Carrot Cake Sandwich

What are your favorite portable meals?

Sandwiches are one example of an easy and portable meal component, because they’re not too messy, and they don’t need to stay cold. But one can only eat so many plain-jane peanut butter sandwiches before it gets old. (Oh forget that; I could eat pb sandwiches every day for the next hundred years and not get sick of them.) One day last week, for the sake of variety—and because experimentation is so much fun—I strayed from the pb-sandwich road, with this:

carrot cake sandwich

Carrot Cake Sandwich

  • Shredded carrot
  • Raisins
  • Crushed walnuts
  • Cinnamon
  • Cream cheese, such as Tofutti OR coconut butter or Cheesecake Mousse
  • sweetener of choice, if desired

Close it all up in a whole wheat pita and you’re good to go.

Oh, that sandwish looks great! My favourite on-the-go meals are almost-instant rolled oats with dates and nuts (just add boiling water) or a big bowl of homemade museli.

Sorry to hear of your e-mail woes. We had similsr issues at work recently and I know how frustrating it can be. Although, when it was all fixed I received 32 ‘lost’ e-mails from my husband that made me smile. :) I hope your new e-mail address will work better for you.

  2. I love fruit and nutbutters! Those are my favorite, or homemade bars. Occasionally a good train mix works, too. :)

  3. That looks so good! I’ll admit it, bars are my fav. And apples. I usually keep them both in my purse 😉

  4. Jenny says:

For on the go, definetly bars– I Love lunas and clifs!

  5. Jessica says:

OMG I know what I’m having for lunch today!!!

  6. Mary says:

I always carry nuts in my purse. And these crunchy granola bars with oats that my mom calls “horse food” :)

  7. abby says:

oh katie, you are so pretty! :) and talented! come be my personal chef? i NEED that sandwich in my life!

  8. I rock a PB&J a lot. It’s such a low maintenance and filling lunch. I keep a box of Larabars in my desk at work for easy snack. They help me stay out of the vending machines! And jars full of nuts and dried fruit are good too.

  9. Katie says:

Delicious! Def. going to try this!

  10. Katie says:

Katie this looks so good!!!!!! Yum!!!!!!!!! I hope you are well beautiful!!!!!!!!!!!!!!! xoxoxo Are you going to be doing some easter inspired recipes!!!!!!!!??

  11. Valerie says:

You had me at the money shot!

  12. elizabeth says:

that looks delicious!! i’ve never thought of making a carrot cake-ish sandwich and I love it!!

  13. Aimee says:

Oh dear, Katie, something tells me you still wouldn’t have fit in with carrot cake pizza ;). Better to stand out, though!

  14. vegangal says:

katie you are so gorgeous! i already told you that a lot of times but i have to say it again in case you forget :). and your sammich yum yum! well all your food really.

  15. Justine says:

I try to keep some vegetables already roasted/cooked/chopped/what have you so that I can throw together a salad if need be.

Chia pudding seems strange to me still, but I’ll try (almost) anything at least once, so who knows?

  16. That looks so good! I’m always shy about taking my own food into places, but I guess people with allergies would have to do it?

You might want to change your email on your About page also, I know that’s where I always go to look for them. :)

  17. OMG!! Carrot Cake Sandwich…yes please! YUM!

  18. Inspired says:

I have to say, usually I’m content to drag along my handy pb&j. But after reading this post, I might have to deviate from my routine. Things like this are why I read your blog!

  19. Keri,
Thanks! I didn’t even think of that!
And lol if you ever go to Cici’s, you’ll understand why I don’t feel weird bringing my own food. Pretty much anything goes in that restaurant. Kids running around, there’s an arcade, no waiters (so no one wondering why you’re not eating off the menu, etc). It’s definitely not gourmet hehe.

  20. vegangal,
you seriously are the SWEETEST! :)

  21. Evan Thomas says:

I cheat; I just make oatmeal in a to go container and take a preflavored greek yogurt 😀

  22. Danielle says:

I love the idea of dessert in sandwich form! 😀

I pretty much consider anything to be on-the-go. As long as you have tupperware…

  23. Kara says:

I definitely think it’s better to be prepared, and so I always have snacks on hand. Fruit, nuts, bars, what have you. I have an entire grocery store in my purse :).

