What are your favorite portable meals?
Sandwiches are one example of an easy and portable meal component, because they’re not too messy, and they don’t need to stay cold. But one can only eat so many plain-jane peanut butter sandwiches before it gets old. (Oh forget that; I could eat pb sandwiches every day for the next hundred years and not get sick of them.) One day last week, for the sake of variety—and because experimentation is so much fun—I strayed from the pb-sandwich road, with this:
Carrot Cake Sandwich
- Shredded carrot
- Raisins
- Crushed walnuts
- Cinnamon
- Cream cheese, such as Tofutti OR coconut butter or Cheesecake Mousse
- sweetener of choice, if desired
Close it all up in a whole wheat pita and you’re good to go.

I love sandwiches and wraps are my favorite kind! 🙂 I was wondering – what do you do to ‘cope’ or ‘deal’ with being vegan in restaurants etc? I mean, when it’s just my mom & I (both vegans) it’s great – we just pick veg friendly places…but say going out with friends and not being able to eat dessert…
The reason I ask is that sometimes I feel bad/ people have accused me of just doing it to ‘diet’ and it’s not that – I honestly just don’t eat animals…but I don’t want to go into a 3 hour schpiel on my lifestyle choices so…it’s confusing/ hard sometimes..

I’m pretty sure I need to steal your carrot cake sammie idea. I’m always looking for something new to jazz up my lunches at school. I bet some crushed pineapple would go really well in it as well, or shredded coconut.
One of my fave “to go” meals is a bunch of things I can dip – like crackers, veggies, fruit, etc – and then take some kind of tasty dip – hummus, nut butter, whatever. It’s fun to play with your food!

I may be a little late in getting aboard the Carrot Cake sandwich train, but better late than never, right? ;]
I have to hand it to you, this sandwich is DELICIOUS. I tweaked the recipe a little since I didn’t have vegan cream cheese or even regular cream cheese on hand and just used nonfat cottage cheese instead. I mixed that up with a little sweetener and vanilla extract, added ginger and cloves along with the cinnamon, and instead of walnuts used a sprinkle of coconut. I wrapped it all in a La Tortilla Factory whole wheat wrap, and it was amazing. Thanks for introducing everyone to this simple yet wonderful recipe! <3

Tofutti. There’s one that comes in a yellow container and one in a white container. The yellow container is free of trans fats.

I’m addicted to making this as a wrap! I use steamed carrots, cream cheese (I’m vegetarian not vegan), raisins, and pineapple jam. It is so delicious that I’ve made it for lunch three times in the past six days! I wrote about it here: http://www.confessionsofcrystal.com/
