the opposite is actually true. I completely hate posting pictures of myself online! I’m self-conscious about it, as it can stir up exactly the kind of comments I so wish to avoid. Even the most confident person in the world wouldn’t enjoy getting negative comments about his or her appearance. But I know that when bloggers post a little about their lives—as opposed to just food—they are more relatable to readers. So I try to share when I can.

Raspberry Bread

I hosted my entire family this year for Thanksgiving, which meant four people and two dogs sharing a one-bedroom apartment for seven days. We watched old movies, played cards, drank wine, collaborated to make Thanksgiving dinner in my tiny kitchen… and surprisingly still loved each other by week’s end!

As an early riser, I was in charge of making breakfast each morning, and this Chocolate Chip Raspberry Quick Bread was one of the favorite recipes from the week:

Low Fat Chocolate Chip Raspberry Quick Bread

Low-Fat Chocolate Chip Raspberry Quick Bread

Yield: Makes 8-10 slices

Ingredients

  • 3 tbsp milk of choice
  • 3 1/2 tbsp oil OR more milk of choice
  • 1/4 cup yogurt (I used Wholesoy)
  • 1 tbsp apple cider vinegar
  • 1 1/4 tsp pure vanilla extract
  • 1 cup spelt, all-purpose, or Bob’s gf flour
  • 1 tsp baking powder
  • 1/4 tsp plus 1/16 tsp salt
  • 1/4 cup sugar or xylitol
  • pinch stevia OR 1 additional tbsp sugar
  • 1 cup raspberries, broken up
  • 1/2 cup to 1 cup chocolate chips

Instructions

Preheat your oven to 350 F and grease an 8.5-inch loaf pan. Set aside. Whisk together the milk, yogurt, vinegar, and vanilla (and oil, if using), then let sit at least ten minutes. I used plain—but not unsweetened—yogurt, so add a little extra sugar if using unsweetened. In a large mixing bowl, combine all remaining ingredients except the raspberries, and stir well. Pour wet into dry, and stir until just evenly mixed. Then add the raspberries and stir again, very quickly and carefully so the berries don’t turn the entire batter pink! Pour into the prepared loaf pan, and smooth down evenly. Bake 35 minutes or until a toothpick inserted into the center comes out clean. Store leftovers in the fridge for freshness, or slice and freeze for up to a month.

    Hey Katie! I’m so glad that you have the courage to stand up for yourself; it’s truly an inspiration. Not to mention that even when people are bullies, I’m willing to bet that you have so much more support than you might even realize! A lot of times, I’ll read your blog without comment, but I’m always glad when you tell us about yourself, and when things in your life are working out. I’m sure many feel the same way, and we’ll stay strong for you and with you 🙂 That aside, I can’t wait to try your newest recipes; your website is the best, and so is your upbeat attitude!

      I completely agree with you May and I truly appreciate what Katie is going through and the stories and pictures (and of course the recipes) she shares. All the negative comments are coming from people who are just plain jealous of the hard work and willpower a person can have.

    You look great in Monday’s picture girl! I’ve had similar criticism with my weight, so I totally relate to how you’re feeling. I find it ironic that people feel comfortable attacking skinny girls by calling them ‘anorexic’, ‘bulimic’, and ‘unhealthy’, etc., but if you’re overweight, you’re ‘curvy’ and ‘voluptuous’. Don’t let it get you down! 🙂

    Don’t think it’s just pictures. Somebody I work with asked me if I had lost more weight – and I had gained six pounds! Because I’m working to build muscle I looked thinner. I’m at a very healthy weight for my height and I just ignore people who say I’m too thin or too bulky.

    I can’t tell you how much I respect your determination to keep the negativity away from you and your lovely site. I have fought an eating disorder for years and just enjoy being healthy when I cook in order to combat the cravings. Your food and attitude bring me back every week and it’s a shame some people have nothing better to do than judge.

    I think you are a beautiful, VERY healthy-looking young woman. But in the long run, it’s what’s inside that counts! Thanks for being such a joy to read!

      Actually, cider vinegar plus milk is actually the vegan sub for buttermilk. Not sure if it really changes the taste, but everything I use it in tastes great and I HATE vinegar!

