Scrapbooking is one of my all-time favorite hobbies (along with cake-decorating, running, playing sports, reading, dancing… ok, so I guess I have a lot of all-time favorite activities).
Having done quite a few of these “Tag” posts (I never tire of ‘em—I LOVE being tagged!), I thought I’d be a little different this time. So here are Five Facts about Me, scrapbook-style!
Fact #1
I was born in England, and have also lived in China, Philadelphia, Japan, The Philippines, and Texas…
…but my favorite place in the world is New York City (with Italy and Thailand coming in as close seconds).
As far as my current home state goes, Austin’s pretty darn cool.
Fact #2
I’m an animal-lover (kind of stating the obvious, since I’m a vegan).
These pages are of a visit to the amazing Catskill Animal Sanctuary in Saugerties, New York. If you’re ever in the area, don’t miss the chance to go.
Fact #3
I enjoy being outdoors as much as possible. There’s something peaceful and relaxing about being in nature and observing its splendor.
Warm, sunny days make for one super-happy CCK…
…but I don’t discriminate against rainy days– nothing’s more fun than going for a walk or run in the rain!
Fact #4:
My favorite memory is of being surprised at my 16th birthday. I was lucky enough to get two parties that year (one in China and one in Texas), and one of the parties was a surprise party, with maybe 70 people showing up! (In the category of favorite memories, Senior Prom also ranks right up there.)
P.S. The cake in the picture is Moosewood’s incredibly delicious vegan chocolate cake, with Moosewood’s chocolate-peanut butter frosting.
Fact #5
My hands have to constantly stay in motion or they get bored (kinda how the rest of me works as well). Sometimes I draw and do lettering for a purpose, such as with the bear and the title on the page below… but just as often, I like to doodle for no reason– on everything. (I even doodle on my exams, because it helps me think!) Drawing, doodling, lettering, Origami, card-making, writing, typing… the hands are always busy.

I wish I had the patience to learn scrapbooking–like you, I simply CANNOT stay in one place for too long!!
That’s so cool that you’ve had the opportunity to travel! I’ve considered becoming a flight attendant for that sole purpose! 😀
Have a fabulous Sunday! (Hope you’re not sore from moving furniture!)

What a GREAT post! You really should be minoring in art, you know :o)
And I agree that NYC IS the best place in the world (I moved to the city at 17 to start college, and haven’t left since), but it’s awfully hard to remember that come winter, when you’re freezing your butt off in a 9-degree late-night train station :o(
What a great way to grow up, being exposed to so many international cultures. Do you have an opinion as to which nation(s) have been the most vegan-friendly?
lighterportions says
You are so darn adorable. I LOVE your scrapbooking. And I can’t believe you’ve lived in so many different places! I would love to be as world travelled as you are!
herbstsonne says
You have such a pretty smile! I’m no good at scrapbooking but I envy the patience and creativity it takes to make one. :3 Nice twist on the “5 things” meme!
Ruby Red Vegan says
Katie wins the prize for the best tag post ever! You are quite the scrapbooker — all the pages are so cute, and thanks for sharing your old photos with us! And I’m so impressed that you were making and decorating cakes when you were 16! I guess a lot of people grow up helping their mom out in the kitchen and learning the ropes of cooking and baking, but I didn’t even start until I decided I wanted to begin eating healthier in my last year of high school.
And after I make a stop at your new place with my mint chocolate soup (or ice cream if we’re really lucky), we can go to NYC! That place is magical.
Vegan_Noodle says
Oh my goodness Katie I am in awe of your scrapbooking skills!! I have a backlog of things to scrapbook…this is helping to motivate me! You should totally tag people and require them to do the same thing (of course if they aren’t scrapbookers it may never get done…).

Your scrapbooking skills are amazing but then again, I wouldn’t expect anything less from you just judging by your cakes alone. You are such a creative person. This was a fun way to get to know you better.

