Hi Jenny,
I can’t recommend any specific things because I don’t know your specific tastebuds or diet preferences (i.e. non dairy, gluten-free, etc). But here is a link to ALL of my recipes so you can browse and maybe find something that’ll fit the bill for you :)

I’m trying to make my own almond cheese, which is very exciting as that was a big thing I missed in my early vegan days. Have you ever tried making nut cheeses? Any advise?

I haven’t! I do know that there’s a cookbook called “The Uncheese Cookbook” by Joanne Stepaniak. If you can find that, I know some people have had success with her recipes. (But I haven’t personally tried them.)

Thanks, there seems to be some interesting stuff in it! I just discovered the addictive Dr.Cow’s cheese and I’m trying to duplicate it to save money, seems like soaked cashews, lemon juice, vinegar and spices might do the trick. If I get it right, I’ll let you know :)
