My Food Story

I’ve always loved animals, so when I became old enough to understand that the Wilbur I adored from the movie was the very same Wilbur engulfed in my ham sandwich, I was horrified.  Thus, at the ripe old age of seven and a half, I proclaimed myself a vegetarian. This lasted about a week. But my love of animals remained, and once I learned about factory farming, I couldn’t fathom contributing another dollar to support such horrific practices. At fourteen, I became a vegetarian for real. Veganism followed soon after.

But I wasn’t always a healthy-eating vegan

Thanks to genetics, metabolism, and an active lifestyle, I’ve been thin my whole life. Finally, after getting tired of strangers’ negative comments and assumptions about my weight, I embarked on a quest to gain some curves. Exorbitant levels of vegan cake-eating ensued, not to mention brownies, cookies, and soy ice cream by the pint. Unfortunately, this strategy not only failed to give me curves, it also depleted me of energy.

The experience really forced me to look at my eating habits and discover that just because a food is vegan doesn’t automatically make it healthy. So I cut back on the sweets and began to explore a style of eating that would make my body feel good not just while I ate, but after eating as well. I still eat a high-calorie diet, but it’s mostly made up of healthy foods, with very little sugar. I feel much better this way!

Diet aside, I’m pretty much like any other girl in her twenties. I’m an avid runner who also enjoys writing, hanging out with friends, helping others, and surprising people with yummy recipes they can’t believe are good for them.

    I was just wondering how much you ate in a day or at least how many times you eat? I’m recently begining to discover the negative effects of the SAD (standard american diet), and have looked to other countries like Japan and France for dieting/healthful tips. I’m not looking for weight loss, but rather a healthy lifestyle that will increase my metabolism and keep me healthy. I’ve seen that everyone recomends protein for a faster metabolism, but these countries primarily eat carbohydrates. This may be out of your league but any suggestions? Thanks! :]

      Hi Monica!
      I usually eat six meals a day (pre-run breakfast, breakfast, lunch, snack, dinner, snack), and often do a few taste-tests in between as well for my recipes ;).
      But I can’t really tell you if this is the BEST way to eat. It’s just what works for me. My sister eats only three times a day, and she seems happy and healthy too! So I guess you just have to find whatever eating style personally works best for you :).

        Hey Monica, I live in France now and they eat a SERIOUS amount of meat here. While bread is a main staple for sure- don’t underestimate the large percentage dedicated to meat. One thing that I should mention is that lamb and veal are as common as chicken and beef, so they have a bit more variety to their meat-eating than in America (they also eat duck pretty frequently and rabbit on occasion, too). The main difference between the American diet and the French one is the portion sizes. They eat a lot less in France, especially the women, especially in Paris. They are very weight conscience and not afraid to cut back if they feel the weight packing on. Hope this helps!

    Hey Katie! I just stumbled upon your blog from foodgawker, and I was suprised and so excited to see the numerous recipes that do not involve milk!! I’m milk-protein allergic, so no ‘real’ ice cream, chocolate, butter, any of that stuff and it’s great to see so many recipes that have easy substitutions, and look fabulous on here! I cannot wait to start trying some of these that I’ve already book-marked! Thanks so much!!!!

    I have been stumbling upon your posts on foodgawker a ton recently and I really like your healthy recipes since I am quite a chocoholic myself! and a HUGE foodie. I am not a vegan, a slight vegetarian maybe…but mainly I just eat really healthy! I really enjoy your pancake recipes and the tofu fudge brownies!! I have become obsessed with them! I’m not vegan, but I was vegetarian for a year then brought lean meats back into my diet in hopes of adding protein to help me gain muscle. I’m a runner as well, and about your size (except 5’11”). However, I plan on going back to being vegetarian soon because I don’t necessarily need meat in my diet. I’m majoring in journalism, and LOVE LOVE LOVE to cook. The happiest moments are seeing the enjoyment people get out of my cooking. I adore it. So thank you for showing me these healthy recipes, because I always feel like I should be eating healthier, especially with sweets. Have a good 4th!