How have you had the chance to live in so many places? I have always dreamed of traveling the world, and I know I will someday… What are you planning on doing as a career? (I took Spanish 1 last year and school, and this upcoming year I am continuing it and also starting French – I love culture.)

How cute! You’re so creative! I need to back into scrapbooking. I used to be such a scrapbook whore. Every moment in my life got scrapbooked, but I sorta fell out of it when digital cameras came into my life. Now, I rarely print off photos…I should get caught up and start scarpbooking again! Your scrapbooks are sooooo cute!
Jen says
What a great way to share some facts about yourself! The scrapbook pages are adorable–and it’s so great that you’ve been able to collect memories from so many different places. (And I’m a total doodler, too!)

Kimberly—
Have I mentioned how jealous I am that you live in NYC???
But I know what you mean about not appreciating living there when it is freezing cold. My family went to NYC last year for Spring Break when a 17-inch snowstorm hit… not fun! I also remember college-hunting a few years back. I fell in love with Ithaca while looking at Cornell, but my mom had to remind me that of COURSE it looked pretty in the summer… but come wintertime, Ithaca was a whole different story!
Hmmm, as for the most vegan-friendly country in which I’ve lived (besides the US)… well, both the Chinese and Japanese, as a rule, don’t understand that vegans/vegetarians do not eat fish, fish stock, chicken stock, etc. There are tons of veggie dishes on menus, but most of them are cooked with one of the aforementioned ingredients. That being said, China boasts some AMAZING all-vegetarian restaurants (an influence from Buddhism), where one can get a delicious vegan meal without worry. Plus, they sell all sorts of fun soymilks— cantaloupe soymilk, anyone?
Traci Anne says
So fun! One of my best friends is an AMAZING scrapbooker and yours look so much like hers! I’m always in awe of good scrapbookers (especially as my supplies and such are STILL back in Dallas – I haven’t even started my college scrapbook!)

Charlotte says
Hi Katie!
I love your creativity – both in the kitchen and out! I am trying to create my first scrapbook, but am seriously lacking in materials. I was wondering if you have any or DIY tips for making a standout scrapbook page ideally using materials that can be found out home. Your pages look awesome and I would love to learn a bit from you! Thank you!
-Charlotte
Chocolate-Covered Katie says
Hey Charlotte!
Thank you so much for your sweet words!! I definitely have been trying to create a lot of my own embellishments lately too. Stickers and things can get expensive! One thing I really like to do is draw little figures (people, animals, whatever!) and color them in, myself, instead of buying a sticker or stamp. And even if you think you can’t draw, you can always trace right off your computer. Here’s an example: https://chocolatecoveredkatie.com/2010/03/12/pumpkin-head/
Charlotte says
Thank you for replying so quickly! I’m so excited to get started…

Scrap-booking is so much fun! Love all the great recipes, as well as your entertaining writing-style! Where abouts in England are you from? I’m from Bournemouth (but born in London), now living in South Africa. There’s something so great about experiencing life in different parts of the world.
Look forward to reading more!
Mali.xxx
Chocolate-Covered Katie says
Hey girl! I’m actually not from England; I was just born there. I was born in Pembury (we lived in Kent). Now I live in Texas, USA. So lol between us, we live all over the world, huh? 🙂
themalikwhey says
😀
So just out of curiosity, what accent do you speak with, having lived in so many different places? According to my English friends and family I sound totally South African now, even though I’ve only been here a couple of years! I guess it doesn’t take long to adapt!
Chocolate-Covered Katie says
I guess I have an American accent, probably because I grew up with American parents and went to American schools. I’ve always loved foreign accents and wished I had one… but then again, when I moved to China, people there liked MY accent. LOL
Melissa says
Great scrapbooking pages!! I would love to have the Moosewood Chocolate Cake and Choc/PB frosting recipe! looks scrumptious!!
Chocolate-Covered Katie says
I can’t print those, since they’re from a cookbook (and I actually don’t even know where my copy is at the moment!). But they’re both in the Moosewood New Classics cookbook :).
