Peanut Butter Breakfast Pudding

I’m going to be on television!!

The Dallas ABC affiliate news team is filming a story on me, for the 5 o’clock news! It’s pretty much the coolest thing to happen to me since… ever?!

For the feature, I’m thinking of either making the Deep Dish Cookie Pie or the Black Bean Brownies.

Right now I’m more excited than nervous, but that’s maybe just because it hasn’t really sunk in yet how many people are going to see this! Today’s agenda: figuring out what to wear, setting up dishes, and going on a cleaning spree. To power me through, I made a stand-by favorite breakfast:

This isn’t your average bowl of peanut butter oats. The cooking method makes this breakfast taste like you are eating a giant bowl of gooey peanut butter pudding. It’s life-changing… at least as far as breakfast is concerned!

Peanut Butter Breakfast Pudding

Yield: Serves 1

Ingredients

  • 1/2 cup rolled oats
  • 1 cup milk of choice
  • 1/4 tsp salt
  • 1/2 a ripe banana
  • 1-2 tbsp peanut butter OR allergy-friendly alternative
  • 1/4 tsp pure vanilla extract
  • sweetener of choice, to taste
  • optional: chocolate chips

Instructions

Cook the oats, salt, and milk (either on the stove or in the microwave). Meanwhile, blend the pb and banana. Then add your vanilla, sweetener, and 1/2 of the cooked oats to the blender (I used a Magic Bullet) and re-blend. Stir in the rest of the oats. You can blend all the oats if you prefer, but I like the chewiness of leaving some un-blended.

Are you comfortable speaking in front of a group?
Or do you dread giving public presentations? Have you ever acted in a play or been on tv? I always loved giving class presentations and speeches in school, so I probably would’ve enjoyed acting. Unfortunately, I was too busy with soccer and tennis to join the drama club. As for the upcoming tv story, I am nervous about one thing (which might sound silly and superficial): what to wear. I’m clueless about fashion. Any tips?? Please send them my way!

    Trying to find recipes for oatmeal in the morning because every time I make them, I dont enjoy it, or I just do not make a good pot of oatmeal. So ive been browsing things on google, and came across your website.     I didn’t bother with blending it to make pudding, but I really liked this recipe just as a peanut butter oatmeal for breakfast. I make it similar to your chocolate oatmeal with banana. Tastes yummy! Thanks for sharing!

    I’ve been looking through these recipes and they look delicious. I print everything I think I would like to try. Problem is this, first I was in the “7 healthy desserts for breakfast”. When you go to the beginning of the article, there is a place on the side to print. Except it doesn’t print the recipe-you have to go to the next page for the recipe and there is no print button-at least that I’m seeing. If you print, you 20-40+ pages of comments-which do not want! Any suggestions?

      To print, highlight just the recipe itself and right-click “Copy.” Then open a new Word document and right-click “Paste.” You can give this file a name and print it as needed, then save it in a CCK Recipe folder for future reference.

    I made this last night for my evening snack (subbed water for milk because I didn’t have enough) and it was SO delicious!! Call me crazy for eating oatmeal at night, but I’m hypoglycemic and the combination of complex carbs, protein, and healthy fats was PERFECT before bed to keep my blood sugar levels stable throughout the night! I loved the texture and the fact that it was not too sweet (I didn’t use any extra sweetener besides the banana). If you have any other recommendations for an evening snack/recipes you could direct me to, I’d definitely appreciate it! You rock! 🙂

    Delicious! I substituted Dark Chocolate Almond Milk which meant I didn’t need to add any sweetener. I substituted Sun Butter for the peanut butter & added a touch of dark chocolate chips & some uncooked oats, too; for the chewiness. It’s fantastic!! Thank you! BTW; I’ve got a Cappuccino Cloud Cheesecake currently cooling on my baking rack before the (moans) mandatory 6 hours chilling, lol!

    I tried this pudding this morning and it absolutely blew me away. I used coconut milk instead of almond and it tasted awesome. I loved the banana and peanut butter combination. Yuuuuummmmyyyyy…

    Okay! So I am definitely going to try these PB oats! As far as what to wear is concerned; I’m an actress and each costume department has different tastes/goals but there are a few things most agree on: Stay away from patterns- they tend not to “read” well on screen. (I.e. small pinstripes can make you a blurry mess on screen.) Stick to solid, true colors. Also, avoid white-it reads “hot” on screen and can make you look as bright as the sun! My basic rule of thumb is to find something you love to wear. The more comfortable you are in your clothes, the more comfortable you will look on screen. Once you’ve decided what style you want, pick a color family that flatters your skin tone and then find the richest shade of that color. For example: I am olive skinned and look best in jewel tones. Olive green, Blues, and light pastels. Try to avoid a true green though, just in case there is a green screen. No one wants to be a floating head on TV! Good luck and congrats!

    This is delicious. I’ve made it several times and I’d say definitely use the full 2 tablespoons peanut butter. It’s quick, easy, and tastes great – can’t ask for more than that!

    I tried this today.. it is delicious. To be honest I did not add sweetener or chocolate chips so I believe it is a great choice for those who follow a fodmap diet for digestive issues. I saw an oatmilk option and think I may try it when making this next time!
