Carrot Cake Sandwich

Happy Vegan Thursday!!

What do you eat when you have to be “on the go”?

Sandwiches are one example of a super-easy “on the go” meal component, because they’re not too messy, and they don’t need to stay cold.  But one can only eat so many plain-jane peanut butter sandwiches before it gets old. (Oh forget that; I could eat pb sammies every day for the next hundred years and not get sick of it.) But, one day last week, for the sake of variety—and because experimentation is so much fun—I strayed from the pb-sammie road, with this:

Carrot Cake Sandwich

  • Shredded carrot
  • Raisins
  • Walnuts
  • Cinnamon
  • Vegan cream cheese (or, you can use coconut butter or Cheesecake Mousse)
  • Optional: for a sweeter sammie, you can add some agave, sugar, stevia, etc.

.Close it all up in a whole-wheat pita and you’re good to go.

Oh, that sandwish looks great! My favourite on-the-go meals are almost-instant rolled oats with dates and nuts (just add boiling water) or a big bowl of homemade museli.

Sorry to hear of your e-mail woes. We had similsr issues at work recently and I know how frustrating it can be. Although, when it was all fixed I received 32 ‘lost’ e-mails from my husband that made me smile. :) I hope your new e-mail address will work better for you.

I love fruit and nutbutters! Those are my favorite, or homemade bars. Occasionally a good train mix works, too. :)

I rock a PB&J a lot. It’s such a low maintenance and filling lunch. I keep a box of Larabars in my desk at work for easy snack. They help me stay out of the vending machines! And jars full of nuts and dried fruit are good too.

I try to keep some vegetables already roasted/cooked/chopped/what have you so that I can throw together a salad if need be.

Chia pudding seems strange to me still, but I’ll try (almost) anything at least once, so who knows?

That looks so good! I’m always shy about taking my own food into places, but I guess people with allergies would have to do it?

Thanks! I didn’t even think of that!
And lol if you ever go to Cici’s, you’ll understand why I don’t feel weird bringing my own food. Pretty much anything goes in that restaurant. Kids running around, there’s an arcade, no waiters (so no one wondering why you’re not eating off the menu, etc). It’s definitely not gourmet hehe.

I definitely think it’s better to be prepared, and so I always have snacks on hand. Fruit, nuts, bars, what have you. I have an entire grocery store in my purse :) .

My go to food to bring with me is fresh cut veggies. I have recently discovered Kind bars. and I keep one in my purse just incase.

I’m with you! My main on the go, no refrigeration available meal is usually PB&J, carrots and an apple!

If there’s refrigeration/microwave, it will be soup or yogurt instead of a sandwich!

Lara Bars & Raw Revolution Bars are my usual stash in the tote bag if I’m on the go. But a green smoothie in a travel mug is a big favorite for me too.

How in the world do you get your carrots to be that shredded?

If I have to grab something, I’m in trouble! I usually own the kitchen for like an hour putting everything in a big dish. If I’m on the go, I have to plan way in advance.

Love the sandwich idea. My on the go meal is probably yogurt and fruit, but if it is a quickie dinner than a Amy’s bean burrito is good because I can heat it and take it with me.

I hope your email problems get solved soon, they sounds like such a pain! Have you considered using something such as Gmail, instead? I never had problems with that, but I was never very fond of my hotmail/msn email, so maybe I’m biased :)

I’m actually looking for on-the-go meal ideas as well! I often make sandwiches, but I already eat bread with many of my meals and sometimes I get tired of it. But I also love bread, so sandwiches are usually what I end up taking with me anyway. I also love having a couple pieces of fruit in my bag, or mini muffins!

We always make carrot cake oats, but never thought of a carrot cake sandwich. That will have to be something new to add to the list to try this week. On the go we eat cliff bars, egg spinach wrap, or a lean pocket.

My favorite on the go fare is usually some homemade “larabars”… and now fudge babies have been added as well! I also am a huge fan of PB & honey and PB & banana w/ cinnamon sandwiches! I kinda like when the bread gets a bit soggy

My fave sammich on the go is a salad pita– spinach, carrots, broccoli, hummus, pita. Yum!!! When I need less mess, I’ll go for the PB & naner combo.

I’m curious, do you have any problems going into a restaurant and bringing your own food??

I love sandwiches and wraps are my favorite kind! :) I was wondering – what do you do to ‘cope’ or ‘deal’ with being vegan in restaurants etc? I mean, when it’s just my mom & I (both vegans) it’s great – we just pick veg friendly places…but say going out with friends and not being able to eat dessert…
The reason I ask is that sometimes I feel bad/ people have accused me of just doing it to ‘diet’ and it’s not that – I honestly just don’t eat animals…but I don’t want to go into a 3 hour schpiel on my lifestyle choices so…it’s confusing/ hard sometimes..

I’m pretty sure I need to steal your carrot cake sammie idea. I’m always looking for something new to jazz up my lunches at school. I bet some crushed pineapple would go really well in it as well, or shredded coconut.

One of my fave “to go” meals is a bunch of things I can dip – like crackers, veggies, fruit, etc – and then take some kind of tasty dip – hummus, nut butter, whatever. It’s fun to play with your food!

I may be a little late in getting aboard the Carrot Cake sandwich train, but better late than never, right? ;]

I have to hand it to you, this sandwich is DELICIOUS. I tweaked the recipe a little since I didn’t have vegan cream cheese or even regular cream cheese on hand and just used nonfat cottage cheese instead. I mixed that up with a little sweetener and vanilla extract, added ginger and cloves along with the cinnamon, and instead of walnuts used a sprinkle of coconut. I wrapped it all in a La Tortilla Factory whole wheat wrap, and it was amazing. Thanks for introducing everyone to this simple yet wonderful recipe! <3

Tofutti. There’s one that comes in a yellow container and one in a white container. The yellow container is free of trans fats.