    Love your pictures. And I think you look great! Angelina Jolie gets the same comments of “too thin.” With 70 percent of our population overweight, thinner people are going to be compared to that. Fifty years ago you would not stand out. I’m 77 and I remember! You, my dear, are normal. And too bad we aren’t all as healthy.

    I think it’s a bit harsh to call them trolls. They were concerned about you. My cousin had anorexia and one of the reasons it got as bad as it did (she almost died) was because everyone was too afraid to tell her she looked too thin. You may not like having people from the internet comment on your weight, but sometimes comments like that can help save a person from tipping over the edge. If I thought someone was getting too thin I would tell them, because even if it’s awkward, at least I’m trying to help. And like it or not, these people care about you and will try to help because they CARE about you. I’m sure they weren’t trying to insult you on purpose.

      Sorry, but I disagree. Having also had anorexia, I can say without a doubt that the internet phenomenon of girls commenting on each other’s weight and expressing “concern” is really just a passive aggressive way of expressing jealousy and hoping the other girl will get better because it gets rid of competition. They aren’t really worried for Katie, they’re passively aggressively getting defensive over her size. No one is going to wake up one day and say, “Oh an internet troll thinks I should gain weight, so I will do just that!”

        Okay, I can see where you’re coming from, and I agree — no one will really wants to hear about their weight from people they don’t really know. But we also don’t know what those commentors intent was, and I think it’s wrong to automatically assume that they had a negative intent.

        I think it’s important not to be too hard on people who may have meant well, because being called out on their “trollike” behaviour may lead them to keep their mouths shut when a friend they personally know starts suffering from an eating disorder. I do think that Katie was right to defend herself, but I think she could have approached the subject slightly more delicately.

        I apologize if I’m coming across as offensive. I don’t mean to be. I just think it’s important to speak up if you’re concerned about someone. Maybe not on the internet, but definitely in “real life.”

          I thought the same thing as you! But then I read in her previous post comments that there were other commenters who WERE trolls who’s comments were deleted so I’m guessing she meant these commenters.

    I love your blog for many reasons, but how you genuinely care about your readers is up at the top of the list. I was at the worst point of my eating disorder when I found your blog, and it inspired me to look at food differently.

    For the first time, I felt like I actually deserved to take good care of myself and eat things like peanut butter and oils. I can’t begin to tell you how much your blog has meant in my recovery.

    I’m guessing frozen berries would leave the bread too moist? Do you think freeze dried berries would work well? This looks delicious, but the fresh berries at the store didn’t.

    i think the comments on your last post are more a testament to just how skewed the USofAs current perception of what “healthy” is (and the idea of what a “healthy body” looks like). on one hand we are now more obese than ever (recently reported), and our effing military is suffering because they can’t find enough non-obese soldiers! and on the other hand, we are hearing songs like “all about that bass” (and others!) with lyrics like “f*ck the skinny bitches” with the message that even if you’re overweight your “perfect,” as long as you’re not “skinny”.

    we then glamorize the 1950s when models and actresses were heavier and being “voluptious” was in fashion. well guess what. marilyn monroe was usually a size 4 with a 22 inch waist, and barbie was originally advertised as “curvy”. can you imagine if they advertised barbie as “curvy” today?! hah!

    anyway, katie you look like what a normal healthy person is supposed to look like (which, unfortunately is such a rare sight today that most people have forgotten).

    I will say that I follow you for inspiration on meals and recipes and honestly never paid attention to your stature but after this post I took a look at Monday’s post and don’t think you look unhealthy at all. I also know that even while you might be helpful inspiration, I’m never going to look like you because, well, I’m not built the same and that’s just that. It’s too bad our society can’t be a little more understanding of different types, different healthy bodies.     Wow. I can’t imagine posting comments about people’s weight on their blogs. If you were a little on the heavy side, would people have asked you if you have put on a few pounds? Would they have said that they were concerned about your future risk for heart disease and diabetes because you were too fat? I doubt it. You look fabulous to me. There is a whole range of healthy weights for any given height, and you happen to be on the thin side. There is nothing wrong with that, and I think it is cruel for people who don’t even know you to criticize your appearance.

