I could do hot yoga in my backyard.
Note: I said could, not would. I tried hot yoga once and hated it. It was just so… hot! I don’t like feeling sticky and sweaty, and therefore hot yoga is not my friend. Also not my friend when it’s hot? The oven! Lately, I’ve pushed the muffins and cupcakes aside, in favor of making “no bake” treats.
Like homemade Larabars. First came the Fudge Brownie Larabars – Decadent, fudgey, and chocolatey. Love in the form of a bar. But sadly, due to their extreme yumminess, the fudge-brownie Larabars are already gone. (Where did they go???)
This left me no choice but to make more. With a coconut twist:
So soft and chewy Girl Scout Cookie Larabars.
It tasted like eating a giant Samoas cookie! I covered a bar in chocolate syrup for the photoshoot. Truly, everything looks better when covered in chocolate. As it happens, everything tastes better when covered in chocolate, too. Three cheers for chocolate. Maybe four cheers.

If Larabar and the Girl Scouts had a baby…
Girl Scout Cookie Larabars
- Packed 1/2 cup pitted dates (90g)
- 2 tbsp unsweetened shredded coconut (30g)
- 1/16 tsp pure vanilla extract
- scant 1/8 tsp salt
- 1-3 tbsp chocolate chips or chocolate bar pieces
Put all the ingredients together in your food processor, and blend. (I like to make 1/2 a batch and use the Magic Bullet short cup.) You can reserve a few of the chocolate chips to add, post-blending, if you wish. This recipe yields around 125 grams of dough, which is a little over the size of two Larabars.
