Side note:

Yes, I’ve gone back to the old blog header.

This change isn’t permanent. Currently I’m working with a web designer the most patient person in the world to completely overhaul the site’s layout, making it much more user-friendly (including a print option for the recipes). Hopefully it will all be completed soon. New year, new blog?

Now back to your regularly-scheduled cookies…

Pecan pie cookies you can make in minutes.

Delicious and good for you at the same time. If you’ve ever had a pecan pie Larabar, that’s exactly what these pecan pie energy bites taste like.

raw pecan pie bites!

(No bake) Pecan Pie Cookie Dough Balls you can make in minutes.

Pecan Pie Babies

(raw and gluten-free)

  • 1/2 cup raw pecans (For all substitutions on this recipe, see nutrition link below) (52g)
  • packed 1 cup pitted dates (I use Sunmaid, found in regular grocery stores near the raisins, as they are softer and stickier than the ones found in natural food stores.) (160g)
  • 1/8 tsp salt
  • 1/4 tsp pure vanilla extract
  • optional: chocolate chips (or mini chips, or a piece of your favorite chocolate bar)

Combine all ingredients in a food processor until it makes a crumbly dough. (You can add the optional chocolate chips either before or after blending.) Pour crumbles into a bag and smush into one big ball. Remove from bag and form little balls. Or you can make bars or cookie-cuttered shapes if you prefer. This can also be made in a Magic Bullet: halve the recipe for best blending in a bullet.

I would appreciate you posting recipes for either the flourless sugar cookie cut-outs or the macaroons. Thanks.

  20. Deborah says:

My whole family is voting for mint chocolate chip. Mint just screams Christmas to me. : )

  21. CheeseGirlPA says:

    If the recipe is what I think it is, ‘Cookies In A Jar’ sounds like a very good gift idea…which is always helpful with Christmas quickly approaching! I am picturing a healthy version of those cookie mixes in a jar, where the ingredients are pre-measured and layered with the instructions attached. Then all you have to do is mix with the liquid as directed and bake. It may not be what you were planning though, idk! And if not, it really won’t matter, because anything you post will be eagerly anticipated! (;

    1. Godelieve says:

I second this! Also: Cake Batter Macaroons sound delicious!

      1. Kimber says:

Yes, flourless sugar cookie cut-outs please!!! My mom and I make these every year and they are sooo many calories due to the flour content. I also can’t have eggs so I have switched to using an egg replacer and that has made the dough a little tougher to work with due to the dryness of using the egg replacer powder.

  27. Katie says:

Chocolate quinoa cookies sound so intriguing!!

  28. Imogen says:

Flour less sugar cookies and the Cake batter macaroons please :) Can’t wait to see the new website!

Hey Katie these look delish….I just finished making a double batch of your hot fudge larabars into truffles rolled in cocoa powder, crushed pistachios, goji berries, and a version of ferrero rocher encasing a roasted hazelnut and rolled in crushed hazelnuts. They are all spectacular and will be giving them out as Christmas gifts along with your raw gingerbread men recipe but in truffle form. Im thinking now that some raw pecan cookies wouldn’t hurt either :) the worst (or maybe the best) thing that could happen is that I would have to keep them all to myself. Im not complaining either way 😀

Yes! I want to make a black coffe flavored cookie so badly- I would use it as a base recipe for crazy coffe flavors, swirl it with cream and sugar flavored cookie dough, or just top it with a piece of dark chocolate- but all I can find on the Internet is chocolate cookies with coffe in them, as opposed to straight up coffe flavored cookies. *Steps off soapbox* sorry for the random tangent reply :-)

      1. Mandie says:

My thoughts exactly! I can only find chocolate cookies with coffee in them as opposed to actual Coffee Cookies!

  171. Halie says:

    Cookies in a jar!

  172. Rachel says:

    I vote for these two!
    Flourless Sugar Cookie Cut-Outs
    Mint-Chocolate Chip Cookies

And Cookies in a Jar is a close runner-up…but if I had to pick just one, I’d say the Mint Chocolate Chip Cookies.

  173. Marlene says:

I would love to see Cookies in a Jar, Mint-Chocolate Cookies, and the Chocolate Quinoa Cookies.

  174. Ayesha says:

I’m sure your new look will be great. Will be waiting for it. 😉

Mint Chocolate-Chip Cookies or the Flourless Sugar Cookie Cut-Outs. I’ve always loved Mint Chocolate Chip ice cream and so the same kind of cookies will be like heaven on earth. Yummm… XD

  175. Lisa B says:

1st choice is cookies in a jar (may be a xmas present) or anything mint. My favourite combo with chococlate is mint. Hate orange & chocolate. What’s your favourite combo Katie?