  24. Oh man girl, that sandwich looks AWESOME!!! YUM!

Cici’s…not a fan. now, I love pizza. But Cici’s…not so much.

I’m all about a PB and J sammie! I could eat them every single day!!!!

  25. Brilliant sammie Katie. Sounds delicious.

My favorite on the go-food is probably chips or trail mix. Love almond butter sandwiches as well. :)

  26. That sandwich is such a great idea and looks so yummy!
My go to food to bring with me is fresh cut veggies. I have recently discovered Kind bars. and I keep one in my purse just incase.

  27. Carrot cake sandwich?! Yum!!

My favorite on-the-go food is a sammie with almond butter and fresh strawberries or PB with sliced bananas…I could eat one at every meal, lol!! :)

  28. I could eat PB sandwiches everyday too! But that carrot cake sandwich looks damn good.

  29. Kate says:

I’m with you! My main on the go, no refrigeration available meal is usually PB&J, carrots and an apple!

If there’s refrigeration/microwave, it will be soup or yogurt instead of a sandwich!

  30. Yasmin says:

Dang! I can’t wait to try this sucker out!

  31. Katie says:

I always have an apple rolling around in my purse – just in case I get hangry with no food around. 😉

  32. Katie says:

Is it just me, or are there a lot of Katies in the blogworld? Well I just found your site and am so happy I did! So hello from yet another reader named Katie!

  33. Kate says:

Lara Bars & Raw Revolution Bars are my usual stash in the tote bag if I’m on the go. But a green smoothie in a travel mug is a big favorite for me too.

  34. Katie says:

LOL and the person right after me is a Kate! Go figure!

  35. Ok, when I saw this string of Katies/Kates, I just had to comment on my own post, to make it 5 in a row ;). Sheesh, I’d been under the impression that “Jessica” was the most popular name in the blogworld… but now I might have to change my opinion. Hello all you other wonderful people with the best name 😉 ;)!

  36. (plus a sixth right above Yasmin! And two more further up… Katies take over the world!)

  37. ilanalala says:

Aahhh that looks so good. On the go, anything I don’t have to prepare. I grab an apple or leftovers outta the fridge and I’m good to goo.

  38. How in the world do you get your carrots to be that shredded?

If I have to grab something, I’m in trouble! I usually own the kitchen for like an hour putting everything in a big dish. If I’m on the go, I have to plan way in advance.

  39. Marina says:

Tomorrow I’m going on a road trip, and I thought about making something like this actually! :)
But, my bf has already prepared my sandwiches, so this will just have to wait:))

  40. Melinda says:

Love the sandwich idea. My on the go meal is probably yogurt and fruit, but if it is a quickie dinner than a Amy’s bean burrito is good because I can heat it and take it with me.

  41. todayslady says:

peanut butter and banana sandwiches are my favorite portable/on-the-go meal!! I could never get sick of them!!

  42. Lauren says:

LOL Katie I was just on your formspring. That last question was hilarious! Too bad you can’t tell who it’s from!

  43. Michal says:

The carrot cake on the go sandwhich creation? GENIUS! You know me I love love love my carrots I just cant get enough.

  44. Michelle says:

Lately? Fudge Babies! I can’t thank you enough for introducing me to them!

  45. caronae says:

I love that carrot cake sandwich! So cute! I like sandwiches or pre-packed salads for on the go, or tubs of leftovers!

  46. BroccoliHut says:

I’m right there with ya–PB sammies forever would not be so bad in my opinion:)

  47. Bonnie says:

    That sandwich looks awesome, Katie!

I hope your email problems get solved soon, they sounds like such a pain! Have you considered using something such as Gmail, instead? I never had problems with that, but I was never very fond of my hotmail/msn email, so maybe I’m biased :)

I’m actually looking for on-the-go meal ideas as well! I often make sandwiches, but I already eat bread with many of my meals and sometimes I get tired of it. But I also love bread, so sandwiches are usually what I end up taking with me anyway. I also love having a couple pieces of fruit in my bag, or mini muffins!

  48. loveelisa says:

    oooh ymmmy!

  49. CCV says:

I reeeeaally wanted a gmail account… but it told me that chocolatecoveredkatie was taken! I signed up for one anyway (chocolatecoveredkatie1), but after trying it out for a day, I found the system of comments confusing… probably because I’ve gotten so used to the way hotmail does it. You can’t teach an old dog new tricks lol.