    Thank you so much for posting these awesome recipes. I am the wife of a chiropractor and have four kids. They (and myself) LOVE desserts and I feel so much more comfortable letting them eat them when I know it isn’t poisoning them. I am able to take things to parties and people can’t believe that these awesome recipes fall right in line with my wellness focused lifestyle. I also like the freedom of being able to eat chocolate and really enjoy it. Thanks for posting!!!

    how do you stay motivated to run every day? I’m just coming back from a long running hiatus, and I want to start running half-marathons! I read in one of your posts that you run 6-8 miles a day; I want to run that far too, several times a week. I would love any tips you have!

    I LOVE your blog!

    My question is, how do you manage to find the time to eat 6 meals a day! I work full time I can just can’t manage to fit cooking 3 meals a day in! Any tips?

      Hi Celeste!
      I cook a LOT in bulk. For example, when I cook pancakes, I’ll make like 5 servings and freeze leftovers. Same thing with non-sweet dishes as well. My freezer is filled with meals! Also, I always cook my oatmeal the night before, because I don’t have time in the morning! Take shortcuts whenever you can :). And sometimes packaged products/sauces/frozen veggies or canned veggies are your friends!

        I have cut down on my cooking breakfast by not cooking my oatmeal. I use equal parts Regular Rolled Oats and Non-Dairy Milk (Almond,Coconut etc) Put it in the Fridge at night and take it to work in the morning I don’t even bother to heat it. I like it at room temp

    It’s always cool to find someone who shares the same name, and to find someone who shares the same interests; so finding 2 in one is a huge bonus!

    I absolutely love your blog! Especially the gaining weight while still eating really healthy- for people healthy eating is associated with weight loss; and weight gain means eating an entire gallon of ice cream by yourself in one sitting!

    I loved your story about the Wilbur thing too. I have actually sworn off pig products for 7 years now because of that exact same reason!

    Even though I’m not a vegan, I still adore everything you post about. It’s refreshing.

      Awww lol Wilbur was just too cute, right? My sister (22) actually STILL has a favorite stuffed animal named Wilbur that she brings everywhere. They say that pigs are smarter than dogs… I had a friend who had one that could open the cabinet door and take out the cereal box :).

    Katie – first off, you’re awesome 🙂 my husband and I (along with our 11 month old son, although not necessarily his choice lol) recently went vegan for ethical and physical and health reasons, we watched Food, Inc. and that was that lol but I have such a sweet tooth and knowing that I’d have to give up my ice creams and cheesecakes and well just junk in general, wellllll it kinda made me sad LOL which is probably sad but it’s honest 🙂 Finding your blog has allowed me to enjoy sweets and have desserts again so THANK YOU SO MUCH!! I made the original single lady cupcakes as a test for my baby’s 1st birthday party and they were a hit soooo I have found his 1 year old cupcake to let him make a mess 🙂 Just wanted to let you know I appreciate all that you’ve done and documented and shared!! 🙂

    LOVE your blog, and I really love your recipes! I’m on the Raw Bar/Baby/Ball recipe kick right now, and so are my kids. We are loving making many home made type Lara Bars and playing around with them. Here is my problem, maybe you have some ideas… They will be returning to school in September, and they LOVE these bars. Our school does not allow nuts or seeds (in theory, but I’m going to find out if there are ANY that we can use). So, how can I make a date bar with high protein without using Nuts and Seeds? Do you have any ideas? My only ideas is to use Soy Butter that is the School Safe Peanut Butter, maybe Dry Milk Powder, maybe oats? Can you use quinoa raw? I’d prefer to make a bunch at once and keep them in the fridge. I know beans are high protein, but go rancid fast too… Anyways, just curious if you had some good ideas so I can get on testing for our school snacks.

      Second, Tara, how did it all work out with the school? What did you end up using? Have you considered hemp seeds? They are truly one of nature’s best sources of protein (along with quinoa, teff and kaniwa, among others) – and, they go amazingly well with chocolate! I make something I call “Happy Hemp Brownies” once in a while – and people go crazy about them! And no, hemp seeds do not contain THC, (just the leaves do) so they are fine for most people. I do have one friend who cannot tolerate them as they give her a stomach ache, but that’s pretty rare.

      Anyway, I just love what you are doing Katie. Can’t wait to read more! Keep up the great work. We foodies totally appreciate you.