    I cannot believe you got those comments! My first thought was why don’t they make such gorgeous boots in Australia! In fact where were they from?
    You looked beautiful and I don’t understand why you keep getting people make those judgements. You are clearly healthy looking and you openly admit to trying all the foods you make which come in both super healthy and natural and the extra sugar and chocolate laden kind.
    I love your food and your pictures are always amazing whether they’re of food or you’re in them. Keep taking them and hopefully those people will grow up.
    Ps. If we go for the more chocolate chips option for this recipe should we add more of the ‘yoghurt’ or other wet ingredient to even out the mixture or will it still work fine?

    I can’t wait to try this! I’ve been looking for a recipe to use up some frozen raspberries. btw, I have a question and I hope it doesn’t sound dumb but I saw on your nutrition page that you said you used generic chocolate chips. Does that mean that you don’t worry about little bits of dairy like that in chocolate? just wondering how strict most vegans are with dairy.

      In my experience, it depends entirely on the person. I know some vegans who refuse to eat anything that was even processed on the same equipment as animal products. I know others who don’t care if the allergens warning includes milk and eggs, as long as they aren’t in the ingredients list. I even know a few who only cook vegan themselves and eat vegan 99% of the year, but will eat the occasional (for example) holiday cookie that contains butter or milk.

      Sorry for the confusion! I used dairy-free chocolate chips (fair-trade brand) when baking. But for some reason caloriecount’s calories for “vegan chocolate chips” is incorrect. So when plugging the recipe in, I just wrote “chocolate chips.”

      However… if someone else were to try and make me vegan cookies and happened to use chocolate chips that had some dairy, I would still eat them.

    Hi Katie, not sure if I previously commented and sorry to bring it back up (so to speak) but I know how it feels to have the label of an eating disorder thrown at you.

    I personally try to think of how ridiculous it is and laugh it all off, like how BMI is somehow directly correlated to sanity..? Anyway, you’re beautiful and nothing anyone says can change that.

      It’s probably a combination of eating healthy fat and never using a blow dryer. I wash it most days only with conditioner, using moisturizing shampoo just twice a week. Every now and then, I will curl only the very ends (since they’ll be trimmed off anyway) with a curling iron.

    I was just wondering, I use xylitol as well, but I read that it causes gas, bloating and other digestive problems. Do you feel any of theses symptmons? I’m trying to figure out some food sensivities, so I can’t tell if my upset stomach is caused by xylitol or any other ingredient. Thanks!

    i just made the raspberry quick bread (without the chocolote chips, cause i simply don’t have some in my baking shelf right now ;_; i added 1 tsp. of vanilla syrup though..) AND IT WAS SUPER DELISH! i can’t believe how tasty and fruity and moist this one turned out <3 defintively going to make this again! thanks a bunch for the recipe!

    I made this tonight and have NO IDEA why it didn’t turn out. It definitely wasn’t a “batter.” It was more a dough so to speak I guess? It tasted awful and I swear I followed it 🙁 I don’t have your magic touch 🙁 now I’m scared to try the other ones like I’ll mess that up too!!

    I just wanted to say, I almost never read blogs, let alone cooking blogs (I generally have hated cooking all my life and feel only slightly more receptive to baking), except that lately I’ve been looking for some healthier options. So all that is to preface the fact that I don’t know anything about the world of online bloggers or blogging personalities, etc. I did however have my interest piqued by this mention of an ‘anorexic’ photo posted. I took a look. I have to say, you look extremely healthy and proportional for your height and build and in NO WAY look anorexic. In fact, you look slim and healthy. I would argue that many people are far more overweight than they should be and THAT unfortunately is unhealthy. I have worked in a cardiac ward, I have seen the young obese people in the ward with crippling knee problems, advanced diabetes and serious cardiac problems that are a DIRECT result of their serious lack of proper nutrition habits and increased weight. Don’t listen to the haters, they don’t know what they’re talking about. As an aside, on the same floor where my office was in the hospital, was the eating disorders clinic – so I did *frequently* see actual anorexic (mostly) women. That was equally as terrifying. Thin hair falling out, grey/yellow pallor to their skin, joints wider than their limbs – THAT is also life-threateningly unhealthy. You are a healthy weight and obviously choose to responsibly maintain it. Good for you!

    This recipe for chocolate chip raspberry quick bread is SO good! I increased it by half to make a more substantial loaf, and the baking time was 38 minutes. I only used 1/2 cup chocolate chips (generous), and the blend of chocolate with raspberry was heavenly.
