I love cooking with grains. They’re so versatile; you can just throw a bunch of stuff in a pot and voila– a quick, nutritious meal!
The first pan consists of brown rice, canned tomatoes, broccoli, green peppers, onions, oregano, basil, garlic, and maybe some other spices. As you can see from the picture, I made up a huge batch so I could enjoy lots of leftovers (and share some with my always-hungry friends!).
Pan #2 is a brown rice/wild rice blend, cooked in veggie broth, with celery, carrots, herbs and spices. Once again, leftovers galore!

pan # 2 looks really good. I love all of the veggies and the wild rice. It’s so chewy and textured compared to regular brown or white rice.

I’d love to know how you prepared that first dish – it looks great! Did you cook the rice first, and then add a bunch on other stuff, or cook everything altogether?

I like the idea of chucking a load of raw veg and rice into a casserole dish and cooking the lot in an oven. I might give that a go and see if it works!

Both those combinations look wonderful. There really is no excuse not to cook up a healthy meal, these are quick, easy and healthy one pot meals with lots of flavor.