    As a fellow “skinny girl” i know where you are coming from. I love to run, but only do about 3 miles a day. I get SO tired of people assuming I dont eat or I am vegan. I DO eat, and I eat local, organic happily raised and humanely slaughtered meat. I don’t know where I am going with this, just know you are not alone!

    i just discovered your website last night and i can’t stop reading it – all the recipes look amazing! you are a girl after my own heart – i LOVE desserts, but i am a healthy eater too, so i always am looking to tweak dessert recipes to make them healthy(er). 🙂 and like you, i don’t think it’s dessert unless there’s chocolate in it!!! i’m so glad i found this! also, i am thin too and can relate to your story (i’m not vegan but i only eat clean animal products from small local farms). anyway, you are a beautiful woman and i look forward to trying your recipes!!! thanks!

    I just want to say i am sooo very thrilled that someone out there has a similar story as me! I have been very skinny all my life and still am, but my eating habbits were not so good. At least when it came to desserts and especially chocolate. I sometimes would consume large amounts of sugary stuff to the poing where i would feel very sick after. I still struggle with this at times, but i am trying very hard to change that. And i am so excited that there is a way i can eat desserts and still be healthy. I’m trying to cut way back on sugar and am gluten-free so anyone who takes the time to work with recipes that are adapted for peeps with allergies is terrific in my book. I am struggling with an eating disorder and when I saw these recipies that were so low in calories and fat and saw you and how skinny you are and you ate them I feel like I could enjoy them too and not feel bad. They look absolutley delicious and I can’t wait to try them. Knowing they are so healthy for me will allow me to eat food now that actually tastes good without the feeling bad about it afterward.           I’m really not sure what you expect me to say. It would be really irresponsible of me to try and “fix” someone over the internet. No matter what I say, it’s not going to cure someone’s eating disorder. And I’m not a psychologist, nor do I have any training in the area, so if I did try, it might just make things worse for someone who is already suffering.

            I understand what you mean, but perhaps it would be helpful simply to remind her that it isn’t good to idolize someone for their weight, and that although it is great that she feels more comfortable with your healthy, low-calorie recipes, she could definitely afford to indulge in some higher calorie desserts as well. 🙂 I know that eating disorders are a complicated thing, and I agree that obviously you wouldn’t be able to cure one in one comment, but it’s always good to try and promote a healthy mindset if you can. I too have quested to gain weight, for me this was through ceasing to be vegetarian and although I’m at a weight I am more happy with now I don’t want to eat meat and I know that wheat and dairy are very bad for mt body. I’ve always considered chocolate and exception to any diet for health or weight and believed in having the best of both worlds!

    Love your story! Reminds me of my daughter. She found out at six about the reality of animals, and she stopped eating meat (including fish) ever since. It’s nearly been a year, so I really don’t think she’s going back. People are sometimes concerned about her because she’s a child and so thin, but she has always been a slow and somewhat finicky eater, and although she refuses lots of veggies (as do many kids), she’ll happily eat a mixed green salad, beans, nuts, fruit and whole grains. Honestly, I think we are so used to seeing people overweight that our view has become distorted. After having kids, I got up to 199 lbs, and I’m now down to 115 lbs, and my extended fam is starting to tell me I look too skinny when for my height, I am still on the high end of the scale! I definitely eat! Anyway, thanks for your blog, and I love your outlook on chocolate! 😀

My question is I tried Trader Joe’s to buy ww pastry flour and sucanat and they didn’t have any. Can you give any advice on where I might find this or brands to buy?! Also I typically use Soy milk but would almond or coconut milk work also?

      Hmmm… I usually find Sucanat at Whole Foods (or Market Street, which is a regular grocery store here in Tx). I buy Whole Foods brand o ww pastry flour, but I think Arrowhead Mills makes one too.

Can you tell me where you find vegan chocolate? I feel like even the dark chocolate products I encounter all have milk products in them. Thanks so much!

      I can actually find vegan chocolate even in my regular grocery store now :). Ghirardelli semi-sweet (the gold package) can be found at Target, Walmart, Kroger, and other such stores. Often grocery stores will have a natural section, and you can find vegan chocolate there as well.

      At Whole Foods, I can find Whole Foods dark chocolate mini chunks, Whole Foods vegan chocolate chips, Enjoy Life chips or mini chunks, Sunspire vegan chocolate chips… and more :).

