I’ll start off with a picture of my amazing afternoon snack today– vegan apricot cheesecake! I bought a slice at a restaurant about a 1/2 hour away from my house; it was so reminiscent of “real” cheesecake that I had a hard time believing it really was vegan!
Next, this was dinner:
Going clockwise, we first have kale sauteed with olive oil, garlic, tomatoes, and other spices. Next up is refried black beans, followed by curried cauliflower from Whole Foods, and quinoa made with veggie broth. Finally, in the middle is some peach jam, because I like it with quinoa.

oooh, that “cheesecake” and your dinner plate look enticing – that’s great that you’re able to get vegan “cheesecake” from a bakery where you live! oh and I love every single food that you had for dinner, haha :0)

OMG! I had a Scottish terrier named Molly when i was a kid! How fun! Just made PB&J blondies btw with mashed banana for half of the brown sugar! Amazing!
