Chocolate Snack Bars

These healthy chocolate snack bars are so much better than packaged energy bars. The customizable recipe can be gluten free, dairy free, and refined sugar free!

Ingredients

  • 1 1/2 cups pitted dates (240g) (For low carb, try these Chocolate Protein Bars)
  • 1 cup raw walnuts or pecans (112g)
  • 5 tbsp cocoa powder or chocolate protein powder (25g)
  • 1 tsp pure vanilla extract (5g)
  • 1/4 tsp salt
  • 1/4 cup chocolate chips or sugar free chocolate chips (optional)

Instructions

  • 1. Process the pitted dates, nuts, cocoa powder, vanilla extract, and salt in a high quality food processor.
  • 2. Blend until the texture is fine and crumbly, stopping to scrape down the sides of the machine as needed. (I recommend using a food processor, because a blender will yield an overly sticky texture.)
  • 3. Form bars with your hands. Or roll out the dough in a large Ziploc bag, then open the bag and cut into bars, squares, or cookie cutter shapes of choice.
  • 4. Press chocolate chips into each bar if desired. Enjoy!
  • 5. Store any leftover chocolate snack bars covered on the counter for up to two weeks or in the refrigerator or freezer for up to two months.