      And many grocery stores have Endangered Species chocolate bars, or Rice Dream, or Lindt (some of the Lindts are vegan… I bought a 90% bar at Walgreens the other day!). Some of the Ritter bars are vegan, too. Hope that helps!

    Hello Katie! I am also a runner and a vegan (love your recipes and blog!). Most days, (especially during the summer) I wake up and run, then I eat breakfast. I noticed you said you eat a pre-run breakfast. This sounds like a very good idea but I’m wondering how long you wait or kill time so that your pre-run breakfast doesn’t make you sick on your run. Does a smaller amount of food cut your waiting time? I’m interested to see what works for other runners, like yourself!

      I usually get up and eat some nuts or nut butter and 1/2 a grapefruit or some other kind of fruit right away. Then I check my email and respond to comments (and check weather.com!) for ten minutes or so.

    Wow! How happy am I to find you through Skinnytaste. My little Wilson who is 4 years old has had serious food allergies his whole life. He spent a full year with head to toe eczema (it even covered his eyelids) from food allergies. We finally have it figured out and his skin is gorgeous. He’s allergic to dairy, egg, wheat, corn, fish, shellfish and all nuts. Desserts are tricky for us and he’s been stuck with a square of Lindt chocolate while other kids at parties, or wherever, are eating chocolate cake. Thank you!

    Katie, I just had to thank you for this blog! I am a wife and mother and have now been able to sneak your little fudgies into my 11 year olds mouth. I call them brownie balls and he eats them up instead of other unhealthy things. I still haven’t told him they are healthy. I think I’ll wait a few months until all the desserts are incorporated to healthy and then tell him 🙂 It seems the word “healthy” is a turn off for him (and my husband sometimes) and many times I eat raw while making the “regular american dinner” for them. Thank you for offering recipes that even people uninterested in eating healthy will eat 🙂

    Hi Katie! I’m so glad I found your site. I followed a link during my first-ever exploration of Pinterest, and found you! Our family has a tangled web of food intolerances. Last year, several of us got tired of the limits of our food world and fell off the band-wagon, ending up feeling as sick and sluggish as we used to. With the start of the new year, we’re all headed back in the right direction, making healthier choices. Most of your recipes fit what we need already, without a lot of substitutions and tinkering. It’s inspiring to have new things to try that won’t make us sick. I already tried your Banana Bread in a Bowl for breakfast yesterday, and it was so good. It was a refreshing change of pace from my same-old breakfast, and it kept me full for several hours. It was so nice to have a different “taste” that wasn’t a health compromise! I truly appreciate your view that life is too precious to spend it eating gross food, just because it’s good for you, and that healthy food can be delicious and fun! I love your message of doing what is healthy and right and best for you personally, not worrying about how other people think you should live or look. Focusing on health and wellness, instead of obsessing over scale numbers or pants sizes, is a sure recipe for sanity and a more joyful life. Thank you Katie! 😀

Last year, several of us got tired of the limits of our food world and fell off the band-wagon, ending up feeling as sick and sluggish as we used to. With the start of the new year, we’re all headed back in the right direction, making healthier choices. Most of your recipes fit what we need already, without a lot of substitutions and tinkering. It’s inspiring to have new things to try that won’t make us sick. I already tried your Banana Bread in a Bowl for breakfast yesterday, and it was so good. It was a refreshing change of pace from my same-old breakfast, and it kept me full for several hours. It was so nice to have a different “taste” that wasn’t a health compromise! I truly appreciate your view that life is too precious to spend it eating gross food, just because it’s good for you, and that healthy food can be delicious and fun! I love your message of doing what is healthy and right and best for you personally, not worrying about how other people think you should live or look.     You are so pretty and skinny! I really wish I had your body! I had high metabolism and was very skinny like you. But in high school after constantly eating unhealthy I gained so much weight and now trying to become vegan. But I thought that eating healthy was so gross so I failed many times. But somehow I found your website and I am really happy now to eat because there are people like you who make such yummy yet healthy foods! Thank you for all your work I love eating now.