Mini muffins are ALWAYS good to have!!

  50. CCV says:

    I think I *might* know anyway 😕
    But yeah, talk about creepy!

  51. Kim says:

I gave you a Happy 101 Award! It was given to me, and now I am passing on the joy. Follow the link to my blog for all the details!

    Have a wonderful day :) – Kim |

  52. feetinmotion says:

I love bagels for on the go!

  53. CourtandWhit says:

We always make carrot cake oats, but never thought of a carrot cake sandwich. That will have to be something new to add to the list to try this week. On the go we eat cliff bars, egg spinach wrap, or a lean pocket.

  54. *Andrea* says:

yummy! looks like an indulgent carrot cake dessert yet its a healthy sandwich. love it! on the go i love trail mix, larabars, dried fruit, nuts, lots of fruit and soy lattes :)

  55. Emily says:

Your carrot cake sammie looks so good! I bet it was even better than the pizza. :-)

I like stuffing wheat tortillas with hummus and veggies for an on the go meal.

  56. Catherine says:

My favorite on the go fare is usually some homemade “larabars”… and now fudge babies have been added as well! I also am a huge fan of PB & honey and PB & banana w/ cinnamon sandwiches! I kinda like when the bread gets a bit soggy

  57. Oh that looks so easy and awesome!

My fave sammich on the go is a salad pita– spinach, carrots, broccoli, hummus, pita. Yum!!! When I need less mess, I’ll go for the PB & naner combo.

I’m curious, do you have any problems going into a restaurant and bringing your own food??

  58. Anything with nut butters or spreads in wraps is my favorite on the go food. Carrot cake sandwich – genius!

  59. Hi Katie, havent said hi in a few posts so wanted to wish you a big fat TGIF baby!!!!!!!!!!! xoxo

  60. Serena says:

I love sandwiches and wraps are my favorite kind! :) I was wondering – what do you do to ‘cope’ or ‘deal’ with being vegan in restaurants etc? I mean, when it’s just my mom & I (both vegans) it’s great – we just pick veg friendly places…but say going out with friends and not being able to eat dessert…
The reason I ask is that sometimes I feel bad/ people have accused me of just doing it to ‘diet’ and it’s not that – I honestly just don’t eat animals…but I don’t want to go into a 3 hour schpiel on my lifestyle choices so…it’s confusing/ hard sometimes..

  61. EE says:

Big fan of cold soup on the go (yeah, it might sound unappetizing). Is the little man your brother?

  62. Marianne says:

I’m pretty sure I need to steal your carrot cake sammie idea. I’m always looking for something new to jazz up my lunches at school. I bet some crushed pineapple would go really well in it as well, or shredded coconut.

One of my fave “to go” meals is a bunch of things I can dip – like crackers, veggies, fruit, etc – and then take some kind of tasty dip – hummus, nut butter, whatever. It’s fun to play with your food!

  63. Bekah says:

THIS is what I’m talking about… yum yum yum Miss Katie! Love it already.

  64. Sonia says:

yummy!! I am going to go make one! Like this second lol <3

  65. Demelza says:

I may be a little late in getting aboard the Carrot Cake sandwich train, but better late than never, right? ;]

I have to hand it to you, this sandwich is DELICIOUS. I tweaked the recipe a little since I didn’t have vegan cream cheese or even regular cream cheese on hand and just used nonfat cottage cheese instead. I mixed that up with a little sweetener and vanilla extract, added ginger and cloves along with the cinnamon, and instead of walnuts used a sprinkle of coconut. I wrapped it all in a La Tortilla Factory whole wheat wrap, and it was amazing. Thanks for introducing everyone to this simple yet wonderful recipe! <3

  66. Anonymous says:

what kind of vegan cream cheese do you use?

    1. Tofutti. There’s one that comes in a yellow container and one in a white container. The yellow container is free of trans fats.

  67. trajayjay says:

how have I never thought of this! this is a pretty good idea. maybe you should have a section devoted to sandwich ideas.

  68. I’m addicted to making this as a wrap! I use steamed carrots, cream cheese (I’m vegetarian not vegan), raisins, and pineapple jam. It is so delicious that I’ve made it for lunch three times in the past six days! I wrote about it here:
