No-Bake Strawberry Cheesecake Ball

I was both very lucky and very unlucky during last year’s Super Bowl.

The night started out well; I made brownies and a peanut butter chocolate chip cheesecake ball, and both fortunately survived the train commute to the party intact. I also won the grand prize of $83 in the Super Bowl square grid game (where everyone picks random squares, then numbers are filled in later to correlate with the score).

Money in one hand, empty dishes from the brownies and cheesecake ball in the other, I headed out the door. It wasn’t until after midnight that I arrived home and realized my purse—keys included—was sitting back at my friend’s apartment.

The peanut butter cheesecake ball and Chocolate Brownie Cheesecake Ball version I made a few months later were so popular with readers that I was excited to try out even more variations. My first experiment—a pumpkin version—unfortunately never set correctly. This strawberry cream cheese version fared much better.

It tastes like eating a slice of crustless strawberry cheesecake and is great for bringing to parties. Serve with graham crackers or fresh fruit, or layer it in between sliced bananas or apples.

Strawberry Cheesecake Ball

Adapted from: Chocolate Chip Peanut Butter Cheesecake Ball

  • 8 oz strawberry cream cheese, such as Daiya
  • 1/4 cup melted coconut butter OR raw cashew butter (60g)
  • 2 cups powdered sugar or Sugar-Free Powdered Sugar (300g)
  • 1/2 tsp pure vanilla extract
  • optional 1/2 cup mini chocolate chips

Warm the cream cheese until it is very easy to stir. Make sure your coconut butter is warmed until easily stir-able as well. (In general, if you ever have trouble with coconut butter that just will not become smooth, simply add some melted coconut oil to the butter and stir until smooth.) Mix the cream cheese and coconut butter together then add the vanilla extract and 1/2 cup of the powdered sugar. It will seem very dry, but just keep stirring until all of the powdered sugar is absorbed. Then add another 1/2 cup powdered sugar, stir until absorbed, and repeat with the rest of the powdered sugar. Each time, it will seem dry at first but will eventually become a smooth batter again. Spoon the mixture onto a large sheet of plastic wrap, then bring up the sides of the wrap and twist very tightly. It doesn’t need to look like a perfect ball yet. Freeze in the coldest part of your freezer 2-3 hours or until firm enough to mold into a ball shape and remove the plastic wrap without the ball falling apart. If using chocolate chips, place them in a large bowl and roll the ball around. Freeze until ready to serve, or refrigerate if serving the next day.

    This looks so yummy! I love that it lets you have just a little bit of cheesecake goodness. This would be such an impressive snack to bring to any party. I’m sure it would be a guaranteed hit!

    I love the pictures! And yes I managed to lock myself out on multiple occasions. To make matters worse, the last time I did it, it was pouring rain. I had to run to my neighbor’s house and wait until they got home to give me a spare key. Thank goodness for cell phones!

    Yes! Definitely trying this!
    I can relate with the pumpkin version. I made one and brought it to a party. It was fine frozen, but as it thawed… at least everyone raved about the pumpkin cheesecake dip. Yes…. dip. 😉 I was glad it was in a bowl.
    Also, made your sweet potato skins last night. You make my life a better place.

    In my early 20’s I was living at my brother’s house out in the country. One morning I went out into the garage to feed the bunny. When I went to get back into the house it was locked. Middle of winter, 2″ of fresh snow on the ground and me in my t-shirt, jammy pants and Homer Simpson slippers. I walked the 1/4 mile to the neighbors farm (all bachelors) because I knew they used to look in on the old man that lived in the house before my brother bought it. Thankfully, they knew where the spare key was hid. I was so grateful yet mortified at the same time. They kept saying, “We have a damsel in distress, boys!” Just kill me now…

    I’ve locked my keys in my car a time or two…Now that I have a chip key though, I do keep a spare that can only open the doors hidden on the outside of my car. No more having to have somebody drive me the spares!

