What would be some Really yummy but HEALTHY lunch ideas!! some that take some time cause im tired of the same sandwiches! mabey something like chicken salad? Something that makes you feal like you put something together and not just slapped on some meat and bread call it lunch.

I’m trying to make my own almond cheese, which is very exciting as that was a big thing I missed in my early vegan days. Have you ever tried making nut cheeses? Any advise?
I haven’t! I do know that there’s a cookbook called “The Uncheese Cookbook” by Joanne Stepaniak. If you can find that, I know some people have had success with her recipes. (But I haven’t personally tried them.)
Thanks, there seems to be some interesting stuff in it! I just discovered the addictive Dr.Cow’s cheese and I’m trying to duplicate it to save money, seems like soaked cashews, lemon juice, vinegar and spices might do the trick. If I get it right, I’ll let you know
