After brainstorming all sorts of possible uses for the peppers, I decided on something I’ve been wanting to try for a while– Gumbo. I found a recipe in one of my mom’s cookbooks and set to veganizing it. I substituted black-eyed-peas for the meat and added extra okra, because I adore that squishy green vegetable. The result was a delectable, hearty veggie gumbo.
Vegan Gumbo

- 2 cans tomatoes
- 4 sliced bell peppers
- 1 onion
- 1 lb okra (I used frozen)
- around 1/2 cup chopped celery
- lots of garlic
- 6 cups veg broth
- 2 sliced zucchini
- 1 lb okra
- 1 or 2 cans black-eyed-peas
- 1 tsp salt
- 1/4 tsp cayenne (or hot sauce to taste)
- 1/2 tsp liquid smoke
- 2 bay leaves
Instructions
Bring all ingredients to a boil in a large pot. Cover and simmer until veggies are tender. Or make in a crock pot. Makes a large amount, and it’s twice as flavorful the second day.

OOOHHH yum! I love okra, but I can’t seem to cook it at home. Only the Ethiopian restaurants I go to know how to make it right. But your gumbo looks yummy!