  176. Alan K. says:

Cake Batter Macaroons sound wonderful but so do Flourless Sugar Cookies!

  177. Alissa says:

Oh, PLEASE, I’d love to hear the flourless cut-out cookie recipe!

  182. Your timing is always perfect, Katie… I just made these and your raw gingerbread men tonight for my Christmas “baking.” Delicious!

I’d love to see any of those recipes that are sugar-free and wheat-free.

    1. Follow up- I ate these pecan pie babies and was delightfully surprised at how much they taste like actual pecan pie!! Wow! Great work Katie

  183. Bec says:

Cake Batter Macaroons please! Ive been missing macaroons!

  184. Sarah says:

  190. Talia says:

So cruel to make us choose- I cant decide between quinoa chocolate cookies and mint chocolate chip. My heart says mint chocolate chip all the way but my brain is saying quinoa chocolate is high protein- easier to justify as healthy for you and the kids.

  191. Carly says:

    Cookies in a jar!

  192. Christi says:

    Chocolate Quinoa Cookies
    Cookies in a Jar

  193. Jules says:

I think the flour less sugar cookies would be so great! That’s where my vote goes, CCK. Not that they don’t ALL sound delicious! But for me, my first pick would DEffinately have to be those ones. Sugar cookies!

  194. Kimberly says:

If the jar ones are a gift you can give, that’s what I need to see! As of now, I’ll be giving my sister a regular old cookie-ingredients-layered-in-a-jar-with-recipe for Christmas, but a brand spankin’ new vegan recipe would be SOOOOO much more fantastic!!! Can’t wait to see all of these, though!

  195. Renae says:

    Chocolate quinoa.

  196. Stephanie says:

Chocolate quinoa cookies!!!!! That sounds sooooo yummy and unique! Keep your amazing recipes coming!! (And looking forward to your cookbook)

  197. Kali says:

I’d love to see the quinoa cookies or the macarons next!

  198. Allison says:

    Hey Katie,
So I have an immersion blender. Can I use that instead of a Magic Bullet? I might buy myself a MB, but if my stick blender will work, I’d rather stick with that.
    You’re the best!

  199. Veggie Athlete says:

Cake Batter Macaroons! I love macaroons and coconut.

  200. Yay I love these festive cookie balls

  201. Christa says:

Just made these for Christmas family dinner and everyone liked them more than the actual homemade pies! Converting my extended family to healthy living one recipe at a time!

  202. Nita says:

I would like to try the choc.quinoa cookies or the healthier for my new year resolution.

  203. Katie says:

This is my first time using date/eating dates ever and oh my goodness WHAT HAVE I BEEN MISSING OUT ON?! Thanks for the yummy treat :)

When I was rolling them my hands were covering in oil. Is that how it is supposed to be? Are dates really good for you if they have that much oil in them?

  204. Lauren says:

I’m thinking chocolate quinoa cookies sounds great! Or mint chocolate chip cookies. Another idea would be Girl Scout thin mints. I have a recipe for that I’m going to try next weekend, but I feel like you can always improve any recipe!

  205. Teri says:

I have had gastric bypass and I am extremely sensitiy to sugar. Causes severe nausea. I need totally sugar free recipes. I tolerate Slenda well. Any recipes that splenda work well with?

  206. Kaitlyn says:

just made these.. put them in the freezer to help them set. i don’t know how you made 23 balls out of this recipe, though. i could barely make 16! they must be super tiny, lol. they do taste pretty good.

  207. Barbara says:

I’m trying to pin this recipe – but it’s not working! I think something must have changed with the new design. Pinterest tries to load a page of different size images, but all are blank, with the various sizes being listed a “0 x 800” “0 x 1024” – they all have 0 as one of the dimensions, therefore nothing is showing. I hope this makes sense!

  208. Punkin1fun says:

I just made these! Yummmmmm! I used the optional chocolate chips and I toasted the pecan halves that I put on top…now I’m going to make the Mounds ‘copies’!!
    Thanks Katie!

  209. Meagan says:

You mention sun sweet dates (which are deglet noir dates). If you can get me shook dates, medjools are much more moist than deglet dates.

    1. Meagan says:

That should say “medjools” not “me shook”.

  210. Cookie says:

Mint Chocolate chips or Cake Batter macaroons please.

  211. Nikki says:

I’d love to see anything mint-chocolate!! Love your recipes!!

  212. Helen moore says:

Hi Katie, I’ve never left a message before but wanted to today. I love your site and follow all your recipes. I’ve tried so many (favourite is the chocolate cake for one!) and I love the healthy spin on all things chocolate. Hubby doesn’t eat chocolate