    That was a shame about the purse, but thankfully you had left it behind at your friend’s and not lost it entirely, puh!
    I remember one time, I had forgotten my keys, and my flatmate was away and so I sat on the staircase outside for two hours. Then, my upstairs neighbour who I hadn’t met before came walking up towards the entrance, with a bottle of wine in hand, and she asked if I wanted to come in and have some with her instead of being locked out. I love when you randomly make friends like that ^ ^

    The first winter I lived in my apartment, my now-husband and I went out with some of his grad school friends. We rarely “go out” or stay out late, but on this particular night we had stayed out until 1:30 AM. This night also happened to correspond with the beginning of a MASSIVE snow storm. We get back to the apartment to discover my keys won’t work – the door to the building simply won’t open. Keep in mind it is freezing and blizzarding around us. I had to call my complex’s emergency number and the manager showed up at 2 am in her pjs, boots, and a floor length coat to confirm her keys wouldn’t work either. She then calls the on site maintenance, who shows up in a snow plow (!!!) and has to literally break down the door to get us in the building. I have never been so happy to get into a warm bed in my life!!!!!

    When I was younger, we locked ourselves out of our Astro van. I was the smallest of the group and had to squeeze into the tiny sliding back side window. Not fun! Question, what does the coconut oil do? Serve as a binder?

      Coconut butter, not oil. This is important. And yes, it will give the recipe thickness and bind it together.

    I was wondering, have you every tried to make copycat Amy’s vegan chili?
    My boyfriend and I love it, but its not cheap and I feel like it should be easy to make homemade. I can never get the flavor right with the two recipes I have tried. New post idea?! I would love it. THANK YOU for everything, Katie !

    I don’t even know if I would have the patience to eat this with cracker or cookies! I think I’d pop the entire thing right in my mouth, lol!!! It looks and sounds divine! I make these energy balls that are similar (in shape and size) and even though they are quite decadent I end up eating 3-4 at a time! These small treats are more dangerous than we think! 😉

    These look good shame its another recipe that I wont be trying as theres no print button :o( Getting to the point I just think its easier to unregister from the no print option sites than keep seeing nice recipes that I cant try :o(

      Katie has explained before why she was forced to go back to not having a print option. But you can just highlight the recipe and right-click and it will give you an option to print. Easy!

        Thanks but I just tried it and it does not work. There is no print option on right click and when the text is highlighted with ctrl p it still wants to print all 9 pages. I have not seen an explanation as to why there is no print option only one saying that she has changed printing methods and will be going over old recipes to add this as well. I am just saying I cant write the recipes out and it is frustating to see things I would like to try but cant I think it has probably got to the point of cutting these out. I dont know what softwear they are using but some sites are great you can even choose what you want to keep in and what you want to delete others cant print at all !

    Lock yourself out a lot? Have a kid, get a dog. When locked out, send kid through dog door to walk around and let you in. Works every time! However, now the kid thinks it’s more fun to go in the dog’s door every time.
    Thanks for the recipe, I wont try it until after my diet, though, LOL.

    I was dog sitting for a friend once and locked myself out of THEIR home… Luckily I had taken care of all the dog stuff and went out the back door with them for a moment. Few minutes later I turned to go back in and the door was locked! With their keys, my keys, my purse, and my phone all on the table inside. AND it was dark out. AND they don’t live in a neighborhood… So, 10pm-ish at night I have to walk to the nearest neighborhood (only a quarter mile or so) and then walk through it until I saw a house that looked like someone was awake. Three street in I saw a house with a light & TV on and they were kind enough to let me come in from the cold and call my dad. He came & picked me up, gave me his spare key to /my/ house, and came back to get me the next morning so we could go back over to my friend’s and convince a locksmith to let me into a house that I couldn’t prove I should be in. He did!
    I don’t think my friend & her family ever found out…

    Can you tell me why all of the nutrition labels are given in grams? And the label never says if it is for 1 serving or 2 or 3. It only says grams. Very hard to figure out.

      The recipes will say serving size on the actual recipe post right above the list of ingredients. Hope that helps!