    THANK YOU! I have struggled with gaining weight my whole life and was even threatened to have my sports scholarship cut if I didn’t make a certain weight. After stuffing my face with everything in sight for a year and gaining the freshmen 10 lbs, I lost almost twenty within weeks of living back with my parents and eating healthier. Doctors ran every test possible. I was diagnosed with IBS (and depression bc I was always tired) and took meds for a week before I decided there had to be a more natural way to control my digestive issues. I have been dairy free for 6 years now but there was still something that was upsetting my stomach and my sleep. I was negative for Celiac but taking wheat out of my diet seemed to help tremendously. I’ve tried going Vegan countless times and always go back because I get lazy. I do buy organic and wheat free mostly. Your blog has shown me that my sweet tooth does not need to make me feel tired all day long but have trouble falling asleep every night. I can’t wait to try ALL of these recipes and know that these will help me to finally stick to the Vegan lifestyle. Thank you so much for your dedication to your blog I truly enjoy every part of it.     Ran across your website through Pinterest – can’t wait to try your Frapuccino recipe with a few tweeks! I am glad you are trying to help educate folks that eating healthy isn’t about eating cardboard and always doing without. I too, was super thin growing up (98lbs – 5ft 8″). I just had a lightning fast metabolism….that continued through 3 pregnancies (I knew I was pregnant when the scales tipped 100lbs!). Since I turned 40 or so my metabolism has slowed some and at 49 I weigh 150 lbs (more than I did 9 mos pregnant!). I am eating healthier as I have gotten older and because of sodium/bp issues with my husband I make most things from scratch. My daughter (23 yrs old) gets the “anorexia” comments and such as she is tall and thin like I was. We were just blessed with skinny genes! I look forward to trying more of your recipes. Keep up the good work – I live in the Colorado mountains at 8,000ft so I will need to adjust recipes for high altitude but I haven’t found it to be much of a problem yet. Hugs to you!!!

      But make sure to do research and buy a good vegan sourcebook (such as The Vegetarian Way by Virginia Messina) so you can have answers readily available to all her concerns! Also, googling “how to tell parents you’re a vegan” will probably pull up some good results from others who have been in your shoes! And you can always enlist the help of a doctor to ease your parents’ worries and tell them that there are tons of young and healthy vegetarians out there now. Good luck!

    I’ve never tried gaining weight, but have been told I “could use ten more pounds.”
    However, being a Vegetarian and focused on a healthy diet, I always believed that if I ate healthy, my weight would be what it should be. So I stopped thinking about it, stopped counting calories, stopped analyzing every micro nutrient that came into my mouth and learned to ENJOY food! 🙂

    And, well…I had a baby eight months ago and now I have more curves, lol! ^_^

    I’m very grateful for your blog! I have had daily nausea for the past 4 years with no answers from docs. Well I finally took a food intolerance test and it’s the gluten/dairy/eggs/sugar cane that I need to stay away for a year. It’s still a mourning process for me to accept since I love cheese so much lol but I deff am excited to be trying out all your recipes!!
    Has anyone tried all of them before and told you? That’s my goal! Start from the beginning and work my way thru. 🙂

I became a vegetarian this past summer but was having a hard time creating new, delicious recipes and especially healthy desserts. I recently found out I am pre-diabetic. I became vegetarian because I had high cholesterol and didn’t like the medications that were damaging my liver. Now I feel better and am eating more happily even without chicken, beef or pork, which i rarely consumed. So I made so many of your simple recipes and they’re BETTER than the “real thing.” Being a very health-consious 22 year old college student, people never believe me when I say healthy can be sooo delicious! I love that your recipes are often no added sugar and substitutions, nutrition facts, variations, etc. are endless.

    I really love that you also eat a high calorie diet. I exercise a lot and so I eat so much, yet weigh under 100 lbs! Totally underweight and should add some pounds for my health, as I am now trying to do. So it makes me feel a lot better about it knowing that it’s healthy and normal to actually try to gain weight on a healthy diet instead of losing it or maintaining a certain weight.

    How do you recommend one healthfully tries to gain weight with whole, natural foods? Any tips? I want to add muscle and good fat and make sure my body has what it needs to be strong and well. I just am a little afraid to dive right into the jar of peanut butter or carton of ice cream, you know? So your blog has helped me add more fats and yummy desserts, but I would love more suggestions for eating without feeling too full, yet slowly gaining good weight eating only healthy stuff.

    I had always been overweight topping out at 315 and a size 26 (and I’m only 5’6). I finally started making changes and competed my change with gastric bypass. I’m now 130lbs and a size 0!! I work out regularly and maintain a healthy lifestyle.
